Why Paleo? The Paleo diet is the healthiest way you can eat because it is the ONLY nutritional approach that works with your genetics to help you stay lean, strong and energetic! Research in biology, biochemistry, Ophthalmology, Dermatology and many other disciplines indicate it is our modern diet, full of refined foods, trans fats and sugar, that is at the root of degenerative diseases such as obesity, cancer, diabetes, heart disease, Parkinson’s, Alzheimer’s, depression and infertility.

Who am I and why should you listen to me? In the nineties I was overweight and miserable. One day I had enough, and decided to learn everything I could about weight loss and nutrition. I became a NASM certified trainer, ended up running countless marathons, half marathons and 3 50K ultra marathons. Today am an official pace leader for the Los Angeles Marathon. I’m a married dad with two beautiful children, here’s a picture of my family after the Mammoth Lakes Half Marathon last summer, and a picture of me leading my marathon team through the streets of Los Angeles. A huge component in my transformation was transitioning away from junky processed food and adapting the paleo lifestyle. My family fell in love with the new way of eating, and my then 8 year old daughter started calling me “Paleo Papa!” So in sharing what has worked for me, please enjoy the following recipes which represent a typical day of eating for me.

Breakfast: Paleo Blueberry Muffin

Ingredients 1 cup blanched almond flour 1/8 teaspoon baking soda Pinch of salt 2 tablespoons raw honey ½ cup full fat coconut milk 2 tablespoons melted coconut oil 1 egg ¼ cup fresh blueberries, not frozen!

Instructions Preheat oven to 350 F and line muffin tin with baking cups Mix flour, baking soda and salt

In a different bowl, whisk honey, coconut milk oil and egg Use a rubber spatula to mix the wet and dry ingredients together Gold the blueberries in the batter gently Spoon batter into the prepared muffin tin Bake until an inserted toothpick comes out clean, usually around 20-25 minutes Set pan over a wire rack to cool completely before removing from paper liners This recipe makes 6 muffins

Snack-Chocolate Banana Malt

Ingredients 1.5 cups almond milk 1 medium banana .5 cup crushed ice 2 dates

2 tablespoons unsweetened almond butter 2 tablespoons cacao powder 1 teaspoon golden flaxseeds 1 cup baby spinach

Instructions Combine all ingredients except cacao nibs and coconut in a blender and blend at high speed until smooth Sprinkle caco nibs and coconut to garnish

Lunch-Paleo Tuna Salad

Ingredients 3-5 oz cans of tuna Chopped pickles Chopped celery Mayo to taste .5 tablespoon dried dill Pepper to taste

Instructions Mix all ingredients together and enjoy!



Dinner-Paleo Texas Style Chili

Ingredients 4 lbs grass fed stew meat cut into cubes 2 lbs pastured pork shoulder cut into cubes 2.5 lbs tomatoes 2 onions chopped 1 lb various chilies (Anaheim, poblasnos, jalapeno etc) 6 cloves garlic 2 dried chipotles chopped finely 3 tablespoons smoked paprika 3 tablespoons dark cocoa powder 2 tablespoons ground cumin 1 teaspoon sea salt 1 teaspoon black pepper

Instructions Season meat with salt, pepper and let sit to room temperature Sear meat over medium high heat until just browned In a large bowl toss tomatoes with the garlic, chipotles, paprika, cocoa powder, cumin salt and pepper Place onions at the bottom of a slow cooker then later chilies Top with the browned meat and finally with the tomato and spice mixture Cook on low for 10 hours During the last hour, remove the lid to thicken the sauce Taste and season as needed

Dessert-Paleo Chocolate Chip Cookies

Ingredients 1.5 cups sifted blanched almond flour .25 teaspoon baking soda .25 teaspoon sea salt 2 tablespoons coconut oil melted .5 teaspoon vanilla extract .25 cup maple syrup 1 whole egg

.5 cup Enjoy Life chocolate chips

Instructions Let egg and maple syrup come to room temperature Mix the dry ingredients together in a bowl Mix the wet ingredients in a separate bowl Pour the wet into the dry and mix well Mix in the chocolate chips Cool in fridge for 30 minutes Preheat oven to 350 degrees Spoon batter onto a parchment lined cookie sheet Put in oven for 7 minutes Push down on top of cookies with the back of a spatula to give them shape Cook for 5 more minutes Let cool and consume!
