Bobby Burns £7.5 Our adaptation of this lethal, whisky-based classic is influenced by the equal parts formula found in the ‘Café Royal Cocktail Book,’ compiled by W. J. Harling, 1937. Chivas Regal 12yo whisky, Carpano Antica Formula vermouth, D.O.M. Benedictine liqueur & Fee Brothers Orange bitters.

The Royal Mile Blazer (w) £8.9 A delectable, measured variation on the flaming classic first created by bar titan Professor Jerry Thomas circa 1850. Bowmore Darkest 15yo malt, Crème de Figue, Cockburn’s Fine Ruby port, demerara syrup & Fee Brothers Whisky Barrel bitters.

Kentucky Mint Julep £7.5 The famous bourbon based classic from Kentucky served ice cold in a frosted Julep Cup. Woodford Reserve bourbon, fresh mint, demerara syrup & Angostura bitters.

Mary Pickford £6.9 A soothing, silky Cuban classic created by bartender Fred Kaufman for the silent movie star at the Hotel Nacional, Havana in the 1920s. Pampero Blanco rum, Luxardo Maraschino liqueur, pineapple juice & house pomegranate syrup.

Clover Leaf Cocktail (e) £6.9 Named after the rather riotous Philadelphia based Clover Club, this clean, refreshing beverage was created for their meetings in the Bellevue Stratford Hotel, circa 1910. Bombay Sapphire gin, Martini Rosato vermouth, lemon juice, house pomegranate syrup & fresh raspberries.

East India House Cocktail £7.5 A boozy, intricate classic adapted from a recipe found in Charles H. Bakers exceptional 1946 cocktail guide, ‘The Gentleman’s Companion Vol. II.’ Martell VSOP cognac, Grand Marnier liqueur, Luxardo Maraschino liqueur, house pineapple syrup & Angostura bitters.

Gaelic Sazerac £8.5 An aromatic Scottish twist on the 19thcentury New Orleans classic. Auchentoshan Three Wood malt, Drambuie liqueur, Fee Brothers Whisky Barrel bitters, Peychaud’s bitters & a La Fèe Parisienne Absinthe rinse. Daiquiri £6.9 The delectably simple tipple first created by American engineer Jennings Cox in Cuba 1898. Bacardi Superior rum, lime juice, sugar syrup & Fee Brothers Peach bitters.

Santiago Daiquiri No. 2 £7.5 A clean, delicately balanced daiquiri recipe found in Harry Craddock’s influential 1930 cocktail publication, ‘The Savoy Cocktail Book.’ Appleton Estate 12yo rum, Bitter Truth Apricot brandy, lemon juice, house pomegranate syrup & Angostura bitters.

Sherry Cobbler £7.5 Arguably the most popular drink of the 19thcentury served over shaved ice and garnished with pineapple, a prune & mint sprigs. Colosia Pedro Ximénez sherry, lemon wedges, orange wedges & demerara syrup.

Angel Falls Flip (e) (w) £6.9 A warming, fluffy tipple inspired by the Hot English Rum Flip found in the 1862 version of ‘How to Mix Drinks or the Bon Vivant’s Companion,’ by Professor Jerry Thomas. Pampero Especial rum, Caledonian 80/- beer, maple syrup & a hen egg.

Jack Rose (e) £7.9 Extremely popular in the 1920s the origins of this fresh, tangy cocktail are shrouded in mystery. Laird’s Bonded apple brandy, lemon juice & house pomegranate syrup.

Blood & Sand £6.9 A complex, balanced beverage created in 1922 for the premier of the Rudolph Valentino movie of the same name. Chivas Regal 12yo whisky, Cherry Marnier liqueur, Martini Rosso vermouth & freshly squeezed orange juice.

Chocolate Cocktail No. 3 (e) £7.5 A velvety, decadent cocktail adapted from a recipe in the 1930 cocktail guide, ‘The Savoy Cocktail Book,’ by Harry Craddock Cockburn’s Fine Ruby port, Mozart Black chocolate liqueur, Yellow Chartreuse, double cream, a quail egg & Mozart Chocolate bitters.

Negroni £7.5 The bitter, dry classic, created in the 1920s at the Casoni Bar, Florence for Count Camillo Negroni, carefully served in a frozen rocks glass over a hand carved ice shard. Tanqueray gin, Campari aperitif & Cocchi Vermouth di Torino. Bubbles

Bellini £7.5 A luxury rendition of the well known refresher created by Giusseppe Cipriani in Harry's Bar, Venice circa 1945. Crème de Peche, blood-peach puree, lemon juice, sugar syrup & Rocco Rosé Prosecco.

Violette Spring Punch £7.9 A delicate, floral adaptation of the classic 90s cooler created by bartender Dick Bradsell. Kettle One Citron vodka, Crème de Violette, Crème de Cassis, lemon juice, sugar syrup & Rocco Extra Dry Prosecco.

Champagne Cocktail £8.9 The original Champagne Cocktail adapted from simple yet delicious recipe found in Harry Johnson’s 1882 cocktail guide, ‘New and Improved Bartender’s Manual: or How to Mix Drinks of the Present Style.’ Moët & Chandon Brut champagne, demerara syrup & Fee Brothers Old Fashioned bitters.

Air Mail £7.5 The classic rum based cooler which first appeared in the 1949 ‘Esquire’s Handbook for Hosts,’ is enriched with fresh mint leaves & bitters. Mount Gay Extra Old rum, lime juice, blossom honey, fresh mint, Angostura bitters & Rocco Extra Dry Prosecco.

Champagne Charlie £7.9 An indulgent, effervescent twist on the Charlie Chaplin Cocktail first created in the Waldorf Astoria Bar, New York circa 1915. Plymouth Sloe gin, Bitter Truth Apricot brandy, lemon juice, demerara syrup & Moët & Chandon Brut champagne.

Straight-Up Solutions Solera Manhattan £9.9 A smooth, decadent Manhattan styled potation with hints of chocolate, coffee & spice. Ron Zacapa Centenario Solera 23 rum, Carpano Antica Formula vermouth, roasted coffee beans, demerara vanilla syrup & Mozart Chocolate bitters.

Victorian Vine (e) £7.5 Delicious, silky and stylish; Ciroc vodka is enhanced with an elegant marriage of wine, grape & preserve. Ciroc vodka, Martini Rosso vermouth, Torres Moscatel dessert wine, fresh red grapes, lemon juice & Victoria Plum preserve.

Ginger Tommy’s Margarita £6.9 A spiced, aromatic twist on the agave dominated libation fashioned by Julio Bermejo at Tommy’s Mexican Restaurant, San Fransisco. Jose Cuervo Tradicional tequila, fresh ginger, lime juice, organic agave syrup & Bittermens Hopped Grapefruit bitters.

Parisian Pear Fizz (e) £7.5 A traditionally styled, Cognac based Fizz which should be consumed in no less than five minutes. Martell VSOP cognac, Xante Pear-Cognac liqueur, lemon juice, demerara vanilla syrup, Peychaud’s bitters & Canada Dry ginger ale.

Highland Bouquet (e) £7.9 The subtle tones of Glenmorangie malt whisky blended seamlessly with the flavours of orange-blossom & maraschino cherry. Belvedere Orange vodka, Glenmorangie malt, Luxardo Maraschino liqueur, lemon juice, house pomegranate syrup & orange-blossom water.

Jalisco Vesper £9.9 A wet, delightful, tequila based twist on the classic Martini variation recipe first penned by author Ian Fleming in his opening James Bond novel, ‘Casino Royale’ published in 1951. Don Julio Blanco tequila, Cocchi Americano aperitif, St-Germain Elderflower liqueur & Bitter Truth celery bitters.

Longer Libations Apple-Bramble Swizzle £7.5 A lengthened, apple flavoured version of the modern classic created by mixology maestro Dick Bradsell at Fred’s Club, London in the mid 1980s. Bombay Sapphire gin, Crème de Mure, pressed apple juice, lemon juice, elderflower cordial & sugar syrup.

Mojito £6.9 The classic Cuban cooler; pure, refreshing and simple. Bacardi Superior rum, lime juice, fresh mint leaves, castor sugar & a splash of soda water.

Aurora Daisy £7.5 Cranberry & apple are loaded into this sherbety potation; influenced by new-style Daisy recipes from the 1910s. Finlandia Cranberry vodka, Laird’s Bonded apple brandy, lemon juice, house pomegranate syrup, Fee Brothers Peach bitters & Appletiser.

Penicillin (e) £7.9 A delectable, aromatic modern twist on the Sour created by Sam Ross in 2004 at Milk & Honey, New York. Chivas 12yo whisky, Laphroig 10yo malt, lemon juice, blossom honey & fresh ginger.

Morello Scorpian Punch Single serve £8.5 Multiple serve in punch bowl £19 A cherry & allspice flavoured twist on the tasty Tiki classic adapted from a recipe found in 'Trader Vic's Bartender's Guide'(1972 revised edition), by Victor Bergeron. Myers rum, Courvoisier VSOP cognac, Cherry Marnier liqueur, Bitter Truth Pimento Dram liqueur, pineapple juice, lime juice, orgeat syrup, Bittermens ‘Elemakule Tiki bitters.

Islay Collins £7.5 A spirited marriage of peated whisky, cinnamon & rhubarb, with an effervescent flourish. Bowmore 12yo malt, rhubarb liqueur, lemon juice, house cinnamon syrup, Fee Brothers Rhubarb bitters & soda water.

Carpano Gin Sling £6.9 A complex, biting blend of gin, vermouth & bitter lemon influenced by the Gin Sling recipe found in ‘The Merchant Hotel Bar Book – Volume III,’ by Sean Muldoon & Jack McGarry in 2009. Beefeater gin, Punt e Mes vermouth, lemon juice, castor sugar, Reagan’s Orange bitters No. 6 & Schweppes Bitter Lemon.

Luxury Bloody Marys Bloody Mary £6.9 The piquant, savoury classic first created in 1920 by Fernand Petiot at Harry’s New York Bar, Paris, served with a cherry tomato and a celery stick. Finlandia vodka, tomato juice, lemon juice, Tabasco hot pepper sauce, Worcestershire sauce, sea salt, black pepper & Bitter Truth celery bitters.

Red Snapper £7.5 The Bloody Mary was officially renamed the Red Snapper at the St. Regis Hotel, New York, after Vincent Astor bought it in 1935 because he felt the original name was too crude. Modern day recipes utilise the name Red Snapper to denote the intuitive inclusion of gin over vodka. Hendrick’s gin, fresh cucumber, fresh rosemary, tomato juice, lemon juice, Tabasco hot pepper sauce, Worcestershire sauce, sea salt & black pepper.

Bloody Maria £7.5 A classic Bloody Mary enlivened with the fresh, savoury introduction of premium reposado tequila, tempered with whole grain mustard & earthy beetroot. Jose Cuervo Tradicional tequila, fresh beetroot, tomato juice, lemon juice, Tabasco hot pepper sauce, whole grain mustard, sea salt & black pepper.

Light & Floral Glenkinchie Lowland 12yr 43% abv £3.8 The Edinburgh malt. Delicate & slightly floral. Hints of smoke with a malt finish. Auchentoshan Three Wood Lowland 43% abv £4.2 The Auchentoshan distillery was founded in 1825 on the outskirts of Glasgow. Three Wood is matured in American oak bourbon casks, Oloroso & Pedro Ximinez sherry casks producing luxurious malt full of dark fruits & caramel.

Fruity & Spicy Dalwhinnie Highland 15yr 43% abv £3.8 A good introduction to the delights of single malt whisky - elegant, smooth and medium-bodied with a light, fruity palate and a whiff of heather on the finish. Balblair Highland 1989 43% abv £4.5 Balblair choose to release vintages of their whiskies as oppose to age statements. On the palate of the 1989 there are raisins and fruits with a rich spiciness leading to a long, complex & ultimately smooth finish. Springbank Cambeltown 15yr 46% abv £4.5 Springbank is perched on the edge of Campbeltown Loch towards the bottom of the Kintyre peninsula in the West of Scotland. Dried herbs, salty, with hints of moss and toffee-apple.

Rich & Round Balvenie DoubleWood Speyside 12yr 40% abv £3.8 One of the classic after-dinner malts, the extra complexity and richness are a result of a second maturation in fresh sherry casks. Honey, dried fruits & warming layers of vanilla. Dalmore King Alexander III Highland 40% abv £15 Complex, characterful and craved by connoisseurs. Crafted from a harmonious range of differently-aged malts matured in a mixture of French wine casks, Madeira drums, Sherry butts, Marsala barrels, Port pipes & Bourbon barrels.

Full Bodied & Smoky Caol Ila Islay 12yr 43% abv £3.8 A more approachable style of malt from its Islay cousins. Fragrant smokiness, light but still retains power. Bowmore Darkest Islay 15yr 43% abv £4.2 A combination of flavours from vanilla-rich bourbon casks and two years in Oloroso sherry casks tame the smokiness from this velvety Islay malt.

Bunnahabhain Islay 18yr 46.3% abv £4.5 A smooth, slightly sherried dram with all the understated elegance one would expect from the gentlest malt on Islay. The epitome of Bunnahabhain’s soft Islay style. Highland Park Island 8yr 43% abv £7.0 One of our all-time favourites, this has to be one of the most consistently excellent malt whiskies of the last ten years. A stunning balance of smokey dryness with heather & malty tones leading to a notably lingering finish. Shackleton Rare Old Highland Malt 45.8% abv £15 A painstakingly crafted replica of the whisky left in Antartica by Sir Ernest Shackleton during his ill-fated South Pole expedition between 1907 & 1909. A whisper of marmalade, ginger, cinnamon complimented with a smoky finish.

Cigar Matching Punch Coronation £8.5 This fine vitola delivers a superb draw full of floral notes and hints of white pepper in a medium bodied Cuban cigar. Whiskey Recommendation: Ideally matched with a subtle, peated malt we would propose Bunnahabhain 18yo or Talisker Distillers Edition. H. Upmann Coronas Junior £8.0 This small Havana promises to have a good future; attractive, good draw, thick smoke with creamy hints of coffee & some nutty flavours. Whiskey Recommendation: Ideally enjoyed with a spicy Highland malt we would recommend Balblair 1989 or Macallan 18yo. Romeo y Julieta Romeo No. 3 £9.0 Medium in strength and a characteristic Romeo y Julieta style. Robust and complex with floral, nutty & herbal flavours. Whiskey Recommendation: Ideally paired with a sherry finished malt we would suggest Auchentoshan 3 Wood or Dalmore Cigar Malt.
