AQUA VITAE “Water of life” There is a mystique that surrounds whisky lore. It is an allure that carries with it the promise of some ancient connection to a simpler time in our existence, a bygone era that we gaze back upon longingly in starry-eyed wonderment. The very incantation of its name brings to mind vivid tableaux of misty moors and emerald fields; rocky outcrops and tortuous sheep-worn trails that snake their way through the highland countryside; of salt sprayed promontories, and jagged rock faces carved since time immemorial by the minions of Odin’s wrath; where the benediction of monks can be heard wafting from lofty peaks of roughly-hewn stone; and tartan-clad warriors cross hand-forged steel on the battlefield, and by night, in the flickering light of the great hall, drink deeply from bottomless tankards. This extant elixir transcends time and place and allows us, at least for the briefest moment, a glimpse into the zeitgeist of our forefathers.

“The whisky of this country is a most rascally liquor & by consequence only drunk by the most rascally part of the inhabitants” Robert Burns 1788 No one knows the exact identity of the first Scotsman to distill spirits, nor are they sure when or where the first malt whisky was made. But one fact of which we can be certain is that whisky is endemic in Scottish culture. As with all great enterprise mass whisky production was born out of economic necessity, Highland farmers burdened with a surplus of grain discovered through fermentation and distillation a supplementary source of income to be made. Barley was most commonly used, although wheat and oats were also turned into whisky. The leap toward a global industry started with the invention of the Coffey still in 1827. For many early imbibers malt whisky was an acquired taste. But this new still produced a much lighter, less robust and therefore a more widely appealing whisky than its predecessor and at a far greater volume to boot. Abrogation of laws restricting the use of continuous still whisky in the 1860s paved the way for blended whiskies to consumers’ great delight. In the 1870s a rampant strain of phylloxera devastated Cognac production. Naturally, a suitable replacement was needed; Scotch whisky was suddenly lauded as the drink du jour.

THIS IS

ISLAY A region renowned for its heavily peated whiskies, such as Ardbeg, Laphroaig and Lagavulin, it is understandable why one would assume that the areas titular whisky is exclusively peat-centric. However, Islay is home to several distinct styles, some of these contrastingly light and floral, with barely discernable notes of peat.

BRUICHLADDICH

ISLE OF ISLAY The Gaelic word “Bruichladdich” can be translated either as “stoney shore bank” or “rocky lee shore”. Owned by wine merchants until the early 2000’s, the distillery has had a mixed range of styles over the years. None the less what sets Bruichladdich apart from most distilleries is a focus on traditional methods.

LAGAVULIN ISLE OF ISLAY Referred to as the “Prince of Islay”, Lagavulin has been around since 1816. Lagavulin holds claim to Scotland’s slowest distillation with five hours for the first distillation and a further nine for the second. Despite the pungency of this single malt, there is a distinctive smoothness to the palate that many attribute to the leisurely rate of distillation.

LAPHROAIG ISLE OF ISLAY No one knows the full history of Laphroaig. Much of it has been lost in the midst of time. What is clear is that the Irish had been distilling in the area for many years; it is thought that the locals borrowed these skills and founded the distillery in 1815. Laphroaig is named for the area of land at the head of Loch, on the south coast of the Isle.

HIGHLAND PARK HIGHLANDS (ISLAND- ORKNEY), KIRKWALL Highland Park is Scotland’s northern most whisky distillery, lying just north of fellow distillers Orcadian, Scapa. Although initially founded in 1798 by a notorious smuggler the distillery wasn’t officially licensed until 1826. In recent years it has collected countless awards and remains one of a small group of distilleries that still do onsite floor malting.

The Highlands is an iconic region of Scotland for many reasons. Perhaps the most notable being the tartan kilt, which was the regular dress of Highland warrior clans until the dress act of 1746 banned the use of them to bring the clans under government control. Now the tartan kilt is seen as a cultural symbol of Scotland and used predominantly for ceremonial purposes.

SPEYSIDE This region broadly divides into two main styles, the lighter style typified by Glenfiddich or the Cragganmore and the richer fruiter style exemplified by the Balvenie and the Mortlach.

ABERLOUR SPEYSIDE, CHARLESTOWN OF ABERLOUR A distillery located in the small village of Aberlour, Strath Spey. Although it’s labeling states that it was founded in 1879, it was actually first opened in 1826.

American whisky is rich in diversity, offering a vast and unique range of flavours, steeply contrasting that of its now distant British and Irish cousins. At the core, this deviation from its ancestry is directly related to different ingredients and techniques during the distillation and maturation process; however, to truly understand how American whisky came to be, you must delve into its rich history to the time of the earliest European settlers. Distillation in the North America dates back the 17th century, when Scottish and Irish settlers needed a nostalgic tipple to reminisce about the homeland they left behind. It was made predominantly with grains imported from Europe, and was a raw, unaged spirit, with few of the distinctive characteristics of a bourbon or a rye, that we know and love today. However, economic necessity forced many to look to native grains and corns for distillation and this would ultimately lead to a whiskey revolution. This revolution of sorts can be taken quite literally during the 1700’s when George Washington ‘mustered’ the troops with barrels of whisky to fight off the British imperialists and claim independence of a nation. By this stage barges with barrels of “Old Bourbon Whisky” would drift down the Mississippi River to and from New Orleans. By the 19th century bourbon and rye whisky had become booming industries across the Northern and Confederate states and the future looked golden for whisky. Unfortunately, the early half of the twentieth century was not so for fortunate for the industry. With the enforcement of prohibition, and the advent of “dry states” in Kentucky and Tennessee, distilleries were forced to close their doors. It would not be until 1945 that North American whisky would re-emerge and become the diverse, powerhouse that it is today. There are five distinctive styles of North American whisky, straight, bourbon, rye, corn and Tennessee whisky; each variation has its own unique flavours.

KENTUCKY

BOURBON Bourbon is a barrel-aged spirit that must be made primarily from corn to which a selection of small grains is added, most commonly rye; it then must be aged in new charred oak cask. The word bourbon can be traced back to the 1820s and is ultimately derived from the French Bourbon dynasty. Although bourbon can be made anywhere in the United States it is synonymous with the American South and predominantly the state of Kentucky. The art of pot distillation is very traditional, and has been practiced in Ireland since the thirteenth century. In 1830, these traditions were challenged with the arrival of the “Coffey” two column still, however, this technology was dismissed, by the main Dublin distilleries, as disingenuous, and not regarded as the ‘real way’ to produce whiskey, thus the method was never embraced. This lead to a steep decline in Irish whiskey production, in comparison to its Scottish counterparts, and by 1975 there were only two Irish distilleries remaining. In recent years, Ireland has seen a rejuvenation in its whiskey industry, with many new and exciting distilleries producing high quality products.

J A PA N Japan’s first distillery was established in 1923 when the Kotobukiya company opened the Yamazaki distillery, this company would later become the international distilling and Japanese brewing group known as Suntory. The periodical rise of Japanese whisky can be largely attributed to one man, Masataka Taketsuru. In 1923 Taketsuru returned to Japan from an apprenticeship at Hazelburn distillery in Campbeltown, Scotland to help establish the Yamazaki distillery. Eleven years later he would establish his own distillery, which would become known as the Nikka distillery. Japanese whisky is predominantly made from crystal-clear worts, which have been fermented for a long time with a selection of wheat. This accounts for the clean, precise array of flavours, subtle malt and trademark “transparency” of the colour. The origins of Japanese whisky was forged in the fires of a love story. In 1920, Masataka Taketsuru married Jessie Roberta “Rita” Cowan of Middlecroft, Kirkintilloch, despite strong opposition from both of their families. This would set off a chain of events that would start in Campbeltown, Scotland and end with Japan’s first distillery, Suntory’s Yamazaki distillery, thus merging the two nations in the art of whisky distilling.

AUS TRALIA Australian whisky is a new and exciting addition to whisky world. It can only be traced back to 1992, when the first distillery was founded by Australian whisky pioneer Bill Lark. Not surprisingly, the majority of Australian distilleries reside in Tasmania, a lush and fertile environment with a lot of the characteristics required for whisky distilling including an abundance of water, barley and peat. Recently, over twenty distilleries have been established across Australia in New South Wales, Victoria, Queensland and Western Australian. The environment in Australia, being obviously quite different to that of Scotland, yields a unique flavour and colouring to Australian whiskies. There are two main types of Australian whisky; Australian malt whisky, which must be distilled with malted barley and aged to a minimum of two years, the other Australian blended whisky, which must be distilled with a minimum of twenty five percent malted barley & partly grain. BAKERY HILL NTH BAYSWATER, VICTORIA Bakery Hill Distillery uses only traditional ingredients such as malted barley, yeast and water, yielding a classic flavour and aroma. Each batch is double-distilled in a copper pot still and then barrelled in selected American Oak ex Bourbon barrels with some batches also being exposed to French Oak casks. Unlike many other malt whisky distilleries, Bakery Hill does not add caramel to improve appearance, meaning the flavour remains exceptionally pure.
