SAUVIGNON BLANC Sauvignon Blanc, also known as fume blanc, are famous for their dry, crisp, smoky-styled wines of Pouilly Fume and Sancere. When blended with the Semillon grape, Sauvignon Blanc becomes a partner in creating the lusciously sweet wines from Bordeaux known as Sauternes. This combination also produces a dry, often oak aged version called white Graves. FLAVOR PROFILE Sauvignon Blanc offers aromas that have been described as grassy, weedy, smoky, slate, citrus, and steely. It is common for this style of Sauvignon Blanc to have high levels of lemony acidity. Sauternes are quite sweet with nuances of honey, coconut, and orange.

RIESLING Riesling, also known as Johannisberg Riesling, is considered by many to be the world’s greatest white wine grape. With a reputation for being sweet, Riesling also produces dry wines of excellent quality. Generally, Riesling is made in a sweet style in Germany, Canada, and the United States, and produced in a drier style when made in Alsace, France, and Austria. FLAVOR PROFILE Riesling offers crisp acidity, with scents of peaches, pears, oil, honey, and orange. Contact with new oak barrels is unusual, as the flavor of new oak does not marry well with the delicacy of this grape. Riesling is produced dry, semi-dry, sweet, and extremely sweet. Crisp acidity and elegance are the trademarks of this grape.

PINOT NOIR Pinot Noir is the grape that offers the greatest challenge to wine makers. The best examples come from the Cote d’Or region of Burgundy, France. Domestically, California and Oregon have had success with quality Pinot Noir. This noble grape benefits from French-oak aging and is never blended. FLAVOR PROFILE Pinot Noir has aromas of strawberries, damp soil, fresh berries, and occasional barnyard, with a medium extraction of tannin. MERLOT While Merlot has built its reputation as one of the blending grapes used in the production of certain red Bordeaux wines, this black grape is the dominant grape used in the famous regions of Pomerol, and St. Emilion Bordeaux’s. It is one of the most widely planted black grape varieties in the world FLAVOR PROFILE Merlot is softer, less tannic, and less acidic than Cabernet Sauvignon. SYRAH / SHIRAZ / PETITE SIRAH There is more Shiraz under vine in Australia than any other wine region in the world. The other major producer is France, where this grape is called Syrah (se-rah). France’s northern Rhone region is home to Cote Rotie and Hermitage, where Syrah performs its best magic alone. In the southern Rhone Cinsaut, Grenache, and Carignon are most often blended with Syrah. SANGIOVESE Sangiovese is also called Sangioveto and Brunello. It is the major grape used for Italy’s best known red wine; Chianti. Certain producers have broken rank with tradition by blending non-traditional grape types such as Cabernet Sauvignon, and Merlot, with or without Sangiovese. This confusion has lead to the development of a new style of Italian wines called “Super Tuscans”. FLAVOR PROFILE The Sangiovese is light to medium colored, with good acidity and tannin. Aromas of bitter cherry are complemented by an assortment of herbs. The body of this wine can be light – as in the simple, traditional Chianti – or silky, sleek and smooth, as in the new wave of “Super Tuscan” wines.
