majestic BARRIERE

A leading palace for 80 years Since its creation in 1926, the Majestic Barrière has constantly evolved. Launched by Henri Ruhl and soon perpetuated by the Barrière family, its turbulent history has produced today’s winning combination of tradition, luxury and modernity.

The birth of the Majestic However, our hotelier of British origin did not always meet with success. The 1914-1918 War naturally put a brake on his activities. Moreover, when peace returned, to get back on his feet, he had to sell, among other things, the Municipal Casino in Cannes. One step backwards in order to move ahead. The gaiety of the Roaring ‘Twenties in fact encouraged him to take the initiative. In 1920 he acquired the Beau Rivage and a small adjoining

idea of continuity, keeping as close as possi-

serre left to practice his art on the far

ble to the original Art Deco style. - It seemed so obvious to us. First, because the appeal of the Croisette mainly resides in its architectural heritage, its facades from the «Belle Epoque» and Roaring ‘Twenties, which illustrate its past so clearly. This is an image which must be respected. And then, with its two almost symmetrical wings, the hotel gains in majesty and harmony, especially as the entire facade has been redecorated in the same colour. The building has thus been endowed with incredible youthfulness. It has never been more

side of the world, in Vanuatu, setting up the archipelago’s only architectural firm at the time. Despite the advantages provided by this monopoly, he decided to return to France to address new challenges. He therefore moved to Cannes, 35 years ago. Today, the firm that bears his name is well-known, both on the Riviera and in Paris. Renown and a reputation for competence that explain why he was chosen by the Lucien Barrière Group to design and supervise the construction of the Majestic Barrière’s new wing. - To begin with, there’s a blank sheet of paper. Then what ? - Then there’s a brief discussion with all those concerned on how to tackle the project. We could have played the card of modernity, with a contrast between the new wing and the existing building. Contrary to what one might think, that was definitely the easiest solution. In fact, on the Croisette, town planning regulations make the architect’s work extremely complicated if he wants to free himself of current standards. There are so many restrictions : for example, you can no longer build a recessed floor or a sloping roof as one could in the 1920’s, when the Majestic Barrière was built.

present in the town’s landscape. - The new wing is therefore a faithful replica of the original ? - No, not at all. It is true that we played on similarities to create the illusion, reproducing the small columns, floral friezes, cornices, even the shape of windows, arched on the ground and first floors, and relatively narrow compared to their height on the upper floors. Not forgetting, of course, the famous dome, which here has a symbolic value. Nevertheless, even if at first glance, the architecture of the two wings seems to be uniform, it is actually very different on both sides of the building. As I said earlier, legal constraints made variations unavoidable. But they were not alone. The evolution of the hotel industry also

played a part. A very simple example… Because they are now part of modern amenities, the vast majority of the new suites have terraces or lovely loggias. Not so in the first wing. - Finally, what memories will this project leave you with ? - They will inevitably be excellent. Of course, it wasn’t all easy. In particular, we had to contain groundwater which threatened to flood the three levels underground. We therefore sunk five metres of concrete beneath the foundation raft to resist the pressure of the water. But beyond the technical difficulties, I will above all remember the fascinating architectural challenge and the quality of my relationships with everyone, from the Group’s managers to those of the hotel, who put their trust in me and accompanied me with real competence throughout this major project.

Majestic suite : the most regal penthouse on the Croisette On the top floor of the Majestic Barrière’s new wing, a dream apartment : the Majestic suite. Unique in Cannes, this penthouse offers its occupants today’s most precious luxury : space !

The Majestic Barrière has embarked on the conquest of space. The top floor of its new wing will in fact feature an exceptional apartment of 450 m2 : the Majestic Suite. Better still : paired with the Christian Dior suite providing the same surface area one floor below (see page 14), it is transformed into a sublime duplex of 900 m2. A record for the Croisette… Especially as one can add on the size of the private terrace, perched on top the hotel, and offering no less than 150 m2 in a single stretch. «Which allows us to offer an elite clientele an exclusive area dedicated to well-being, facing the sea, not overlooked, with a solarium and a pool 11 metres long,» says Dominique Desseigne, President of the Société Fermière du Casino Municipal de Cannes. «The pool is, by the way, a genuine technical feat, as we had to ensure that the seventh floor would bear a structure weighing 33 tons.» A roof-top pool : which will doubtless be a source of sheer delight for wealthy holidaymakers. Though it is not the only asset offered by the penthouse. The Majestic Suite is also sublime for its magnificent view : one can admire the Mediterranean, the Lérins Islands

With over 1,500 m2 of «seminar and conference» facilities and a wide choice of catering possibilities, the Majestic Barrière is one of Cannes’ major players in business tourism.

On the hotel premises, a real business centre Nice Côte d’Azur Airport, France’s second busiest airport, with connections to a hundred or so international destinations, is just a 25-minute drive along the A8 motorway. The runways at Cannes-Mandelieu, France’s second busiest business airport, are even closer. As for Cannes’ railway station, it is just a 5-minute walk. And the Palais des Festivals ? Just across the street. It’s obvious : the Majestic Barrière enjoys an ideal location for business meetings, seminars or incentives in Cannes. Especially as its capacity of 350 rooms and suites (including those in the extension, delivered in March 2010) enables the palace at 10 La Croisette to accommodate several hundred participants. Everything has been provided to meet the needs of business clients. They benefit from hi-tech conference equipment, DSL phone lines, an efficient Wifi system throughout the hotel and even translators. The nec plus ultra is the «Carré Business». This business centre is open 24 hours a day, seven days a week, offering two computer workstations with Qwerty and Azerty keyboards, broadband access to the Internet, office software and the most frequently-used image retouching software, Fax machines etc…

Up to 2,000 participants If the 5-star hotel in Cannes has become a major player in business tourism on the Riviera, it owes the fact less to these practical resources than to its business premises. It

In 90 minutes, this totally original protocol combines the benefits of Sisley face care with an exclusive, anti-aging, muscular massage method, which stimulates the facial muscles, erases signs of fatigue, reinflates tissues and restores firmness and a healthy glow to the skin.

Awakening the senses While immediately hoisting the U Spa Barrière to the ranks of the most exclusive «well-being» addresses on the Côte d’Azur, the partnership with Sisley is not the only advantage proposed by the relaxation area at the Majestic Barrière. It also offers a sauna, hammam, relaxation room, a gym and - a first on the Croisette -, the «water paradise» booth. The basis of this original concept is a play of showers. Gastronomy : two venues for gourmets The Majestic Barrière has always complemented its excellent luxury hotelry with gastronomy. Today, it plays host to two high-ranking restaurants : le Fouquet’s Cannes and la Petite Maison de Nicole. The fabulous saga of Fouquet’s, the famous Parisian «brasserie», began on November 8th, 1899, when a certain Louis Fouquet painted his name on the front of his restaurant, located on the corner of the Champs Elysées and Avenue George V. Listed as an historic monument in 1988, owned by the Lucien Barrière Group since November 1999, the establishment is one of the great crossroads of French cultural life. Fouquet’s guest-book is thus rather like the «Who’s Who». At the dawn of the 20th century, its first loyal patrons were pioneers in aviation, including the famous Santos Dumont, responsible for the restaurant’s «Bar de l’Escadrille». Artists soon replaced them : writers such as Joseph Kessel and Paul Valéry, and the world of the movies with Marlene Dietrich and Michèle Morgan, who met Jean Gabin here for the very first time. The New Wave, headed by François Truffaut, Jean-Luc Godard and Claude Chabrol, followed the example of their predecessors. Even today, the Parisian «brasserie» hosts the gala dinner on the night of the Césars film awards.

Changes for Le Fouquet’s As the stars of the Seventh Art are also fond of Cannes and its famous Croisette, the Lucien Barrière Group had the bright idea in 2001 of opening Le Fouquet’s Cannes at the Majestic Barrière, a venue largely inspired by the famous Parisian «brasserie». Its scarlet decor, a glamorous atmosphere with 400 photos of movie-stars adorning its walls, and its Mediterranean cuisine have made it successful for years. December 2009… Le Fouquet’s Cannes closed its doors for a winter break of nearly two months. This closure provided the opportunity to re-think the restaurant in its entirety. It has been endowed with a large veranda allowing guests to enjoy the wonderful light of the Riviera in all four seasons. The dining-room itself has been completely redecorated. In charge of it all, the same interior decorator as for the palace’s new wing : Pascal Desprez. He has clad the restaurant in his favourite colours : gold, taupe and black. Le Fouquet’s is thus more than ever in harmony with the hotel of which it is a part. The menu has also been modified. It has retained a touch of the Mediterranean with risottos, oven-baked

20

sea-bass etc. But the 2010 version has rediscovered the «homely» taste of great classics of French «brasseries». On the menu : pan-fried calf’s liver and red onions with parsley,

Chef Bertrand Schmitt is in charge of the kitchens at the Majestic Barrière. He joined the Lucien Barrière Group Cannes some 15 years ago. Previously, this chef originally from Alsace had perfected his knowledge of Mediterranean cuisine with one of the past-masters in the field : Roger Vergé. It was, in fact, in the kitchens of the Moulin de Mougins that Bertrand Schmitt learned from the Riviera’s former 3-star chef all about the richness of southern produce, professional rigour and the on-going quest for those little details that make all the difference.

A wonderful tale… 20 years ago in a former tea-room at the entrance to the Old Town of Nice, opposite the Opera-House, Nicole Rubi opened her restaurant specializing in local cuisine. On the menu : Nissart flavors, a touch of Provence and a few dishes borrowed from nearby Italy. No-one could then have imagined that the restaurant’s reputation would travel around the world. Yet this is what happened. Thanks to word of mouth alone, which, with great enthusiasm, has always acclaimed the fresh and tasty dishes, the rigorous cooking and warm service, this address in Nice in fact built a superb clientele. Many residents of Nice have been faithful customers for many years and the guest-book is full of the signatures of celebrities from all over the world, whom Nicole and her team have initiated

Bertrand Schmitt, «chef des cuisines» at the Majestic Barrière, has been initiated in all the restaurant’s secrets to treat the local clientele to courgette flowers in light batter,

Recipes from the chef for a table of four The Majestic Barrière places many original recipes by chef Bertrand Schmitt at the disposal of the press. They are available by request with the corresponding illustration. Such as lamb cutlets with «tatin provençal». Ingredients for juice from the lamb : 1 kg lamb bones, 1 onion, 2 tomatoes, garlic, thyme, bay leaves and rosemary, peanut oil, 80 grams of butter, salt and pepper, 3 cl white wine.

Ingredients for «Tatin Provençal» : 1 onion, 3 zucchini, 2 aubergines, 3 tomatoes, 1 red pepper, 100 grams of puff pastry, 1 head of garlic, 10 cl of olive-oil, salt and pepper, 12 lamb cutlets (prime ribs).

Juice from the lamb : brown the lamb bones in the oven. Chop the aromatic garnish coarsely and fry. Once the bones are caramelized, add them to the garnish which has been deglazed in white wine, then cover with water and simmer on a gentle heat. Allow to reduce by half, then strain.

«Tatin Provençal» : dice the zucchini, onions, aubergines and pepper. Pan-fry separately in olive-oil. Slice the remaining vegetables, fry gently in olive-oil. Take a «tatin» mould, arange the sliced vegetables in a rosace, then cover with the diced vegetables and puff pastry. Bake in the oven for 10 minutes at 180°. Finish the juice from the lamb by blending in the butter, then check the seasoning. Fry the lamb cutlets on both sides in a little olive-oil.

Presentation : turn out the «tatin» from the mould onto a serving dish, add the lamb cutlets and pour a thread of juice all around.

The laundry handles a total of 14,000 bath towels, 15,000 sheets and 8,000 bathrobes. 16,000 bars of soap and 1,000 litres of bath foam are placed in the bathrooms. The maids also arrange more than 8,000 roses in the guestrooms. The dry-cleaning service is also on full alert with 500 pairs of pants and shirts to clean and iron a day. To cope with this peak of activity, the palace Nicole Kidman
