Sauvignon Blanc Currently the darling varietal enjoying rapid growth and good market shares, Sauvignon Blanc offers the ideal refreshing zesty tropical fruit flavours for enjoyment on a sunny day. Blended with Semillon it will take more of an herbal and lemony character while examples from the Loire Valley will be finer, textured and complex.

Riesling Probably one of the most exciting white varietal with excellent examples found in the Clare and Eden Valley, showing lemon lime flavours with good refreshing acidity, while Western Australia and Tasmania tend to trade more in the floral and aromatic spectrums.

Chardonnay Enjoying currently a renaissance, Chardonnay has gone full circle in Australia from being heavily influenced by oak to almost no oak usage. The best examples show very good natural acidity with grape fruit, stone fruit flavours and a complex finish with just a smidgeon of supporting oak.

Pinot Noir Often considered the Holy Grail by winemakers, this elusive, temperamental and fickle variety can lead to the winemaker’s frustration but can also achieve the epitome of quality in a wine. The best examples outside of Burgundy can be found in the coolest climate and regions of Australia such as the Yarra Valley, Mornington Peninsula, Tasmania and Central Otago in New Zealand just to name a few.

Cabernet Sauvignon Cabernets firm tannin structure makes it an ideal varietal to blend with softer Merlot or rich and ripe Shiraz. It is the structure of cabernet wine that gives it the most potential to improve with cellaring. Coonawarra and Margaret River with Hawkes Bay regions have become synonymous with Cabernet production. The best examples will show blackcurrant, earth and cedar characters, ranging from medium bodied to full bodied with intense black fruit flavours firm tannins and oak to match.

Dessert and Fortified Wines A late Harvest wine usually displays medium to high sweetness levels as the grapes are left longer on the vines in order to achieve a higher ripeness. A botrytis affected grape will display high to very high sweetness as the Noble fungus botrytis concentrates the sugars in the grape. Ice wine contains very high sweetness due to freezing all water content in the grape, but is usually balanced with equal high acidity leaving an intense but fresh feeling sensation.
