Catering and hospitality offers strong employment opportunities at local, national and international levels. Our courses are designed to give you access to all areas of the catering and hospitality sectors.

This sector continues to grow rapidly and offers many exciting employment opportunities including airlines, cruise ships, travel agents and tour operators. Our courses, delivered by enthusiastic and knowledgeable lecturers, are industry relevant and will help you to develop knowledge and skills crucial to pursuing a career in this field. You will complete work experience within the travel/ tourism environment as part of the course and take part in residential visits in the UK and abroad. We have cabin crew training facilities with real aircraft seats and airline equipment.

At Weymouth College you will be able to train in industry-standard kitchens with professional chefs and real customers. Cygnets Restaurant The College’s Cygnets Restaurant is open to the public so you will gain real work experience, as well as banquet events organised by the College. You will learn in our fully-equipped training restaurant and two fully-equipped training kitchens with live feed cameras from the kitchen to plasma TVs in the restaurant. Cygnets Restaurant offers a lunchtime menu during term time to the staff and public, and specialty culinary menus in the evenings, as well as the traditional Christmas dinner. Weymouth College hosts events throughout the year and students produce and deliver all the catering requirements from buffet menus to a full sit down dinner with silver service. Entry Level

Certificate in the Introduction to the Hospitality & Catering Industry

Over the past five years, employment in the hospitality sector has increased faster than for the economy overall. As such, the hospitality sector relies on a constant supply of skilled and qualified staff.

Course content • Introduction to the hospitality industry • Customer service in the hospitality industry • Serving food and drink • Basic food preparation • Serving food • Introduction to healthy eating • Introduction to food commodities • Using kitchen equipment

You will begin to develop essential knowledge required for employment and acquire the skills that the industry has identified as being in short supply. This course gives you the opportunity to become familiar with the many components and branches of the industry. You will learn in our fully-equipped training restaurant and two fullyequipped training kitchens with live feed cameras from the kitchen to plasma TVs in our restaurant.

You will have the opportunity to gain additional qualifications during your course. Assessment You will be assessed through coursework and practical activities throughout the duration of the course. Work experience & educational visits You will be expected to secure part-time work experience in a hospitality and catering environment during your time at the College; this is a planned component of the course.

1 year full-time programme

Course content This programme is a workrelated course and you will experience practical related hospitality subjects. Units will include: • Exploring the hospitality industry including different jobs for your future • Professional cookery skills and knowledge of current world food • Develop your confidence in giving great customer service and improve your people skills.

(C&G 7100-01) 1 year full-time programme This course will equip you with the necessary skills for employment in the catering industry or for progressing to the Level 2 Diploma (7100-02). Course content You will study the following core units: • Introduction to the catering and hospitality industry • Food safety in catering • Health and safety awareness for catering and hospitality • Introduction to kitchen equipment • Introduction to workplace skills • Prepare and cook food by boiling, poaching and steaming • Prepare and cook food by baking, roasting and grilling • Prepare and cook food by stewing and braising • Prepare and cook food by deep frying and shallow frying • Regeneration of prepared food • Cold food preparation • Professional cookery craft.

You will have the opportunity to gain further qualifications during your course including food and drink service. Assessment You will be assessed for each unit in two parts: • You must achieve the task(s) set out in the assignment brief for each unit. Your work will be graded accordingly with Pass, Merit or Distinction. You must demonstrate underpinning knowledge in the form of short answer questions relevant to each element of each unit. • You must demonstrate competence in the practical tasks as laid down by the National Standards for each element of each unit. This will consist of eight continual practical assessments throughout the year and also two synoptic tests. You are expected to keep a log book, diary and portfolio for assessment.

Work experience You will be expected to secure part-time work experience during your time at the College and to work some evenings to support evening events at College. Entry requirements • Selection is by interview. • A minimum of 2 GCSEs at grade D or above, and be competent in English and maths. • You will be required to sit an initial diagnostic test and pass at the requisite level. Tools, materials & text books Specific books required will be advised nearer the time of study. It is essential that you provide your own basic safety clothing, footwear and basic tools (for health and safety purposes). Progression Students who completed this course have progressed to Level 2 study, gained employment in the catering and hospitality field or have combined with craft development to Level 3 standard.

This is a practical, work-related course aimed mostly at 16-19 year olds who are thinking of a career in the catering industry. Mature students are welcome. This qualification will give you a good insight into a wide range of job roles to meet the needs of the modern catering industry including cookery, food service, event catering and reception. You will learn in our fully-equipped training restaurant and two fully-equipped training kitchens with live feed cameras from the kitchen to plasma TVs in our restaurant.

Learning will be provided by lectures, workshops, visits to local employers, group discussions, presentations, guided self-study and demonstrations. You will develop your knowledge and skills with practical activities and by completing projects and assignments that are based on realistic workplace situations. Each week you will study the catering units, have cookery and restaurant practical, reception duties, assignment workshop, a group tutorial and Functional Skills session.

Assessment Restaurant units are internally assessed and graded. The cookery practical is observed and evidence recorded linked to knowledge testing and portfolio work. Tools, materials & text books Most books and equipment are provided, specific books will be advised nearer the time of study. Restaurant uniform and equipment will need to be purchased at a cost of approximately £200. Entry requirements • A minimum of 4 GCSEs at grades D-G. • Alternatively a good grade achieved at Level 1 or a good record of attendance or relevant experience from employment. • Selection is by interview. Progression This course will provide you with knowledge for a varied career in the hospitality and catering industry. Students may wish to focus on a particular course such as: Cookery and Food Service Diploma or a Level 3 Diploma in Hospitality Supervision. www.weymouth.ac.uk 9

(C&G 7100-82) 1 year full-time programme This course provides specialist training towards advanced craft catering skills and knowledge for professional kitchen and restaurant operations. You will learn in our fully-equipped training restaurant and two fullyequipped training kitchens with live feed cameras from the kitchen to plasma TVs in our restaurant. Course content You will study the following core units: • Investigate the catering and hospitality industry • Food safety • Health and safety • Healthier foods and special diets • Applying workplace skills • Prepare and cook stocks, soups and sauces, fruit and vegetables, meat and offal, poultry, fish and shellfish, rice, pasta, grains and egg dishes, hot and cold desserts and puddings • Produce paste products, biscuit, cake and sponge products, fermented dough products • Professional cookery – craft. 10 www.weymouth.ac.uk

Diploma for Travel & Tourism Professionals (C&G)

1 year full-time programme Employers are actively looking for highly motivated and well-qualified people to work in this exciting and demanding industry. This course is highly relevant and current, and will provide you with the required skills to gain employment in the world of travel. You will complete work experience within the travel/tourism environment and take part in residential visits in the UK and abroad. You will use cabin crew training facilities with real aircraft seats and equipment. You will be taught by enthusiastic and knowledgeable lecturers.

Course content Units include: • Worldwide travel and tourism destinations • Selling skills • Tourist information • Retail travel services • Interpersonal skills • Customer service • Resort representatives • Meet and greet. You will have the opportunity to gain further qualifications during your course including: • NCFE airline cabin crew • First aid (approximately £30 additional cost). Educational visits You will be encouraged to familiarise yourself with the industry, either by visits, speakers, trade fairs or exhibitions in the UK. You will be advised of the costs at the time of interview but they will be approximately £250 for the year. Assessment You will undertake assessments throughout the year to support your coursework. In addition, each unit has either a final external or internal assessment. Full attendance is therefore absolutely critical in order to achieve this qualification.

Entry requirements • Selection is by interview. • You should have at least 4 GCSEs at minimum grade D including maths and English or equivalent, or a BTEC Foundation Certificate (Level 1) in a related subject. • Mature students will be assessed on relevant experience, clear motivation and a reasonable standard of attainment in written English. Tools, materials & text books The College library has an extensive lending and reference book stock, in addition to videos and journals. You can purchase your own set of specialist reference books at a cost of approximately £40.00. There is a strict dress code which comprises a black suit, white shirt/blouse and black shoes/boots, and you are expected to wear these at all times. 2 year full-time programme

Course content Methods of study and assignments are largely student activity centred and will include individual and group work.

The BTEC Extended Diploma course gives you the opportunity to become familiar with the many components and branches of the industry. The course centres on the travel and tourism industry, and incorporates general business skills in addition to specialist units. You will complete work experience within the travel/tourism environment as part of the course and take part in residential visits in the UK and abroad. You will use cabin crew training facilities with aircraft seats and equipment, and be taught by enthusiastic and knowledgeable lecturers.

This course is designed on a unit basis and will be assignment based using individual and group work, which will require the completion of investigations, reports and presentations. You must pass all units in order to achieve the Extended Diploma in Travel and Tourism. Assessment Your work, grades and attendance will be continually assessed throughout the year by college tutors and will be verified by staff appointed by BTEC. Educational visits In order to understand the travel and tourism industry it is necessary to visit real work environments. Visits

both in the UK and abroad are an essential part of the course and you must attend. It is therefore wise to budget for at least £600 for year 1 and £250 for year 2. Entry requirements • Selection is by interview. • You should have at least 5 GCSEs at minimum grade C including English language or BTEC First Diploma with Merit profile or equivalent. • Mature students will be assessed on relevant experience, clear motivation and a reasonable standard of attainment in written English. Tools, materials & text books The College library has an extensive lending and reference book stock, in addition to videos and journals. You may prefer to purchase your own set of specialist reference books. These are available at a cost of pproximately £30. There is a strict dress code which comprises a black suit, white shirt/blouse and black shoes/boots, and

you are expected to wear these at all times. Progression With good grades in your BTEC studies, you may progress to higher education courses within tourism. Students who completed this course have gained places on courses such as BA (Hons) Tourism Management, BA (Hons) Events Management and BA (Hons) Marketing Management at institutions such as Bournemouth University, Oxford Brookes University and University of Plymouth. This course will prepare you for a successful career in the travel and tourism industry, progressing into management positions after suitable experience has been gained.

Course Information Fees • If you are aged 16–18 as of 31 August on the year of enrolment – no course fee. • If you are over 19 as of 31 August and enrolling on a full-time programme of study a tuition fee will be applicable in most cases.
