A Sunny Christmas

Christmas Past Each Christmas I remember The ones of long ago; I see our mantelpiece adorned With stockings in a row. Each Christmas finds me dreaming Of days that used to be, When we hid presents here and there, For all the family. Each Christmas I remember The fragrance in the air Of roasting turkey and mince pies And cookies everywhere.

Every year at Christmas time there’s not a sign of snow. Instead we spend our yuletide days in the sun's warm cheery glow. We have the best of Christmas things, The lights, the gifts, the bells, (And "snowbirds" who arrive en masse To fill our beach hotels and homes.) The glorious weather fits right in With our happy Christmas mood, And we can also walk and run Without having to be snow shoe’d. So don't feel bad for your (Dade City) friends who have no snow or ice. We think our sunny Christmas here is a holiday paradise!

Each Christmas finds me longing For Christmases now past, And I am back in childhood As long as memories last. ____________________________________________

Annual Association Dues The annual Association Dues must be paid by January 15, 2012. In order to vote or nominate for the elections of any Board Member at the January Annual Membership meeting, you must be a member in good standing and the amount owed is $20.00 for the year. I’m writing this note to remind you, that inflation has taken away, the things that I hold most essential. My workshop, my reindeer, my sleigh and now I’m making my rounds on a Donkey. He’s old, he’s crippled, he’s slow………….So you’ll know if I don’t see you at Christmas, that I’m out on my Behind in the snow up North or the sand here in Florida!

Ever wonder why???? Not long ago and not far away, Santa was getting ready for his annual trip, but there were problems everywhere. Four of the elves got sick, and the trainee elves did not produce toys as fast as the regular elves, so Santa was beginning to feel the pressure of being behind schedule. Then Mrs. Claus told Santa that her Mom was coming to visit. This stressed Santa ev even more. When he went to harness the reindeer he found that three of them were about to give birth and two had jumped the fence and were out, heaven knows where……………more stress. And then, when he began to load the sleigh one of the boards on the sleigh cr cracked acked and the toy bag fell to the ground and scattered all the toys. Frustrated, Santa went back into the house for a cup of coffee and a shot of whiskey. He found that the elves had hit the liquor cupboard and there was nothing there to drink. In his frustration, Santa dropped the coffee pot on the floor and it broke into hundreds of little pieces. He went to get the broom and found the mice had eaten the straw it was made from. Just then the doorbell rang and Santa cussed on his way to the door. He opened it and there was a little angel with a great big Christmas Tree. The angel said, “Santa, where would you like to put this Christmas Tree?” And that my friend is how the little angel came to be on top of the Christmas tree!

We are playing at “Southport Springs” on Chauncey Road in Zephryhills. Tee time is at 1:00pm on Tuesdays and leave here at 12:15pm Anyone wanting a ride, please call me (Marce EEmley.) We play only 9 holes and fee is $1 $10.00. Please call me with any questions! Marce Emley, 518-0992

From the Managers Extra Parking. Parking in the RV storage area is now by assigned space only except …. we have designated 2 spaces for guest parking. If you have guests and don’t have room for them in your driveway, they can park in one of the 2 spaces adjacent to the dumpsters (see signs for guest parking). All other spaces are assigned to specific vehicles. As of this writing, we still have a few spaces available. If you need a space, even on a shortterm basis, please come to the office to check availability and/or request a space. And remember, just because a space looks empty, doesn’t mean it is available. You wouldn’t want to take a trip and then come back with your RV, camper, trailer or truck, and find you can’t park where you thought you could, would you? In a Hurry? We have noted several drivers who seem to have a heavy foot. As the signs state, the speed limit throughout the park is 15mph. Please slow down, especially early morning and evening when there are many residents out walking or cruising in their golf carts. By the way, the speed limit also applies to golf carts! Please Help Us … Keep the clubhouse floor clean. If you spill something, it would be greatly appreciated if you would wipe up your spill. Since the tile has been installed, we have had the dust mop “stick” to the floor several times when trying to dry mop the floor and we regularly find “spots” where something gooey has been deposited (maybe someone is thinking it will air dry or evaporate by itself). We can’t wash the floor every day but we do try to wash it at least once a week (now that doesn’t mean it’s ok to be “sloppy” the day before we wash). And a thank you to the LaForests for volunteering to help in keeping the clubhouse clean. Backyards. John recently rode around the park with Rick, the lawn maintenance contractor, to check on overgrown trees in back yards. They did find several trees, especially fruit trees, that needed attention, because they were making it difficult for the mowers to get around. He also found that some back yards are a little “messy”. Keeping your back yards looking nice is just as important as keeping your front yards looking nice. We all want Southfork to be a community that the residents are proud of and that people desire to live in. Please check your backyard to see if it could use some attention. Where To Hang Those Wet Clothes. We have noted several nice-looking structures that are attached to carports that could be used to hang things from. And we have actually seen some clothes hanging on those structures in carports! Please remember that the rules only allow umbrella type clotheslines (Rule 19G). These nice-looking structures could be used for hanging plants, but not clothes. Reminder - Resident Referral Program. Just a reminder that we have instituted a resident referral program where you, as a resident, can earn up to $500 if you refer someone who buys a home in Southfork. You may have already seen the flyers that explain what the program is about but if you haven’t, or even if you have, please come by the office and ask about this great opportunity! Hanukkah Begins at Sun down Dec 20th At last! At last! Hanukkah is here! The whole house is bursting with holiday cheer. Pancakes are sizzling as hard as they can, Browning delectably crisp in the pan. The dreidels can scarcely wait to be spun; Presents are hidden for Hanukkah fun. And there, on the table, polished and bright, the shining menorah gleams through the night. Like the oil lamp in ancient history, that burned on and on miraculously! And each flaming candle proclaims the great story of the Maccabean heroes, their deeds and their glory.

NOMINATING COMMITTEE The Southfork Mobile Homeowners Association nominating committee, chaired by, Tony Trubiano, is now and has been working to get a slate of potential candidates to fill the positions on the Board such as, President, Vice President, Secretary and Treasurer for the upcoming elections at our January 2012 Annual meeting. MEMBERSHIP DRIVE DINNER

This year for the first time we are having a Membership Dinner which will be held on Saturday, January 7th, 2012. The cost for admission is your 2012 Membership Fee! Please watch for a sign-up sheet in the lobby of the clubhouse! There will be more details in the January issue of the newsletter and we hope that everyone will be able to attend this dinner!

Women’s Club On November 2nd, 43 ladies attended the monthly meeting. The clubhouse was decorated for Thanksgiving and this was hosted by Mary Bolin, Brenda Goebel, Ginger Shanbeck and Willie Stoever. Thanks to Kathy Gallick and Dixie Logoyda for the decorating of the stage for the baby shower. The meeting was followed by a beautiful lunch prepared by our social group. Thanks to all for your great work! All the reports were read and approved. The Charity committee will try to get Bob Williams to come and talk to us about the Troops at our January meeting. We had him before and his program was very interesting. We sent him $200.00 for the postage to help him with the shipping of parcels to the troops. Mary Bolin talked about the Bazaar on November 19th and everyone is ready. Thanks to Nancy McCallan who brought a beautiful Advent Calendar that she had quilted this summer and donating to our club to be raffled at our bazaar. Willie Stoever did a wonderful presentation on the Pilgrims followed by a series of questions and some prizes were given to the winners and it was excellent. A lot of work was put in this presentation and thank you Willie for a job well done. We also raffled off 5 bags of Avon Products given by Tanya Hahn. Thank you Tanya!!! At 10:30am, we had 2 women from the “Foundations of Life”, Marisela Castillo and Lillian Gimenez who came for the baby shower and we had so many items for them and they were so appreciative and they had to fill their van to the top because of the success of the baby shower. Here is a list of the many items donated by our generous members: 3 large diaper bags, 4 crib sheets, 4 high chairs, 18 large pack of wipes, 44 toiletries, 6 baby bottles (1 w/money, $15.49), 2 bottle cleaners, 12 packs of pacifiers, 7 baby body care, 21 boxes of assorted sizes of diapers, 1 umbrella stroller, 1 baby mobile, 14 pairs of socks, 3 pairs shoes, 47 receiving blankets, 9 quilted crib blankets, 4 hand knitted sweaters, 8 hand knitted hats, 3 towels, 24 wash cloths, 19 bibs, 112 pieces of clothing. On December 7th, we will have our meeting in the clubhouse at 10:00am with a gift exchange of approximately $10.00 and you will receive a gift back from Santa. It should be a lot of fun and also some surprises. After this meeting we will all go to the Golden Corral for our Christmas lunch. PS “TOYS FOR TOTS” brought a box in the clubhouse. We don’t want any toys, but we would like (Children’s underwear, socks, tooth brushes and tooth paste) instead. The Women’s Club will again supply $300.00 worth of children’s shoes as in the previous years. Please do not bring any canned goods to this meeting in December because we are going out for lunch. Southfork Men’s Club

The Men’s Club gathered at the clubhouse on Nov. 3rd and conducted a meeting. We welcomed one new member and discussion was held on possible events and/or activities for the New Year. We talked about having a dance or party with music and this will be pursued at the December meeting. There is a sign up sheet at the clubhouse for all who are interested. We are now collecting dues for the year 2012, so please see Pete, our treasurer, at the next meeting. On December 15th we will meet at the Golden Corral at 11:30 am where we will enjoy our Christmas luncheon. Don’t forget to sign up at the clubhouse so that we can make proper seating arrangements. SOUTHFORK'S “A LUAU in lieu of Halloween”

True to Southfork's way of doing things we decided to have a Hawaiian Style Luau in “lieu” of Halloween. After many hours of planning, heavy construction and cajoling of persons to volunteer to help, our pool, gazebo and clubhouse was transformed into a tropical Honolulu Hilton Courtyard Lagoon Flaming tiki torches set the mood while polynesian style music wafted thru the balmy evening air. Guests arrived to be greeted by grass skirted beauties, presented with of a leis and then escorted to the luau feast that had been prepared in their honor. The attendees feasted on skewered pork medallions with braised tomatos, peppers, onions and pineapple served on a bed of rice and drizzled with sweet and sour sauce. This entree was accompanied by a baked sweet potatoe and garnished by a sprig of grapes. Hawaiian style punch and pineapple upside-down cake as dessert complemented the sumptious luau style feast.

Floating Flower Garden in Southfork's “Honolulu Hilton” Courtyard Lagoon (Photo by Pete Logoyda) Some observant guests might have even noticed a new island floating in the Courtyard Lagoon containing a roasted pig's head (paper mache') complete with ferns and fruit and more tiki torches. After dinner our association president started our show portion of the evening by giving a definition of the Hawaiian word “ALOHA”. She then prompted the guests to greet each other with the “word of the evening”. The president then introduced the EMCEE for the evening who gave a short dissertation concerning the history of the Hawaiian Islands. The headliner then introduced the royal guests for the evening, King Hula-ka-wackee and his lovely princess who were engaged for the evening to demonstrate the ancient Hawaiian dance of the HULA. After a brief lesson performing the HULA to a typical island song, King Hula-ka-wackee and his princess then ventured into the audience to pick out some “volunteers” to also dance. After fitting the new dance troup with grass skirts the sound technician then put on the song “WIPEOUT” to the dancers surprise. That music was stopped and another island melody was played and then audience voted for the best dancers using the Southfork Applause-o-meter to reach a decisioon. All of the dancers were deemed “the best” and awarded prizes After a couple of lame jokes by the emcee an impromptu HULA Hoop competition was staged with prizes going to the persons who could manage to hula hoop the longest. A drawing was held and nice door prizes were awarded to lucky winners. In typical Hawaiian Island Luau Tradition all good things must come to an end so the emcee asked all of the guests to stand and form a circle to dance the traditional Hawaiian ALOHA dance. The guests were surprised to learn that the dance was performed to the lyrics of the HOKEY-POKEY. The evening ended with all of the guests saying good bye to each other using their new found Hawaiian word “ALOHA” and then returning to their huts. The Southfork Mobile Homeowners Association would like to thank the over thirty volunteers who worked diligently to truly make this an event to remember.

I have never visited this restaurant but have been told this is one great place to eat at and you’ve probably heard the expression, “It’s right under your nose.” GrillSmith is a Tampa Bay chain (6 restaurants in Florida only). The restaurant is advertised as serving “New American Cuisine” which is a term meaning “upscale, contemporary cooking.” People who have been here knew of its existence, but didn’t think it would be anything special. They admit they were very wrong and have wasted much time when they could have been enjoying wonderful food. The food is fresh, tasty and creatively served. The lunch portions are generous so can’t imagine needing a larger portion. They have many interesting and various appetizers, salads and soups. Sandwiches galore including ½ pound burgers, crab & shrimp, steak and many more…Have steak dinners, fish dinners, and Pasta dinners and various side dishes. Deciding what to order becomes a delightful challenge. “Signature Grillsmith dishes include: Firecracker Shrimp, Grilled Tortilla Pizza, Seared Ahi Tuna Salad, Wild Mushroom Meatloaf, Black Angus Burgers, Stoli Ravioli” and to much more to put in this article. So hope you give this one a try and enjoy all the various specialty’s they have to offer!!!!

Recipe of the Month Maryland Crab Cakes

Ingredients: •

1 pound backfin Blue crab meat or other lump or jumbo crab meat

•

8 saltine crackers or ¼ to ½ cup breadcrumbs

•

1 egg beaten

•

2 tbsp mayonnaise

•

1 tsp mustard

•

1/4 tsp Worcestershire

•

1/2 tsp Old Bay seasoning

•

salt to taste

•

2 tbsp vegetable oil

•

Optional: ¼ cup chopped onion

Preparation: 1. Carefully check the crab meat for any cartilage. Put meat in a bowl and set it aside. 2. Crush the saltine crackers very fine and mix with all the other ingredients. Gently fold in the crab. Only mix enough to combine ingredients. You don't want to break up the crab into fine shreds. Shape into 6 crab cakes, and refrigerate for at least 1 hour. 3. Heat about 2 tablespoons of vegetable oil in a nonstick frying pan. Sauté each until golden brown on each side. This will only take about 3-5 minutes per side.

SOUTHFORK CHRISTMAS PARTY Do you remember? When we celebrated Christmas “just simply”! Let’s do it again!!!!!! Getting together with old and new friends to sing Christmas Carols, enjoy a cup of Hot Cocoa and enjoy the taste of Christmas Cookies. Also, exchanging small gifts and this will be held on Saturday, December 17th at 7pm at the Club house. Santa Claus will host a voluntary gift exchange, if you would like. Approximately, $10.00 in value and please, mark the gift for a man, or for a woman if you wish to participate. This is the time of year for good fellowship and peace and what a time of year to celebrate. With most of our snowbirds back, we in this community are a family and we would like for everyone to come out and be together on this great festive event!

My Christmas Card List! I have a list of folks I know, all written in a book, and every year when Christmas comes, I go and take a look. That is when I realize these names are all a part, not of book they’re written in, but of my very heart. For each name stands for someone who has crossed my path sometime ago, and in that meeting they’ve become the rhythm in each rhyme. While it may sound fantastic for me to make this claim, I really feel that I’m composed of each remembered name. And while you may not be aware of any special link, just meeting you has changed my life much more than you may think. For once I’ve met some body the years cannot erase, the memory of a pleasant word or of a friendly face. So, never think of my Christmas message or cards are just a mere routine of names upon a Christmas list, or forgotten in between. For when I send a Christmas card or a Christmas message that is addressed to you, it’s because you’re on the list of folks I’m endeared to. For I am but a total of the many folks I’ve met, and you happen to be one of those I prefer not to forget. Whether I have known you for many years or just a few, in some way you have had a part in shaping things I do. Every year when Christmas comes I realize anew, the best gift life can offer is meeting folks like you. We, as a community want to show we are respectable of others and want to show how well we get along with our neighbors and friends and that they are always welcome. So hence forth at anytime, if there is any negativity, it will be handled accordingly and no need to be surprised when addressed. In this great world of ours today, there are wars and unrest because of negativity and harassment, jealousy, pet peeves etc. and we as a group of adults should respect this concern and want peace and tranquility.
