Sparkling Wines Sparkling white 220 Dm. J. Laurens, Crémant de Limoux, Tête de Cuvée NV…………………… (Crémant de Limoux, S.W. France) Chardonnay, Mauzac, Chenin Blanc, Pinot Noir. The méthode traditionelle was invented in Limoux, with the first production of sparkling wines documented in Limoux in 1531. It is believed that even Dom Perignon visited the abbey in Limoux to further his winemaking skills 100 years later. "Tête de cuvee," literally "head of the pressing," means that only the first (gentlest) press of the grapes has been used. An exceptional wine with an intense nose of citrus and dried fruits, a touch of honey and green apple, delivering far more than its modest price would suggest.

42.

223

2005 H. BLIN Millésime Brut………………………………………………………………….. (Champagne, France) 50% Chardonnay, 50% Pinot Meunier. Here is your rich, full-bodied Champagne that is fresh, elegant, and rich in aromatic complexity. The nose is richly decorated with candied and dried fruits. The cordon is persistent. There's apricot jam laced with hazelnut and almond. After a few minutes, lime and acacia honey begin to emerge. The palate maintains a remarkable freshness within a sublime balance.

128.

225

NV Jean Laurent Blanc de Blancs Brut………………………………………………… (Champagne, France) 100% Chardonnay. What we love about this blanc de blancs is its racy and expressive nose of green apple, lemon, baker's spices and chalky minerality, its creamy mousse and succulent mouthfeel. There are some honeyed almond notes floating in a mountain stream freshness with just the right dosage to pare down any sharp edges. Really, the complete package all around.

Made from early-harvested grapes from old vines in plots well within reach of the Atlantic Ocean’s influence, this wine is a vibrant and frisky flirt that will surprise you with a bit of muscle too. 201

Château de Bligny NV Réserve Brut Rosé………………………………………………. (Champagne, France) 50% Chardonnay, 35% Pinot Noir, 15% Côteaux Champenois Rouge. The 35% Pinot Noir is vinified as white wine and the 15% Coteaux Champenois rouge is vinified as red wine. There's a wild but charming Pinot Noir presence mixed with a dry precision that creates a juicy, spicy personality with a structured elegance that's both approachable as an aperitif and a perfect match for lighter dishes.
