UFS Executive Chef, Hammad, helped Owais turning his innovative ideas into reality by keeping the idea, time, cost and taste in mind. UFS Chef assisted him in creating recipes for his menu that included Philly Steak Sandwich, Mushroom Sauce, and Nutella Burger. All this has been done by the help of UFS products like Italian Pizza Sauce, BBQ Sauce, Knorr Red Dressings, Best foods Real Mayo, Batter Mix & Carte Dor. One of the attractions that Burger o Clock is offering is the healthy kick, which is protein style burger. One of the innovations also includes the heating and cooling bags that retain the freshness and taste till it reaches the customer.

Owais is currently doing his ACCA (affiliate) however his longed passion for food instigate him to experiment with different types of burgers, sandwiches, pizzas, ice creams, desserts etc. He also did course of NICAHM – Food, safety & Costing in order to get prepared for his ventures. He carefully learned, researched, assessed and planned each and every aspect of his venture. So when it comes to opening Burger O Clock, he was prepared enough to run the business successfully. The kitchen is clean and open; everyone is welcome to see the kitchen. Both the kitchen & dining area are properly cleaned. Staff is well trained in handling the kitchen items as cutting boards, blenders, grills, and countertops properly so to avoid the infectants. Hand sanitizers are also placed on the tables in the dining area for customers. Burger O Clock is going big with their delivery system and offer a cozy, comfy environment for their customers- it really is the place if you want a delight for your taste buds.

In a short interview with us he said, “I am a food lover since my early age. When I stepped into Burger Chalet I wanted to bring a considerable innovation in Burgers. He did it by introducing a new trend of using best made sauces in best charcoal grilled burgers. He further adds that best ingredients used in recipes makes it possible to produce consistent best quality food, a restaurant can offer to its customers. About UFS I would say, they taught us the way forward to be quality consistent food maker & to survive in the market by using best available products which UFS produces. Knorr Chicken Products! Chicken Sweet Corn Soup Ingredients

(10 servings)

30 ml Vegetable oil 1 Onion slice 500 g Chicken thigh, boneless, cubes 125 g Beef, tenderloin, strips 3 Garlic cloves, chopped 100 g Fresh ginger peeled and grated 750 g Corn kernels 2 L Knorr Chicken Powder 5g White pepper Sea salt to taste Red onion, petals, garnish Red chili peppers, julienne, garnish Baby Sweet corn, garnish Method 1. Heat the oil in a large saucepan over medium – high heat. 2. Add onion and cook until soft and slightly golden about 5 minutes, stirring occasionally. 3. Add beef strips, garlic and ginger and continue to cook for 2-3 minutes. 4. Add corn kernels and cook for 2 minutes. Add Knorr Chicken Powder and bring mixture to a boil. 5. Reduce heat to medium and simmer until corn is soft. 6. Season to taste with white pepper and salt. 7. Garnish with sweet corn, red onion and red chilli flower.

Grilled Chicken Breast Salad (10 servings)

Ingredients 10 nos 15 gm 5g 5 gm 5 gm 1 nos 1 nos 1 nos 10 nos 200 gm 200 gm

Chicken Breast KNORR Lime Seasoning KNORR Chicken Powder Mix Herbs Black pepper crushed Cucumber Carrots, chopped Capsicum (red, yellow) Red Reddish Spring Onions, chopped Tomatoes, slices

Method 1. Marinate chicken breast with Knorr Lime Seasoning, Knorr Chicken Powder, herbs and crushed black pepper. 2. Keep this mixture in refrigerator for 2 hours. 3. Cut all vegetable in thin strips. 4. Dip all vegetables in Ice water for half an hour. 5. Grilled chicken breast in grilled pan. 6. Drain vegetables and arrange in a side of a platter as shown in picture. 7. Arrange fine chopped beet root on the edge of chicken breast. For Dressing 1. Mix well all dressing ingredients. 2. Drizzle on top of the salad.

Chicken Jelfaraize Ingredients

2000 g Chicken boneless 160 g Ginger, Garlic paste 24 g Turmiric powder 15 g Garam Masala 240 g Knorr Tomato Puree 30 g Red pepper 400 g Fresh yogurt 2 Boiled eggs cut into wedges, Optional 10 g Knorr Chicken Powder 200 g Medium onion, fine chopped 200 g Capsicum, cut in to sliced 20 g Green chili, chopped 100 g Tomato, cut into wedges 200 ml Rafhan Corn Oil Salt to taste Method 1. Heat the Rafhan Corn Oil then add onion fry until golden brown then add ginger, garlic paste cook for 5 minute now add the chicken. 2. Now put Knorr tomato puree, Knorr Chicken Powder and dry spices and cook them on high flame for 5 mints. 3. Then add yogurt and cover it with led on medium flame for 5 mints. 4. Now add Capsicum and tomato wedges 5. Sprinkle chopped coriander and served with, Nan or White rice.

Chef Muhammad Razzaq is now a well-known professional in the industry of cold kitchen and Pastry. In 1989 he, without much planning, joined Gino’s, now he is an expert in Continental and Italian cosines. Being a visiting faculty at COTHM he has been generously sharing his own recipes, cooking methods and techniques among the students. Chef Razzaq is development Pastry Chef at Lahore famous Restaurant Cosa Nostra. Chef Razzaq has 26 years’ experience behind in cake art and he love make variety with chocolate.

about his journey and how the love for food got him where he is today! Q: How did you enter in the “WORLD OF FOOD”? I joined Gino’s restaurant as a part-time dish washer in 1989. For one year, I served there and then I moved to Silver Pan as a cook. As I continued my studies and passed my Matriculation in 1994, the same year I joined Café Zouk’s pioneer team as a supervisor. In 1996, I joined Pearl Continental Hotel, Lahore and that’s when I became the all-rounder in cold kitchen and bakery. In 1998, I got another great platform when I started working for Avari Hotel and served in their Pastry Section, it was the same year when I travelled to Saudi Arabia and lived there for nine

years. My first job there was in Bid Dawood where I spent two years, in which I got a chance to get a training from Malaysia and became the head pastry chef of 48 branches across Saudi Arabia. After that I switched to Abu Al Khair Restaurant, served there till 2010 and that’s when I came back to my home country, Pakistan and joined Cosa Nostra, as a development pastry chef – that’s my journey in a nutshell. Now from past three years I have been teaching Pastry in COTHM. I am also an executive member of Chef ’s Association of Pakistan.

It’s a Good Initiative as it will increase the level of awareness and education in the industry over time, they will soon be as big as never!

This industry is growing very fast, in past there were only few hotels and restaurants but now there are many restaurants and food outlets and they are offering different cuisines like Japanese, Italian, Thai, and Arabian due to the overall growth of this field. Not only eating out trend has drastically increased but customers now have multiple options to enjoy variety of cuisines Future of food services in Pakistan very bright, as it is growing day by day and peoples are putting more efforts in this area. In this manner Unilever should take the initiative of Training Chefs particular in areas such as HACCP, safety and hygiene, even the experienced chefs do not have this technical knowledge. Unilever with its global experience can help the local chef community to combat the challenges that currently market is facing.

My teachers, my mentors, Chef Muhammad Wali and Muhammad Yaseen. The only challenge is the strong competition among the upcoming new talent. They are passionate and creative. We guide them according to the cuisines; we educate them to overcome the problems they face in the kitchen. The best learning time is during the operation of our restaurant. Helping due to our experiences becomes easier.

New chefs of this cuisine are doing very well as they are struggling towards innovations. There is no country in the world where our cuisine is not served. Items like Qorma and Biryani have evolved and many new dishes have been introduced like BBQ food, Pakistani food items are prepared and served in cans and tins worldwide as well. Also the new operators are experimenting with fusion of foreign dishes with local taste. I advise them to respect their seniors and deal with them with love and patience. The best gift is the improvement in skills and you can only get if you respect your seniors. The useful tips young chefs can get only through experience and it’s important to have good coordination with the senior chefs of today. There are no shortcuts in this field. Being a chef, I thank to Unilever as it has solved 50% of our problems and saved 50% of our time which we can be spent on new developments and on our guests. All the difficult tasks like making Demi-Glace, Chicken Powder and Lime Powder are no hassle for any chef and they are free to experiment with new dishes and cuisines.
