Fin’s Seafood Lemon & Dill Roasted Sal mon Ingredients:
1 x 5 pound - Salmon, cleaned 1/4 tsp - Salt 1/4 tsp - Pepper 3 - Lemons, sliced 1/2 cup - Fresh dill or 1/2 cup fresh parsley sprigs 2 tbsp - Butter, melted
Directions: 1. Using sharp knife, firmly cut off fish head behind gills (or have fishmonger remove it). 2. Rinse under cold water; pat dry. 3. Season inside and out with salt and pepper. 4. Arrange one-third of the lemon slices in lengthwise row along centre of foil-lined rimmed baking sheet; top with salmon. 5. Fill cavity with dill, parsley and another third of the lemons. 6. Brush butter over salmon; top with remaining lemons. 7. Crumble up foil around fish to hold juices, leaving salmon uncovered. 8. Bake salmon in 450°F (230°C) oven for about 45 minutes, or 10 minutes per inch (2.5 cm) of thickness, or until flesh is opaque and flakes easily when tested with fork. 9. Remove from oven and tent with foil; let stand for 5 minutes. 10. Serve and enjoy.

Fin’s Seafood Distributors Fin’s Seafood Distributors started with four employees in 1994 including co-owner Doug Sauve, his wife Nancy, and her mother. By fall of 2009 they had expanded to twenty-eight employees, a 14,000-square-foot facility on Sherwood Park’s Cree Road, and more than a dozen trucks. In February of 2010, Fin’s Seafood Distributors became a part of the Sysco family and now operates as a subsidiary of Sysco Canada Inc. Delivering fresh and frozen seafood to restaurants, hotels, and banquet facilities across the Edmonton region, this homegrown company has become a favourite in our community.
