VEGETABLES AND FRUITS
ARTICHOKE ! Vegetable from the thistle family with edible flowers. The heart of an artichoke (centre) is very meaty in texture and has a great flavour. This is why the artichoke is a great ingredient for vegetarian cooking. ! !
AUBERGINE ! ! Also known as eggplant, edible fruit with a soft spongy texture. Used all over the world in Mediterranean cooking as a vegetable. Smokey flavour.
BABY CORN
! Young corn or conlettes. A cereal grain taken from corn and harvested early while the stalks are still small and immature.

BEETROOT ! ! The taproot portion of the beet plant. They are notorious for their deep purple roots and can be used as a food colouring.! ! ! ! !
BUTTERNUT SQUASH
! Sweet nutty taste and is a winter vegetable. Yellow skin with orange fleshy pulp. ! ! ! !
CARROT
! Root vegetable usually orange in colour but can be purple, red, white and yellow. ! ! ! ! ! !
COCONUT ! Seed of the palm tree. Has an outer skin (husk) with an edible inner flesh and coconut water inside.
