B

otero, the contemporary steakhouse at Encore, has quickly emerged as the prime dining spot in a resort – and moreover a town – famous for its profusion of first-rate options. With stylish bold interiors by designer Roger Thomas, the restaurant leaves behind the staid, heavy aesthetic associated with chophouses for something sexy, surreal, and altogether different. It is here that star chef Mark LoRusso lends his modern touch to all the steakhouse classics, updating familiar and comforting dishes. The specialty is expertly charred steak, with a menu that ranges from filet and porterhouse to luxuries like chateaubriand for two and Japanese Kobe beef. There are also stellar seafood and poultry options, as well as an imaginative menu of irresistible side dishes and desserts.

Inspired by the famed Colombian artist Fernando Botero, the restaurant is the latest collaboration between Steve Wynn and nightlife impresario Victor Drai. The artist’s famed sculpture, Seated Woman, sits in the center of the action, striking a playful, come-hither pose that suggests she is having a good time – exactly what an evening at Botero is all about. The restaurant spills out onto two outdoor patios for seating; and floor-to-ceiling windows make the room feel like an extension of the shimmering swimming pool and adjacent nightclub deck outside. Botero is located inside the Encore Esplanade. Dinner is served nightly from 5:30 p.m. to 10:30 p.m. Lunch is offered seasonally.

With its hip, Saint Tropez vibe, the poolside scene at Encore offers a masterful mix of casual playfulness and gracious sophistication. Botero’s outdoor covered gazebo terrace overlooks all of the action, accommodating a maximum of 40 guests on multiple tables, or cocktail reception for up to 60.

estled within the Encore resort, Sinatra is Steve Wynn’s tribute to a man who was equal parts colleague, legend and friend and pays culinary homage to Ol’ Blue Eyes as the only restaurant sanctioned by the Sinatra family to bear his name. The menu emphasizes Chef Theo Schoenegger’s deft approach to the signature flavors and dishes of Italy. The bill of fare is filled with simple and satisfying pasta dishes, antipasti selections and riffs on Italian-American classics and comfort dishes, too, like Frank’s clams possilipo, with tomato, garlic, oregano and parsley; veal Milanese, a favorite of Sinatra’s, and a braised veal osso bucco ‘My Way’, with risotto Milanese and gremolata. The open, airy setting is at once intimate and striking, rendered in a palate of rich browns, greens and orange (Sinatra’s favorite color). The dining room is

adorned with oversized portraits of Sinatra in his younger years, while the cozy outdoor patio allows guests to dine al fresco, evoking the feel of an intimate dinner party in a Tuscan garden. Memorabilia on loan from the Sinatra family is on display, including the entertainer’s Best Supporting Actor Oscar for the 1953 film “From Here to Eternity,” a Grammy award, numerous gold records and photographs. Born and raised in Italy, Chef Theo Schoenegger (formerly of critically lauded Patina in Los Angeles) has become known for his four-star cuisine and emphasis on seasonality and farmer’s market ingredients. Sinatra captures the heart of ItalianAmerican cuisine in an elegant setting honoring the legend that helped put Las Vegas on the map.

The courtyard patio offers a matchless setting for al fresco dining. Here your group can dine under the stars surrounded by cozy fireplaces, flawlessly groomed gardens and topiaries and small trees adorned with tiny white lights. This Tuscan-inspired terrace features two intimate patios joined by a garden path, with a maximum of 12 guests on one table accommodated on each patio. Parties utilizing both patios may accommodate up to 24 guests for a seated event or up to 60 for a standing cocktail reception.
