About Camp Manyung The YMCA Camp Manyung is a Recreation Camp located in Mt. Eliza on the Mornington Peninsula, 50 km South of Melbourne. Camp Manyung accommodates up to 160 people and operates all year, midweek and over weekends and school holidays. The Camp is owned by the State Government of Victoria and managed by YMCA Victoria, under a 15 year lease that concludes in the year 2020. YMCA Victoria currently manages a group of 7 camps across Victoria in unique and diverse natural settings. YMCA specialises in delivering recreational camping programs to primary and secondary school groups during the 40 weeks of the school terms and also provides camping experiences to a variety of diverse community, sporting/recreation and family groups during school holidays and on weekends. Each group attending camp is unique and we strive to meet the desired outcomes of each group through attention to pre-camp planning, program design and facilitation of the camp experience. YMCA camping programs are underpinned by our YMCA Camps Learning Outcomes that focuses on building resilience, living as community and appreciating the natural world.

Position overview The Catering Coordinator is part of the camp’s leadership team and is responsible for the effective planning and provision of the Camp’s food services. In 2015/16 financial year the camp provided over 80,000 meals to campers. The role will ensure a nutritious menu is delivered within budget and that all groups catering requirements are met. The position requires the incumbent to be well-organised, committed to excellent customer service, have the ability to apply best practice as outlined in the camps Food Safety Plan and to ensure compliance with local government requirements and YMCA policies and procedures. Importantly, the Catering Co-ordinator will be committed to the YMCA core values of honesty, respect, responsibility and caring in dealings with all camp clients and fellow staff.

Key Responsibities Leadership  Develop good relations with each visiting camp group coordinator to ensure all their catering needs are met during their stay  Develop a cohesive catering team, ensuring effective, regular communications with the team and create a team environment where all members have opportunity to have input  As a member of the Camp Manyung team the Catering Co-ordinator is responsible for achieving the effective implementation of the sites business plan as it relates to catering services. Primary responsibility is to plan and implement all aspects of group catering needs.  Train and supervise catering team in all aspects of food preparation and service including: safe use of kitchen equipment, food handling, cleaning routines, and liaison with guests Menu design and delivery  Design seasonal nutritional menu, in line with YMCA Healthy Eating policy  Prepare and serve meals that provide a healthy balanced diet, ensuring sufficient quantity and variety, and professional presentation at all times Logistics and general  Implement food ordering system to meet demands of the camp, ensure orders are placed in a timely manner to allow adequate delivery time and food costs are controlled.  Ensure sufficient staff are rostered to meet the needs of the groups on site  Coordinate the cleaning of the dining hall and kitchen to meet the needs of groups arriving and leaving  Respond to specific phone inquires that relate to campers dietary concerns Risk Management  Ensure all special dietary requirements are catered for  Ensure implementation of the sites Food Safety Plan is carried out.  Ensure efficient and accurate records are kept of food safety checks.  Maintain all catering equipment in good working order

Perform your role in accordance with the YMCA Victoria Fit for Work requirements. Cooperate with the YMCA with regard to caring for the environment, by acting in a sustainable way and minimising YMCA’s environmental impact by adhering to the organisations policies, procedures and work practices. Co-operate with the YMCA with respect to legislative occupational health and safety requirements, the ‘YMCA General Health and Safety Guidelines’, and ‘YMCA Management Responsibilities for Occupational Health and Safety’.

To enable the YMCA to meet its obligations for providing a healthy and safe working environment for you, you must inform your Manager of any issues which may impact your ability to safely perform your role.

Position Requirements / Selection Criteria Knowledge and Experience  Experience in leading an effective and cohesive staff team  Good verbal communication skills, and ability to relate to people from all ages and backgrounds  High focus on customer service  Ability to follow procedures as outlined in the Food Safety Plan  A passion for producing quality, healthy and apertising meals with a creative flaire  A positive attitude and commitment to YMCA Camping  Minimum of 5 years experience in the food service industry Qualifications and / or Licences    

Level 2 workplace First Aid Tertiary qualifications in commercial catering an advantage Full understanding of Food Safety Act and it’s practical application and implementation Food Safety Supervisors certification as minimum

Conditions of Employment    

The successful applicant will be subject to a Police Records Check. The successful applicant will hold a current Working with Children Check (if applicable) The position holds an SS Grade 5 status with a base hourly rate of $27.12p/hr. The position is in accordance with the terms and conditions of the YMCA Staff Collective Agreement 2016.

Days of Work; Monday, Tuesday, Wednesday, Thursday from 11am – 7.15pm Total Hours = 31 hours p/week
