WELCOME Dear Friends, After four very industrious years we say a big thank you and sad farewell to Sue Williams and welcome new General Manager, Kevin Brooke who took over the helm in October. Kevin brings with him a wealth of international experience in several of the best Aman Resorts and is delighted to have had the opportunity to return to the UK with his young family in such a prestigious fashion. His goal is to take Cliveden to even greater heights although with a very respectable 4th place in the recent Condé Nast Traveller Readers’ Travel Awards in the ‘UK Holiday Hotel’ category, I think we can safely say that Cliveden is already back on track! The final phase of our multi-million pound restoration and refurbishment of the house is now well underway and over the next few months the existing Spa will be transformed into a world-class facility. The famous Profumo Pool is the only listed swimming pool in the country and this will remain as the focal point of a new tranquil and characterful ‘Garden Spa’, which we hope to unveil in late May next year. On a similar note, we have been extremely grateful for the exceptionally positive feedback we have received from guests and the travel press about the latest bedroom designs, the new meeting spaces and not forgetting The Astor Grill, which continues to gather momentum as an appealing space for house guests, local residents and Club members to enjoy a light lunch or informal supper. With an impressive score of 8/10 in the latest Good Food Guide and a very respectable 19th place in ‘Top 100 Restaurants’ André Garrett’s eponymous restaurant has also been hitting the headlines. The new autumn dishes are proving particularly popular with regular guests and the final tweaks are being made to our Christmas and New Year House Party menus, which are set to be bigger and better than ever. With all of Cliveden’s 47 bedrooms and suites, as well as Spring Cottage completely refurbished and looking a million dollars (or slightly more!), our new Head Housekeeper, Ewa Sawicka, definitely deserves a few moments rest. Although I am not sure the former ‘lady of the house’ would have been too happy with her sitting at the foot of her bed in the Lady Astor Suite, which according to our historian has always been the bedroom for the Mistress of Cliveden. JUST TWO DAYS SHORT The gardens at Cliveden are amongst the most loved in the National Trust portfolio. Instead of closing during the winter months, the decision has been taken this year to keep the gardens open for 363 out of the 365 days of the year. With 30,000 additional snowdrops planted last season to create a snowdrop walk to the west of the estate we are hoping for an abundance of these delicate blooms and winter daffodils for you to enjoy in the early part of 2017. Tremendous progress has been achieved with the remarkable restoration project of the original terrace that runs along the entire property and provides

a wonderful vantage point for the Parterre and vista beyond. The fourth phase of work which commenced in April 2016 is nearing completion, the East and West element are complete plus 90% of the repairs to the elevations, during the autumn months the terraces adjacent to the hotel will be completed. The final work to the ornate gates and grilles on the evaluations under the East and West Terraces will be completed in the spring of 2017, when work can resume following the end of the roosting season for Cliveden’s bat population, who are just about to take-up residence in the caves under the Terrace.

Daniele Quattromini, Restaurant Manager The eponymous André Garrett Restaurant at Cliveden, has garnered many culinary accolades since its launch in 2013, including ‘Best Newcomer’ in the Good Food Guide 2015, and an 8/10 ranking in the 2016 edition, as well as being listed in Square Meal Lifestyle Magazine’s UK Top 50 Restaurants. A new addition to our restaurant team is Daniele Quattromini, who became Restaurant Manager in September. He brings with him an outstanding record of professional achievement, including the Gold Service Scholarship (2015) and an Acorn Award from The Caterer (2015). Daniele has worked in some very prestigious culinary establishments’ in London and the UK and looks forward to meeting you on your next visit to the André Garrett Restaurant.

RAISE A GLASS TO WELCOME GAETANO Our restaurant team has also been strengthened by the appointment of Gaetano Giangaspero, as Head Sommelier. Italian born, Gaetano has extensive experience at a number of Michelinstarred restaurants in London and he will work alongside our new Restaurant Manager, Daniele Quattromini, to ensure that guests have a complete dining experience, matching the 300-bin international wine list with André Garrett’s contemporary British menus.

ON THE MENU Executive Chef André Garrett has had an eventful year, with the successful launch of his second restaurant, The Astor Grill, at Cliveden together with continued industry acclaim and award success, but André’s focus in the kitchen is all about flavour combinations and classic techniques. His menus are seasonally driven and provenance is very important. He wants to give our guests the most delicious tasting food,

searching out the best produce including lamb from Devon, grass-fed beef from the Lake District and fish from smaller suppliers in Devon and Cornwall who fish sustainably from small day boats. From such quality ingredients André and his kitchen brigade have crafted classics into new signatures, finished with a lightness of touch for which André has become renowned. This autumn we have launched our new à la carte and market menus and we hope you are going to enjoy his new culinary classics!

ANDRE’S CHANNEL ISLE DEBUT The prestigious line-up of chefs from the Channel Islands and Britain taking part in the annual Eat Jersey Food Festival at The Atlantic Hotel, Jersey, will be boosted by our own Executive Head Chef, André Garrett, who is travelling to Jersey to take part in the festival between Thursday 3rd and Sunday 6th November 2016. Other outstanding chefs taking part in this celebration of fine dining and gourmet produce include: Michelin starred chefs Tom Brown and Andrew Fairlie,

Guerney based Simon McKenzie, Matthew Peryer from Devon, Jersey’s Steve Smith and Robert Thompson and Nicolas Valmagna from Hampshire. The teams of visiting chefs will create five-course menus of locally inspired dishes; together with a pop-up restaurant with a beautifully crafted seafood menu. An exclusive ‘Lobster and Burger’ dining event at beach-front bistro, Mark Jordan at the Beach, will round off Eat Jersey 2016 on Sunday 6th November.

BANANA GINGER SMOOTHIE This delicious smoothie is made using fresh ginger and is a natural remedy, ideal for soothing the digestion, heartburn, nausea and other related stomach troubles. SERVINGS: 2 1 banana, sliced 3/4 cup (6 oz) vanilla yoghurt

1 tbsp honey 1/2 tsp freshly grated ginger

Combine the banana, yoghurt, honey, and ginger. Blend until smooth.

GREEN TEA, BLUEBERRY AND BANANA SMOOTHIE The green tea in this delicious smoothie is antioxidant-rich and makes this healthy beverage a nutritional powerhouse.

CLIVEDEN SUPERFOOD SALAD 4 portions

SERVING: 1

INGREDIENTS

3 tbsp water

4 good handfuls of baby spinach – washed 2 heads broccoli – cut into florets and washed 2 pomegranates – seeded 40g white quinoa

40g sunflower seeds

1 green tea bag

40g golden raisins

2 tsp honey

200ml aged balsamic vinegar

1/2 medium banana

200ml extra virgin olive oil 1 teaspoon Dijon mustard

40g fregola

1 1/2 cup frozen blueberries 3/4 cup calcium fortified light vanilla soy milk

Infuse tea bag in steaming hot water. Allow to brew for 3 minutes. Remove tea bag. Stir honey into tea until it dissolves.

Heat a griddle plate on the stove top, when hot toss the broccoli in a little olive oil and grill, turning over after 2 mins, when nicely grilled and cooked add to a large bowl and cool slightly.

Combine berries, banana, and milk in a blender with ice crushing ability.

Bring 2 pans of water to the boil, season with a little salt and cook the fregola and quinoa in each one, keep a little bite on each one, when cooked drain and rinse through with cold water to cool.

Add tea to blender. Blend ingredients on ice crush or highest setting until smooth. (Some blenders may require additional water to process the mixture.) Pour smoothie into a tall glass and serve

In the bowl with the broccoli add the baby spinach, fregola, quinoa, seed and raisins, add the balsamic, mustard and olive oil to a small bottle or tight fitting plastic container and shake together, drizzle a little over the salad and mix all over, season lightly with salt and pepper and mix fully again, dress the salad onto your plates or bowls, drizzle a little more dressing around and serve. The rest of the dressing can be kept in the fridge for another time.

THE MOTOR HOUSE A new versatile meeting space has been created in the Clocktower Courtyard at Cliveden. Situated directly opposite the new Churchill meeting room, the ‘Motor House’, formerly the garage complex for Lord Astor’s beloved Rolls Royce collection is now a bespoke conference and banqueting room with easy access to the private paved courtyard and the adjacent Astor Grill informal restaurant. SPRINGTIME SPA After years in the planning, we are delighted that work has now started on creating a worldclass spa at Cliveden to match the beauty and tranquility of its garden surroundings. The famous outdoor ‘Profumo’ pool will remain as the focal point for the exterior garden and outdoor relaxation areas. A cleverly concealed glazed walkway will bring hotel guests directly to the sanctuary of the spa, without having to venture outside. But the real magic of our new spa will be seen when you step inside its luxurious surroundings. Treatment room capacity has been doubled, relaxation areas created, a fabulous new spa restaurant and lounge with views over the garden and the option of ‘al fresco’ service. AN AUDIENCE WITH HER ROYAL HIGHNESS PRINCESS MICHAEL OF KENT 12pm, Thursday 17th November 2016 We are deeply honoured to be joined by Her Royal Highness Princess Michael of Kent for a fascinating presentation and lunch at Cliveden. Stylish, elegant, multilingual, great supporter of the arts and history and an accomplished equestrian, Her Royal Highness is a familiar and respected member of the Royal Household. Princess Michael is the acclaimed author of six books; on Thursday 17th November her talk will focus on the final volume of the eagerly anticipated Anjou Trilogy entitled “Quicksilver”. The Anjou Trilogy is meticulously researched and centres on the time of the Battle of Agincourt in 1415. This book tells the story of Jacques Coeur, a key figure in the saga of the Anjou branch of France’s royal family.  £90 per person. CHRISTMAS CAROL CONCERT ‘THE QUEENS SIX’ 6.30pm, Sunday 18th and Monday 19th December 2016 We are delighted to be joined by The Queens Six, who will be performing two very special Christmas Carol concerts in the beautiful surroundings of the Great Hall on the 18th and 19th December.  Christmas at the house is simply magical, and as you step inside from the chill of the crisp evening air into the warmth of the Great Hall with the fire ablaze in the hearth, the spectacle of the giant Christmas tree adorned with its festive finery will set the scene for a fabulous evening starting with a Champagne and canapé reception. The carol concert performed by The Queen’s Six will be followed by a three-course festive dinner with wine and coffee and bonbons.

Based at Windsor Castle, the members of The Queen’s Six make up half of the Lay Clerks of St George’s Chapel, whose homes lie within the Castle walls. THREE FABULOUS LADIES We are delighted to share the good news with you that three members of our team at Cliveden, Amy McAinsh, Lorna D’ArchSmith and Kerry Hudson bravely took to the sky recently and raised a fabulous £2,770.05 for the Thames Valley Air Ambulance (TVAA) with a breathtaking sky dive.
