VooDoo BBQ & Grill set to triple size VooDoo BBQ & Grill, a Louisianabased barbecue restaurant franchisor, is expanding nationally after nearly a decade of successful growth in Louisiana, propelled by an avid customer base hungry for its competitionstyle barbecue. The New Orleans-themed chain is in negotiations with potential franchisees to start large multi-unit expansions in Florida, Texas and in the Northeast. Last month, VooDoo signed a deal with a Greenville, S.C., company to open eight restaurants in the Carolinas and plans to open another location on the Mississippi Gulf Coast. These expansions will at least triple the size of the chain and set the table for further expansion into markets outside the south, such as the Midwest and Northeast. “People love New Orleans style food,” said Tony Avila, VooDoo BBQ’s CEO. “We’ve created a popular niche with our unique approach to fastcasual barbeque and we expect that it

will be very popular in other parts of the country.” VooDoo BBQ specializes in competition-style barbecue, which slowcooks pork, chicken and beef over a mix of hardwoods until the meat is tender. The meat is served without sauce, which customers can add to taste and enjoy along with VooDoo’s award-winning side dishes, which customers often say are as good as the BBQ. VooDoo opened its first location on St. Charles Avenue in New Orleans, a city renowned for its native cuisine but not known for barbecue, on Mardi Gras weekend 2002. Since then, VooDoo has carefully built its brand

and franchise system to encompass 12 locations throughout South Louisiana. New Orleans-themed franchise restaurants have historically done well on a national scale, and VooDoo BBQ and Grill expects to tap into the nation’s fascination with New Orleans and its cuisine. “Many Southerners already eat barbecue regularly,” Avila said. “We think customers in the south will love our New Orleans twist on a food they already love, but we have a tremendous opportunity in places like the Midwest and Northeast as well. Barbecue is one of our national foods. It has universal appeal. Everybody loves barbecue.”

Hotel foodservice reinvents culinary experiences New York, NY - Few industries were hit as hard by the recession as the hotel foodservice market, which saw revenues bottom out in 2009 as consumers and businesses cut back on travel and travel-related expenditures such as foodservice and entertainment. However, the hotel foodservice industry continues to reinvent itself post-recession to offer guests new culinary experiences, according to “Hotel Foodservice Trends in the U.S.” by market research publisher Packaged Facts, such that the moderate market growth experienced in 2010 is expected to continue through 2012. As part of this reinvention, the hotel industry is experimenting en masse with new menu, design and technology concepts that are reshaping how hotel guests experience hotel food and beverage offerings. According to the report, many of the food and beverage trends shaping hotel foodservice postrecession are driven by “changing consumer expectations and needs.” “These trends shape not only how consumers rank the importance of various hotel food and beverage services, but also how the services build on and borrow from each other to integrate into a unique hotel experience that clients will remember and want to come back for,” says David Sprinkle, publisher of Packaged Facts. I want your goat and I am willing to give you three pieces of pottery and an axe. Currency did not come into use for many years after. In today’s economy currency or money is again in short supply and many people have been going back to the original way of buying a goat but with a modern twist. Today we know this method of shopping and paying for goods and services with other goods and services as Barter. There are thousands of barter companies around the country and they all work on the same premise. Businesses join the group and offer their products for sale. You can purchase a goat that another member is offering for a dollar value and pay for it with an equal value of your products. Let’s look at how it works in today’s economy. John’s Restaurant needs a new fryer. John would contact a barter company and join the group. A one time membership fee is usually paid to the barter company. Once John is a member he will have access to the other members of the group and the information about the products they are selling. Most barter groups have websites that allow John to view the offerings and purchase items. After investigating all of the members in the group John finds a used fryer that Michael’s Restaurant Supply is selling for $400.00. In ancient times John and Michael would exchange their offerings and the deal would be completed. In the new barter world Michael and John would agree on a price and would submit information back to the barter company who maintain the balance of trade dollars in each one of their accounts. Let’s

assume both John and Michael have established accounts with 1,000 barter dollars in each one of their accounts. John would transfer 400 of his dollars to Michael’s account and Michael would provide John with the fryer. John’s account is now 600 and Michael’s is now 1400. Just like a checkbook transaction. The barter company charges a fee for the transaction either to the buyer or the seller depending on company policy.



Barter works if you can find the products you need within the barter system you join.

How did John get the 1,000 barter dollars in his account? Steve, Mary, Bill, and many more members came to his restaurant to eat and paid John with their barter dollars which were credited to John’s account. John actually paid for the fryer with his food but did not hand it to Michael directly. Barter works for companies that have a low cost for their products and for selling excess space like a hotel room or seats at a show that hasn’t sold out. Barter works if you can find the products you need within the barter system you join. You don’t want to do more than about 10 percent of your daily business in barter unless you can spend an equal amount. Check on barter companies in your area and the next time you need to buy a goat you’ll be all set up.

The fresh, new menu presents a plethora of American comfort food with a twist, including 1/2-pound, buildyour-own burgers, creative sandwiches, like the Irish Chicken Melt, appetizers and some of the classic Bennigan’s favorites such as the Monte Cristo and Turkey O’Toole. The first new 4,200 square foot Bennigan’s prototype in Wisconsin was built to accommodate 180 seats and includes an impressive patio area featuring a fire pit. Branch Water Tavern Life’s touchstone moments happen unexpectedly. For Chef David Grossman, who spent his childhood immersed in food cooking with his mother and grandmother, it was when a copy of Auguste Escoffier’s Le Guide Culinare fell into his hands. At the time he was studying government at The University of Texas at Austin and working as an entry-level cook to make some extra cash. “My copy is probably from the ‘60s, but it was translated in 1921 from the text originally written in 1907. It details over five thousand different preparations and discusses everything from making stocks to cooking vegetables to braising meats and more,” says Grossman. Immediately impressed with his encyclopedia of French cuisine, he began to cook his way through the book on his days off. “While the foods discussed within this tome could be considered outdated or old fashioned by some, they represent timeless flavor combinations that are delicious, and will always be delicious,” he says. After working two years as an entry level cook, Grossman sought more knowledge and enrolled at the Culinary Institute of America in Hyde Park, New York. During his time at the CIA, he spent an externship with Roland Passot of La Folie in San Francisco, gaining a tremendous appreciation for using only the finest ingredients, while mastering solid French cooking techniques. Upon graduating top in his class from the CIA, Grossman signed on with Alfred Portale at Gotham Bar & Grill in Manhattan. There he learned unwavering consistency, preparing more than 400 dinners a night in Chef Portale’s intricate style. Next, at Restaurant Oceana, Grossman sharpened his seafood skills while working under Chef Cornelius Gallagher, learning the importance of meticulous attention to
