Champagne and Bubbles Champagne. The bubbles, they tickle your nose. About an hour’s drive east of Paris, the towns of Reims and Epernay and many other villages make up the region known the world over for it’s sparkling wine. The Champenois have worked hard to ensure that Champagne is from Champagne--méthode traditionelle wine from other parts of France fall under the term cremant, while we’ve been hearing quite a bit lately about a similar wine from Spain called cava. Champagne is made mostly from three grapes: pinot noir, pinot meunier, and chardonnay, each thriving in their own particular environments and conditions. Not that you’ll see these grapes listed on the bottle; most Champagnes are blends, necessary to ensure a house-style and to combat inconsistent weather in the consistently cool region. Just to be clear--it’s not only for celebrating. It pairs with just about everything on our menu (especially oysters!). But if you are celebrating, well, it’s pretty good at that, too. Prosecco. Rosé Oh, that pink wine. Before you ask, it isn’t sweet. Why is it pink? Just the right amount of contact with the grape skins to get some color (and some aroma). Then it’s white wine business, as usual. At least that’s the case for the wines we have. Rosé is another friend of most food, and it’s also really fantastic consumed on a patio, near some ferns, maybe overlooking Krog Street (food optional).

Oxidized and Weird So. These aren’t your every day wines (unless you happened to have been raised in the Jura). There’s going to be a lot of skin contact and lees aging. They’re going to be different colors than you’re used to. They’re going to smell... unusual (some have said they smell like wine that’s gone bad). The acid is going to rip the enamel off your teeth, but in a really sensual and pleasurable way. And if it’s made from Chardonnay, it’s not going to taste like Chardonnay. Seriously. Don’t be upset when your Chardonnay isn’t Chardonnay-y. Oh, and these are the staff favorites. Live a little bit. Try wine made in the old way. Romorantin. Chardonnay White Burgundy White Burgundy is Chardonnay, but not all Chardonnay is Burgundy. And even within the region, not all wines are created equally. A base-level Chablis is going to be lean and sharp, but grand cru Chablis might be doused in oak (which isn’t necessarily a bad thing). But, in general, Chardonnay from Burgundy is not going to be the tropical fruit-bomb that Chardonnay from warmer parts of the world can sometimes be. Price or appellation will generally indicate oak usage (but not always). It’s frustrating. It’s also really, really, really delicious.

Pinot Noir Red Burgundy

Ever heard a wine geek wax poetic about some mystical place called the Côte d’Or? Well, it’s where most of this fancy Burgundy comes from. Names like Corton and Chambertin and Echézeaux hang dense in the air over those tables of people (you know who I mean) clad in their finest dress, while endless glasses swirl ceaselessly, full of beautiful red liquid. Someone is probably talking about vintages. You know, you don’t have to be at this table to enjoy these wines. They’re not cheap, admittedly, but we only keep a handful of bottles around that we really like. Beaujolais The southern region of Burgundy is home to Beaujolais, where the Gamay grape thrives in the granite-heavy soils. Beaujolais is light, and not offensive on any front. In fact, it’s really delicious on its own, or with a huge spectrum of food. Want red wine and fish? Go for it. Want a wine to just enjoy by itself? This is it. And no, it’s not nouveau. Gamay. Bordeaux Overwhelmingly produces more red wine than white. There are those big houses on the labels... what are they called again? Thomas Jefferson loved it, although it was definitely a different product back then. The English controlled the area for 200 years, so you’ll hear it called claret sometimes. And talk of left bank vs right bank, 1855 classifications, and crus abound. In this case, it’s red wine. Sometimes it’s Cabernet Sauvignon-heavy, sometimes it’s Merlot and Cabernet Franc--usually just depends on the soil. It’s climate is cooler than California, so these aren’t the monsters you’ve maybe had from Napa. But those winemakers in Napa, more likely than not, have taken a tip or two from the Bordelaise.
