You and your friends will be joining thousands of women all over Australia, getting together to have a great time, and playing a crucial part in helping Cancer Council beat women’s cancers. Every day in Australia around 50 women are diagnosed with a breast or gynaecological cancer, but Cancer Council’s work has contributed to significant advances in women’s cancer survival. Today, individuals diagnosed with breast cancer have an almost 90% chance of surviving for almost five years - which is why we’re so grateful to people like you raising funds for Cancer Council to support vital cancer research, prevention programs and support services. In this guide you’ll find all you need to help make your event happen, make it fun, and make it an event to be remembered. 2

HASSIA’S STORY In July 2010 I was on holiday in France having lots of fun. A dark shadow fell over the trip when I discovered a lump in my left breast. In December, I found out I had stage three breast cancer. A few years later I found out I had stage four bowel cancer. I am 47 years old, happily married to my husband and have a beautiful son who is only eight years old. Chemotherapy makes me feel so tired. But through my treatment my life is being extended and I have more time with my family. My girlfriends offer me nothing but support and inspiration. The women from my taekwondo class and my son’s school are practical, empathetic and sensitive. I have received a lot of support from Cancer Council which has helped me cope both physically and emotionally. The emotional support is sometimes just as important. I want to encourage everyone to host or attend a Girls’ Night In and give generously! The events are always so much fun – I hope yours is filled with stories, laughter and dancing.

PLANNING TIPS 1. CHOOSE A THEME AND SET A DATE Whether it’s a movie night, or a dinner party, a night of pampering, or a games night, creating a theme gives your guests a reason to get excited. The official month for Cancer Council’s Girls’ Night In is October. You can pick any night you like, but be sure to send your invitations out and get it in your guests’ diaries early.

2. MAKE IT OFFICIAL Set up your online fundraising page using the login details sent in your registration confirmation email and get cracking. Check out the handy guide on page 11 to find out how to get the most out of your page. 5

MAKE IT A NIGHT TO REMEMBER GOOD FRIENDS CAN ENJOY EACH OTHER’S COMPANY WHATEVER THE OCCASION... But having a special theme or ideas planned for your night will help get the girls excited and make it something to remember. It also makes it easier to turn it into a fundraiser.

EVENT IDEAS 1. DINNER PARTY Pick a cuisine theme and treat the gang to a homemade dinner, or share the load and invite guests to contribute to the cooking by bringing a dish. Don’t forget to ask for an entry fee on arrival. 7

2. CLOTHES SWAP Get the girls to bring their unwanted clothes and either ask them to pay a ‘swap fee’ to exchange them with each other, or put a price on the items. Everyone leaves with a new wardrobe, and you raise valuable funds to help beat women’s cancers.

3. PAMPER PARTY Set up a night of pampering, with facials, manicures, pedicures and massages. This works best if you know someone who’ll donate their skills for free, or you could hire a professional. Either way, don’t forget to charge your guests a fee.

4. MOVIE NIGHT Get the healthy snacks and drinks in for a movie night. Sell tickets and have a vote on the best films to watch. If you’re planning a weepy rom-com, don’t forget the tissues.

5. GAMES NIGHT Whether it’s truth or dare, or a more traditional games night, you can appeal to everyone’s playful side with a night of friendly rivalry. FUNDRAISING HEROES LAUREN BRENNAN Lauren decided to host a Girls’ Night In as she thought it would be a great way to create a fundraising event that reflected her personality. Twenty four year-old school teacher Lauren has embraced Girls’ Night In, and has held a a dinner party five years in a row. Her guests simply donate the money they would have spent on a night out, but have just as much fun. Lauren and the girls have raised $1,600 to date. “I choose to host a Girls’ Night In every year because I want to be able to support the fight against women’s cancers in my own way. It’s fun, easy and a great way to catch up with friends for a cause that really matters.”

LAUREN’S TOP TIP

One of the most fun parts of the night is when the girls write a letter to themselves, containing their hopes, dreams and what’s going on in their lives. These are sealed and kept safe until next year, before being ceremoniously opened and shared to see how far they’ve come.

MARINA O’DEA This year, Marina will host her fifth consecutive Girls’ Night In. Marina chose to fundraise for Cancer Council to show support for her close friend and aunt who have both battled cancer. Marina changes her event each year. In 2015 she hired out a local restaurant and held a formal dinner, with a silent auction and entertainment provided by a 5-piece band throughout the night, raising over $9,500 for Cancer Council.

CORN AND ZUCCHINI FRITTERS BY MIGUEL MAESTRE

INGREDIENTS • • • • • • • •

1 tablespoon olive oil 1 leek, trimmed, thinly sliced 2 garlic cloves, crushed 6 sprigs of thyme 8 small flat mushrooms, trimmed 2 sheets canola puff pastry, partially thawed 100g feta or goats cheese Wild rocket or micro cress leaves, to serve

METHOD

Preheat the oven to 200°C (fan forced). Heat the oil in a medium (about 22cm base) ovenproof frying pan over medium heat. Add the leek and garlic and cook 3 minutes until soft. Add the thyme. Add the mushrooms, stalk side down. Increase heat to mediumhigh and cook for 5 minutes.

INGREDIENTS • 1 1/2 cups self-raising flour •5  0g parmesan cheese, finely grated • Salt & pepper • 1 /2 bunch chives, roughly chopped • 1 cup milk, plus extra • 2 eggs

2 corn cobs 2 zucchinis Olive oil 1 block haloumi, thickly sliced • Rocket leaves, to serve • Chutney, to serve • Lemon wedges, to serve

METHOD

To make the batter, place the flour and parmesan in a large bowl, season with salt and pepper and mix well with clean hands. Add the chives, combine the milk and eggs in a small bowl and whisk. Pour into the flour mixture gradually and mix to make a thick batter the consistency of creamy mash. Add extra milk if needed. Grate the corn into the bowl and mix well, discard the husks. Using a mandolin, finely cut the zucchinis into thin strips. Heat an oiled frying pan over a medium heat. Take a small handful of the zucchini, using 2 spoons place into the batter and coat. Place in a frying pan to cook for 2-3 minutes or until golden, turn and cook a further 1-2 minutes or until cooked through. Cook in batches and repeat with remaining zucchini and batter.

Meanwhile, cut a 23cm round from each sheet of pastry. Place the rounds on top of each other and press together. Spread half the cheese over one side of the pastry round. Remove the frying pan from the heat. Place the pastry round cheese side down over the mushrooms, tucking the pastry under the mushrooms. Transfer the frying pan to the oven and bake for 20-25 minutes or until pastry is golden and puffed. Remove from the oven and set aside 3 minutes. Place a board or wire rack on top of the pan and invert. Crumble over the remaining goats cheese, top with rocket or micro cress, season with pepper and serve.

UPSIDE DOWN MUSHROOM TART BY JANELLE BLOOM

Place the haloumi slices into the frying pan for 1 minute or until golden, turn and cook for a further minute. Spoon chutney onto a plate, top with a little rocket, top with a fritter, another slice of haloumi, top with another fritter with a lemon wedge on the side to serve.
