ARCHIE MCLAREN FOUNDER & CHAIRMAN CENTRAL COAST WINE CLASSIC Avila Beach & Big Sur, California Archie McLaren is no stranger to the world of fine cuisine and rare wine. He is the founding Bailli of the Central Coast Chapter of the Confrerie de la Chaine des Rotisseurs, a member of the Wine & Food Society of San Francisco, the San Francisco Chapter of the Confrerie des Chevaliers du Tastevin and the Marin County Chapter of the International Wine & Food Society. He is the former Cellarmaster of the Avila Bay Wine Society, and the former President of the Central Coast Wine Society. Archie has served as Chairman/Executive Director of both the San Luis Obispo Vintners & Growers Association and the Paso Robles Westside Grand Crew. He is one of only two Americans inducted into the Austrian Wine Brotherhood, and one of the few Americans inducted into the Commanderie des Bontemps - Medoc et Graves & Sauternes et Barsac of Bordeaux in France. He has recently joined the Wine Committee of COPIA, the American Center for Wine Food & the Arts. Archie has long been associated with charitable wine auctions. Not only did he serve for many years as the American Institute of Wine & Food’s Rare & Fine Wine and Auction Consultant, he also served as a Director on its National Board. He is the Founder & Chairman of the Central Coast Wine Classic, a prestigious and comprehensive food and wine event, held each year in July and in its twenty-third year, which boasts Wine Spectator among its many significant sponsors. With revenues exceeding $1,000,000, the Central Coast Wine Classic is one of America’s most successful charity wine auctions. The Central Coast Wine Classic not only promotes the wine, culinary and hospitality industries, it also confers substantive proceeds upon a continually expanding number of healing, performing and studio arts organizations on the Central Coast of California. Archie has assisted in launching charity auctions in Washington, D.C., Honolulu, Santa Monica, Los Angeles, Mendocino, San Diego, San Francisco, Santa Ynez and Santa Barbara. His partner in life, Carissa Chappellet, an owner of Chappellet Winery in the Napa Valley and the winery’s ambassador, and he have served as Chairs of the WYES Public Television Auction in New Orleans and are frequent donors to charitable wine auctions throughout the United States. In addition, with Brian Talley, he co-founded the extremely popular World of Pinot Noir. Recently, he directed and was the auctioneer for the Pinot Plus Auction, the Carneros Wine Alliance’s inaugural Carneros Appellation wine and lifestyle tasting and auction. Archie is frequently invited to attend tastings of rare and collectible wines throughout the country and has participated in comprehensive vertical tastings of Chateaux d’Yquem, Latour, Cos d’Estournel, Leoville Las Cases and Cheval Blanc, as well as La Tache, Hermitage La Chapelle, Penfolds Grange, Vega Sicilia Unico, and Beaulieu Vineyards Georges de Latour Private Reserve, among a number of others. A long-time Champagne aficionado who has attended many tastings of rare Champagnes, he was Founder and Director of the International Festival of Mèthode Champenoise. On San Luis Obispo & Santa Barbara Public Radio KCBX, Archie has hosted a fine wine program, the Wine Drinker’s Guide to Indulgence, for twenty-three years, and has been a writer on fine wine for Adventure’s in Dining, the San Luis Obispo Telegram-Tribune, New Times and Santa Barbara Magazine. His education includes a Bachelor of Arts degree from Vanderbilt University, a Juris Doctor of Law degree from the University of Memphis, and post-graduate studies in Humanities, English Literature and International Marketing at various universities. Archie McLaren is involved in an array of civic activities, both in the arts and in the community in general. He has received the San Luis Obispo Visitors & Convention Bureau’s Annual Tourism Award. He has twice served as the President of the Board of Directors of the San Luis Obispo Mozart Festival, and as a member of the Board of the San Luis Obispo County Arts Council. He was the Chairman of the Avila Beach Front Street Enhancement Committee that designed the promenade and park for the rejuvenation of the community of Avila Beach and is now the Chair of the committee that approves new projects for Avila Beach prior to their being approved at the county level. His many accomplishments have resulted in his continuing inclusion in Who’s Who in Media & Communications, Who’s Who in the West, Who’s Who in America and Who’s Who in the World. Archie McLaren and writer, painter, photographer, musician, adventurer, Carissa Chappellet, live in Avila Beach, Big Sur, and Napa, California, where they enjoy hiking, bicycling and a variety of water and court sports, as well as raiding their wine cellar for special occasions with family and friends.

LARRY SHUPNICK FOUNDING DIRECTOR CENTRAL COAST WINE CLASSIC Avila Beach, California & Washington, DC

When the idea of the Central Coast Wine Classic was forming in the mind of Archie McLaren in the early 1970s, Archie knew that it would take a few special individuals to make the concept a reality, and the first person on that list was Larry Shupnick, who was considered to be the county’s foremost gourmet and wine collector. So Archie asked Larry to be the auctioneer for the first Wine Classic “Trial” Auction, and the rest is history! The Wine Classic evolved and grew to the success that it is today, and likewise Larry continued to expand his interest in food and wine. A hotelier in Avila Beach at the time of the Wine Classic’s founding, Larry has most recently been the Senior Vice President of Development and Acquisitions for MeriStar Hospitality Corporation (NYSE: MHX). MeriStar Hospitality Corporation owns 76 hospitality properties with more than 21,000 rooms in 22 states and the District of Columbia. Prior to joining MeriStar, Larry was the Senior Vice President of Development and Acquisitions for Interstate Hotels & Resorts, the operator of 73 of MeriStar’s hotels. Larry has served in this capacity since he merged his company, Laral Hotels, with CapStar Hotel Company in 1990. Prior to joining CapStar in 1990, he was President of Laral Hotels, a hotel management and ownership company, which he founded in 1970. His prior career was with Sheraton Corporation, Hilton Hotels Corporation, Schine Hotels, and Recion Corporation. One of America’s foremost gourmets, and recognized internationally as such as well, Larry is a member of the Chevaliers Du Tastevin, the Brotherhood of the Knights of the Vine and the Ordre Des Coteax De Champagne and serves as the Bailli Delgue Honoraire for the Chaine Des Rotisseurs. He also continues to be a Wine Judge at the Los Angeles County Fair, where he has judged for many years. Larry is active in various community services serving on the President’s Roundtable at California State Polytechnic State University San Luis Obispo. He is a member of the Board of Advisors for the Collins School of Hospitality at Cal Poly Pomona, a member of the Board of the San Luis Obispo County Sheriff’s Advisory Council, as well as a Founding Director of the Central Coast Wine Classic and is substantively involved with several local charities. He is also a member of the California Hotel and Lodging Association and the American Hotel and Lodging Association. Larry Shupnick has been an integral and invaluable part of the Central Coast Wine Classic since its inception, donating, participating and offering sage advice, for all of which we are truly grateful. It is always a distinct pleasure to share our mutually orchestrated festivities with him.

Guests are on a terrace that views La Casa Grande, the Greco-Roman swimming pool and the Santa Lucia Mountain Range. The following extremely creative individuals are our sustaining Commemorative Artists, whose works are presented for your edification at the Wine Classic Auction, three of which are manifest not only in their original form but are also etched and hand-painted on large format bottles by our sustaining Commemorative Glass Artist, Candice Norcross.

JAMES-PAUL BROWN Carpinteria, California

“James-Paul is a sensitive and caring recorder of intimate sights and events. His paintings are lyrical. As in lyric poetry, the poetry, the art results from a rapid outpouring of intense personal feeling. Intuition and spontaneity rule.” —Michael Zakian, Director, Frederick Weismann Museum of Art Neo-impressionist artist James Paul Brown melds the broad brushwork and vibrant colors of Van Gogh with the ethereal strokes and pastel shades of Monet to produce enchanting, passionate masterpieces. A renowned painter, radio entrepreneur, wine aficionado and marathon runner, his life resembles a colorful palette, capturing the beauty and adventure of the human spirit. His broad range of subjects includes Hollywood celebrities, famed athletes and world leaders, as well as favorite cities, landscapes and vineyards. Although James Paul first discovered his artistic talents at the age of eight after taking lessons from a neighborhood artist in Indiana, it was not until the 1970’s that his treasured hobby would become a passion. Living at the time in Malibu, California, and painting as a means of escape from an unpleasant conclusion to his marriage, he began to discover a new perspective on life and experience a personal renaissance. As a result, his artwork evolved in to the impressionist style for which he is now revered. In 1980, living in Venice, California, his first art exhibit at Venice’s renowned West Beach Cafe was a sell-out. From that point, his art career took off, leading to relationships with New York’s Ballanchine Ballet, the Los Angeles Ballet, and Russian companies, the Bolshoi Ballet and the Kirov Opera. In 1982, CBS Sports hired James to capture the World Games in Canada and the 1983 Pan American Games Venezuela, while NBC sent him to England to paint the 1985 Wimbledon Games. His love for sports has resulted in paintings and sculptures for the ‘84 and ‘96 Olympics and the Americas Cup. Last year, he journeyed Monte Carlo, where he was the official artist for the Monaco Grand Prix. Most recently, he was commissioned to paint his impressions of the 2006 Olympic Games in Torino, Italy, and the 2006 Cannes Film Festival, as well as by European Television to paint the portrait of Nelson Mandela. James was also commissioned to paint the Inaugural event portraits of Presidents Reagan, Bush and Clinton. Many of his subjects are selected based on their talents and personal achievements, with portraits including James Dean, Alex Trebek, Mark McGuire, Carl Lewis, Julia Child, David Bowie, Marilyn Monroe and Thelonius Monk, to name but a few. Today, James-Paul’s art work continues to reach new levels of inspiration and admiration. As a bon vivant and wine aficionado, his passion has led him to create wine labels, first for other vineyards and now for his own wine, Artiste, which is now seen in such notable New York restaurants as Café des Artistes and Tavern on the Green. James’ art appears in many private collections in the United States and abroad, including those of Clint Eastwood, Robert Altman, Joan Kroc, Mrs. Anwar Sadat, Elton John and Hank Aaron. For many years, James-Paul has donated works to charitable causes, such as the Children’s Hospital and Cedars Sinai Hospital in New York, the American Cancer Society, Easter Seals, and of course the Central Coast Wine Classic. James and his multi-talented wife Juliet, who is a subject of many of his paintings, now live in Carpinteria. ROBERT BURRIDGE Arroyo Grande, California

Robert Burridge embodies the Central Coast symbiosis of “laid back” and “very energetic.” He is an exciting and lively artist who leads an exciting and lively career with an impressive resume of credits to his name, and the Central Coast Wine Classic is fortunate and proud to hold Bob as one of its Sustaining Artists. He is the first artist featured on Starbuck’s Commuter Mugs; he was selected as the Official Artist for the 2001 Sausalito Art Festival; and as the Official Pearl Vodka Artist, and his “Three Cheers America” is featured on the hang tags of every bottle. Named by the LA Times as one of California’s top ten artists, Robert is a winner of the prestigious Philadelphia Water Color Society Gold Medal, previously won by Georgia O’Keefe, Andrew Wyeth and Pablo Picasso. His work even appears on a billboard in Santa Maria on US Highway 101, touting our local wine country. Hollywood has become another avenue for Bob; he has created 12 huge abstract paintings for the film “Dean Quixote,” and he is working on illustrating a book written by one of the directors of the TV show “Just Shoot Me.” Burridge was honored as the 1st Place Award winner for his Abstract paintings at the prestigious “Affair in the Gardens,” in Beverly Hills, California. His poster design, “Party of the Arts” for the 2001 Sausalito Art Festival, was named the top poster of the year by Sunshine Artist Magazine. He is currently represented by Gallery Carla in San Francisco and also exhibits his work in Murphys, Manhattan Beach, Tampa, Maui and Australia. Locally, Burridge’s work can be seen at McConnell Gallery in San Luis Obispo and the David Ryan Gallery in Old Orcutt. YUROZ

Camarillo, California On March 30, 1853 the art world would change forever with the birth of Vincent Van Gogh. On March 30, 1956 the art world would change again with the birth of Yuri (YUROZ) Gevorgian. The story of Yuroz is as compelling as his art. Yuroz is literally and figuratively the artist of the people. Lovers, musicians, poets, athletes, the homeless and refugees fill his canvases, drawing forth the spectrum of emotions and moods that reside deep in the human soul. Yuroz’s amazing ability to bring this soulful human quality to fruition through his art stems from his own life experiences. A child prodigy born in Soviet Armenia in 1956, Yuroz was only ten years old when he entered the renowned Akop Kodjoyan School of Art in the Armenian capital of Yerevan. After graduating with honors, Yuroz gathered up his incredible talents and entered the Yerevan University of Art and Architecture, where, at the age of twenty, he was considered one of the worst art students in the history of the school. After departing the school and becoming a successful architect, for seven years he attempted to escape communist held Eastern Europe to come to the freedom of the United States. Those seven years imbued him with a compassion and understanding for all refugees seeking new homes and fresh beginnings. Finally, upon arriving in America and after struggling for years to achieve and enjoy the freedom America offered, at the age of thirty, he found himself homeless in the land of opportunity. Even though he had no home, hope was his constant companion, and Yuroz continued to create art with the supplies of the streets. Napkins and cardboard were conjured into canvas, and discarded pens were transformed into

paintbrushes. He became the focus of a feature story in the Los Angeles Times whose purpose was to assist the homeless. Yuroz’s Los Angeles street friends were portraits filling the gallery of his mind with the beauty and simplicity of life. Like the refugees who would later populate his United Nations mural, Yuroz was able to capture the survivor mentality of his homeless brethren when they made their way onto canvas, a reflection of his own burning desire to create art in his new home. With the success of this early “Hollywood Boulevard” series, Yuroz was walking his dream path. At the age of 40 he was recognized as a Living Master with several museum shows under his belt. The Coral Springs Art Museum in Florida, The Museum of Contemporary Art in Hot Springs Arkansas, The Fuller Arts Museum in Brockton, Mass, The Oregon Museum of Science and Industry, The Anchorage Art Museum, The Fine Arts Museum of Long Island, and others. Since that time, Yuroz’ art has reached new heights and continues to climb. But even with all of his growth and success as an artist, Yuroz has never lost sight of his own humble beginnings, and he has donated the proceeds from a variety of originals and limited editions to numerous causes and foundations. Charities around the globe have thanked him for his countless donations that have raised money and awareness for their causes. In 1995 he created “The Harlequin’s Gift” for Comic Relief, an organization that alerts audiences to the growing American homeless population. Also, 2001 marked the fourth consecutive year that Yuroz will be the official artist for the Suzuki Rock ‘N’ Roll Marathon in San Diego, and he has on several occasions created an original oil for sale at auction to benefit the Leukemia Society of America, for whom he has personally raised over a million dollars with his artistic contributions. At the age of fifty, in January 2000 Yuroz was chosen by the United Nations to be the official artist for their 50th anniversary stamp honoring refugees worldwide. The stamp has been released in over 150 countries. In November his stunning five-panel mural was unveiled at the Jacob K. Javits Convention Center in New York City. Through this mural we can see the grand panorama of Yuroz’ vision, where individual and racial differences slide away, and the courage of refugees and humanity as a whole is brought to the surface. His magnificent testament to human courage will ultimately be sent to the General Assembly Building in Geneva, Switzerland, to be installed permanently as a part of their collection. In 2001, Yuroz met with the Pope about a ceiling painting project for an Armenian Church in Glendale, California, a concept which was given the Pope’s blessing. The National Ad Council chose him out of millions of people in the United States for their Freedom campaign which ran from September 11, 2005 until September 11, 2006. This summer Yuroz met with Cardinal Renato Raffaele Martino of the Vatican regarding the world tour of the Human Rights Mural and his vision for raising awareness around the world with this project. Yuroz is currently awaiting a date for the unveiling of the mural at the Vatican. Even with such momentous events in his life, Yuroz never forgets the small joys of sounding our feelings and moods through his art. A producer who was once in the studio to interview Yuroz for a national commercial experienced his signature “art massage,” which involves drawing on the clothing people are wearing. When Yuroz finished his “massage,” the producer was left speechless by the finished product on the back of her T-shirt. Loss of speech is a common reaction to Yuroz’ art. We are stunned by the human quality captured in such a simple way, and words cannot express the emotions Yuroz stirs in our souls. How exceedingly fortunate we are to have such a special and wonderful human being and artist as a substantive part of our Wine Classic aesthetic presentations. Yuroz projects a wondrous energy, and those who are so fortunate as to be in his presence, always leave with at least a brush stroke or more of that good energy. This is Yuri’s seventh year presenting his extraordinary art at the Central Coast Wine Classic. He has become a Sustaining Artist in every sense of the term. Arroyo Grande, California For virtually the entire history of the central Coast Wine Classic, many of our Wine Classic Honoree awards have been created by a very special local artist, Tim Lloyd of Arroyo Grande. Tim is certainly no stranger to the Central Coast wine industry, as he is the former winery manager at Edna Valley Vineyard. Tim has, for twenty-two years, created extraordinary sculptural art works that have been awarded to our Wine Classic Honorees. They now rest in the hands of such luminaries as Maynard Amarine, Jacques Pepin, Jack Niven, Narsai David, Remington Norman and the late Richard Graff, as well as in the private collections of a select group of collectors. Tim earned his Bachelors Degree in Art from California Polytechnic University in 1981, and he went to work for Edna Valley Vineyard the following year. His twenty years in wine production and his artistic abilities landed him the wondrous commission of Chalone Wine Group, during that time partners with Edna Valley Vineyard, of a stunning, nine-foot high “Cellarman” which graces the front of the company’s corporate headquarters in Napa. The original Cellarman sculpted piece was created for the Wine Classic and presented to Paragon Vineyard owner and Edna Valley Vineyard partner Jack Niven at the Inaugural Wine Classic in 1985, the same year that Tim created and presented his wonderful Bacchanalian fawn to Dick Graff. Jim Clendenen, David Breitstein, Dan Gulbronsen and Archie McLaren are now proud possessors of Tim’s fauns. These works embody the fact that, as an artist, Tim has an individual style and an ability to capture just the right mood, serious or whimsical, thoughtful or playful. Whether the piece is realistic or stylized, Tim’s works are a blend of fine lines, bold textures and exquisite craftsmanship, reflective of the inspiration for his creations, his appreciation for fine wine and food. We, in turn, appreciate the many offerings of Tim Lloyd’s creative artistry for our special honorees over the years, including some of this year’s honorees. In fact, this year’s Tim Lloyd artistic offerings are particularly appropriate to our wine and culinary honorees, as they embody much of the wine and culinary aura surrounding each. CHAPPELLET WINERY PRITCHARD HILL St. Helena, California

As one of the very first wineries to attend and support the Central Coast Wine Classic, Chappellet Winery manifests the extremely strong support of wineries of the Napa Valley for our event here on the Central Coast. It is, therefore, most appropriate to honor their commitment to the production of the highest quality level of fine wines and their commitment to the Wine Classic by recognizing the winery as a Fine Wine Honoree for our 23rd Annual Wine Classic. The Chappellet's’ romance with Pritchard Hill started when Donn and Molly Chappellet first glimpsed its spectacular vistas. Perched 1,200 feet above the floor of the Napa Valley, the atmosphere at the Chappellet family's winery and Pritchard Hill estate vineyards is serene and peaceful. You can't help but fall in love with the breathtaking views and the gentle mountain where Donn and Molly Chappellet made their home. The Chappellet family has been crafting world class wines from their Pritchard Hill estate vineyards since 1967. Spurred by the notion that Bacchus loves the hills and that mountain fruit would make superior wine, Donn and Molly followed the advice of legendary winemaker André Tchelistcheff and settled on the rocky eastern slopes of the Napa Valley. The Chappellets were the first to plant vineyards exclusively on high elevation hillsides and the second winery to be established in the Napa Valley after Prohibition. The family has been farming its mountainside for forty years and learning each year from the vines. When they purchased the land in 1967, there was a small newly planted vineyard in the middle of the rugged densely forested hills. Donn and Molly knew little about growing grapes, but working in the vineyard themselves those first few years gave them an appreciation of the varied soils and multifaceted terrain. None of it was easy. Rocks, fist size to boulders, were ever-present especially during cultivation or planting. Many broken shovels, disks and aching backs later, the entire original vineyard has been replanted. Now large boulders grace Molly’s boulder garden amidst her stunning flower garden adjacent to their home, thereby uniquely creating a serene and lovely place of repose. Over the years the Chappellets have concluded that Pritchard Hill, with its steep slopes, rocky volcanic soil, ideal sun exposure and cooling evening breezes, is ideally suited for all of the Bordeaux varietals. Chappellet’s dramatic Pritchard Hill estate vineyards, 110 acres planted in Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec and Chenin Blanc, rise from 800 to 1,800 feet above sea level. Known as “Napa’s Grand Cru,” Pritchard Hill has established itself as one of the world’s great Cabernet Sauvignon and Bordeaux varietal growing regions. Nearly forty years of farming the slopes of Pritchard Hill have enabled Chappellet to learn the growing conditions and challenges presented by each vineyard block and how to use the distinct characteristics of their mountain fruit to produce truly extraordinary wine. In the last twenty years, viticultural innovations such as more attention to row direction, closer spacing, better trellising systems and more than ten different root stocks and clones have contributed to a more productive vineyard and grapes that reflect this unique site. The foundation of Chappellet winemaking program is focused on creating extraordinary age-worthy Cabernet Sauvignon that expresses the unique characteristics of the fruit from Pritchard Hill. The rugged terroir of Chappellet's vineyards produces wines with great intensity and finesse, qualities that define the world's finest wines. For four decades Chappellet's wines have received high praise from wine critics and have been sought after by the world's premier collectors. Recently, high praise has been accorded the Chappellet Cabernets of 1969, 1970 and 1971, and also the recent Cabernets of 2001, 2002, 2003 and 2004. Chappellet most definitively continues to be on the wine collector radar screen. Two generations of Chappellets work side by side running the business, with generation three coming of age and beginning their internships. Lygia’s artwork has enhanced the visual images from Chappellet. Cyril heads up the marketing and sales, while Jon-Mark works side by side with Winemaker Phillip Corallo-Titus and vineyard manager Dave Pirio. Carissa is known as the “Ambassador at Large,” traveling the country doing wine symposia, trade tastings and charity wine events. Alexa is raising her three children in southern California but still lends a hand with wine dinners and tastings. Dominic has become the company computer guru and is currently creating digital documentation of winemaking on Pritchard Hill. Winemaking at Chappellet is focused on capturing the intensity of the fruit to create wines with great strength and finesse. Winemaker Phillip Corallo-Titus handles the grapes with great care, gently processing them as little as possible and using fermentation and cellaring techniques to preserve the distinctiveness of Chappellet's mountain fruit. Phillip is quick to give credit to 20-year vineyard manager, Dave Pirio, for the extraordinary care given in the vineyards that results in the grapes that produce the winery’s world renowned wines. The Chappellet family takes pride in being stewards of the land. Sustainable farming practices have always been important at Chappellet to ensure that their land is healthy for their vines, the family and their employees. They use organic farming techniques such as nutrient-rich cover crops, bird boxes and compost tea in irrigation to help prevent infestation of microscopic pests and diseases in an environmentally responsible way. In fact, the vineyard was one of the first in Napa Valley to utilize a permanent cover crop to create a balanced environment for insects and for erosion control. It is a pleasure and an honor to recognize such a world-class wine property, its extraordinary wines and its equally extraordinary people, and to thank them for continuing to be such a substantive part of the Central Coast Wine Classic.

Chef Rick Manson has long been one of our strongest and most faithful and generous supporters. Whether it is donating auction lots, participating in and hosting cooking demonstrations or presenting a marvelous luncheon for the Wine Classic Auction, Rick is continually generous and enthusiastic; one might even say effusive. Rick always brings a great and good energy to whatever proceedings he joins.

Rick is a Southern transplant who has found not only his home in California, but his new family as well. Our Wine Classic family has for many years been the beneficiary of his thoughtful largesse. Rick has always risen to the occasion to assist us, no matter what the situation or circumstances, and we are most grateful to him. The up-tempo American cooking prepared by one of the Central Coast’s premier chefs, Rick Manson, is a blend of Southern Louisiana, Southwest, and Southern California influences, seasoned with a hint of rhythm and blues, a splash of color, and a touch of irreverence. Rick, the son of the truest food America ever produced, African American funk, Spanish-Mexican sizzle and the bouillabaisse of Southern California-whipped it all together into a stylish soul souffle’ and placed it in a setting like no other. Even though he was doing it in a strip mall in Orcutt, Rick was being one of the quintessential American chef’s of his generation. He developed his multi-ethnic approach to cooking at the century-old King and Prince Hotel on historic St. Simons Island, Georgia. During the ten years that Rick was Executive Chef, the King and Prince Hotel’s restaurant was consistently voted one of Georgia’s top ten restaurants by Georgia Trend Magazine and Brown’s Guide to Georgia, and was awarded Four Diamonds by the AAA Tourbook and Four Stars by the Mobil Travel Guide. Chef Rick’s consistently earns “Best Restaurant in Santa Maria” award in the Santa Maria Sun. Central Coast Magazine says “thank goodness for something different and intriguing.” Rick has been named the 2007 Central Coast Wine Classic Culinary Honoree by Founder and Chairman Archie McLaren. Selected for his indefatigable support and enthusiasm in furthering culinary excellence on the Central Coast, Archie has said of Rick, “the guy is a prince.” We are most fortunate that he managed to wend his way to the Central Coast. His colorful and vibrant restaurant, Chef Rick’s Ultimately Fine Food, which he opened in 1989, is a perfect stop between Santa Barbara and San Luis Obispo, both as a gourmet break from the highway, and as a serious culinary destination in its own right. The ubiquitous sounds of blues music, Rick’s favorite, seem to fit perfectly with the ambiance and cuisine. DAVID & JUDY BREITSTEIN DUKE OF BOURBON Canoga Park, California

David and Judy Breitstein’s history with wine and spirits begins at a time when the wine industry in California was at the beginning of what could be termed a Renaissance of fine wine growing and producing that continues through today with no end in sight. In the late 1960s, the Breitsteins dedicated themselves to meeting the California winemakers at the tip of the crescendo that was to come. They became friends with and sold the wine of the new guard, Heitz, Mondavi, Chappellet, Ridge and others. They became friends and family with the vintners. Their respect for the wine people and their products was obvious, and their enthusiasm generated much interest in the consuming public in Los Angeles. Ultimately as other wine areas began to emerge, David and Judy reached out again and again, meeting and encouraging the wine community and touting its products to a demographic audience that had unknowingly been waiting for, but not necessarily anticipating, wines that would challenge the best that France had to offer. The Duke of Bourbon found those wines and presented them to a quality oriented consumer base. Along the way, they became a part of the family of the Central Coast, initially by coming to the Central Coast Wine Classic, where they have missed only one year in the last twenty, and then seeking out vintners and their products on their own. During their association with the Wine Classic, David became an extremely valuable resource to assist in growing the event, as he became one of the Steering Committee Co-Chairs and served in that capacity for many years. In addition, the Duke of Bourbon formed “Team Duke,” a group of enthusiastic patrons who for years sustained the Wine Classic with donations and winning Auction bids, several times combining for over $50,000 in winning bids. The Breitsteins today remain one of the greatest all-time supporters of the Central Coast Wine Classic and the wineries of the Central Coast, and it is, therefore, most appropriate that we recognize David and Judy Breitstein and the Duke of Bourbon as a 2007 Central Coast Wine Classic Fine Wine Honoree and thank them for their steadfast support of our endeavors. A history of their extremely successful business follows: Started the DUKE OF BOURBON in Canoga Park, California (a suburb of Los Angeles) with the intention of retailing rare vintage wines and becoming involved in the expected growth of premium California wines. Began visiting California wine country, seeking out the finest wineries and establishing both business and social relationships with winery owners and their families. Felt that this was extremely important in order to be involved in the concepts of wine styles as well as marketing.

Became known as the first major independent retailer in Los Angeles area to merchandise small California wineries. First publication of store newsletter, VINE-LINE. Formed Canoga-Northridge Chapter of Les Amis du Vin, which was considered by most wine industry professionals and consumers to be the finest chapter in California. Through this group, developed many unique formats for wine events. David has appeared on Los Angeles radio and television programs speaking about all aspects of wine. He has lectured at UCLA Extension, several national wine conventions, wine groups, corporate business and charity functions, and has been featured in many newspaper and magazine articles throughout the country. Developed the Chaparral wine label with wine produced by Chalone Vineyard; later produced by Au Bon Climat winery. Founded WINE CONCEPTS creative wine marketing company, to continue close working relationship with California wineries to map out detailed marketing plans. Created and conducted several classes for Sonoma State University titled, “Wine Marketing Seminars: Developing a Strategy for the Marketing of Premium Wines.” Founded The Wine Association of the Duke of Bourbon, one of California’s largest wine appreciation seminar groups. Celebrated 20th year of retailing fine, rare wines with the release of special anniversary wine: Louis M. Martini 1985 Special Selection Cabernet Sauvignon, Duke of Bourbon 20th Anniversary Cuvée. With the Louis M. Martini Winery, jointly created the Louis M. Martini 1986 Special Selection Zinfandel, Celebration Cuvée to commemorate the 150th anniversary of the planting of wine grapes in Napa Valley. David was speaker and panelist for “Investing in Fine Wine” seminar at Meadowood Resort in Napa Valley, California. Chosen by Market Watch Magazine, a Wine Spectator publication, as one of 12 top retailers in the U.S.A. for 1990.

There are now a number of exceptional producers of fine wine on the Central Coast of California. In the past, we have recognized vintners such as pioneer Richard Sanford, whose initial steps into the production of wine were taken in what is now referred to as the Santa Rita Hills area of the western Santa Ynez Valley in Santa Barbara County. Fortunately other vintners with a vision have followed Richard’s lead and established superb vineyards and made world-class wines in that terroir. The resultant wines have much enhanced the reputation of the Santa Rita Hills terroir and have afforded those who are Chardonnay and Pinot Noir aficionados much for which to be thankful. Melville Winery is a perfect example of such a property. In 1989, Melville Vineyards, a family owned and operated enterprise, was founded in Sonoma County’s Knights Valley, where Ron Melville, a successful businessman, and the founder of Melville Vineyards, grew up with a love of gardening, a passion he shared with his father. Ron grew high quality, much sought-after Chardonnay, Merlot, and Cabernet Sauvignon. Ron also developed a love of good wine and began collecting it during college. While he pursued a successful career in finance as a member of the Pacific Stock Exchange, he knew his love of gardening and wine would keep alive his dream to develop his own vineyard. Melville Vineyards is the realization of Ron’s Dream. In 1996, Ron’s desire to grow Pinot Noir and Chardonnay brought Melville Vineyards to Lompoc’s Santa Rita Hills, where Ron and his sons Brent and Chad decided to develop their estate vineyards and winery. Since then, they have also developed an interest in Rhone varietals, particularly Northern Rhone Syrah and Viognier. The Melville estate achieves quality through the integrity of its farming practice and its respect to the microclimate. The Melvilles believe that a fine wine begins in the terroir or microclimate of a vineyard. In the vineyard, terroir encompasses soil type and geographic factors which may influence the quality of wine. This is indicative of the Melvilles’ decision to grow wine in the Santa Rita Hills (AVA) appellation. The Santa Rita Hills appellation’s microclimate, which is characterized by cool temperatures, prominent coastal winds and foggy mornings, is known to be viticulturally suited to growing Burgundian grape varietals such as Pinot Noir, Chardonnay and Northern Rhone Syrah. The cool temperatures prolong the growing season which allows grapes longer hang time on the vines and heightened varietal flavor intensity. The soil is predominantly Lompoc dune sand, with various blocks possessing clay loam with shallow hard pans of Monterey shale. The cooling fog, along with calcareous rock and sand, helps produce grapes with natural acidity and flavor balance. This microclimate distinguishes Santa Rita Hills from the rest of Santa Ynez Valley as a premium region for cool climate

fruit. In September 2003, Wine Spectator magazine presented a feature article on the distinctive Santa Rita Hills appellation. Currently, Melville has 139 acres planted with 255,000 vines of Pinot Noir and Chardonnay, and two Rhone varietals, Syrah and Viognier. There are fourteen different clones of Pinot Noir, nine different clones of Syrah and six different clones of Chardonnay all grafted on a variety of low vigor rootstocks. Pinot Noir, Chardonnay and Northern Rhone Syrah are the winery’s primary focus. The family also has 100 acres on Verna’s Vineyard in Cat Canyon, two miles North of Los Alamos in the Santa Barbara County Appellation, which is primarily dedicated to Chardonnay, Pinot Noir and Syrah. The Melville team is an extraordinary one, with Ron’s sons, both of whom were instrumental in realizing the Melville vision, playing large roles in the present and the future of the business. Brent Melville manages Verna’s Vineyard; Chad Melville manages Santa Rita Hills Vineyard, and heralded winemaker Greg Brewer crafts the Melville wines, which are highly allocated. The grape production is currently supplied to such prestigious Santa Barbara wineries as Bonaccorsi Wine Company, Brewer-Clifton, Jaffurs Wine Cellars, and Whitcraft Winery. It is a great pleasure to recognize the Melville family for its remarkable accomplishments in grape growing and fine wine production.

JAMIE DAVIES AND HUGH & MONIQUE DAVIES SCHRAMSBERG VINEYARDS Calistoga, California

In 1862, Jacob Schram, an émigré from Germany, established Schramsberg as the first winery on the hillsides of the Napa Valley. Vineyards replaced scrub oak on the high slopes, and a network of underground cellars was tunneled into the hillside. Upon discovering the long-neglected property, Jack and Jamie Davies believed that this venerable property was the ideal location to live their dream of producing Mèthode Champenoise Sparkling Wine that would be on an equal level with the great Champagnes of France. As a consequence, beginning in 1965, Jack and Jamie dedicated Schramsberg solely to creating premier sparkling wines, using the traditional Mèthode Champenoise procedures. Many Champagne aficionados would agree that the Davies’ dream was realized and that Schramsberg is not only a product of exceedingly high quality, but is among the best Champagne-style wines in the world. From the very beginnings of their venture, Schramsberg created and implemented innovations that have remained a part of the production operation at Schramsberg, including the following: First to use Chardonnay for champagne; First to vintage-date Blanc de blancs; First to vintage-date Blancs de Noir; First to release a Vintage Reserve champagne; First to release a cremant-style champagne, a dessert-style wine that has half the atmosphere of pressure of most conventional champagne. Schramsberg became extremely visible on the wine world map in 1972, when the late President Richard M. Nixon served the 1969 Schramsberg Reserve to China's Premier, Chou-En-Lai, at a State dinner in Beijing. J. Schram, the winery’s prestige cuvee, was launched in 1992, and was later served to those in attendance at the Gala Dinner for the 1995 International Festival of Mèthode Champenoise in Santa Barbara, where the Davies received a Lifetime Achievement Award for their then 30 years of producing world class Mèthode Champenoise Sparkling Wine. Today, Jamie Davies, and her son, Hugh, who holds the position of President and Winemaker, carry on this tradition. Together they focus on crafting rich and complex sparkling wines, selecting fruit from more than 80 diverse vineyards, employing extensive barrel fermentation and aging in the bottle for up to ten years. Wines produced at Schramsberg include the vintage dated Blanc de Blancs, Blanc de Noirs, Brut Rosé and Crémant, the non-vintage Mirabelle and Mirabelle Brut Rosé and the ultra-premium vintage-dated Reserve, J. Schram and J. Schram Rosé. It is an honor to recognize the extraordinary achievements of the Davies family during our 2007 Central Coast Wine Classic, where those fortunate who attend the Dinner at Hearst Castle, the Auction and the Schramsberg Symposium will be not only edified by the wondrous Schramsberg products, but will also enjoy the companionship of Wine Classic Fine Wine Honoree Hugh Davies and his wife, Monique.

In Memoriam The years 2006 and 2007 brought us considerable anguish in the passing of a number of our Wine Classic family. Virtually all of these lovely individuals have supported us and substantively shared with us their lovely energy and remarkable generosity for many, many years. Their presence will be deeply missed. Among all of these special people, the closest to home, literally and figuratively, is our dear friend Don Talley, who with his wife Rosemary and son Brian, made major contributions in placing the Central Coast wine industry and the Central Coast Wine Classic firmly on the map.

DON TALLEY FOUNDER OF TALLEY VINEYARDS Arroyo Grande, California

Don Talley was born April 4, 1940 in Santa Maria, California to Oliver and Hazel Talley. In 1952 the family moved to Arroyo Grande where Oliver had founded Talley Farms four years earlier. Don attended the historic two room Branch Elementary school before graduating from Arroyo Grande High School in 1958. He graduated with a Bachelor’s degree in Agricultural Business Management from U.C. Berkeley four years later. During that time, he met Rosemary Green who he married in December of 1962. After a short stay in the Bay Area, Don and Rosemary returned to Arroyo Grande where Don became active in the management of Talley Farms, working closely with his father. Don and Rosemary’s children, Brian and Marianne, were born in 1966 and 1967 respectively. Don felt strongly that Talley Farms needed to innovate and grow and he took a very active role in directing these initiatives. Talley Farms was incorporated in 1969 and the company began buying farmland, which Oliver had historically leased. Around this time Don began shipping Talley Farms’ produce directly to customers around the country, as opposed to working through a local shipper, as had been the practice in the past. The next major innovation, during the mid 1970s, was the construction of vegetable coolers to ensure that the produce could be adequately cooled and shipped properly. Through the 1970s and ‘80s, the company grew rapidly after Don became President and oversaw the construction of more coolers, and the acquisition of more land. The next major initiative that Don launched was the planting of vineyards beginning in 1982. Four years later he founded Talley Vineyards with a small winery adjacent to one of the vegetable coolers and a tasting room in the historic Rincon Adobe. Through the 1990s and through the 2000s, both Talley Farms and Talley Vineyards have prospered as the third generation returned to the family business, and Don’s role evolved to one that emphasized mentoring his son and nephews. Don’s son Brian now serves as President of Talley Farms and Talley Vineyards. Nephew Todd Talley is the CFO of Talley Farms and Don’s other nephew Ryan is the Vice-President and Director of Farming Operations. Rosemary Talley serves as Corporate Secretary of both Talley Farms and Talley Vineyards. Don’s final major business initiative, launched in 1995, was the purchase of the remainder of the historic Biddle Ranch for an agricultural cluster development. His vision was to preserve the valuable farmland where the family’s vegetables and wine grapes are grown by developing home sites on the less productive land of the adjacent hills. Don’s civic accomplishments were as impressive as his business accomplishments. His list of achievements sounds like a who’s who of local educational and business organizations. He has served on the board of the Western Growers Association, was president of the Agricultural Education Foundation and had been named Agriculturist of the Year by the San Luis Obispo County Farm Bureau. He was named the 2006 Farmer of the Year for the Santa Barbara County Fair. In 2002, he received with the J. Vard Loomis Award for Distinguished Board Service from the Cuesta College Foundation Board of Directors. The award recognized years of service for the man who once served on the Arroyo Grande Parks and Recreation Commission, Arroyo Grande City Council and later served as mayor. He also served on the Cuesta College Board of Trustees.“Don exemplifies everything that this award stands for - selflessness, combined with compassion for fellow community members,” Barbara George, then executive director of Cuesta College’s Office of Institutional Advancement, said in 2002. Don’s contributions to the Central Coast wine industry and the Central Coast Wine Classic have been indescribably beneficial. All of us owe him the deepest possible debt of gratitude. And Don Talley was one of the nicest and most genuine people you could ever hope to meet. He will be sorely missed and never forgotten.

DAME, MS PRESIDENT, COURT OF MASTER SOMMELIERS WORLDWIDE MASTER SOMMELIER, DIRECTOR FINE WINE, ALLIED DOMECQ WINES USA When rare and fine wine is tasted and discussed, the name Fred Dame is often mentioned in reverential tones. His palate and experience rank among the finest and most comprehensive in the world, and his palate memory is absolutely astonishing. Frederick L. Dame, Master Sommelier brings an impressive blend of experience, expertise and enthusiasm to the world of wine and cuisine. He is the first American to have served as President of the Court of Master Sommeliers Worldwide and assists restaurateurs and hoteliers in developing their wine programs in his role as Director of Prestige Accounts for Beam Wine Estates. He is currently the President of the Guild of Sommeliers Education Foundation. Fred’s ability to transmit his passionate interest in wine makes him a natural teacher. One of just seventythree Americans to have passed the Master Sommelier Examination, he was the first to successfully pass all three parts in a single year. This feat and his high score won him the coveted Krug Cup of the British Guild of Sommeliers in 1984. Fred founded the American Branch of The Court of Master Sommeliers in 1986 and has played an active role in the expansion of the Master Sommelier program throughout America since that time. As Cellarmaster of The Sardine Factory in Monterey, California for twelve years, Fred created a wine list which won the Wine Spectator Grand Award. With the many wine events held in the brick and wine lined Wine Cellar, he turned The Sardine Factory into a wine destination restaurant of world renown. Fred is also active in the culinary arts serving as an Honorary Trustee of The American Academy of Chefs, the honor society of The American Culinary Federation. He was awarded the Antonin Careme Medal and was made a Supreme Knight of the Knights of the Vine in 2000. He was elected to the prestigious National Restaurant Association College of Diplomates in 2004. In 2006, he received Sante Magazine’s Wine Professional of the Year Award as well as Starwine’s Lifetime Achievement Award. A sixth generation Californian, Fred graduated from Washington and Lee University with a degree in journalism and communications. A European trip after high school piqued his curiosity about wine and food. Since then, he has applied his considerable persuasive skills to the service and appreciation of fine wine. It is a great compliment to our event that Fred Dame would agree to host the Bordeaux varietal Symposia at this year’s Wine Classic.

It is difficult to imagine a more effusive individual than Narsai David. He is the sort of person whose presence just makes you feel more whole and more pleased about circumstances in general. The restaurateur, vintner, chef, gourmet and bon vivant has a history of involvement, both in the culinary arts and in his community of Berkeley, where he was educated at UC Berkeley, and other Bay Area locales, and his involvement always brings a vibrancy and energy to the proceedings. From his humble beginnings at a drive-in hamburger house in Turlock to Radio and Television prominence, the overriding impression of Narsai is that he has always been unfailingly gracious. From his birthplace of Chicago to Turlock to the Bay Area, he was always involved either directly or indirectly with produce and restaurants, opening his own, the renowned Narsai’s, in the small East Bay community of Kensington in 1970. From 1970 until 1986, this restaurant and catering business was a culinary Mecca for gastronomes and the venue for exceedingly attentive service and exceptional cuisine. Centerpiece for the restaurant’s fame was its Monday night dinners at which Narsai offered a fixed menu from whatever cuisine happened to capture his attention and appeal to his senses at the moment. From 1978 to 1985, Narsai’s Market, next to the restaurant, presented a remarkable array of specialty foods. Narsai and his catering business were the recipients of a great deal of publicity for his extraordinary caterings, representing some of the grandest outdoor dining experiences ever presented. Rock impresario Bill Graham called on Narsai regularly to cater his concerts, and the Napa Valley Wine Auction Dinner, with its two thousand guests, was one of his triumphs. In addition, Narsai was an aficionado of fine wine, and the wine list at Narsai’s was listed as one of the ten finest in the world by the New York Times. His culinary book authorships include Monday Night at Narsai’s, The Menu, 1992 and The Menu, 1994. Community and professional service has always been a priority with this considerate and gentle man. He has served as the Chair for the Awards committee for the Berkeley Community Fund, President of the Board of the Pacific Coast Farmers’ Market Association, Host of the Annual “Narsai Toast to the Arts,” Host to the Alameda County Meals on Wheels Dinner and Honorary Chair of the VNA Hospice Annual Wine Tasting Fundraiser. In addition, he is a Founding Member of the San Francisco Hunger Awareness Project. Today, his time is divided between travel and food segments, the management of Narsai’s Specialty Foods, KCBS Radio and Macy’s West. As Wine and Food Editor of KCBS, he files twice-daily reports from wherever he is in the world. As Macy’s “Culinary Expert,” he hosts cooking classes every Saturday morning at the flagship store on Union Square in San Francisco. He has been a columnist for the food section of the San Francisco Chronicle and makes celebrity chef appearances at gatherings throughout the world. At our Wine Classic, he has hosted the cooking demonstrations of superb chefs such as Gary Danko, Cal Stamenov and John Ash, and has genteelly showed the young guys how it’s supposed to be done. As a long-time aficionado and collector of exceptional Napa Valley wines, Narsai has shared his collection by annually donating an auction lot for the Wine Classic’s Wine Auction, and it has quickly become one of our most sought-after offerings. Now he has his own Narsai Napa valley Cabernet Sauvignon, a wonderful wine, which he presented at the 2004 Wine Classic’s Napa Valley Cabernet Sauvignon Symposium. Wherever Narsai goes, his objective remains the same; to share the simple pleasures of cooking food and presenting wine, each through the process of education. This year, he will be doing so in conjunction with Chef Wendy Brodie, as they present the Friday Cooking Demonstration & Luncheon. It is a great pleasure and an honor to be the recipients of Narsai’s expertise and good energy and to share with his lovely and gracious wife, Venus, and him, the energy of the Wine Classic.

Presenters & Symposium Hosts CARISSA CHAPPELLET Big Sur & Avila Beach, California

Carissa Chappellet has become a very important part of the Central Coast Wine Classic. Whether she is hosting her annual Central Coast Cycling Classic, hosting a dinner, or photographing the proceedings, she is omni-present at Wine Classic activities. Carissa also works alongside her brothers, Jon-Mark and Cyril, all of whom are Co-Directors, and their parents, Donn and Molly, running the Chappellet Winery. Carissa recalls beginning her career in the wine industry at age seven, her first harvest. Her first cellar job was washing corks, from there she advanced to bottle washing, labeling and finally capsules. It was also at age seven that she began baking breads and by age 13 was taking her first professional cooking classes from Jacques Pepin. Molly’s prolific vegetable garden gave Carissa a variety of ingredients with which to practice her culinary interests. By age 17, she was a full-time vegetarian and creative cook. Carissa also followed Molly’s interest in photography. She has documented two trips around the world and is rarely ever seen without a camera or two. In 1987 Carissa graduated from Monterey College of Law, went on to pass the bar and practiced civil litigation in Monterey. An interest in the Chinese Language and culture led her to spend a semester in Shanghai teaching English and learning Chinese with an eye towards a career in international law. Called upon from time to time to assist in the promotions of the family wines, Carissa discovered her interest in traveling, photography and the culinary arts all combined nicely with work in the marketing side of the wine business. With encouragement from her brothers she put aside the practice of law and joined them in running the business, where she became Chappellet’s equivalent of Ambassador-at-Large. It was in 1999 at the Sun Valley Wine Auction where fate and Ursula Hermasinski intervened and Carissa was introduced to her partner in life, Central Coast Wine Classic Founder & Chairman, Archie McLaren. That story is for another time, but their love permeates the Wine Classic and is an inspiration to all. Obviously a woman of many talents, Carissa published her first book in 1997, The Romance of California Vineyards, a visual tour of the wine country with breathtaking photographs by Daniel D’Agostini. She is currently working on her second book, a recounting of her 15,000 mile millennium adventure on the Odyssey 2000 bicycle trip around the world. Carissa makes her home in Big Sur and Avila Beach, California. When not on the computer or phone, she paints, writes, gardens, bikes and cooks. A skilled photographer, painter and musician, Carissa not only carries her camera, but also her paints, banjo and mandolin with her everywhere. A true Renaissance woman, she’s also a licensed hypnotherapist and certified massage therapist, as well as the holder of a Juris Doctor degree in law, which she uses to further the responsibilities of her Director position at Chappellet Winery. It is especially gratifying to share the Wine Classic and its fruition with such a special person and her wondrous energy.

Presenters & Symposium Hosts JAY JAMES, MASTER SOMMELIER GENERAL SALES MANAGER FOR ON PREMISE WINE SOUTHERN WINE & SPIRITS Las Vegas, Nevada

We welcome once again the affable and erudite Jay James for his third appearance as a Symposium host at the Central Coast Wine Classic. An alumnus of Georgia Tech, Jay was distracted from his academic pursuits twice, first by a two-year tour with the rock band, Borneo, in which he played lead guitar, and second, and irrevocably, by the allure of the Master Sommelier title. In 1989, while working as a part-time employee of the 400-seat Ray’s on the River in North Atlanta, Georgia, Jay was charged with creating a new wine program. In wine he found a synergistic tool for combining all his passions into a single field. Never comfortable bearing down on any one subject to the exclusion of others, Jay found himself completely at home in the study of wine, a field that embraces: chemistry, biology, history, art, literature, geography and geology, among others. Master Sommeliers Fred Dame and Evan Goldstein urged Jay to prepare for the Master Sommelier exam, which he did in 1997 becoming the 32nd American to successfully complete it. The exam consists of three parts: theory, covering wine, spirits, beer, ale and cigars; a practical service exam and a blind tasting and identification section which requires complete classification of six wines in 25 minutes. Jay also worked with as Sommelier for the Peasant Restaurant Group in their flagship restaurant, the City Grill in Atlanta, as Sommelier and Assistant Manager at Nikolai’s Roof at the Atlanta Hilton and a Fine Wine Sales Representative for Atlanta Wholesale Wine. In April 2004 Jay was named President of Vintrust, LLC, a San Francisco-based venture committed to marrying the convenience and innovation of technology with the old world traditions of wine. Jay originally joined Vintrust in 2003 while serving as Director of Wine for the Bellagio Resort in Las Vegas. In that capacity, he served with William Harlan, Roger Walther and Gary Rieschel as a member of the Board of Directors responsible for guiding fundraising, investor relations and defining Vintrust’s seminal priorities. .Prior to joining Vintrust, Jay was the Director of Wine at the Bellagio Resort in Las Vegas where he developed new systems for the management and delivery of 105,000 bottles of wine inventory cellared in 28 separate locations. Jay supervised 12 sommeliers and provided wine education for 2,000 service staff serving 26 restaurants under one roof at the resort. He joined the opening team of the Bellagio in 1998 and was generating $29 million in annual wine revenues when he departed. Now Jay, busier than ever and even more engaged in his wine interest, is the General Sales Manager for On Premise Wine for Southern Wine & Spirits in Las Vegas, a remarkable company that provides top-tier wines to the finest restaurants in the city that has become one of the handful of great restaurant destination cities in the world. Jay has been a featured speaker at numerous wine and food events and has appeared in a long list of national publications. He has competed in the Grand Prix du Sopexa Sommelier Competition and the Concours Mondial 1994 United States Finals. Jay is a member of the Court of Master Sommeliers and is actively involved with the organizations education and examination efforts. It is a great pleasure to have Jay James as a major presenter at the Twenty-Third Annual Central Coast Wine Classic, where he will be hosting symposium panels on Pinot Noir, Tempranillos and the Single Vineyard wines of Melville and Nickel & Nickel.

Hearst Castle Dinner Chef CAT CORA CHEF, AUTHOR & HUMANITARIAN HEARST CASTLE DINNER CELEBRITY CHEF Those fortunate patrons who will be attending this year’s Thursday Evening Black-Tie Dinner at Hearst Castle and/or the Friday Cooking Demonstration and Luncheon are in for a treat. Our celebrity chef is Cat Cora, a renowned culinary artist and humanitarian, as well as a most engaging personality. It’s no surprise Cat Cora became a world renowned chef. Her culinary aspirations began at an early age, and by 15, she had developed a business plan for her own restaurant. In 2005, she made television history on Food Network’s Iron Chef America as the first and only female Iron Chef, and in November 2006 Bon Appetit Magazine bestowed her with their Teacher of the Year Award, an award she calls, “the greatest recognition she could achieve as a chef.” That month, she was also honored with another great culinary distinction when she was named Executive Chef of the magazine. There is no doubt Cat’s upbringing had an influence on her career. She was raised in a small Greek community in Jackson, Mississippi, by a family for whom cooking and eating were the center of life. At the Cora house, it was common to eat spices from the South, as well as fresh sheep and goat cheeses and homecured olives sent by relatives from the island of Skopelos. Her first cookbook, Cat Cora’s Kitchen was inspired by her Greek and Southern heritage and contains many of her families’ favorite recipes. With advice from of her famous mentor Julia Child, Cat left Mississippi for New York, where she received the education of her dreams at The Culinary Institute of America. While in New York, she apprenticed with and then worked for Chef Anne Rozenweig at Arcadia and worked at the Beekman Tavern under Chef Larry Forgione of An American Place. Cat’s culinary education continued in Europe with apprenticeships with two of France’s three-star Michelin chefs. From George Blanc of Vonnas, she learned a great deal about tolerance, extreme cooking, and the cuisine of the French countryside. With Roger Verge, she learned not only about classical French cuisine, but also about embracing life and living it to the fullest. After returning to New York, Cat honed her skills as a Sous Chef at The Old Chatham Shepherding Company under Chef Melissa Kelly. She soon headed West to plant her roots in Northern California, where she served as Chef de Cuisine at Napa Valley’s Bistro Don Giovanni. Cat made her TV debut in 1999, as co-host of Food Network’s, Melting Pot with Rocco Di Spirito. She went on to host My Country My Kitchen: Greece, Date Plate, and was one of the featured hosts on Fine Living’s Simplify Your Life. A documentary, “Cat’s In the Kitchen” was also made about her first James Beard dinner in April, 2002. Prior to Iron Chef America, Cat was co-host of Food Network show, Kitchen Accomplished, where she worked with a design expert and contractor to surprise a homeowner with a 3-day kitchen makeover. In 2006, Cat appeared alongside Wolfgang Puck in NBC’s Primetime Miniseries, Celebrity Cooking Showdown, where celebrities were paired with famous chefs and competed in a timed cook-off à la Iron Chef. Cat is part of Macy’s Culinary Council, a national culinary authority, comprising 15 of the world’s most prominent chefs. The Council serves as the face of Macy’s Culinary and Housewares divisions, impacting how customers are inspired to shop, cook and eat at home. Outside of the kitchen, Cat is known for her philanthropy. She is President and Founder of Chefs for Humanity, an organization which was founded in response to the 2004 Tsunami disaster. Modeled after Doctors Without Borders, the not-for-profit gathers the culinary community together to raise funds and provide resources for important emergency, educational and hunger-related causes. In addition to this, she recently became the nutritional spokesperson for UNICEF. James’ training is strictly classical, his attitude one hundred percent Californian. He began his formal training in Europe, at the Hotel Ritz in Paris, the Hotel de Paris in Monte Carlo, and continued working with Michel Guerard at Regine’s in both Paris and New York. James also spent several years working in private homes, cooking for, among others, Her Imperial Highness, Princess Shams Pahlavi, the sister of the Shah of Iran, in both Beverly Hills and in Cuernavaca, Mexico. James refined his craft at restaurants on Nantucket, in Washington, DC, and in Palm Springs before coming to Santa Barbara, where he spent four years as Chef for the El Encanto Hotel in Santa Barbara before pursuing catering and restaurant consulting, and serving as a private chef in Montecito. More now than ever, the value of simplicity in cooking plays an important part in James Sly’s style. We welcome back to the Central Coast Wine Classic Auction Luncheon, Chef Rick Manson, one of our strongest and most faithful and generous supporters, as well as our 2007 Wine Classic Culinary Honoree. Rick is a Southern transplant who has found not only his home in California, but his new family as well. Our Wine Classic family has for many years been the beneficiary of his thoughtful largesse. Rick has always risen to the occasion to assist us, no matter what the situation or circumstances, and we are most grateful to him. The up-tempo American cooking prepared by one of the Central Coast’s premier chefs, Rick Manson, is a blend of Southern Louisiana, Southwest, and Southern California influences, seasoned with a hint of rhythm and blues, a splash of color, and a touch of irreverence. David Reynolds must assuredly be one of the most enthusiastic auctioneers on the planet! To see him leaning forward in eager anticipation, with perspiration collecting on his brow, nay dripping from his nose, is to witness a man who is dedicated to his profession. David Reynolds charms, cajoles, and entertains with spontaneous one-liners. Along the way, he is transforming the role of fundraising auctioneer into a new kind of performance art. His San Francisco firm, Reynolds & Buckley annually raises millions of dollars for charities. Their client list includes over 120 organizations nationwide. Unique in a niche of his own creation: his focus is solely on fundraising auctions and he has been at it for 25 years. We are pleased to announce that Greg Quiroga is appearing at the Central Coast Wine Classic this year for the first time, joining his mentor, David Reynolds on stage. Greg worked his way through U.C. Berkeley in part by spending his summers dealing blackjack in Lake Tahoe. While there, dabbled in drama, film and sociology, before graduating with High Honors and a BA in Mass Communications. The following two years were spent back in Lake Tahoe conducting, as he says, “an in in-depth study of human nature,” dealing blackjack by night and enjoying the area's fantastic natural playgrounds by day. Upon his return to the Bay Area, Greg quickly found a niche in the Internet. He spent three years with a public relations firm, where he helped co-found the interactive marketing division along with the firm’s interactive service offerings. Greg accepted a full-time marketing position with an interactive company in 2001. The firm happened to have an industrial auction wing. After attending his first auction, Greg was hooked. Within two years, he was one of the firm’s leading auctioneers. Seeking more professional knowledge, he attended the Missouri School of Auctioneering. In 2004, the legendary David Reynolds invited Greg to join the firm of Reynolds & Buckley. Greg brings not only youth, but also a unique combination of auctioneering experience, commitment to non-profit organizations, and excellent skills as a public speaker and entertainer. His gregarious nature, quick wit, and crowd-pleasing demeanor make him an ideal fit with the longstanding traditions of Reynolds & Buckley. Greg is a member of the National Auctioneers Association. Directions The Dolphin Bay Hotel & Residences is the official hotel of the Central Coast Wine Classic. It is located at 2727 Shell Beach Road, in Shell Beach, just 10 miles south of San Luis Obispo on U.S. Highway 101. It is three hours north of Los Angeles, four hours south of San Francisco, and a two and a half hour drive from the San Joaquin Valley cities of Fresno and Bakersfield. To The Dolphin Bay Hotel & Residences in Shell Beach:

From the north, take the Spyglass exit at Shell Beach and turn right onto the ocean side frontage road. You will see Dolphin Bay on your left. From the south, take the Spyglass exit at Shell Beach and turn left and proceed under the freeway. Turn right onto the ocean side frontage road. You will see the Dolphin Bay on your left. To Tolosa Winery/Courtyard Cellars in San Luis Obispo:

From the North: Exit at Los Osos Valley Road, turn left and go over the freeway; left on S. Higuera; right on Tank Farm Road; right on Broad Street (Hwy 227). Tolosa Winery/Courtside Cellars is located across from the San Luis Obispo Airport, at the intersection of Broad Street and Buckley Road. From the South: Take the first Pismo Beach exit, go under the freeway, turn right at the first stop light and go over the freeway, which is Price Canyon Road. Follow it all the way to Broad St. (Hwy 227). Left on Broad St. to Buckley Road. Tolosa Winery/Courtside Cellars is located across from the San Luis Obispo Airport, at the intersection of Broad Street and Buckley Road. San Luis Obispo is served by American Airlines through American Eagle, as well as by Amtrak.

Auction Sale Stipulations 1.

Central Coast Wine Classic (herein “seller”) reserves the right to refuse admission to or attendance at any of the Wine Classic events. 2. The auctioneer is the agent for the seller. 3. This catalog, as amended by addendum or oral announcements during the sale, constitutes the entire statement of seller with respect to the sale and purchase of wines listed herein. 4. Seller, auctioneers and auction houses do not warrant or represent, expressly deny responsibility for, and in no event shall be responsible or liable for, the accuracy of description of the wines offered, or the correctness of the catalog, including, but not limited to, the origin, rarity, age, genuineness, attribution, authenticity, provenance, importance, size, quality, quantity, or physical condition of the wines described. All statements by seller and auctioneers are merely statements of opinion and are not to be relied upon by prospective purchasers as warranties or representations of fact, and prospective bidders, by so bidding, acknowledge that they have inspected the wines to their satisfaction and bid only as a result of their own inspection and opinion. All wine is sold “as is.” 5. All bids are per lot as set forth in the catalog unless otherwise announced by the auctioneer. Seller may divide or combine any lot or lots at its sole direction. 6. Seller may, at any time prior to the fall of the hammer, withdraw the lot from sale. 7. A reserve price has been established on all lots. Seller expressly reserves the right to bid on its own behalf up to and including the reserve price. 8. Seller and auctioneers shall have the sole right to reject any bid, at any time prior to the fall of the hammer, and to reject any advance not deemed sufficient. 9. Should a dispute arise between bidders, or should the auctioneer doubt the validity of any bid, the auctioneer shall have the absolute right to resolve the dispute, reoffer, resell, or withdraw the lot in question. 10. No bid shall be valid unless acknowledged by the auctioneer. At the fall of the hammer the highest acknowledged bidder shall be deemed to have purchased the lot and thereupon assumes full risk and responsibility therefor. Purchaser warrants that he will pay the full purchase price therefor forthwith and will sign a confirmation of purchase. Seller’s sole responsibility for non-delivery shall be limited to refund of the purchase price. 11. All wines sold herein are subject to the provisions of the California Alcoholic Beverage Control Act, and are offered and sold subject to the affirmation provisions of certain states, and seller reserves the right to implement such affirmation prices by bidding through its representatives. 12. Unless proof of exemption from payment thereof is presented to seller, purchaser will be required to pay all state and local retail

sales taxes applicable on the date of sale. 13. Bids which are submitted to the seller in writing, through e-mail, or otherwise left with the seller prior to the sale for execution at or below a specified price, are entertained and executed by the seller for the convenience of the bidders, but the seller, the auctioneers and the auction houses shall not be responsible for failing to execute such bids or for error relating to the execution of such bids. There are no reserves accepted on lots offered during this sale.

FINANCING 14. Bidders shall arrange financing prior to sale with check, MasterCard, VISA or American Express. Wine will not be released pursuant to payment by company or personal check unless seller has received, not later than July 1, 2007, a letter from bidder’s bank stating that payment by check is guaranteed up to a certain sum. Where such a guarantee is not received, a company or personal check will be accepted, but the wine will not be released until the check has cleared. Proof of identity will be required. Full payment in United States dollars, must be made at the conclusion of the auction, and prior to removal of the wine. All checks must be made payable to the seller and not too the auctioneers or auction houses. Any sums not paid within seven days after the sale shall bear interest at the highest rate allowed by California law. Should any dispute related to these Conditions of Purchase arise, the prevailing party shall be entitled to its reasonable attorney’s fees and costs. SHIPPING 15. Since shipping regulations vary from state to state, any out-of-state bidder should be familiar with the laws of his locality. Shipping costs and insurance are the responsibility of the purchaser. Bidders may make shipping arrangements at the time of payment. Unless otherwise agreed in writing, all lots shall be removed within seven days after the sale. 16. No representative or employee of seller shall have the right to waive or modify any of the terms/conditions set forth herein, except that the seller’s authorized representative may do so by general announcement.
