I was greeted with a cold glass of Champagne and an astrologer explained the constellations, pointing out the Milky Way, Jupiter, Saturn and Mars, which can be seen so clearly with the naked eye. Just when I thought it couldn’t get any better, the Field of Light flickered to life. From afar, the 50,000 solar lights look like a blanket of colour over the landscape. It’s only when I got up close that I could truly appreciate the detail of the individual bulbs. This art installation by Bruce Munro is around until 1 April 2017 and I would urge everyone to see it before it’s gone. S

pending the past 10 days exploring Australia with my family has been the most incredible experience and one I will never forget. Growing up in Australia, you can sometimes take it all for granted. But, after being away for 10 years and coming back to explore some of the most beautiful places I've ever seen, it's reminded me how unique and impressive Australia is. The natural beauty of Australia always surprises me. From the Red Centre's rich desert landscapes and the Kimberley's stunning gorges and remote waterholes; to vibrant islands with crystal clear water and white sand beaches, Australia really does have it all. If I had one bit of advice for people thinking about Australia, I’d just say hurry up and book. You won’t regret it.

The Kimberley In the Kimberley, we went fishing in one particular spot that could of rivalled the scenery of Jurassic Park, and we saw crocodiles, snakes, buffalo and an abundance of other amazing native wildlife. Being in a place like this, and feeling completely off grid, is a pretty special feeling. A sunset dinner in the Kimberley is an absolute must. The colours of the skyline are rich and vibrant and it's pretty special to see the millions of stars above in the night sky. We stayed at a beautiful place called Berkeley River Lodge and had dinner each night on a sand dune, barefoot in the desert sand. One of the best afternoons in the Kimberley was swimming in a secluded waterhole at the base of a waterfall, where very few people have been. We flew in a helicopter down

along the winding Berkeley River and then took a boat across to a really private spot. It was amazing to spend the whole day there with the kids, swimming and fishing. It's something I'll never forget. In Australia we are so lucky to have access to some incredible fresh produce and native ingredients. Eating fresh fish we had caught that morning in the Kimberley was incredible. We just cut it up right on the beach and it was delicious sashimi style. We stayed at One&Only Hayman Island, which was a real highlight. You can enjoy amazing food and wine while overlooking the reef, plus they have an awesome kids’ club with face painting, fish feeding, jewellery making and some great swimming pools for us to chill out in as a family. I went scuba diving for the first time on the Great Barrier Reef, which was amazing. I've never seen so much sea life or so many vibrant colours from the coral. It’s like visiting another planet. The most romantic part of the trip was being dropped off by helicopter on Whitehaven Beach with my wife, a picnic basket and a bottle of Champagne. It was pretty special. Flying over the reef and seeing the changing blues and greens was incredible, with the intense colours a contrast to the white sand of the beaches. We spent the afternoon on Whitehaven Beach, which was absolutely stunning as it has the most pristine white sand and crystal

clear water. It’s the perfect spot to just unwind surrounded by the reef. The next day we took the kids for a picnic and a bit of beach cricket on Langford Island, just off Hayman Island. The kids loved running along the sand and playing in the shallows. I love being outdoors, so having a sunset dinner on the beach was awesome. On Hayman Island, we were really spoilt during an outdoor teppanyaki night and we also experienced a really intimate Chef’s Table, dining on amazing French food created with the best Australian ingredients. Uluru & Kata-Tjuta National Park Seeing Uluru for the first time was really awesome. We had the very special experience of meeting with Sammy Wilson, a local Anangu Traditional Owner. I

climb up the steps of the nine-seater Cessna Grand Caravan and take a seat in one of the luxurious leather chairs. This is a real pinchme moment. I’m setting off on Kuoni’s Elewana Sky Safari, a private safari staying in some of Tanzania’s most exclusive accommodation. I’ll travel between the country’s wildlife hotspots in this VIP light aircraft, which I’m sharing with a few like-minded travellers setting off on their own tailor-made adventure. Travelling by aircraft ensures I can cover great distances easily, reaching Tanzania’s iconic parks quicker than by road. This means the schedule is more relaxed and the start times are later than most safari holidays I’ve been on before. I peer out of the windows and, as we soar through fluffy clouds, I look down on Maasai villages in the middle of nowhere;

identify tiny dots as herds of cattle on the plain; and am struck by how green the landscape is below. It takes only 20 minutes to reach Tarangire National Park and, as we land, I spot elephants and a group of ostriches at the side of the runway. We hop out of the plane and into a 4x4 and our guide, Elly, is hugely knowledgeable about the local wildlife. We pass herd after herd of elephants, many right at the side of the track, where I get close enough to see that their skin is tinted with bright red ochre from the area’s volcanic soils. Parts of Tarangire are covered in dense trees and we peer through the branches to make our sightings. Elly tells us it is the wet season, which means the animals disperse rather than gathering around the waterholes, as they do in the dry season. We are lucky and spot at least 70 elephants and 30 giraffes. h

The perfect place to enjoy a gin and tonic

Our stopover tonight is Tarangire Treetops, a collection of 20 elevated tented rooms with the wow factor. The main lodge is built around a 1000-year-old baobab tree and you can see the thick trunk protruding through the reception, complete with a cavity full of bats. We walk past the pool, which has views into the distance through the trees, and I’m shown to my room, which is also built around a baobab tree. I climb the wooden spiral staircase leading to the entrance and am told to call the Maasai escort if I want to reach the dining area, as there are no fences keeping the wildlife out here. I open the tented sides so I can make full use of the massive verandah and love the little local touches, such as an ostrich egg shampoo dispenser.

As the late afternoon sun filters across the landscape, we head for the most incredible sundowner viewpoint. On the top of a hill with views over the plains, tables and chairs have been set out for us. In the delicate sunset light, everything seems 10 times more beautiful, and I sip on a gin and tonic. In this moment, I’m mesmerised by the panorama in front of me and the giant African sky. The following day, we fly over Manyara Lake, spotting thousands of flamingos in the shallows. There is a beautiful green plateau, which gives you a sense of the scale of the Great Rift Valley. I think how hard it will be to better Tarangire Treetops, but we arrive at The Manor at Ngorongoro, an elegant stately home on a coffee estate where suites feature a claw-foot bath, open fireplace and massive wraparound terrace. It’s totally different and feels like we have a small house to ourselves.

Activities are endless – from horse riding, game drives and a coffee tour to a pre-dinner massage, which I opt for with enthusiasm. Dinner is amazing. Five courses of fine-dining dishes are served by my own butler and the service is impeccable. On a morning game drive here, I head out to the famous Ngorongoro Crater, reaching a truly spectacular look-out point over the flat crater, edged by a green mountain range and topped off with a bright blue sky. The caldera is alive with colour as we descend into it, covered in a blanket of yellow and purple flowers that are unique to this time of year. We catch sight of huge herds of zebra and wildebeest on the open plain, plus antelope, black rhinos and the mighty dark cape buffalos. In the background, pink flamingos dip down towards the water’s surface. Wildlife rich is an understatement as I count 20 lions on our morning drive and, at one point, four male lions lay down against our 4x4 to watch the big herds of buffalo. After lunch by a lake known for its hippos, we head back to The Manor and I’m welcomed by my butler who has run me a bath, complete with petals! I wake early for a game drive in Lake Manyara National Park. We see elephants and giraffes – but the real draw here is the birdlife. Hornbills, storks and kingfishers make an up-close appearance for my camera lens, as does the lake’s flamingos, which I’m told are usually further out into the water. After lunch, it’s time to depart The Manor and I’m genuinely very sad to leave this special place. I board our aircraft for a 40-minute flight to the Serengeti, passing right over the Crater en-route. My new home is Serengeti Pioneer Camp, which has an amazing location on a hillside with sweeping views over the Serengeti. My tent looks basic from the

outside but I step in to find a luxurious interior, decorated with big old-fashioned trunks by the bed and even an antique explorer’s helmet and walking stick. The view keeps drawing my attention as we have dinner and I’m escorted back to my tent by the Maasai. I sit inside and listen to the wildlife show happening outside, from the gentle chirp of crickets to the chilling cackle of hyenas. Today in the Serengeti I long to see a leopard or a cheetah and, after a long drive, we see a lone leopard dangling in an acacia tree, feasting on the remains of a baby wildebeest it has dragged up into the branches. We press deep into the park in search of the Great Migration and find hundreds of wildebeest and zebra walking in long lines towards the distant horizon. Lingering in the middle of this natural wonder and listening to their grunts is a special moment, and I take time to observe the young foals and calves.

On my last day, I rise early to watch the sunrise over the Serengeti. I feel so grateful to have experienced one of nature’s most amazing landscapes and wildlife. The luxurious lodges, service and the ease of travelling by air have made every step of my journey truly amazing. This really is one of the best holidays I’ve ever been on.

or generations, this once dingy track presided over the iconic cityscapes of New York, forgotten and disregarded. Now, it’s one of the city’s most popular and well-loved escapes. Passing through stylish Chelsea and the increasingly popular Meatpacking District on Manhattan’s West Side, the High Line started its life as part of an elevated freight rail line that connected the city’s waterfront factories and warehouses. As the trucking industry boomed, the need for the train declined, with the last journey made along the tracks in 1980. It lay forgotten, with just a handful of activists fighting against developers to prevent demolition. Thankfully, the activists won and, in 2002, the Friends of the High Line started to design the park. Very much a labour of love (reflected in every inch of this unique space) the High Line was completed in its entirety just last year.

“The walk epitomises the modern New York art scene at its finest.” As with everything in the city, the development of the High Line attracted the attention of the many talented local artists and you’ll find public art installations scattering the length of the walk, featuring everything from sculptures and murals to pop-up performances. An art installation in its own right, it epitomises the modern New York art scene at its finest; trendy, ad hoc and, occasionally, a little odd. Offering an insight into New York City that you won’t find anywhere else, the High Line is a great spot to sit, relax and soak it all in. Bleachers look out in cinematic style through glass panes over the iconic city streets and you can fully appreciate watching the hustle and bustle below from a peaceful sanctuary. Embracing arm chairs and swathes of lawn are perfect for a spot of sunbathing, while tasty food and drink vendors ensure that you’re never without refreshment. As the seasons change, so does the High Line. While winter coats the line with spindles of frost and blankets the paths around the rails in white, spring sees the blooms burst into life. As summer nears, things here really kick up a gear.

From June through to September, it’s not just the High Line’s foliage that puts on a dazzling display. There’s a huge range of things that you can try – most of them for free. Gaze at the heavens with the help of the Amateur Astronomers Association and their high-powered telescopes; learn to mambo at a Latin dance party; and find your centre with morning Tai Chi. There’s also a number of tours that include Elevated Design, High Line as Habitat and the Wanderlust Art Tour. Get your timing right and you’ll be in for a free show. Out of Line sees the stars of downtown New York’s nightlife bring their genre-bending performances to the tracks. Ranging from Heartbeat Opera to Renegade Cabaret, and The Illustrious Blacks to Carmelita Tropicana, there’s never a dull moment. If you’re travelling with a family, there’s plenty to keep the kids entertained. Make it Splashy is a firm family favourite, with a splash of water at every turn. Throughout the summer, there are a number of fun activities designed to educate the younger generation about wildlife in the city, with the opportunity to learn about bees and how honey is made, and for them to get their hands dirty as they discover how different species of plants grow. As autumn draws in, colour dazzles here as the leaves change from green to red, floating to the floor and crunching underfoot. With holes appearing in the foliage as bare branches shed their golden trinkets, it becomes easier to spot the city’s famous landmarks. If you’re walking from north to south, as you near the end of the walkway, you can make out the Statue of Liberty standing proud in the distance – a great way to end your elevated walk above this superb city.

eavenly ski resort has an intriguing split personality. Located on the California-Nevada border in South Lake Tahoe, you can find a slow pace of life on the California side, with rustic cabins and lodges. A three-hour drive from San Francisco, Heavenly is easy to work into a California or Nevada road trip. T

he visitor sees the bushes; the guide sees through them. This was certainly true in respect of our guide Verikomba as we explored Etosha National Park in northern Namibia.

Etosha is bigger than Wales and the salt pan that defines the landscape can be seen from space. For most of the year, wildlife congregates around the waterholes, giving you almost guaranteed sightings. We saw the threatened black rhino, a group of vultures, hyena, jackals, cheetah and the most magnificent trio of roaring lions that I have ever seen. Namibia is three times the size of the UK but has just over two million people. As seasoned safari addicts, it was an absolute delight to visit a location where the animals outnumbered the safari vehicles. We met the Himba people, where the ladies rub a mixture of animal fat and red ochre onto their bodies and hair, which some believe is to protect against the sun. We also admired the engravings of lions, seals and giraffes made on the rocks by the San bushmen thousands of years ago.

We went to the Skeleton Coast, named because of the fogs produced by the cold Benguela current and the treacherous waves that have littered the shoreline with wrecks. The shipwrecked survivors landed on an inhospitable, arid shore to leave only their skeletons in the sands. This is where we encountered one of the greatest wildlife spectaculars on the planet at Cape Cross. Here, thousands of cape fur seals have a nursery for their young. The shallows and rock pools create a safe haven where the pups can hone their aquatic skills safe from the sharks that cruise in the deeper waters further out. The pups bleat like a huge flock of lambs as they charge relentlessly over the rocks and sand between feeds from their mothers. Further down the coast we stay at Swakopmund, named after the river that periodically flows into the sea. The name of the river means stinking hole. Today it is an elegant seaside resort with a distinctly German flavour. Both here and at the capital Windhoek we are reminded of the shameful colonial past. Namibia was the location of the first genocide of the 20th century but, strangely, memorials to some of the perpetrators remain alongside monuments to those who gave their all in the struggle for freedom. This seems odd; but there is a lesson for us all in that the Namibians have learnt to forgive in respect of past memories in order to go forward. Our guide explains: “History is like a baby. As

Finally we head off into the oldest desert in the world, the Namib, to encounter sidewinder snakes and other creatures that live just below the surface. We climb the stunning dunes at Sossusvlei and encounter a surreal landscape of dead trees that refuse to rot over a hard white mineral pan. Namibia is a splendid country. Prices are very reasonable. How to eat (and drink) well on holiday Nutritionist Amanda Ursell reveals how to indulge without feeling like you need a post-holiday physical overhaul. Embrace the fact that in hot climates, appetites can naturally tail off a little. Take advantage of this beneficial body rhythm and eat to appetite rather than feeling that you need to try everything on the menu at every meal. Eat slowly and enjoy each mouthful rather than rushing through meals and you will find a satisfying balance between wants and needs.

Try drinks with a lower percentage of alcohol by volume (ABV) like a Bellini (Prosecco with peach juice) or 3-4 per cent ABV ice-cold lagers. Controlling units is also made easier with single shots of spirits served with low calorie mixers like gin and slim-line tonic with plenty of ice. Stay within the ‘lower risk’ drinking guidelines so that you can still indulge in a drink but feel good the following day – that’s 2-3 units for women and 3-4 for men a day, with alcohol-free days each week.

Make the most of local dishes that use the freshest ingredients and are prepared in natural and healthy ways. Regular meals help to control blood sugar and energy levels so that you feel stable and energised throughout your day.





Base your meals around super-nutrient-packed vegetables, salads and fruits, eggs, pulses or some lean fish, chicken or meat; plus, the more slowly-released carbohydrates on the side. To help beat bloating that can occur after flying and when in hot climates, swap fizzy drinks, including sparkling water, for still versions; drink from a glass rather than a straw; drink and eat slowly and cut down on salt. We eat around 8.8g of salt a day in the UK yet only need around 1g, even in hot climates. Having lots of vegetables and fruits, simply-prepared meals and not adding salt at the table can help you lose up to 1.5 litres of excess stored water (1-2lb on the bathroom scales) within the first three days of your break. You can literally feel yourself de-bloat as the days go by.

Make a beeline for orange-coloured fruits and vegetables like carrots, mangos, apricots and sweet potatoes; red ones like tomatoes and red peppers; plus, spinach and watercress. Rich in super nutrients called beta carotene, lycopene and lutein, these vibrant pigments accumulate under our skin where they act like a parasol, helping to scatter harmful rays, giving us an estimated internal skin protection factor (SPF) of around three. Lan Phuong, a local in Ho Chi Minh City, guides us through some of the city’s must-try Vietnamese dishes.

F

ormally Saigon or the pearl of Southeast Asia, Ho Chi Minh City is one of the most famous cities in Vietnam. It’s an energetic, modern and friendly place, where young people build their dreams. It’s also crowded, with over 10 million people – and over seven million motorbikes. It’s interesting and impressive in so many ways; and once you visit our city, you’ll never forget it. One of my favourite local dishes is a Saigon baguette called Banh Mi Saigon, which is crispy on the outside and full of vegetables or pickled carrots, grilled pork and a little bit of chilli. It will surprise you with the first bite.

You should also try a pancake called Banh Xeo, made with a combination of rice flour, manioc flour, green beans and spring onion. The chef will also add pork meat, shrimps and plenty of bean sprouts inside. It often has mustard leaf, mint and mango leaf added to make a fresh roll, called a Summer Roll, which you can enjoy with a lovely fish sauce, made especially for this pancake. There are also many different kinds of noodle soups to try; and I like to order Pho Bo – beef noodle soup – and C m T m, which is broken rice, on the street food stalls. You can find most of these dishes at Ben Thanh Street Food Market, which opened last year. It’s close to Ben Thanh market, which is the biggest in the city, and has plenty of choice for local food and drink. You can fill

up for around £3-8 and taste local dishes while relaxing with a draught beer or fresh fruit smoothie. Drinks-wise, order a Café Sua Da, the best combination of Vietnamese black coffee and a little bit of condensed milk, which tastes similar to dark chocolate. You should also try sugarcane juice with kumquat and plenty of ice, which is great when temperatures soar in the city. For a special meal, I like restaurant Quan Ngon 138, where you can find all sorts of Vietnamese cuisine and see how it is made by the chefs in the open show kitchen. One of the best places to try Pho Bo is restaurant Pho 2000, where they bring a new, fresh taste to this traditional dish. It is a very different style to the beef noodle soup you may experience in Hanoi or elsewhere in Vietnam. Ho Chi Minh City really is heaven for tasty food and the perfect place to start your Vietnamese cuisine experience.

square building in faded amber, it seemed balanced on the very side of the hill, between the light of the piazza and the dark of the hillside and the sea. Intrigued by the building the locals believe to be cursed, the island’s disgraced doctor Amedeo Esposito sets out to restore the House at the Edge of Night.

Home to the Esposito family for generations, it withstands a century of turmoil. The overgrown terrace witnesses long-running feuds, nurtures unexpected friendships and becomes the stage for great love affairs. It’s a place alive with stories, legends and, sometimes, miracles.

“This book was so different to the usual books I read but I really enjoyed it. Based on an Italian island and spanning a whole century of island life, it was full of ancient myths and tales told alongside the story of a doctor who makes it his life’s work to collect stories from the islanders. The book follows his family’s life against the backdrop of world wars and history, right up to the monetary crisis of a few years ago. It’s very atmospheric and the author describes the sights and smells of the island in great detail. There are many intricacies in the story and it’s a book that really makes you pick up on individual characters and want to follow each one’s story. I think it is a really great holiday read.”

How to explore Alaska Our Alaska expert, Daniel Hewitt, reveals the best ways to explore this extraordinary state.

Why is Alaska special and what are your must-see sights? Alaska is one of the few truly wild landscapes that is relatively easy to access by cruise, train, road and air. With its abundant wildlife and breathtaking scenery, it's hard not to stop every few minutes to take photos. But the most outstanding vista has to be Denali, North America’s tallest peak, towering above the crystal clear lakes and rugged tundra of Denali National Park. What type of ways can you see Alaska? There are a couple of good long-distance roads and a comfy train service to explore the heart of this vast wilderness. It's actually quite a simple place to self-drive and the train runs daily between Seward (where most cruises dock) and Denali National Park via Anchorage. Cruising lets you discover the spectacular coastline and marine wildlife, so a combination of a cruise and land adventure will make the most of your time here. Which Alaska cruise route is best? Generally there are two options for Alaska cruising; often departing from Vancouver and, sometimes, Seattle. Some ships make one way trips to Anchorage, while others do a round trip; and most

take between seven and 10 nights. The return option may be better for those exploring Canada; and the one-way option better for those who want to experience Alaska in more depth. Where can I go to see bears or the Northern Lights in Alaska? Potentially, the Northern Lights can be seen from anywhere in the state given the right weather and viewing conditions, but the further north you travel, the better the chance. Most organised Northern Lights tours operate out of Fairbanks, 200 miles south of the Arctic Circle. Wild grizzly and black bears are part of the scenery in Alaska, but for the ultimate bear viewing experience you must go to Brooks Falls in Katmai National Park. It is one of the few places in the world where you can get close enough to take photos of groups of, usually solitary, grizzlies as they jostle and fight for the best fishing spots at the river falls during the salmonrun season. Where is best to stay in Alaska? Wherever you stay in Alaska you will be guaranteed spectacular scenery. It is an easy place to get around, whether selfdriving or as part of an organised tour,

so if you have enough time you really should experience the fjords and glaciers around Seward, the eccentric town of Talkeetna and Denali National Park. If you have less time, it is easy to visit most of the sights by train from Anchorage. When is the best time to go to Alaska and what’s the weather like? The weather in Alaska is as extreme as the landscape. Mid-summer days can be 22 hours long and surprisingly sunny and warm; and, in winter, daylight lasts for four hours with arctic conditions. The best time to visit is between mid-May and early September before things start to wind down for winter. How long would you recommend spending in Alaska and what would you twin it with? Although most of Alaska is inaccessible to all but the most hardy explorer, the main sights could be visited in a three to four day stay if well organised; and a self-drive should take seven to 10 days. Also, with great connections to the rest of north America, including non-stop flights to Hawaii taking six and a half hours, and cruise connections with Canada, it is easy to combine some amazing and diverse experiences.
