A GRAND MAKEOVER

In 2014, Fairmont Le Château Frontenac invested 75 million dollars in the revitalization and modernization in this majestic hotel. The renovation of Quebec City’s landmark hotel has strengthened its positioning amongst the best hotels in the world. The revitalization and transformation of the Château Frontenac included the renovation of guestrooms, renovation and expansion of the Fairmont Gold floors, transformation of the main lobby, expansion of the banquet areas, introduction of three new restaurant concepts and addition of an urban spa. Internationally acclaimed design firms Wilson Associates and Rockwell Group have been selected to lead this grand project. Wilson, whose past design projects have included The Fairmont Monte Carlo, The Langham Hong Kong and Four Seasons Hotel Sydney oversaw the guestroom, corridors and banquet/meeting areas. Rockwell, whose past design projects have included the W Paris-Opéra, The Cosmopolitain of Las Vegas and Ames Hotel Boston oversaw the main lobby and restaurant projects.

HERITAGE AND CONTEMPORARY BLEND AS PART OF THE RENOVATION PROJECT At the forefront of the renovation project is the wish to preserve and renovate this icon of Quebec’s heritage and ensure its continuity while adding a contemporary dimension that will enable it to meet the highest expectations. It marks a transition to a contemporary style that remains respectful of the hotel’s history. The history of the hotel and its site, which boasts over 400 years, is showcased through heritage elements and meticulous positioning of historical 400 year old artefacts within specially designed windows. Fairmont Le Château Frontenac sits on the site of the Saint-Louis Forts and Châteaux where for more than 200 years, was the site of the official residence and seat of power of the French and British governors.

Renovation of the main lobby brings majestic elements and incorporate signature pieces to the existing historic details which will be preserved. 3

MORE THAN 120 YEARS OF HISTORY… For more than a century, Québec City’s Fairmont Le Château Frontenac has been the truelife castle of many people’s dreams…Everyone - young and old, music and film stars, sports personalities and political figures - enjoys discovering Fairmont Le Château Frontenac and delights in returning again and again. Such is the great history of more than one hundred years of gracious living in Le Château. After Les Châteaux Saint Louis and Haldimand, residences of the French and English governors for over two centuries, Cap Diamond had lost its prestige and successive plans for a grand hotel in Québec City never materialized. By the late 19th century, William Van Horne, President of Canadian Pacific Railways (C.P.R.), had raised enough funds to build the ideal stopover for C.P.R. travellers, Le Château Frontenac. Van Horne retained the services of the New York architect Bruce Price, who had already designed Montréal’s Windsor Station and who, incidentally, was the father of the American writer Emily Post. Drawing on the architectural styles of the Middle Ages and the Renaissance, Price immortalized the history of the two great powers that had occupied Québec City’s highest promontory.

MANY INNOVATIONS OVER THE YEARS 4

On December 18, 1893 the first wing of Fairmont Le Château Frontenac was inaugurated. Christened the Riverview Wing, it had 170 rooms, 93 of which had bathrooms and fireplaces, remarkable luxuries at the time. The Hotel also included three magnificent suites—the Habitant, the Chinoise and the Hollandaise. Over the years, there were many expansion projects to fashion the hotel as it looks today with its 611 rooms, and central tower which reaches to the 18th floor. The Citadelle wing was constructed in 1899, followed by the MontCarmel wing in 1908, and the Saint-Louis wing and the Tour Centrale in 1920 and 1924 respectively. A new expansion phase was completed in June 1993 with the inauguration of the Claude-Pratte Wing, which offers guests of Fairmont Le Château Frontenac a superb indoor pool, a physical fitness center and a magnificent outdoor terrace. Fairmont Le Château Frontenac owes its name to a flamboyant French governor called Louis de Buade, Count of Frontenac who guided the destiny of New France from 1672 to 1698. Indeed, his coat-of-arms can be seen on the outside wall of Le Château's entry arch and in many other areas within the hotel. History casts a long architectural shadow over Fairmont Le Château Frontenac. Indeed, a 300-year old stone bearing the Cross of Malta emblem is among the interior stones of the hotel's vaulted lobby.

A GREAT HONOR FOR THE GENERAL MANAGER OF FAIRMONT LE CHÂTEAU FRONTENAC

In October 2015 Robert Mercure, General Manager of Fairmont Le Château Frontenac has won the prestigious "Pinnacle Award" for the 2015 Hotelier of the Year in Canada. Working for over 30 years in the hospitality industry, Robert Mercure has several major accomplishments to his record. Robert's most spectacular key contributions leading to this award is undoubtedly Fairmont Le Chateau Frontenac's recent major renovation project that has re-invented and reinvigorated this heritage, iconic national symbol of Canada. At the same time he brilliantly went through the implementation of new cutting edge restaurant concepts, increased and redecorated meeting room capacities and created a museum display all the while driving customer satisfaction to record levels. Among his other achievements, is his participation on the Québec City Convention and Visitor’s Bureau Board of Directors, his work with the CTC (now known as Destination Canada), and his work with the Augustines sisters in the development of a non-profit heritage wellness center known as the Monastery Hotel.

Visibly moved, Robert Mercure says: "I am deeply touched and personally appreciative of this amazing honor from peers within the hospitality industry. It is one of the most moving and amazing moments in my hospitality career." The Pinnacle Awards are the only hospitality industry national award of this $72 billion hospitality and food service industry. Known as the "Academy Awards of Hospitality", each year “Foodservice and Hospitality” and “Hotelier” magazines solicit nominations from the industry. After much scrutiny and deliberation, a judging panel of industry leaders and editorial advisory boards selected the winners. The Pinnacle Awards criteria are: Impact on the industry, significant innovations and accomplishments, and community spirit.

STÉPHANE MODAT, RESTAURANT CHEF Chef Modat was appointed in January 2013. Originally from southern France and settled in Québec City for over 10 years, Modat is one of the great Chefs of his generation. He has worked in the kitchens of the prestigious Le Jardin des Sens restaurant in Montpellier, a three star Michelin by the famous Pourcel twins, the Château de Divonne in Divonne les bains, as well as L’Univers de Christian Plumail on the French Riviera.Upon his arrival in Québec City, Modat worked for three years alongside Yvan Lebrun at L’Initiale. Subsequently, he became Chef and co-founder of the renowned restaurant Utopie.; which positioned itself as the «second best restaurant in Canada» just one year after its opening. He then took a pause in search of new inspiration by exploring various culinary worlds which led him to discover several countries including China, Japan, North Africa, Korea and many others. Since December 2009, he has devoted himself to culinary creation with harmony creator François Chartier, with whom he formed a new duo Mc2 and cowrote the bestselling books Les Recettes de Papilles et Molécules as well as the collection Papilles pour tous! Alongside François Chartier, Stéphane Modat was Chef of the television series Papilles, which aired on Télé-Québec in 2012.

NADEAR CHABAANE, DIRECTOR OF MIXOLOGY Cumulating nearly 10 years of experience, Nader Chabaane traveled from Paris to New York, for now being director of mixology at Fairmont Le Chateau Frontenac, and shaking drinks at Bistro Évolutif Le Sam. Nader began his career as head bartender at the Brasserie/Bar à Cocktails Les Funambules in Paris before continuing at Sani Resort in Thessaloniki, Greece. In 2008, he served as Assistant General Manager at Pierre's restaurant in New York and then worked in China at the Meridien Qingdao and La Maison ChampsElysées in Paris. In 2014, he left Paris for Quebec to open Le SAM, the cocktail bar at The Chateau Frontenac, and take part on the re-opening of our national icon. He is now in charge of the mixology team and he signed the creative cocktail menu. Curious, inventive and always ahead of trends, he manages to surprise guest at each visit. His love of craftwork now inspires his team of talented mixologists, who developed an incredible skill set in a very short amount of time. Season after season, Nader, working closely with the chefs, creates amazing pairing options to enhance the guest’s experience.

THE STORY OF DAPHNIE Daphnie was trained to be a guide dog by the Mira Foundation. Given her amazing kindness and incredible social skills she changed careers to become the famed Canine Ambassador at Fairmont Le Château Frontenac where she can socialize constantly. Daphnie is a St-Pierre breed (cross of Bernese Mountain Dog and Labernese), and was born in February 2013.

All those visits, which are the pride of the fabled Castle’s history, have marked over 120 years of wonderful memories. A royal castle The Château Frontenac is proud to have welcomed King George VI and Queen Elizabeth in 1939. A luxurious suite has also been designated in honor of the official visits of Queen Elizabeth II and his Excellency the Duke of Edinburgh. The Princess Grace of Monaco and Prince Rainier III occupied a suite of the Château during their presidency of the Queen’s Ball at the Quebec Winter Carnival in February 1969. For the highest honor of the Château Frontenac, many other royalty members have visited the Quebec castle, including Prince Andrew and Lady Sarah Ferguson of England. Frontenac: host of crucial political meetings In August of 1943 and again in September of 1944, Le Château Frontenac became the center of the Quebec Conferences of World War II involving U.S. President Franklin D. Roosevelt, British Prime Minister Winston Churchill and Canadian Prime Minister William Lyon Mackenzie King. The heads of the Allies held talks that proved decisive to prosecuting the war to a successful conclusion. The Château has been the host of many other American and Canadian political figures over the years: Theodore Roosevelt, Dwight Eisenhower, Richard Nixon, Jimmy Carter, Ronald Reagan, Pierre Eliott Trudeau, Brian Mulroney, and many more. The Château Frontenac: Hollywood on Cap Diamant ! In 1952, the Château Frontenac was transformed into a movie set for the Alfred Hitchcock’s movie, called I Confess. Montgomery Clift and Anne Baxter were part of the prestigious casting of the movie. The event has been a real journey for the hotel.
