We’re fond of talking about the lengths we go to in order to find new and exciting wines for our list and the satisfaction that this brings us (and hopefully our customers!), and every word is true. However listing an exhaustive selection from around the world does not in itself make a great wine list, nor one that people actually want to read. Clarity is something that in today’s digital age of maximum information reaching us at the speed of light can offer moments of calm and respite.

Burgundies, we’ve chosen a dozen examples from across Argentina, Australia, France, Italy, New Zealand and the U.S.A. Fresh, lean and steely? Choose the 2015 Red Claw Chardonnay from Yabby Lake in Australia’s cool Mornington Peninsula region. Textural, yeasty, intense? Try the 2013 Chardonnay Sous Voile from Marie-Pierre Chevassu in the Jura area of eastern France. Lush and rich? You need the 2014 Estate Chardonnay from Kumeu River in New Zealand, or the 2014 ‘Wild Boy’ Chardonnay from Au Bon Climat in California.

By focusing on balance rather than quantity, we’ve settled on a wonderfully round number of 200 wines, down from nearly 300 when we first started 11 years ago. So what does balance mean, and can it give clarity?

We hope that the task of choosing which wine you’d like to drink has become that little bit easier, and that when you take your first sip it does offer you a moment of clarity.

Biferno Rosso Riserva 2011 — Palladino, Molise, Italy 21.50 This has become a big favourite for me and for loads of customers. You just can’t get better red for the price. (Desiree, Manager — Chiswick)

WHITE

Corbières ‘Tamaroque’ 2012 — Caves de Rocbere, Languedoc, France 27.00 A perfect example of when a good red wine doesn’t need oak. All the ripeness and flavour you need, but not heavy or sweet. (Martina, King’s Cross)

Fiano Puglia 2016 — Mezzorgiorno, Puglia, Italy 21.50 I love the fact that this has underlying richness and exotic fruit and then just hits you with a wave of freshness. (Heloise, Manager — King’s Cross) Cotes du Rhone ‘Grandes Vignes’ 2015 — Vignerons d’Estezargues, Rhône, France This is real wine, unfiltered and not fiddled with in the winery. Cotes Catalan Blanc ‘Macabeu’ 2015 — Tramontane, Roussillon, France 27.00 Amazing texture — helps make it so memorable. This comes from grapes grown wild in the mountains, and the quality shows. (Freddy, Manager — Marylebone)

Arneis ‘Vivo’ 2015 — First Drop, Adelaide Hills, South Australia 35.00 It’s unusual to see this Northern Italian variety in Australia. It seems to work brilliantly in this cool climate region — very fresh and almondy. (Wilson, Marylebone) Rioja Blanco ‘Ad Libitum’ 2015 — Juan Carlos Sancha, Rioja ORG 35.50 We discovered this winemaker last year and now worship the ground he walks on. Really serious white wine. (Charlie, Vinoteca boss man) Orbitofrontal Cortex 2015 — BLANKbottle, Swartland, South Africa A blend made from wiring up the winemaker’s orbitofrontal cortex and measuring his emotional response to each of the different varieties. Clare Valley Shiraz 2015, Rodney & The Horse — Clare Valley, South Australia  32.50 I like Aussie Shiraz but get a bit fed up with wines that are too heavy and oaky. This is full & intense, but really drinkable. (Ali, Manager — Soho) Cotes Du Roussillon ‘Le Grill’ 2015 — Mas Cristine, Roussillon, France Red wine with attitude! I just find this so interesting and full of personallity. (Janka, Accounts)

Valpolicella Ripasso Classico Superiore 2013 — Monte Santoccio, Veneto, Italy Such a classy wine. The fruit is incredibly pure but it has the edge that Amarone also has — elegant and deep. (Ismail, King’s Cross)

Rosé Fiefs Vendeens Mareuil Rosé ‘Collection’ 2015 — J Mourat, Loire ORG 28.50 I tend to have this with roast pork or chicken. It doesn’t need the sun to come out for this one to be cracked open. (Willoughby, Operations Manager) beer Atlantic American Pale Ale — Brixton Brewery, London (5.4% ABV) 330ml Can 5.95 The hops here are incredibly aromatic, giving distinctive flavours and aromas, but it’s not very bitter which is good! Banyuls ‘Galateo’ 2014 — Coume del Mas, South of France (50cl)  43.00 This is deep, dark and rich, with loads of sweet raspberry and dark berry compote flavours. It really does go with anything chocolate, believe me! (Stella, Soho) Cadillac 2011 — Château Fayau, Bordeaux, France  This is like Sauternes but much more drinkable. It has marmalade flavours as well as lemon curd, really delicious. (Simon, King’s Cross)

Rioja Vendimia 2015 — Bodegas Aldonia, Rioja, Spain I drink this at home a lot. It has lovely red, raspberry-style fruit and goes well with all kinds of food. (Caroline, Accounts)

Muscat Sec ‘Nature’ 2015 — Tetramythos, Peloponnesus, Greece ORG 30.00 A dry, textural and floral white with rose petal scents and joyous blasts of orange, peach and lemon. Natural yeast fermented, and unfiltered. Santorini 2015 — Hatzidakis, Santorini, Greece ORG 35.00 Made from organic Assyrtiko, grown on volcanic soil. Spicy, aromatic and rich with racy acidity.

Blanc de Noirs ‘Moulin Blanc’ 2014 — J. Mourat, Loire, Vendée, France ORG 35.00 White Pinot Noir from old vines south of Muscadet. Round and rich, beguiling aromas, dry and intense. Fiefs Vendeens Mareuil ‘Clos St Andre’ 2013 — Mourat, Loire, Vendee, France ORG 38.00 Chenin Blanc fermented naturally and aged on lees in huge old wooden vats for a year. Superbly deep & structured, honey & flint & crisp pear. Biodynamic Petit Verdot 2015 — Bill Downie, Riverland, Australia ORG BIO 36.00 Bill makes high-end wines in Victoria, but jumps over the border to make this deep and dark, violet-scented, fleshy-fruited beauty. Pinot Grigio 2015 — Gasper, Goriška Brda Why drink this, other than the fact it has a big fish on the label? Well, it’s brilliant! Grapefruit, pineapple & cinnamon.

FRANCE Riesling ‘Portrait’ 2014/2015 — Domaine Zinck, Alsace, Eguisheim  Ace dry and ripe Riesling. Lemon, mint and blossom, tight acidity and structure. This is Alsace Riesling with life!

Wine buying, the Vinoteca way There are aspects of running a restaurant and wine bar that aren’t nearly as fun as you might think; unfortunately, it’s not just drinking fine vintages and networking over long lunches. But within the day-today duties of running a business, Vinoteca owners Charlie and Brett have to find time to create and refine the wine list and this takes some serious commitment to tasting and wine buying. We don’t just look for wines from our UK suppliers — at Vinoteca we’ve been going direct to producers for years, getting wines that no-one else stocks, finding small parcels of great bottles, and giving you the best possible value and bang for buck in your glass.

International wine fairs are just one way to discover new wines and winemakers and are a sight to behold, from the London Wine Trade Fair in Kensington Olympia to VinItaly held in an industrial exhibition centre the size of a small city, just outside Verona. Consisting of hundreds of producer’s stalls, thousands of attendees and more wines than you could taste in a lifetime, they can be completely overwhelming or an incredible chance to find some new discoveries.

Vinoteca took a very successful trip to ProWein in 2014 specifically to source some new bag-in-box wines. We take huge pride in our BIB wines — we’ve had them on the list since 2010 and were the first in London to take this format seriously as a great way to cut carbon emissions in transport, re-use glass bottles, and serve good wines at a lower price. ProWein saw us trawling the many producers of Provence rosé for a BIB partner, receiving many Gallic shrugs, but the end result was worth it when we hit upon the superb Chateau St Martin and their delicious wines in the right format and have been enjoying them ever since.

kegs.” Once in Spain, we made it up to the rusty-soiled hilltop vineyards of Cellar el Masroig in Montsant with the evening sun warming our faces. This last visit not only taught us the correct way to pronounce Masroig (‘Mazroj’ apparently. Now you know.) but also introduced us to their fantastic olive oil. After we noticed olive trees alongside the vines, we discovered that they also make a single-variety olive oil, tasted it and promptly shipped a pallet. We now use it in all our kitchens, serving it with our home-made bread, and it’s available in all our wine shops to take home for just £6.95/bottle. Earlier this year Charlie and Brett took a group to our Prosecco producer Tenuta 2 Castelli. “It didn’t click until we visited Tenuta 2 Castelli just how small an operation it is, and how impressive their attention to detail is,” he recalls. “Unusually, Tenuta 2 Castelli only use grapes from their own vineyards, and with 10 hectares within the very best area of Conegliano Valdobbiadene DOCG, they produce Prosecco of the very highest quality. We took a team of 12 to visit the estate just before the harvest, consisting of not only waiters and managers but chefs too — all came away with great respect for the operation and of the wine that we ship direct from them.”

It’s a team effort here at Vinoteca, and the best wine buying trips have included many of our key staff; it’s a great exercise to get to know the wines that we sell and the people that make them. There’s no better way to get under the skin of a region or a producer, and understand why their wines taste the way they do. Be under no illusions — a Vinoteca wine trip is not a holiday; days start early, finish late, schedules are non-stop and sometimes include hundreds of miles of driving. But we’re not going to argue with the chance to swap the restaurant floor or head office for a few days of travel and vineyards. 2015 saw the first Vinoteca Road Trip for a group of around ten of us, encompassing Provence, the Rhone, Languedoc-Roussillon and crossing the border over to Montsant in Northern Spain. We feasted on pissaladière and rosé under the trees of Chateau St Martin, gazed out towards the Mediterranean from the vineyards at Caves de Rocbere, and called in at our top Rhone cooperative Domaines des Estezargues, known for their minimal intervention winemaking from just a handful of trusted growers. “Recommended to us by our good friend Tim Johnston from Juveniles in Paris, Brett and I went to visit Estezargues four years ago and instantly fell in love with who they are and what they do,” says Charlie. “One staff trip down and hopefully more to come, we continue to ship a selection of their wines with the potential addition soon of a full bodied Grenache in 20 litre

Brett was visiting friends in the Pyrenees Orientales and came across Andy from Coume del Mas and his wines at a tiny wine shop showcasing small production, minimal intervention wines. He tracked down their importer in the UK (whom we happened to buy from already) and also found out that a good friend travels their each year to help out at harvest time. Fast forward six months and we’re about to ship the second pallet of these amazing white and reds from Roussillon, not to mention one of the very best Banyuls that Brett and Charlie have ever tasted, the iconic sweet, fortified red that this region is famous for. Do what comes naturally Natural wine is the most controversial subject in wine of the decade. The phenomenon has been big news over the last few years, making waves on wine lists and raising questions about what makes a wine ‘natural’ in the first place. While much of the theory goes back centuries, essentially natural wines are made with a ‘back to basics’ approach, using as few modern techniques and interventions as possible, often incorporating organic, biodynamic and sustainable practices. When managed properly, you get thrilling results which leap out of the bottle with energy and life.

unusual wines and is extraordinary. It’s not just innovative areas like Swartland where you can find wine made in unexpected ways. Certain producers in more traditional regions are making sure their methods are as inventive as possible. The Soave Classico from Fillipi, Biscarelle’s Chateuneuf du Pape and the Ad Libitum white and red wines from Rioja are all made with organic or biodynamic techniques. At the top end of our list, Michel Chapoutier is famous for his commitment to biodiversity in the vineyards, organic and bio-dynamic production, natural yeasts and minimal filtering, even in his top wines like the 2001 Cote Rotie ‘La Mordoree’.

Regardless of their production methods, however, wines don’t end up on the Vinoteca list unless they’re a joy to drink. Luckily we have lots of fresh, punchy and tasty natural, organic and biodynamic bottles which have earned their place — here’s a few suggestions for your next bottle…

Further afield, look to Australian Bill Downie, with his deep, scented, biodynamic Petit Verdot or Frog’s Leap, making organic wines like their elegant Zinfandel on their family-run Napa vineyards for over thirty years.

J Mourat makes wines in the Loire using minimal intervention and organic practices, as well as encouraging as much biodiversity as possible, making sure his vineyards are bursting with life. His Fiefs Vendeen Rosé is a firm favourite, along with the intriguing Blanc de Noirs (white wine made from red grapes). We’ve now added a Chenin Blanc as well as a succulent sweet wine from the same grape variety.

If you’re worried that this attention and commitment in winemaking has to come with a heavy price tag, fear not. Try the Cielo Blanco Cataratto (we call it the “olive oil wine” as it’s unfiltered — give it a shake and see), the Soli White from Bulgaria or the Cotes du Rhones from Estezargues for amazing quality and value. As you can see, we’re all for natural, organic and biodynamic wines, as long as we can guarantee that our customers will enjoy drinking them as much as we do.
