Pre-Convention Workshop and San Diego Wine WEDNESDAY – JULY 12, 2006 from 9:00 AM – 4:00 PM Tasting Experience Pre-Convention Workshop and San Diego Wine Tasting Experience

The pre-convention workshop, “Creative Flavor Solutions for Injecting and Tumbling,” will be held at the San Diego Wine & Culinary Center. Their authentic wine cellar atmosphere and beautifully appointed demonstration kitchen in a central downtown location just steps from the Convention Center, the Gaslamp Quarter and Petco Park, make the San Diego Wine & Culinary Center the only stop for wine and food discovery. You will learn techniques for adding value to your current meat products, how to add new products to your current line, while maximizing the productivity of your processing facility by using your injector and/or tumbler. At this workshop, Jay Hall, Excalibur Seasoning Co. Ltd., Pekin, IL, and Doug Rock, Koch Equipment LLC, Kansas City, MO, will inject turkey, beef and pork to make products such as Texas style briskets, corned beef and pastrami. Additionally, they will tumble boneless skinless chicken breast, pork and beef cuts, and some fish or seafood products. Your instructors will also lead a discussion on the difference between soluble seasonings for injection and marinades for tumbling as well as why some muscles must be injected instead of tumbled only. Lastly, learn the difference in muscle structures and palatability, why a vacuum is used in tumbling, why phosphates are used, and how to utilize other non-meat ingredients. After you’ve worked up a great appetite, step out onto the patio and enjoy a pig roast luncheon, compliments of AAMP member and California Association of Meat Processors’ (CAMP) Immediate Past President, Mr. Jacob Kappeler, T & H Prime Meats and Sausage, Inc., San Marcos, CA. Served along with the main entrée, these side accompaniments; Rigatoni with Marinara Sauce, mixed green salad and rolls. American Cured Meat Championships (ACMC) Information IT'S THE MEAT OLYMPICS! The only national meat competition of its kind in North America with over 100 different Awards every year! You can compete against the best of the best in processed meat production. Enter your product for evaluation by judges who are meat scientists and specialists in the meat industry. Your individual product evaluation provides you with more information for greater sales and business opportunities. The competition features 26 different classes of competition, including the added regional competition class of Gourmet Cured Poultry Sausage. This class represents a popular trend in California that is spreading across the United States. Meat Labeling Basics and Using Product Claims Meat product labels must be truthful and must not mislead the consumer. Learn the basic regulatory requirement for labeling meat products. Find out what other features can be added to a label, including product claims. The proper usage of product claims – organic, natural, livestock production practices, nutritional/health advantages, food safety, quality aspects – will be presented.

Deer Processing Made Easy Want to learn methods of production and advertising to increase the bottom line in deer processing? See how small processors have eliminated the bottlenecks in their important big game processing business.

SATURDAY - JULY 15, 2006 American Cured Meat Championship (ACMC) Awards Watch the grins and the tears as the American Cured Meat Champions are crowned and presented with their awards, and the Cured Meats Hall of Fame Doors open to another deserving meat processor.

AAMP Business Meeting A few words from AAMP’s Executive Committee, an overview of elections, and most importantly, a critical report on the state of the small plant operator in the meat and poultry industry. Awards are presented at this session for the Stephen F. Krut Scholarship, the Accomplishment Award, winner of the Best Multiple Booth and Best Single Booth, and AAMP’s most prestigious award, the Achievement Award.

Plant Tour – “Show & Tell” Sit back and see firsthand the many applications this operator has to share that made his business a successful one. John Edd Wampler, President of Family Brands International (FBI), will be taking you on a seated tour including slides and video clips. Family Brands produces a full line of ready-to-eat meat products including hams, franks, bologna, chili, barbecue, and ribs. FBI also produces some products that are not ready-toeat products, such as bacon and bone-in hams. They market their products under several of their own brand names and many private labels. John Edd will additionally tour you through Wampler’s Farm Sausage Company, which produces hot-boned whole hog sausage products including rolls, patties, links, and dinner sausages (brats, Italian, etc.). Wampler’s also has a new sausage gravy as well as sausage biscuits. Their primary brand is Wampler’s Farm, but they also pack several private label brands for both food service and retail.

Grand Prize Drawing and Introduction of New AAMP Board Members Newly-appointed AAMP Board members will be introduced to attendees at the close of the exhibit hall on this last day, with the drawing of the Grand Prize Winner. The winner will enjoy a trip for two (2) to attend the 2007 American Convention of Meat Processors in Milwaukee, WI, which will include airfare from any gateway city in the U.S., 4 nights accommodations, compliments of the Hilton Milwaukee City Center, complimentary convention registration for 2 and 2 tickets to the Welcoming Reception and Banquet.

San Diego International Airport is competitively served by 18 commercial airlines, bringing over 15 million passengers through San Diego International Airport every year. The Town & Country Resort is about a 20 minute drive from the airport. RENTAL CARS

If you need a rental car, there are several car rental reservation boards located near the baggage. All car rental agencies are off-site and do not have counters inside the terminal facilities. Car rental shuttles – boarded at the Transportation Plazas – will take you to their rental locations.

Shuttle vans and buses operated by off-airport companies are a popular and convenient transportation option. The Town & Country does endorse a Shuttle service at the average price of $10 per person for one way. Otherwise, Taxicab Service is also available at the San Diego International Airport. Often called San Diego’s “moving landmark,” the Trolley is also a fun way to get around, whether traveling to the International Border, or heading to Centre City’s shopping and historic attractions.
