It is a rich blessing to have you with us! Thank you for your love and support! We have painstakingly made every effort to please you…. We are grateful to God for your participation in our Greek Festival, 2015! The undertaking to publish this program book is a special labor of love. We are deeply grateful to all who are working exhaustingly and to those who sponsored this publication. Your support of the ministries and businesses in this offering helps the ongoing effort to keep our community moving forward in multifarious ways: Spiritually, educationally, culturally, and financially. SHRIMP WITH FETA AND OUZO 1 cup olive oil 2 large ripe tomatoes 1 med onion, grated ¼ cp parsley, chopped 2 cloves garlic, chopped salt & pepper to taste 1 green pepper, chopped ½ lb. imported feta cheese 1 chile pepper, chopped ½ cp. Ouzo 1 lb. shrimp, cleaned and deveined Heat the oil in a sauté pan, and add the onion, garlic, Green pepper and chile pepper. Saute for 2 minutes Add the shrimp, and stir well. Add the ouzo and continue Cooking for 5 minutes. Add the tomatoes, parsley, salt and Pepper and simmer for 5 minutes. Distribute the mixture Evenly into 4 oven-proof bowls. Crumble the feta cheese Into small pieces and place on top of each bowl. Place the Bowls under the broiler long enough for the feta to melt And color slightly. Serve the 4 inidividual portion hot, Adding some chopped fresh parsley on top to garnish. Recipe from “Manna from Heaven” Cookbook. Being sold at Festival. $25

Watermelon, Feta Cheese and Arugula Salad 2 bunches of arugula ¾ cup feta cheese, diced in cubes 4 sun dried tomatoes, finely chopped 1 T. dried mint leaves, finely chopped 2 Cups watermelon cut in cubes 4 T. extra virgin olive oil ½ small red onion Line a large serving plate with the arugula. Scatter the sun dried tomatoes over it. Add the onion in very thin slices. De-seed the watermelon flesh, cut it in slices or dice it in cubes and place on top. Just before serving, finely chop the mint leaves and scatter over the salad along with the feta cheese. Drizzle with olive oil.

GRILLED GREEK CHEESE (Saganaki) 1 LB. Kefalotiri or kasseri 1 cp. Flour 2 eggs 3 Lemons ¼ cp. Olive oil ½ - 1 shot rum Cut cheese into square or rectangular ¼ inch slices. Beat eggs. Dip cheese into eggs and flour. Place in a frying pan filled with heated olive oil that covers the bottom of the pan. Fry cheese to a Golden brown on both sides. Warm another frying pan while you are frying cheese. Place fried cheese in the second pan when cooked. Pour rum over the fried cheese and light with a matchless lighter. Let fire sizzle out and remove saganaki (cheese). Squeeze lemon juice over saganaki and serve. Recipe from “Manna from Heaven” Cookbook. Being sold at Festival. $25
