I love the challenge of adapting recipes to what is grown and produced locally. I had a hankering for fondue at Christmas. Would that require imported cheeses and non-local wine and kirsch? I googled for recipes and happened upon this cheddar-beer fondue. Local cheddar, local microbrew... and potatoes, carrots, apples and locally made bread and bagels for dipping. 1½ tbsp. butter 1½ tsp. minced garlic 1½ cups beer or nonalcoholic beer (I used Long Trail IPA) 6 cups (24 ounces) shredded local cheddar cheese 1½ tbsp. all-purpose flour 3 to 5 tbsp. half-and-half cream Dash or two of Worcestershire sauce In saucepan, sauté garlic in butter. Stir in beer. Bring to a boil, then reduce heat to medium low. Toss cheese with flour; stir into saucepan until melted. Stir in 3 tablespoons cream and a dash of Worcestershire sauce. Transfer to a fondue pot or 1½-quart slow cooker. Keep warm and add additional cream if fondue thickens. Serve with bread or bagel cubes, chunks of cooked potato or carrots. Raw apple chunks, broccoli or cauliflower are other possibilities. 69

Place the thighs in a zippered plastic bag, gallon size, with the mustard, hoisin sauce and tamarind. Zip the bag and massage to evenly mix the marinade and coat the chicken. Marinate in the refrigerator for several hours or overnight.

Preheat oven to 350 degrees. Remove the chicken from the bag and place it in a baking dish with the marinade and bake for an hour, basting and turning the chicken several times. Remove the chicken from the baking dish, and skim off the fat from the sauce. Return the chicken to the baking dish with skin side up and baste with the sauce. Place the chicken under a hot broiler for several minutes or until the skin crisps and turns mahogany in color. Serve warm.

This is our most requested recipe - the scones are light and served best warm with butter, clotted cream and a variety of jams. 2 cups flour 1⁄3 cup sugar ½ tsp. salt 1 tbsp. baking powder 1½ cups heavy cream (or a little more)

Mix the dry ingredients — add dried fruit, ginger or whatever. Make a well in the center and add the cream. Mix gently with a fork. Add a little more cream if necessary. Scoop scones onto parchment lined baking sheet. Bake at 400° for 15 minutes.

Courtesy of Hilary Pridgen, Trumbull House Bed & Breakfast, Etna, N.H. 3 eggs 3 tbsp. water 1 tbsp. oil 1 small diced plum tomato Fresh basil ¼ cup Brie cheese Place oil in hot 8-inch omelette pan. Scamble eggs with 1 tablespoon of water. Add to pan. Heat eggs pulling to center with spatula until eggs start to set and flip in pan. Place diced tomato, fresh basil and brie cheese on half of omelete and fold over. Add 2 tablespoons of water to clear side of pan and cover. Heat until steam causes omelette to rise for approximately two minutes. Garnish with basil, tomato and orange slices. Trumbull House omelettes are made with fresh local eggs from Muscle in Your Arm Farm, owned by John and Lisa Richarson, in Etna, N.H.
