Title: Impossible Beef Enchilada Pie Categories: Impossible, Mexican, Ground beef, Cheese Yield: 1 servings 1 lb Ground Beef 8 oz Enchilada Sauce 1 c Onion; chopped 2/3 c Tortilla Chips; Crush Fine 2 Cloves Garlic; Chopped fine 2 c Cheddar Cheese; Shredded 2 ts Chili Powder 1 1/4 c Milk 1/2 ts Dried Oregano 3 Eggs 1/2 ts Salt 3/4 c Bisquick 1/4 ts Pepper Heat oven to 400~. Grease 10" pie plate. Brown hamburger with onions, then drain grease. Stir in garlic, chili powder, oregano, salt, pepper and 1/2 C of Enchilada sauce. Sprinkle crushed tortilla chips evenly in the pie plate. Top with 1-1/2 C of the cheese; spread with meat mixture. Beat milk, eggs and Bisquick until smooth, 15 seconds in blender on high. Pour into pie plate. Bake until knife comes out clean, 25 to 30 minutes. Spread remaining sauce over top, sprinkle with remaining cheese. Bake until cheese is melted, 3-5 minutes longer. Cool 10 minutes before serving. Can top with sour cream if desired. -----

Place the baking pan in the preheated oven and bake for 15 minutes. Meanwhile, make the biscuits by combining all of the ingredients, stirring well. Remove the baking pan and drop the dough onto the hot peach mixture and bake for an additional 20 minutes or until the biscuits are done. Serve warm with whipped topping or ice cream. -----

Micro-cook, uncovered, on 100% power for 1 1/2 to 2 minutes or till thickened and bubbly, stirring every 30 seconds. Stir in drained mandarin orange sections and finely shredded orange peel. Micro-cook, uncovered, on 100% power for 1 to 1 1/2 minutes or till mixture is heated through. Meanwhile for dumplings, stir together Bisquick and 2 T sugar. Add milk, stirring just till moistened. Drop mixture into four mound atop the hot orange mixture. Micro-cook, uncovered, at 50% power for 6 to 7 minutes or till dumplings are just set. Stir together the 1 t sugar and dash of ground cinnamon. Sprinkle sugar mixture atop dumplings.

While the dough is resting, cook and stir the meat and onion in a large skillet until the onion is tender and the meat is brown. Drain off the excess fat. Stir in the tomato sauce, oregano leaves, and pepper and set aside. Divide the dough in half. Roll each half on an ungreased baking sheet into a rectangle, 13 X 10-inches or on a pizza pan 12-inches in diameter. Pinch the edges to make a slight rim. Spread the meat mixture almost to the edges. Top with the green pepper and cheeses. Bake until the crust is brown and the filling is hot and bubbly, 15 to 20 minutes. In a large mixing bowl place the eggs, Bisquick, 1/2 teaspoon cinnamon, salt, cloves, baking powder, the 2 cups of sugar, the 2 1/2 cups of chopped walnuts, milk, and oil. Blend them together with an electric mixer for 5 minutes. Turn the mixer on high and beat the batter for 15 seconds. Preheat the oven to 375 F. Pour the batter into a baking pan that is 10 x 14 inches, and 2 1/2 inches deep. Bake the cake for 45 minutes, or until a toothpick inserted comes out clean. Remove the cake and let it sit for 2 hours. In a medium saucepan place the 3/4 cup of sugar, water, orange peel, lemon peel, and cinnamon stick. Bring the ingredients to a boil and then simmer them for 5 minutes. Add the honey and bring the mixture to a boil. Remove the pan from the heat and add the lemon juice. Stir the ingredients together and let the syrup cool. Remove the orange and lemon peels, and the cinnamon stick. Spread the syrup over the cake. 3/4 c Milk 1 tb Lemon Pepper

---------------------------------DUMPLINGS--------------------------------2 c Bisquick 2/3 c Milk Boil chicken. I use some spices to boil in like sage, basil, oregano, rosemary, garlic, and salt. Any spices you like. De-bone chicken. Add soup, milk, Lemon Pepper and chicken to chicken broth. Bring to a boil. Mix milk and Bisquick. (If you have your own dumplin recipe, use it. I use this one for convenience.) Drop small spoonfulls of mix into broth mixture. Cover 5 min. Uncover 5 min. VERY HOT! Let cool a little. I also use more Lemon Pepper than that. It's to taste. I don't use much salt as the soup has plenty.

This is a really easy dessert, loaded with calories, and not for the faint-of-heart! Make the bisquick drop biscuits as directed on the package, BUT add 1 tb of sugar (or 2, if you like). Bake as directed. While still warm, cut in half and put the bottom half in a bowl. Cover with fresh strawberries (which you have marinated in 4 Tb sugar in the refrigerator for 2 days), add a scoop or two of French vanilla ice cream, and then top with the top layer of the biscuit. Directions Mix together 7-up, buttermilk, bisquick to smooth dough. Dip hand into just enough more bisquick you can knead dough in bowl till smooth and elastic. Shape dough into 6 patties of equal size, 1" thick & place 1 patty in center of a greased 9" round layer pan. Arrange the other patties around that. Wipe tops of each in a dab of butter or margarine. Bake at 450F(very hot oven) 18-20 minutes or till triple in size & golden bown. Cool in pan 10 minutes before serving. Makes 6 McFabulous flaky biscuits.

Blend the bisquick, parmesan, salt, pepper. Add eggs. Mix zucchini into batter. Grease hot pan or griddle with butter. Pour batter into pan and fry 3 minutes on each side. Serve warm, a delicious way of serving zucchini. Make 8 to 10 fritters.

Form into bite-sized balls, around 3/4" in diameter. Cook on foil or a baking pan at 325 F for about 20 minutes. I think I was also told that these store very well, but I'm not positive about that.

Roll up tightly, beginning at 15 inch side. Seal well by pinching edge of dough into roll. Cut into twelve 1 1/4-inch slices. Place slices, cut sides down, on greased cookie sheet. Bake until golden brown. 15 to 20 minutes. Serve immediately. Refridgerate any remaining biscuits. 1 dozen biscuits. -----

Bring to boil, reduce heat, cover and simmer for 20 minutes. Mix flour with 1/4 c. water and stir into stew mixture. Bring to boil, stirring constantly. Remove bay leaf. Salt and pepper to taste. Mix Bisquick and milk and drop by rounded tablespoons onto stew. Cook uncovered for 10 minutes. Cover and cook 10 minutes longer. Makes 4 to 5 servings.

Add just enough milk (while stirring with a fork) to produce a cake-like-batter consistency. Continue mixing with a fork until well blended. Pour into a well greased COOKIE sheet (about 14 1/2" x 10" x 1/2"). Bake in a preheated 375-400 degree oven until done. Approximately 20 minutes. Serve it hot with chunks of real butter on top. Title: Impossible Quiche Categories: Eggs, Pork, Chicken Yield: 6 servings 1 c Cooked green beans 4 oz Shredded Cheddar Cheese 1 sm Can mushrooms, drained 1 1/2 c Milk 3

1/2 c Chopped onions 3/4 c Bisquick 1 c Chopped ham or chicken * Eggs

Salt and pepper * Ham or chicken should be cooked This contains meat, vegetables, cheese, eggs, and milk combined with Bisquick to form its own crust. Sprinkle green beans, mushrooms, onion, ham or chicken, and cheese in a deep 10" pie plate. In blender place milk, Bisquick, eggs, salt and pepper to taste. Blend 15 seconds on high speed. Pour over the above. Bake in preheated 400 degree oven for 30 minutes. Remove from oven and let set 5 minutes. Serve.

Chicken wings (about 4 2 ts Paprika -pounds) 1 1/2 ts Dry mustard 2 tb Margarine or butter; 1/2 ts Salt -melted 2 Eggs -l 1/2 cups Bisquick baking 2 tb Milk -mix 1/4 c Margarine or butter; 1/2 c Sesame seed -melted Separate chicken wings at joints; discard tips. Spread 1 tablespoon margarine in each of 2 rectangular pans, 13 x 9 x 2 inches. Mix baking mix, sesame seed, paprika, mustard and salt. Beat eggs and milk with fork. Dip chicken into egg mixture; coat with sesame seed mixture. Arrange close together in pans. Cover and refrigerate up to 6 hours (or bake immediately). Heat oven to 425!. Drizzle 1/4 Cup margarine over chicken. Bake uncovered 35 to 40 minutes or until brown and crisp. 40 chicken wing pieces. -----

1/2 c Beer 1/2 c Self-rising flour

---------------------------------THE BATTER--------------------------------2/3 c Beer 1/2 c Bisquick 1/3 c Lemon juice 1/2 c Self-rising flour 1 Egg THE BATTER: In a 1 1/2 quart mixing bowl, with wire whisk, whip 2/3 cup beer, lemon juice, egg, Bisquick, and 1/2 cup self-rising flour together till smooth. Then let it stand ten minutes at room temperature before using. Meanwhile place two soup or cereal bowls on counter near the stove so that you can work quickly in coating food and getting it into the hot oil. In one small bowl put 1/2 cup beer and into the other put 1/2 cup self-rising flour. Have a cookie sheet on hand. Cover half of it with paper towels for draining the fried foods. The other half leave plain for drying the coated food before you dip it into batter. Allow 1 1/2 to 2 1/2 lbs. fish fillets to serve 4 people. Cut each fillet in half to resemble triangles. Dip 1 piece at a time, first into beer. Let excess drip off. Coat lightly then in the self-rising flour. Place floured pieces on cookie sheet to dry 2 or 3 minutes. Then spear piece with 3-tined fork or tip of sharp knife & coat in prepared batter...evenly but lightly, letting excess drip back into bowl of batter. Fry few pieces at a time in 385 to 400 degrees F oil, at least 2 1/2" to 3" deep in heavy saucepan or use electric fry pan with temperature control dial to regulate heat of oil. Allow about 3 or 4 minutes per side for each piece of batter-coated fish, turning once to brown other side. Remove from oil with tip of sharp knife. Drain on paper towel. Keep warm on cookie sheet in 300 degree F oven till all pieces have been fried.

SHRIMP-DEEP FRIED: Substitute large or jumbo shrimp preferably frozen, cooked, ready to serve shrimp, that have been completely thawed, following the Lone John Sliver recipe exactly, using the shrimp in place of the fish triangles. Be sure to dip the shrimp 1st in the beer and then into the self-rising flour before coating in prepared batter. Fry as directed for fish in above recipe. 1 pound serves 4. Stir until fairly smooth. In skillet, cook apple wedges in butter until tender, about 4 minutes. Stir in nuts and syrup. Heat through and keep warm. For each pancake, use 1/4 c batter. When done, top with warm syrup mixture.

Heat oven to 425F. Grease jelly roll pan. Mix oats, 1/4 cup bisquick, brown sugar, butter (or margarine) and cinnamon. Reserve. Beat remaining ingredients with whisk until well-blended. Pour into pan. Spread batter to edges. Sprinkle with oats mixture. Bake 14 to 16 minutes, or until light golden brown. Cut into 6 pieces and serve.

Sprinkle with additional sugar, if desired. bake 8 to 10 minutes, until brown. Prepare Cranberry-Apple filling. Split shortcakes and fill and top shortcakes with filling and whipped cream. Cranberry-Apple Filling: Heat cranberries and 1/3 cup apple juice to boiling in 2 qt. pan. Stir in apples and reduce heat. Simmer uncovered 5 minutes, or until apples are softened. Mix remaining ingredients and stir into cranberry mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir one minute and remove from heat. Serve warm. -----

Beat on medium speed scraping bowl occasionally 4 minutes. Pour batter into pan. Bake until wooden pick inserted in center comes out clean, 55-60 minutes. Cool 10 minutes; remove from pan. Heat 1/2 cup sugar and the water to boiling; reduce heat. Simmer uncovered 2 minutes; cool to lukewarm. Stir in liqueur. Slowly drizzle over cake. Press preserves thru sieve. Heat preserves and 1/4 cup sugar to boiling, sitrring constantly; reduce heat. Simmer uncovered until slightly thickened, 1 to 2 minutes. Cool slightly; spread over top, allowing some to drizzle down sides. -----

Title: Candied Apple Tart Categories: Bisquick, Desserts, Fruits Yield: 8 servings 2 c Bisquick 2/3 c Whipping cream 2 tb Sugar 4 c Apples; thinly sliced -about 4 medium

1/4 c Bisquick 1/3 c Brown sugar 1 tb Butter; firm 3/4 ts Cinnamon 2 tb Cinnamon apple jelly

Heat oven to 425F. Mix 2 c bisquick, whipping cream and sugar until soft dough forms. Shape into ball. Pat dough into ungreased 12 inch pizza pan. Spread apples over dough. Mix 1/4 c bisquick, brown sugar, butter and cinnamon until crumbly; sprinkle over apples. Cover edge with 2 inch strip of aluminum foil to prevent excessive browning. Bake 5 minutes; remove foil. Bake 10 to 15 minutes longer or until edge is deep golden brown. Heat jelly until melted; drizzle over tart.

Title: Zucchini Quiche Categories: Cheese, Eggs, Vegetables Yield: 8 servings 3 ea Zucchini, small 1/2 c Parmesan cheese 9 ea Egg 1/2 ts Oregano 5 tb Butter

1/4 c Onion, chopped 1/4 ts Salt 1 1/2 c Milk 1/2 c Bisquick

Cook zucchini and onions in half the butter with oregano and salt till tender (about 5 minutes). In blender, mix eggs, milk, cheese, bisquick, salt and remaining melted butter. Mix well, about two minutes. Pour into 13-inch dish or pie plate. Spread zucchini all over top. Bake 30 to 40 minutes at 375 degrees.

Stuff each pepper with Monterey Jack cheese and put the halves back together. Grab a handful of bisquick mixture and mold around pepper in shape of elongated egg. Use enough to cover pepper wiell. Bisquick, 1/2 cup cold water, and 3/4 c. grated cheddar which will yield about 12 biscuits. You may also substitute soda water or gingerale for the water, if desired. -----

Title: Red Lobster's Cheesy Garlic Rolls Categories: Breads, Garlic Yield: 6 Servings 2 1/2 lb Baking mix (RL uses a -specially made product, but -Bisquick buttermilk baking

-mix is a decent substitute) 6 oz Grated mild cheddar cheese 21 oz Cold water

Mix together above ingredients (by hand, an electric mixer will NOT work) until JUST combined --do not overmix. Scoop with a 1 1/2 ounce scoop onto 2 parchment-lined baking sheets (20 per sheet), and bake in a 450 convection oven for 4-5 minutes. Rotate the sheets, and bake another 4-5 minutes. (Note, a commercial convection oven cooks about 25 percent faster than a home oven -- for the same results, increase the baking time somewhat, but be careful not to overbrown the rolls, they should be a light golden brown). Remove rolls from the oven, and brush with garlic butter mixture (again, RL uses a proprietary product, but you can make a decent imitation by adding garlic powder, NOT salt) to taste, plus some dehydrated parsley flakes to liquid margarine. Do not add too much butter to the rolls, or the garlic flavor will overpower the cheese. For variations, increase the cheese to 8 oz. (better, and the way the Lobster used to do it), or substitute about 5 oz. shredded Parmesan (NOT the dried stuff that comes in a can) for the cheddar. The Parmesan variation is excellent. Right after you remove the rolls from the oven, spread or brush VERY GENEROUSLY with garlic butter (soft or melted butter with lots of finely diced or crushed garlic mixed in). Serve rolls warm. Grease bottoms only of 12 medium muffin cups or line with paper baking cups. Beat eggs slightly in medium bowl; stir in remaining ingredients except blueberries just until moistened. Fold blueberries into batter. Divide batter evenly among cups. Bake 15-18 minutes or until golden brown.

Title: Broccoli Beef Pie Categories: Crs, Totest, Post, Chopmeat Yield: 8 Servings 2 c Chopped fresh broccoli, 2 c Buttermilk bisquick Cooked crisp-tender 1/2 c Water 1 lb Ground beef 4 Eggs 1 cn (4oz) sliced mushrooms, 1/2 c Milk Drained 1/4 c Grated Parmesan 2 c (8oz) shredded cheddar 1/2 ts Salt Cheese, divided 1/2 ts Pepper 1/3 Chopped onion Brown beef; drain and add mushrooms, 1 1/2 cups cheddar and onion. Remove from heat and set aside. Combine bisquick and water to form a soft dough. Add remaining cheese, mixing in well. Pat into a greased 13X9" baking dish, spreading halfway up sides. Title: Halibut Broccoli Pie Categories: Main dish, Fish, Seafood Yield: 1 Recipe 3 c Grated sharp cheddar cheese 3 Eggs 1 1/2 c Flaked halibut 3/4 c Bisquick baking mix 1 c Finely chopped onion 1/2 ts Lemon pepper 1 pk Frozen chopped broccoli 1/4 ts Minced garlic -- thawed and drained 1/8 ts Dried thyme leaves 1 1/3 c Milk Mix 2 cups cheese, halibut, onion and broccoli together and place in a 10" greased pie plate. Beat milk, eggs, Bisquick, lemon pepper, garlic and thyme. Pour over halibut-broccoli mixture. Bake 400 degrees F. for 25-35 minutes or until knife inserted in center comes out clean. 1. Heat butter and pour in a bowl. 2. Add Bisquick, carnation powder and yogurt and blend together. 3. Knead well adding milk if necessary. 4. Make a smooth ball, cover and let rest (30 minutes?). 5. Make 12-14 small balls. 6. Heat the water, add sugar, bring to boil, add cardamom seeds and simmer. 7. Boil, then simmer to reduce the water by half. 8. Heat the oil till hot, fry the balls to golden brown or till they are dark brown--almost black. 9. Soak in sugar syrup till they double in size (1 hour or overnight) 10. serve hot or cold. Recipe By

Title: Snowy Apricot Bars Categories: Cookies Yield: 75 Cookies 6 oz Dried apricots 1/2 c Firm butter 1/2 c Granulated sugar 2 1/2 c Bisquick baking mix 2 c Packed brown sugar

4 Eggs, beaten 2/3 c Bisquick baking mix 1 ts Vanilla 1 c Chopped nuts (opt) Powdered sugar

Place apricots in 2-quart saucepan; add enough water to cover. Heat to boiling; reduce heat. Simmer uncovered 10 minutes; drain. Cool; chop and reserve. Heat oven to 350 deg. F. Cut butter into sugar and 2 1/2 C. baking mix until crumbly. Pat into ungreased jelly roll pan, 15 x 10 x 1 or so. Bake 10 minutes. Beat brown sugar and eggs. Stir in apricots, 2/3 C. baking mix, vanilla and nuts. Spread over baked layer. Bake 30 minutes longer. Cool completely; cut into bars, about 2 x 1 inch. Roll in powdered sugar (I dust it on top). Grease and flour 12 cup Bundt pan. Beat all ingredients except coconut and powdered sugar in a large bowl on low speed, scraping sides frequently, for 30 seconds. Beat on medium speed, scraping sides occasionally, for 4 minutes; stir in coconut. Pour into prepared pan. Bake until tested done, about 55-60 minutes. Cool 5 minutes; invert on wire rack or heatproof serving plate. Remove pan; cool cake completely. Sprinkle with powdered sugar. HIGH ALTITUDE: Heat oven to 375~. Decrease Bisquick to 2 1/2 cups and sugar to 1 1/4 cups. Increase flour to 1 cup. Bake 45-50 minutes.

Spoon evenly over batter. Place apple slices on sauce. Bake 50 to 60 minutes or until golden brown. Serve warm with whipped cream or rum raisin or vanilla ice cream, if desired.

Spread cream cheese mixture over the dough. Carefully, spread preserves over the cream cheese mixture; sprinkle with almonds. Bake in a preheated 350 degree oven until golden brown and the cream cheese is set, 40 to 45 minutes. Cool 20 minutes; carefully, remove from the pan. Refrigerate any remaining coffee cake.
