Scotch Whisky is defined in law as “Spirits distilled from a mash of cereals, saccharifired by the diastase of malt, fermented by yeast, distilled and matured in oak casks in Scotland for not less than three years”. Whisky takes its name from the Gaelic words “uisge beathe” which means water of life.

Johnnie Walker Blue Label King George V Edition Created to celebrate the Royal Warrant given to the Walker family in 1934 to mark their exceptional quality. This blend includes PORT ELLEN, a highly prized malt whose distillery no longer exists. Tastewise, King George V has more restraint and sophistication than regular Johnnie Walker Blue Label. The smoke is supplied from the unique, closed distillery of Port Ellen and is powerful, slow and resonant. It’s a slower whisky to evolve but has enormous depth.

Whyte & Mackay The Thirteen 13 Year Old Aged Blended Scotch Whisky The secret of the rich, rounded taste of the thirteen is in the unique Double Marriage maturation process. At 12 years old, Whyte & Mackay’s Master Blender brings together the finest malt whiskies, then returns them to sherry casks to marry for another year – a loving union. At 13 years old the second marriage takes place, when the finest grain whiskies are introduced to this blend of malts to create the masterpiece that is the thirteen.

Isle of Jura 10 YO

Highland Park 12 YO

Nestled on a small island in the inner hebredies Jura is one of Scotlands best kept secrets and home to one of its fienst drams. Origin is the 10 year old that started the Jura Journey. It carried the traditional celtic symbol for birth, beginning and the forces of nature. It tells of a passion rekindled, a distilliery reborn and a remarkablewhisky fored by turbulent seas and windswept landscapes.

Abiding care and attention, the hallmark of Highland Park production manifests itself in the distinctive aromatic, full-bodied floral sweetness of the whisky. Highland Park’s incomparable balance comes from a tension between the aromatic Orkney peat and the sweetness of oak casks seasoned with Oloroso sherry.

The Macallan Sherry Oak 10 YO

This single malt is matured in three different wood types – sherry, first fill bourbon and refill casks. These are skilfully married together to create David Stewart’s signature bottling. Each bottle carries its own batch number.

Of all the famous single malts to come out of Scotland, the foremost whisky experts consider The Macallan the be “the single malt against which all others must be judged”. It is accolades such as these – and the international awards that support them – that mark out The Macallan as the world’s most precious whisky.

Glenvlivet 12 YO

Bruichladdich Laddie Classic

The Glenlivet has a long and colourful history with its origins as far back as the 19th Century being first distilled in caves by smugglers. Despite the fact that it was at first an illegal substance the smooth refined taste soon won the admiration of nobles and lords. It earned the title, “The real stuff”, which was cemented in 1822 when King George IV requested a glass of The Glenlivet upon his visit to Scotland. A year later the new excise act put an end to illegal distilling opening The Glenlivet to the rest of the world.

A multi -vintage of older and younger Bruichladdich, matured in American Oak casks. Minimally peated to produce a classic spirit presented in a totally unique and contemporary package.

Waves A mix of selected different ages of Bruichladdich, matured in Bourbon and Madeira casks to create wave after wave of layers of sweet fruit and smokey flavours.

World Whiskey Whiskeys are produced all over the world the most famous after Scotland being Ireland & the USA. There are only 4 distilleries in Ireland, though they all produce a full range of products, New Midleton Distillery, Old Bushmills Distillery, Cooley Distillery and Kilbeggan Distillery, which is owned by Cooley’s. Only Cooley's is completely Irishowned. Irish Distillers' Midleton distillery has been part of the Pernod-Ricard conglomerate since 1988. Bushmills was part of the Irish Distillers group from 1972 until 2005 when it was sold to Diageo. Irish whiskey is a pot still spirit based on malted barley and other cereals, usually distilled three times, the whiskeys from the Cooley Distillery’s being the only exceptions as they distil just twice and mature in wood for a minimum three years. More recently Japanese Whiskeys have become more popular, most similar to Scotch in their style they are now often scoring just as high in blind tastings as some of the best offerings from Scotland.

Kilbeggan 15 Year Old is limited edition bottling of hand selected casks to mark the 250th anniversary of the Old Kilbeggan Distillery, the oldest licensed distillery in the world. It was voted the Worlds Best Irish Whiskey at the 2008 World Whisky Awards as well as receiving a Gold & Best in Class at the 2008 IWSC. Cooley Distillery also recently won at International Wine & Spirits the top award of World Distiller of the Year for 2008.

Nikka whisky was founded by Masataka Taketsuru, the father of Japanese whisky, who in 1918 followed his passion to Scotland where he learnt the secrets of whisky making. He returned home to create Japan’s first whisky for his employers before setting up his own distillery in 1934, at Yoichi on the northern island of Hokkaido, where he considered the conditions perfect for making whisky. Nikka whiskies are renowned for being thrilling and delicious, from the rich, smoky Yoichi to the fruity style of Miyagikyo and the delightful Nikka from the Barrel.

Of Nikka’s two malt distelleries, Yoichi porduces rich, peaty and masculine malts. Yoichi 10 Year Old gets its distinct aroma and body from direct heating distillation, in which the pot stills are heated with a finely powdered natural coal - the traditional method that is rarely used today, not even in Scotland.

Hibiki meaning “Harmony” Symbolises a unique harmony of over 30 malts the youngest being 17 years old. The 24 faces of the bottle symbolise the 24 season which are followed in the age-old tradition of “Sekki” the ancient Japanese calendar.

American Whiskey Bourbon is America’s native spirit, with an inspiring history and tradition that is intertwined with the growth of the American nation. The original corn-based whiskey took its name from the French Royal House that once had a significant presence in the region; Kentucky became a state in 1792 and Bourbon one of its counties. In 1964 a Congressional Resolution protected the term “Bourbon” and only since then has the whiskey been defined. The basic elements of Bourbon include a minimum of two years in American Oak, distilled under 160 proof from a mash of at least 51% corn and aged in charred new oak barrels. Heaven Hill Distillers remain the last family-owned independent producer of Bourbon. Located in Bardstown, Kentucky and founded in 1933, Heaven Hill are responsible for many of the world’s favourite whiskies. Double distillation takes place at the Bernheim facility where master distillers Craig and Parker Beam produce award winning Rye and Wheat influenced Bourbons as well as Straight Rye and Corn whiskies, distilling with knowledge passed down through five generations! Evan Williams

Jefferson’s proudly takes this name from this third American president as they are complex, elegant and full of sophistication just as he was. These bourbons are ‘very small batch’meaning 8-12 barrels are blended for maximum taste and originality. Jefferson’s Reserve is 12-17 years old. The result is Bourbon with a richer bouquet, colour and flavour as well as a softer and more rounded flavour. Bottled at 45.1% abv this will satisfy the robust taste of the traditional Bourbon connoisseur. This has an oily finish but starts with golden tones of ginger snaps, honey and melted butter.

Four roses bourbon is the original Kentucky bourbon established in 1888. The winner of the bourbon of the year award in the 2010 “Whiskey magazine” four roses is the UK’s fastest growing American whiskey. Using 5 yeast strains to create a exquisite which is both smooth and mellow in character. The signature serve for Four roses yellow label is, “The Rosy Mule” 50ml of Four Roses Yellow Label topped up with ginger beer, filled with ice and served in a Four roses jam jar.

Woodford Reserve is a super-premium smallbatch bourbon with roots at the Woodford Reserve Distillery (circa 1812), a National Historic Landmark in the bluegrass region of central Kentucky. Over 200 years of bourbon knowledge has gone into the making of this award-winning spirit.

Light Golden in colour Evan Williams Extra Aged has a big nose with lots of oak, vanilla and a touch of marmalade. Crisp entry on the palate with spicy oak and a light grainy touch. Develops well with more oak coming through, a little mint and apple and then finishing with a rich slightly rustic note and a kick from the spirit.

Jenson’s Dry Bermondsey

Tanqueray No.TEN

Brockmans

Williams Elegant Crisp Gin

Old Tom was an early nickname for gin, and nowadays it is generally understood to refer to the sweeter style of gin produced in the late 1800s. But Old Tom wasn’t always artificially sweetened in this way. Jensen’s Old Tom is a recreation of an original Old Tom recipe from the 1840s, when sugar was more expensive and impurities were usually hidden by the simple expedient of adding greater quantities of botanicals. Jensen’s Old Tom is true to this style, producing an extraordinarily complex, intenselyflavoured gin, with long-lasting herbal spiced notes and a natural residual sweetness on the finish.”

Handcrafted in small batches, using handpicked fresh citrus fruits and botanicals, the 170 year legacy of uncompromising quality from the makers of Tanqueray has culminated in this exceptional gin, created specifically to make the world’s ultimate Perfect Ten Gin martini cocktail. Whole, freshly cut oranges from Florida, finest Mexican limes and white grapefruits are placed by the Master Distiller into the traditional swannecked NO. TEN copper pot still, affectionately known as “Tiny TEN”. A final distillation in the ancient “Old Tom” ensures its distinctive character. The exact proportions used are a closely guarded secret – only four people in the world know the Tanqueray recipes, which are kept under three locks in a black ledger know as “The Bible”.

Brockmans – A new gin experience. Brockmans is beautifully made, using ten botanicals, which includes angelica, coriander and juniper berries from Tuscany. The notes of coriander, married with the softer tones of blueberry and blackberry deliver a distinctively smooth new taste in gin.

Chase make their gin by first distilling organic cider apples, from their estate, into vodka and then putting it through the carter head still with their unique mix of botanicals to make the gin. The taste is the true taste of junipers highlighted by the citrus and the sweetness of the apples, elderflowers and hops. It has a beautiful and textured mouth feel due to the luscious organic apples

Plymouth Sloe

Gin Mare establishes a new benchmark for innovation in the super premium gin category, taking as its inspiration the different cultures and finest natural botanicals of the Mediterranean region. Sun-drenched citrus fruits, Arbequina olives, thyme, basil and rosemary give Gin Mare genuine warmth and depth of character, a true reflection of the very people that inspired its creation.

The making of fruit gins is a long tradition in the British countryside and Plymouth Gin keeps true to a unique 1883 recipe. Sloe berries are slowly and gently steeped in Plymouth Gin, soft pure Dartmoor water and a small amount of sugar for approximately 4 months. The sugar levels are kept low to allow the full flavour of the berries to shine and allow the dry acidity of the fruit to be an important part of the taste. The result is an extremely natural product with a rich red colour.

Gin Mare was awarded a Gold Medal (Best in Class) at the IWSC 2010

Bols Genever Bols Genever is a superior and premium “old school” Genever, based on the original 1820 Bols Genever recipe which conquered the world and helped define cocktails during the first Golden Age in the 19th Century. The smooth, subtle, malty flavour of this white spirit comes from using over 50% malt wine, which is made from long-fermented rye, corn and wheat, triple distilled in copper pot stills. This malt wine, the heart of good genever, is then infused with a carefully selected distillate of botanicals. Inspired by the past, recreated for today. Like its’ packaging – a stylish iconic smoke glass bottle based on the shape of the original Bols clay jugs and featuring authentic Amsterdam-style handwritten typography.

No 3 Gin No.3 is the London Dry Gin distilled to a proprietary recipe of Berry Bros & Rudd, London’s oldest wine & spirit merchant. The name refers to the address at No.3 St James’s Street, our home since 1698. With juniper at its heart, unashamedly celebrates the integrity and character of traditional London Dry Gin. Just 3 fruits and 3 spices distilled in traditional copper pot stills. No.3 was created to be the last word in Gin for a classic Dry Martini, but equally works exceptionally well in cocktails and long drinks.

Some of the finest brandies undoubtedly come from this South-West corner of France however it can be justifiably argued that it’s thanks to the Dutch that we now enjoy these magnificent spirits; for it was they who, when purchasing salt from local merchants in the towns around the Charente river, discovered the wines of the Champagne and Borderies regions, and began distilling them in preparation for storage on long journeys. They called liquid they created ‘brandewijn’, or burnt wine, and it is from here that our word ‘brandy’ originates.

Distillation has taken place in many regions of France over the centuries but it is the brandies of the gentle undulations around Cognac that enjoy the greatest fame. Perhaps that’s down to the perfect chalky soils on the rolling slopes of the region combined with the ready supply of good quality local oak. Or perhaps it’s thanks to the mindset of the Cognacaise, who over many generations have continually developed and innovated their methods, especially when faced with adversities such as phylloxera, and have created an unrivalled reputation for producing the world’s most elegant spirit

Armagnac is from Gascony and like Cognac is a grape brandy. The climate here is hotter & the soil is very different, the result is that Armagnac tends to have a fuller flavour than Cognac & is often deeper in colour. Grappa is a marc or pomance brandy. Pommance is the skins pulp and pips leftover after pressing any fruit. This is then fermented and distilled and Italian law requires 6 months of ageing prior to sale.

Janneau VS

Janneau VSOP

Janneau VS is a blend of spirits distilled from white wines produced in Bas Armagnac (63%) and Tenarèze (38%). VS is also a combination of two different types of distillation: a single distillation in a continuous still, and a double distillation in pot stills (alambics). The blending of these two type of distillation in Armagnac is unique to the House of Janneau. The spirits are aged separately in oak casks for over three years developing their own individual characteristics until the blend master with his magic touch combines them, as only he can, in the happiest of marriages.

Janneau VSOP A brilliant, golden, warm eau de vie, which at first has a sweet and welcoming nose and in depth a hint of prunes and vanilla. The mouthfeel is harmonious and round; the prunes persist and there is a hint of licorice stick in the long finish, which truly displays the originality and subtlety of Janneau style, and its elegance

La Fee Parisian Absinthe

The brand original, La Fée Absinthe Parisienne, is a traditional French absinthe distilled using Grand Wormwood (Artemisia absinthium) and other fine herbs. La Fée Parisienne was the first traditional absinthe distilled in France since the 1915 ban and is endorsed by the Musée de l’Absinthe, France. La Fée Absinthe Parisienne is made following an authentic 19th century recipe. Before diluting it is a clear, deep lime green colour and displays attractive, fresh herbal aromas. Upon adding iced water its louche has great consistency - turning a smoky and milky lime green. The palate is softly textured and refreshing with discreet spice and delightful anise. Rich and powerful, La Fée Parisienne is a harmonious absinthe full of personality.

La Fee XS Absinthe Suisse La Fée X•S Suisse, a wine based ‘amer’ absinthe distilled in the birthplace of absinthe: Couvet, Val-de-Travers, Switzerland. This extra supérieure Swiss absinthe is a clear ‘La Bleue’ with a smooth texture and delicate anise and herb flavour that lingers elegantly on the palate. It is best enjoyed by slowly adding three to four parts iced water creating a swirl of opalescent colour finishing with a beautiful milky white texture and releasing an array of intense aromas. Its perfect balance means that, as is Swiss tradition, sugar is not needed.

Vodka Vodka is typically a colourless liquor, usually distilled from fermented grain but also from other raw materials. The word is a diminutive of the Slavic word "voda" for "water”. Perhaps most popular of the spirits due to its variety of uses, it is often used as the base in cocktails.

Chase English Potato Vodka Voted ‘World’s Best Vodka 2010’ by the San Francisco World Spirits Competition; Chase is Britain's first potato vodka. The potatoes used to make each hand-filled bottle are grown, mashed and distilled on owner William Chase’s farm in Herefordshire using only the best artesian copper batch pot distilling methods, giving this super premium vodka true provenance and genuine quality. The result is a very clean, smooth and naturally sweet vodka with a creamy background.

Ketel One Citroen

Ketel One®, vodka is infused slowly with a high quality natural citrus essence to produce Ketel One®, Citroen. 6 varieties of citrus fruits are to create the essence. It takes 5000kg of lemon peel to produce around 100 litres of oil. The oils are transported to the “home of perfume”, Grasse, France where they are blended and refined by an essential oil specialist. The natural citrus essence is gradually infused into Ketel One® Vodka to give zesty sophistication and silky softness. Each final production run of Ketel one ® Citroen vodka is tasted by an expert panel and approved by a member of the Nolet Family.

Russian Standard Imperia

Stolichnaya Citros /Gala Applik

In 1894, the founder of the famed periodic table, Dimitri Mendeleev created the official standard for vodka in St. Petersburg. Mendeleev determined that the best vodka should be: distilled only from wheat; rectified multiple times for purity; blended only with the softest natural glacial water; 40% ABV for perfect Equilibrium; filtered through charcoal to remove impurities. It is distilled and bottled in St. Petersburg at a new state-of-the-art distillery and is made from only the finest Russian ingredients

Stolichnaya is the authentic Rusiian vodka with a unique heritage dating back almost 100 years. Its’ reputation as a pioneer and leader in the vodka market is unsurpassed. Never overly piquant or sour like so many green apple spirits, and never artificial-tasting or candysweet. Gala Applik begins with a nose of red apple and hints of zesty fresh citrus for an overall clean, bright and enticing bouquet. Upon tasting, one is immediately taken by the natural sweetness which suggests orchard fruits with drops of pear, before a refined and balanced finish completes the flavour experience.

Belvedere IX

Zubrowka

Konik’s Tail has been carefully tended for years by Pleurat Shabani the Creator and Master of the Cellar, who tasted hundreds of blends and samples until the desired texture, flavour, character, aroma and complexity was achieved. Hand crafted from a unique blend of three grains - Ancient Spelt, Golden Rye and Early Winter Wheat, the result is a unique combination of art and patience, so carefully perfected. A unique blend of three grains ensures Konik’s Tail is rich in flavour, full of character and distinctly complex and above all wonderful to sip.

The Snow Leopard is the inspiration for this exceptional vodka. More than just a name, the purpose of the brand is to save this beautiful creature from extinction. 15% of all profits are given directly to Snow Leopard conservation projects, through the Snow Leopard Trust. Snow Leopard Vodka is the first vodka made from Spelt grain. Five times more expensive than winter wheat or rye grain used in competing super premium vodkas, Spelt was first farmed 5000 years ago by the Egyptians and is still grown naturally today without the use of pesticides or fertilisers.

Belvedere IX (pronounced One-X) is a breakthrough in vodka innovation that blends 9 natural, individually distilled, ingredients using methodology similar to that of gin. Belvedere IX captures the spirit of the night.

Flavoured by nature, Zubrowka Bison Grass Vodka continues a tradition with its roots in the 16th century. Amazing flavours of herbs, hay and tobacco. When paired with apple the ‘frisky bison’is the Zubrowka cocktail.

Rum Rum is a distilled beverage made from sugarcane by-products such as molasses and sugarcane juice by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak and other casks. While there are rum producers in places such as Australia, India, Reunion Island, and elsewhere around the world, the majority of rum production occurs in and around the Caribbean and along the Demerara River in South America. “The best rum in the world is the one that is in your glass, or the next one, or the next one…..” Ian Burrell UK Rum Ambassador. www.rumexperience.co.uk www.rumfest.co.uk

Mount gay text - Mount Gay Rum – With evidence of rum production on the Barbados Mount Gay Rum Estate dating back to 1703, this golden Rum is the oldest rum in the world.

Cockspur rum was founded by Valdemar Hanschell in 1884. He was of Danish descent and came to Barbados via the Virgin Islands. He founded a ship chandlery, supplying to visiting ships - ropes, sails, salt, fresh fruit, meat and of course rum. Through the years, business thrived and so too did the popularity of Cockspur rum. Cockspur became known internationally, continued to grow and through a later merger, Hanschell Inniss was formed. That company still blends and bottles Cockspur today. Cockspur 12 rum contains the oldest rums kept on reserve at the distillery in Barbados. Cockspur blends its rum while aging it in oak barrels using the pure coral water of the Caribbean, a unique ingredient known to Cockspur.

Pyrat XO Reserve is a complex yet mellow blend of select Caribbean rums, aged up to 15 years in French Limousin and American sweet oak barrels. Its handcrafted decanter is fashioned after relic rum bottles once hoarded by pirates and ship captains in the 1800s. This rum is blended to be elegantly smooth and its amber colour indicates its flavourful sip and savour qualities.

Cachaça Cachaca is a traditional Brazilian sugar cane based spirit. It is most famously served in Caipirinha, a cocktail with limes sugar and ice. Cachaca is made under the strict rules set by the Brazilian government which mean it must be made from Sugar Can Juice, in Brazil, and must be bottled between 38-48%. There are two main types of Cachaca, artisanal and Industrial. Artisanal Cachaça are made in small farms which grow their own cane and are distilled in copper pot stills where as industrial Cachaca are made on a much larger scale, using column stills. Opal Nera

Beija-Flor is a Cachaça (Brazilian rhum agricole) par excellence. This is not a mass-market brand designed simply for Caipirinhas - rather, it is a small-scale, boutique product made by artisans with a meticulous attention to detail and commitment to quality that is simply impossible for larger scale producers. The Pura has an incredibly lush, rich texture and an amazing spectrum and depth of flavour for a white spirit thanks to at least a year of resting before bottling, while at the other end of the scale the Reserva Especial is aged for ten years and exhibits a level of complexity that we simply had not imagined could be achieved by a Cachaça.

With just 1% of Cachaça exported from Brazil, US entrepreneur Steve Luttman saw the potential to create the next generation of Cachaça – a brand that could capture all the desirability of Brazil and refine it in the style of a fine wine for the modern spirits market. And so Leblon was born – ‘the champagne of cane’.

Opal Nera (the original), Opal Bianca sambuca, Opal Rossa (blood cherry)Opal Nera is an extremely well balanced liqueur – it is noted for it’s silky smooth finish. Opal Nera is produced from the distillation of star anise, green anise, lemon zest, coriander, elderberry and elderflower. This creates a complexity not found in sambuca and the result is a luxurious taste with no burn on the finish. Also in the Opal family are Opal Bianca (a traditional style sambuca and Opal Rossa – blood cherry.

Luxardo Raspberry and Spiced Apple

Luxardo Sambuca Dei Cesari is a sweet liqueur, containing essential oils obtained by steam distilling the seeds of star anise, which are soluble in pure alcohol. A concentrated solution of sugar and other natural aromas are added to this. Luxardo Sambuca Raspberry and Luxardo Sambuca Spiced Apple are a variation of the traditional Luxardo Sambuca dei Cesari. Both are aromatized with their respective flavour, with a production recipe entailing several levels of successive infusions to blend the different ingredients. The predominant taste is star anise. It is combined with a new fruity sensation on the palate, and a fresh after-taste.-taste.

Tequila No spirit is steeped in so much history, so many myths and legends, as Tequila. Tequila 100% Agave has a special and unforgettable taste that in many ways differentiates it from other distilled spirits. Production is only allowed in certain areas of Mexico, and as the name says, 100% Agave Tequilas are produced only from the distilled spirit of the Blue Weber Agave, a member of the Lily family, and are reduced to bottling strength using only waters sourced from artinisal wells situated at the distillery. In the case of the larger mass produced brands, demineralised water is used instead. Tequila 100% Agave competes with the best of malt whisky’s and cognacs without a doubt. It is best served at room temperature, and sipped from a traditional caballito or snifter glass, to fully appreciate the aromas. Cocktail Mixers The official definition of a Cocktail according to the modern Merriam-Webster Dictionary is "An iced drink of wine or distilled liquor mixed with flavouring ingredients." That's a broad definition, but reflects the modern practice of referring to any drink with 3 or more parts as a Cocktail. The first published definition of the Cocktail appeared in an editorial response in The Balance and Columbian Repository of 1806. This read: "Cocktail is a stimulating liquor, composed of spirits of any kind, sugar, water and bitters." Having a resurgence in popularity in recent years there are now an amazing array of flavours available to bar tenders, enabling them to create truly interesting & amazing drinks using everything from the classic Crème de Cassis to Liqueur de Coquelicot de Nemours (Poppy).

Bitters Bitters derive from medicinal tinctures. They are usually alcohol based and carry the flavours of fruits herbs or spices. Just one or two drops can add a lot of flavour to drink as they work like a highly concentrated cordial when mixed and their often complex flavours develop through the whole of a drink or dish. They are essential in classic cocktails as they developed as a key ingredient in drinks throughout the 1800’s and are sometimes used in cookery also. Bitter Truth Bitters Range The Bitter Truth bitters are made by Stephan Berg and Alexander Hauck, who have worked in bars all over the world. They were part of the cocktail revolution which looks to seek out old traditional recipes from a bygone era when drinks were made individually, before mass production and consumption. They take old recipes and re-create bitters which no longer exist in the modern world, and make them available in small quantities with fresh and fragrant ingredients. Bitters are made to enhance the smell and gently affect the taste of a drink which lends them particularly well to simple elegant cocktails.

Fee Brothers Bitters Range Fee Brothers is a four-generation-old manufacturer of top quality cocktail mixes, bitters and syrups. They are always interested in providing additional weapons in the arsenal of creative bartenders.

Liqueurs Liqueurs have a rich and varied history originating as elixirs created for medicinal use. Herbs, roots, seeds plants and fruit noted for their beneficial properties and steeped in alcohol to aid ingestion. The word liqueur coming from the Latin word Liquefacere which means “to dissolve.” With the passing of time, liqueurs have become leisurely drinks that can be enjoyed at any time although due to their sweet nature have traditionally been consumed after dinner. Modern liqueurs have been created from almost every flavour known to man and the category continues to grow at a fast pace. Jamie Stephenson The Bar Academy www.thebaracademy.com

The Bitter Truth Elixer

Chambord

Galliano Balsamico

Tuaca

A digestive liqueur that blurs the lines of conventional wisdom. Firmly rooted in the traditions of both classic sweet vermouths and alpine digestive tonics. Enjoy Elixier in a pre-dinner Manhattan or Negroni or enjoy it neat after a rich meal to aid digestion. It’s as delicate as the finest vermouths with an alcohol content that allows it to defy oxidation and the need for refrigeration. It’s thoroughly intriguing and the most astounding new addition to the cocktailian arsenal.

Chambord is inspired by a unique black raspberry liqueur produced in the Loire Valley, France during the late 17th Century. The liqueur was said to have been introduced to King Louis XIV during one of his visits to the Château de Chambord. It was common during that time for liqueurs and cognacs to be consumed with elegant meals and banquets

Galliano captures all that is great about Italy. A love of authentic craftsmanship combined with flair and imagination. Galliano is a classic that stands the test of time. A belief in doing things the right way, never cutting corners. Respect for heritage and tradition whilst at the same time embracing the future with open arms. A vivacity, a smile – unsorriso, a love of life. Galliano is “Spirito Italiano”.

Tuaca, a smooth Italian liqueur with notes of vanilla and citrus, is crafted at the Tuoni and Canepa in Livorno, Tuscany.

Lillet Blanc Since 1846 Lillet Blanc has been the aperitif of choice for discerning French society. Made famous as the essential ingredient in a Vespa cocktail, Lillet is now enjoyed with lemonade or tonic as a long refreshing summer drink.

Antica Formula

Antica Formula is an aged red vermouth made from an original recipe by Antonio Benedetto Carpano, the man credited with creating modern vermouth in Turin in 1786. Carpano originally developed vermouth by mixing herbs with a base wine and then sweetening it by adding spirit. His new drink proved so popular that soon his shop had to stay open 24 hours a day to satisfy demand. Carpano had been inspired by a German aromatised wine and was a fan of German poetry. As a result, he named his new product ‘vermouth’ after the German word for wormwood, wermut, which was frequently used to flavour wine at the time. Antica Formula is produced in small runs and is aged to make it richer and more complex than most red vermouths. It makes an excellent Bronx, Manhattan or Negroni.

Sherry and Port With a history that has witnessed the ebb and flow of empires and production methods that are unique to the region, the tale of sherry is a fascinating one. In the west of Andalucia, where arid Saharan and fresh Atlantic winds create the perfect climate for Palomino and Pedro Ximinez grapes to thrive, wine makers discovered the advantages of aging their wines by using techniques that have been honed over the centuries in order to create liquids of unparalleled complexity. Either ageing for decades in solera or for a few years under a layer of flor, the wines that are created in the area around Jerez are extraordinarily diverse in style. They can be the perfect accompaniment for foods as varied as freshly caught and grilled fish, cured meats, longmatured cheeses and even the humble mince pie! Port is a sweet, fortified wine from the Douro Valley in the northern part of Portugal. Port wine is typically richer, sweeter, heavier, and possesses a higher alcohol content than most other wines. This is caused by the addition of distilled grape spirits (aguardente similar to brandy) to fortify the wine and halt fermentation before all the sugar is converted to alcohol.

Sparkling Wine and Champagne Champagne is a sparkling wine produced by inducing the in-bottle secondary fermentation of wine to effect carbonation. It is named after the Champagne region of France; only wines from this region may be labelled as Champagne. Ayala N.V

Mumm Cordon Rouge N.V

Bollinger Rose is made by adding red wine, it accounts for 5 – 6% of the Special Cuvee blend giving birth to Bollinger Rose. But a cuvee’s singularity amounts to more than the sum of its parts and its taste reveals the mystery of the Bollinger Style. Red wine rocks the tidy order of the Special Cuvee, giving it a power of aromatic affirmation as well as a freedom of tone and spirit, a sparkle and a particular presence.

Ayala Brut Majeur is the result of the blending of a particular harvest with quality reserve wines. Aÿ being the capital of Pinot Noir, this noble grape is always dominant thus ensuring the vinosity, the fullness and the intensity of the wine. Chardonnay gives elegance, liveliness and finesse, and Pinot Meunier adds a delicate fresh and fruity note. The low dosage, 9 grams per litre, reveals the delicate nuances of the aromas and the bouquet.

For nearly two centuries, the House of G.H. Mumm has been shaped by the strongly held values that still form an integral part of its identity today. The history of the House reads like an adventure driven by the passion and courage of its founders. Exploring and travelling the world over in pursuit of excellence, they shared a passion for discovery and experiencing the extraordinary that thrived on their innate daring and panache. This spirit lives on today in their successors.

The bottling plant stands on an underground lake where pure Cornish moorland kissed rainfall naturally filters through the rock to produce a pure natural spring water.
