And then, with its two almost symmetrical wings, the hotel gains in majesty and harmony, especially as the entire facade has been redecorated in the same colour. The building has thus been endowed with incredible youthfulness. It has never been more

Then what ? - Then there’s a brief discussion with all those concerned on how to tackle the project. We could have played the card of modernity, with a contrast between the new wing and the existing building. Contrary to what one might think, that was definitely the easiest solution. In fact, on the Croisette, town planning regulations make the architect’s work extremely complicated if he wants to free himself of current standards. There are so many restrictions : for example, you can no longer build a recessed floor or a sloping roof as one could in the 1920’s, when the Majestic Barrière was built.

It is true that we played on similarities to create the illusion, reproducing the small columns, floral friezes, cornices, even the shape of windows, arched on the ground and first floors, and relatively narrow compared to their height on the upper floors. Not forgetting, of course, the famous dome, which here has a symbolic value. Nevertheless, even if at first glance, the architecture of the two wings seems to be uniform, it is actually very different on both sides of the building. As I said earlier, legal constraints made variations unavoidable. But they were not alone. The evolution of the hotel industry also
played a part. A very simple example… Because they are now part of modern amenities, the vast majority of the new suites have terraces or lovely loggias. Not so in the first wing. - Finally, what memories will this project leave you with ? - They will inevitably be excellent. Of course, it wasn’t all easy. In particular, we had to contain groundwater which threatened to flood the three levels underground. We therefore sunk five metres of concrete beneath the foundation raft to resist the pressure of the water. But beyond the technical difficulties, I will above all remember the fascinating architectural challenge and the quality of my relationships with everyone, from the Group’s managers to those of the hotel, who put their trust in me and accompanied me with real competence throughout this major project.

Gastronomy : two venues for gourmets The Majestic Barrière has always complemented its excellent luxury hotelry with gastronomy. Today, it plays host to two high-ranking restaurants : le Fouquet’s Cannes and la Petite Maison de Nicole. The fabulous saga of Fouquet’s, the famous Parisian «brasserie», began on November 8th, 1899, when a certain Louis Fouquet painted his name on the front of his restaurant, located on the corner of the Champs Elysées and Avenue George V. Listed as an historic monument in 1988, owned by the Lucien Barrière Group since November 1999, the establishment is one of the great crossroads of French cultural life. Fouquet’s guest-book is thus rather like the «Who’s Who». At the dawn of the 20th century, its first loyal patrons were pioneers in aviation, including the famous Santos Dumont, responsible for the restaurant’s «Bar de l’Escadrille». Artists soon replaced them : writers such as Joseph Kessel and Paul Valéry, and the world of the movies with Marlene Dietrich and Michèle Morgan, who met Jean Gabin here for the very first time. The New Wave, headed by François Truffaut, Jean-Luc Godard and Claude Chabrol, followed the example of their predecessors. Even today, the Parisian «brasserie» hosts the gala dinner on the night of the Césars film awards.
Changes for Le Fouquet’s As the stars of the Seventh Art are also fond of Cannes and its famous Croisette, the Lucien Barrière Group had the bright idea in 2001 of opening Le Fouquet’s Cannes at the Majestic Barrière, a venue largely inspired by the famous Parisian «brasserie». Its scarlet decor, a glamorous atmosphere with 400 photos of movie-stars adorning its walls, and its Mediterranean cuisine have made it successful for years. December 2009… Le Fouquet’s Cannes closed its doors for a winter break of nearly two months. This closure provided the opportunity to re-think the restaurant in its entirety. It has been endowed with a large veranda allowing guests to enjoy the wonderful light of the Riviera in all four seasons. The dining-room itself has been completely redecorated. In charge of it all, the same interior decorator as for the palace’s new wing : Pascal Desprez. He has clad the restaurant in his favourite colours : gold, taupe and black. Le Fouquet’s is thus more than ever in harmony with the hotel of which it is a part. The menu has also been modified. It has retained a touch of the Mediterranean with risottos, oven-baked

Recipes from the chef for a table of four The Majestic Barrière places many original recipes by chef Bertrand Schmitt at the disposal of the press. They are available by request with the corresponding illustration. Such as lamb cutlets with «tatin provençal». Ingredients for juice from the lamb : 1 kg lamb bones, 1 onion, 2 tomatoes, garlic, thyme, bay leaves and rosemary, peanut oil, 80 grams of butter, salt and pepper, 3 cl white wine.
Ingredients for «Tatin Provençal» : 1 onion, 3 zucchini, 2 aubergines, 3 tomatoes, 1 red pepper, 100 grams of puff pastry, 1 head of garlic, 10 cl of olive-oil, salt and pepper, 12 lamb cutlets (prime ribs).
Juice from the lamb : brown the lamb bones in the oven. Chop the aromatic garnish coarsely and fry. Once the bones are caramelized, add them to the garnish which has been deglazed in white wine, then cover with water and simmer on a gentle heat. Allow to reduce by half, then strain.
«Tatin Provençal» : dice the zucchini, onions, aubergines and pepper. Pan-fry separately in olive-oil. Slice the remaining vegetables, fry gently in olive-oil. Take a «tatin» mould, arange the sliced vegetables in a rosace, then cover with the diced vegetables and puff pastry. Bake in the oven for 10 minutes at 180°. Finish the juice from the lamb by blending in the butter, then check the seasoning. Fry the lamb cutlets on both sides in a little olive-oil.
Presentation : turn out the «tatin» from the mould onto a serving dish, add the lamb cutlets and pour a thread of juice all around.
