Fresh Salsa Mexico and Central America

3 large tomatoes, peeled, diced 1/2 cup white onion, chopped fine 1/2 jalapeño pepper, chopped* 1 Anaheim pepper, seeded* 1/2 red sweet pepper, chopped 2 Tbsp cilantro, chopped 1/4 tsp salt fresh juice from 1/2 lime 1 tsp white wine vinegar 1 Tbsp water or tomato juice

1. Place diced tomatoes in a colander, to reduce the tomato liquid while you prepare the rest of the ingredients. Place a bowl under the colander if you want to collect the tomato juice. 2. Put all ingredients in a glass, ceramic, or stainless steel bowl. Mix well. Let stand for 30 minutes. 3. Serve with baked tortillas, with meats or with other main dishes.

*The chiles: There are a large variety of chiles, some are sweet while others are hot. Each person has a different tolerance for the pepper hotness. Use them with care, but experiment with them. Their flavors are exquisite. To control the hotness, remove different amounts of the seeds and the “ribs.”

Beef Stew South America

Ingredients to tenderize the meat: 1-1/2 lb flank steak 1-1/2 cup beef stock (homemade or low-fat canned stock, low sodium if available) 1/2 onion, chopped 1 carrot, cut into 1" pieces 2 celery stalks, trimmed, cut into 1" pieces 2 whole spice cloves 4-5 black peppercorns Ingredients for beef stew: 2 Tbsp olive or canola oil 1 medium onion, chopped 2 garlic cloves, crushed 1 Anaheim pepper, roasted and chopped* Jalapeños, serranos, thais or yellow wax peppers, to taste** 1/2 sweet green pepper, chopped 1/2 sweet red pepper, chopped 1 (15 oz) can of crushed tomatoes packed in puree 2 Tbsp water 1/2 tsp ground thyme 1/2 tsp ground cumin 1-1/2 to 2 cups beef stock (from tenderizing meat)

1. Combine the ingredients to tenderize the meat in a deep skillet or saucepan. Using medium heat, bring to a boil. 2. Decrease heat to low and continue to cook for 2 to 2 1/2 hours until the meat is tender. Alternate method: use a pressure cooker/saucepan. Cook at 15 lbs of pressure for 20 minutes. (Follow manufacturer’s directions on proper use of pressure cooker). Do not open the cooker until all the pressure has been released. 2. Once the meat is tender, remove from the stock. Discard vegetables from the stock. Allow stock to cool and skim the surface to remove the excess fat. (Keep stock to complete recipe). 3. When the meat is cool enough to handle, use a fork to separate the meat into strands. 4. Heat the olive oil in a large pot. Add the onion and garlic, cook 2-3 minutes, then add the rest of the ingredients, including the meat. Additional beef stock can be added if there isn’t enough liquid left from the tenderizing. Cook until thick – approximately 1/2 -1 hour depending on the amount of liquid.

* To roast and remove the skin from the Anaheim pepper, roast it in the oven on broil or use hot coals in a barbecue or a hot comal (Mexican griddle). The important step is to slightly cook the pepper. This will make it easier to remove the skin. Place the hot chile on a moist paper towel. Allow to stand for 10-12 minutes. Then, very carefully, remove the skin. The Anaheim, as well as other hot peppers, need to be handled carefully. Avoid touching your eyes or lips after working with the hot peppers. If you have sensitive skin, use gloves when handling hot peppers. ** To increase the hotness of the recipe, you may add yellow wax, jalapeños, thai or serrano peppers. Adjust the hotness to your taste and tolerance. The hotness is controlled by keeping or eliminating seeds.

Pickled Fish - Tessie Style Perú

3 lbs white fish fillets (sea bass, cod, red snapper, halibut) 1/4 cup flour 2 Tbsp vegetable or canola oil 8 large onions 3 cup red wine vinegar 1 cup water 3 Tbsp olive oil 2-3 Tsp chili powder or hot peppers (jalapeños o serranos, sliced or chopped) to taste 1 tsp salt 1/2 tsp ground white pepper 1-2 garlic cloves, crushed lettuce Optional: stuffed green olives, hard-boiled egg

1. Cut 7 of the onions into eight slices each and soak in the vinegar with water while you prepare the rest of the recipe. Use a saucepan large enough for the liquid to cover the onions or stir the onions several times during the process. 2. Chop the remaining onion. Heat the olive oil in a non-stick skillet or saucepan and sauté the onion, garlic and hot peppers, if used, until cooked (2-3 minutes). Add salt, pepper, and sautéed onion mixture to the pan with the onions, vinegar, and water. Add chili powder if not using hot peppers. 3. Cook at low heat until the onions are cooked and the sauce has thickened, about 20-30 minutes. 4. Dust fish with flour. Heat canola oil in a non-stick skillet. Cook fish until golden brown on both sides. When fish is cooked remove from pan place on a plate cover with a paper towel. To serve: place several lettuce leaves on a serving platter or casserole dish. Place fish over lettuce and pour the sauce over the fish.

Chicken with Rice Latin America

3 Tbsp olive oil 1 tsp sweet paprika or a sprinkle of ground annatto* 2 Tbsp sofrito 1/4 cup tomato sauce 2 cups uncooked long-grain rice 1 lb chicken breast, cut into bite size pieces 3 1/2 cups water 1/2 tsp salt

1. Heat olive oil and sauté the paprika and sofrito. If using ground annatto, add when you add the water. Add tomato sauce. Cook until the mixture comes to a boil – about 1 minute. 2. Add the chicken and cook until it turns white, then add the rice. Mix well with the other ingredients. If you are using ground annatto, dissolve the annatto and salt in the water. Pour the water mixture into the pan with the rice. 3. Cook on medium low, until the liquid has evaporated. Cover and cook until the rice is tender, 15-20 minutes. Garnish with red Spanish pimento** slices (each 1/4 cup adds 12 calories and 70 milligrams of sodium), or freshly cooked asparagus spears.

* Originally, saffron was used to produce the yellow color associated with this and other dishes. Since saffron has always been expensive, annatto became its substitute. Annatto seeds are an intense orange color. When heated in oil, the pigment is released and the desired yellow color is obtained. Ground annatto seeds and sofrito can be found in Latino/Hispanic markets and grocery stores that carry Latino/Hispanic foods. ** Spanish pimientos are used regularly to garnish many different dishes. They are also available at Latino markets and grocery stores.

Sofrito Puerto Rico

1 medium onion 3-4 garlic cloves 1/2 sweet green pepper 1/2 sweet red pepper 4-5 sweet aji peppers - if available 1/2 cup fresh cilantro leaves, rinsed 1-2 culantro leaves, fresh washed, if available 2 tsp fresh oregano or 1/2 tsp dried oregano 1/4 tsp ground cumin

This is the basis for Puerto Rican cooking. It provides the foundation for the distinctive flavor of many dishes. 1. Peel onion and garlic cloves. Remove seeds from peppers. Cut into large pieces. 2. Chop all ingredients in food processor or blender. 3. Refrigerate until ready to use. Keep refrigerated 3-5 days or freeze.

Cabbage Salad Mexico and Central America 1/2 small green cabbage 1 small carrot, grated 2-3 Tbsp fresh lime juice (or substitute with apple cider vinegar or white wine vinegar) 1/2 tsp sugar 1/4 tsp salt 1/2 tsp ground black pepper 2-3 tsp cilantro chopped

1. Remove outer cabbage leaves if necessary 2. Use half a cabbage head (2 cups). To cut in half, cut from the stem end to the top end. Save the unused half. 3. Cut cabbage into thin strips (julienne style). You should get about 2 cups of cabbage. Place in a glass, ceramic or stainless steel bowl. 4. Add the rest of the ingredients and mix well.

Swiss Enchiladas 1 1/2 pounds tomatillos, skins removed, cleaned and cut in half 1/2 cup cilantro 2 tsp fresh minced garlic 1 tsp salt Freshly ground pepper 1 1/4 pounds chicken breast, cooked and shredded 1 cup onion, chopped finely (cooked, if desired) 12 ounces lowfat Monterey Jack cheese 1 dozen corn tortillas Nonstick cooking spray Lowfat sour cream, (optional)

1. Boil tomatillos for five minutes. Tomatillos will be done when they turn a greenish brown color and sink to the bottom of the pan. Drain. Using tongs or fork, add tomatillos to blender or food processor along with garlic and cilantro. Add seasonings, blend until smooth and set aside. 2. Reserve some cheese for topping the enchiladas. Combine shredded chicken, onion and cheese and set aside. 3. Preheat oven to 350°. 4. Prepare tortillas for enchiladas by moistening clean kitchen towel with tap water. Place 2 tortillas in middle of towel and microwave for about 2 minutes or until steamed. Be careful when removing them from microwave. Repeat with all tortillas. Tortillas will be steamed and more pliable for filling without breaking. 5. Fill tortillas with a mixture of chicken, onions and cheese. Roll tightly and place seam side down in 9” x 12” pan that has been sprayed with nonstick cooking spray. Repeat with rest of tortillas and filling ingredients. 6. Cover the enchiladas with tomatillo sauce and sprinkle with a small amount of cheese for garnish. Bake for 20 minutes in a 350° oven. 7. After serving, garnish with a small amount of imitation sour cream, if desired.

Salsa Fresca México y Centroamérica

3 tomates, pelados cortados en trozos 1/2 taza de cebolla blanca (finamente picada) 1/2 chile/pimiento jalapeño cortado en trozos* 1 chile/pimiento Anaheim, con semilla* 1/2 chile/pimiento dulce rojo cortado en trozos 2 cucharaditas de cilantro finamente picado 1/4 cucharadita de sal jugo fresco de 1/2 limón 1 cucharadita de vino de vinagre blanco 1 cucharada de agua o jugo de tomate

1. Coloque los tomates en un colador para escurrir el jugo mientras prepara los demás ingredientes. 2. Mezcle todos los ingredientes en un recipiente de vidrio, cerámica o de acero inoxidable. Deje reposar por 30 minutos. 3. Sirva con tortillas horneadas, con carnes u otros platos. * Los chiles/pimientos: hay una gran variedad de chiles/pimientos, unos son dulces y otros son picantes. Cada persona tiene diferente tolerancia para el picante. Utilice los chiles/pimientos con cuidado, pero experimente con ellos. Su sabor es exquisito. Para controlar el picante, remueva diferentes cantidades de semillas y de la nervadura o nervio del chile/pimiento.

Cazuela de Carne Sur América

Ingredientes para ablandar la carne: 1-1/2 libra de “flank steak” (faja, carne mechada, sobrebarriga, boliche) 1-1/2 taza de caldo de res (casero o enlatado con poca grasa y bajo en sodio) 1/2 cebolla picada 1 zanahoria cortada en trozos de 1 pulgada 2 ramos de apio, cortados en trozos de 1 pulgada 2 clavito de olor 4-5 granos de pimienta negra Ingredientes para la cazuela 2 cucharadas de aceite de oliva o de canola 1 cebolla mediana (finamente picada) 2 dientes de ajo triturados 1 chile o pimiento Anaheim, asado y cortado en trozos* Jalapeños serranos, o chiles/ pimientos amarillos al gusto** 1/2 chile/pimiento verde dulce picado 1/2 chile/pimiento rojo dulce picado 1 lata (15 onzas) de tomates triturados en puré 2 cucharadas de agua 1/2 cucharadita de tomillo 1/2 cucharadita de comino 1-1/2 - 2 tazas de caldo de res

1. Mezcle los ingredientes para ablandar la carne en un sartén hondo. Cocinelo a fuego medio hasta que hierva. 2. Reduzca a fuego lento y cocine por 2- 2 1/2 horas hasta que se ablande la carne. Método alterno: utilice una olla a presión. Cocine a 15 libras de presión durante 20 minutos. (Siga las instrucciones de uso del fabricante de la olla a presión). No abra la olla hasta que toda la presión se haya disipado. 3. Una vez que la carne esté blanda, remuévala y descarte los vegetales del caldo. Deje enfriar el caldo y remueva la grasa de la superficie. 4. Cuando la carne se enfríe, utilice un tenedor para separarla en tiras. 5. Caliente el aceite de oliva en una olla grande. Agregue la cebolla y el ajo. Cocinelo por 2-3 minutos. Añada el resto de los ingredientes y la carne. Se puede agregar más caldo si es necesario. Cocine aproximadamente por 1/2 a 1 hora hasta que espese.

* Para tostar y remover la piel del chile/pimiento Anaheim, áselo en el horno o use un asador de carbón o un comal. Lo importante es cocinar levemente el chile/pimiento. Esto facilitará remover la piel. Envuelva el chile/pimiento caliente con una toalla de papel húmeda. Deje reposar de 10-12 minutos. Cuidadosamente remueva la piel. El Anaheim, como otros chiles/pimientos picantes se debe manejar con cuidado. Evite tocar sus ojos o labios después de tocar chiles/pimientos picantes. Si tiene la piel sensible, utilice guantes cuando use chiles/pimientos picantes. ** Si desea hacer más picante la receta, añada chiles/pimientos jalapeños, amarillos, o serranos. Ajuste el picante según su gusto. El picante aumenta según la cantidad de semillas que se incorporen.

Escabeche de Pescado Al Estilo Tessie Perú

3 libras de filetes de pescado (corvina, bacalao, pargo rojo, halibut) 1/4 taza de harina 2 cucharadas de aceite vegetal o canola 8 cebollas grandes 3 tazas de vino de vinagre rojo 1 taza de agua 3 cucharadas de aceite de oliva 2-3 cucharaditas de chili en polvo o chiles/pimientos picantes (jalapeños o serranos) en trozos 1 cucharadita de sal 1/2 cucharadita de pimienta blanca 1-2 dientes de ajo triturados lechuga Opcional: aceitunas verdes rellenas, 1 huevo hervido duro

1. Rebane 7 cebollas y remójelas en el vinagre con agua mientras prepara el resto de la receta. Utilice una olla o sartén suficientemente grande para que el líquido cubra las cebollas o revuelva constantemente las cebollas. 2. Corte en trozos la cebolla restante. Caliente el aceite de oliva en un sartén que no pegue. Sofría la cebolla, el ajo, y si es el caso, los chiles/pimientos picantes durante 2-3 minutos hasta que se cocinen. Agregue la sal, la pimienta y la mezcla de la cebolla a la olla con las cebollas, el vinagre y el agua. Si no está usando los chiles/pimientos picantes agregue el polvo de chili. 3. Cocine a fuego lento aproximadamente entre 20-30 minutos hasta que las cebollas estén cocidas y la salsa espese. 4. Espolvoree el pescado con la harina. Caliente el aceite vegetal en un sartén que no pegue. Dore el pescado por ambos lados hasta que esté cocido. Retírelo del sartén y cúbralo con una toalla de papel. Para servir: coloque el pescado encima de las hojas de lechuga y vierta la salsa sobre el pescado.

Arroz con Pollo Latino América

3 cucharadas de aceite de oliva 1 cucharadita de paprika o achiote molido* 2 cucharadas de sofrito 1/4 taza de salsa de tomate 2 tazas de arroz de grano grande 1 libra de pechugas de pollo cortadas en trozos 3 1/2 tazas de agua 1/2 cucharadita de sal

1. Caliente el aceite y sofría la paprika y el sofrito. Si usa el achiote molido, incorpórelo cuando agregue el agua. Añada la salsa de tomate. Cocinelo aproximadamente 1 minuto hasta, que la mezcla hierva. 2. Agregue el pollo y cocine hasta que se vuelva blanco. Agregue el arroz. Mezcle bien con los demás ingredientes. Si usa el achiote molido, disuelva el achiote y la sal en agua. Agregue a la olla con el arroz. 3. Cocine a fuego medio, hasta que se evapore el agua. Cubra y cocine a fuego lento hasta que el arroz esté blando de 15 a 20 minutos. * Antes se utilizaba el azafrán para colocar el color amarillo asociado con este y otros platos. Como el azafrán es caro, el achiote se convirtió en su sustituto. Las semillas del achiote son de un color naranja fuerte. Cuando se calientan en aceite, se libera el pigmento del cual se obtiene el color amarillo. Las semillas molidas del achiote y el sofrito se consiguen en las tiendas latinas/hispanas y en los supermercados que venden productos latinos/hispanos. ** Los pimientos/chiles españoles se utilizan regularmente para decorar muchos platos. También se encuentran disponibles en las tiendas Latinas y en los supermercados que venden productos Latinos.

Sofrito Puerto Rico

1 cebolla mediana 3-4 dientes de ajo 1/2 chile/pimiento verde dulce 1/2 chile/pimiento rojo dulce 4-5 chiles/pimientos de ají (opcional) 1/2 taza de cilantro fresco, lavado 1 hoja de culantro fresco, lavado si hay disponible (opcional) 2 cucharaditas de orégano fresco o 1/2 cucharadita de orégano seco 1/4 cucharadita de comino en polvo

Esta es la base de la comida puertorriqueña. Sirve como base del sabor especial de muchos platos. 1. Pele la cebolla y los dientes de ajo. Remueva las semillas de los chiles/pimientos. Corte en trozos grandes. 2. Corte todos los ingredientes en un procesador de alimentos o en una licuadora. 3. Refrigere hasta que vaya a utilizar. Refrigere durante 3-5 días o congele.

Ensalada de Repollo México y Centroamérica

1/2 repollo verde pequeño 1 zanahoria pequeña rallada 2-3 cucharadas jugo de limón agrio, fresco 1/2 cucharadita de azúcar 1/4 cucharadita de sal 1/2 cucharadita de pimienta negra molida 2-3 cucharaditas de cilantro picado

1. Si es necesario remueva las hojas externas del repollo. 2. Use media cabeza del repollo (2 tazas). Para partir en dos, corte desde el tallo hasta la parte superior. Guarde la mitad que no va a usar. 3. Corte el repollo en tiras angostas (estilo julienne). Más o menos unas 2 tazas de repollo. Coloque en un recipiente de vidrio, cerámica o acero inoxidable. 4. Enchilada Suizas 1 1/2 libras tomatillos, lavadas y cortadas en mitades 1/2 taza de cilantro 2 cucharaditas de ajo picado 1 cucharadita de sal Pimienta 1 1/4 libras de pechuga de pollo, hervidas y desmenuzadas 1 taza de cebolla, bien picada (cocida, si desea) 12 onzas queso tipo Monterrey Jack bajo en calorías, rallado 1 docena de tortillas de maíz Aceite en rociador sin calorías Crema ácida, desgrasada

1. Hierva los tomatillos por cinco minutos. Los tomatillos están cocidos cuando adquieren un color verde oscuro y se hunden. Cole. Usando pinzas, ponga los tomatillos en la licuadora juntos con el cilantro y el ajo. Agregue la sal y la pimienta. Licúe. 2. Reserve poco del queso para la capa de arriba de las enchiladas. Combine el pollo, la cebolla y el queso y guarde. 3. Caliente el horno a 350°. 4. Prepare las tortillas para las enchiladas mojando una toalla de cocina limpia con agua. Ponga dos tortillas en el medio de la toalla y hornee en el microondas por 2 minutos, o hasta que se ablanden. Con mucho cuidado saque del microondas. Repita con todas las tortillas. Las tortillas se ablandarán con el vapor y se podrán rellenar sin quebrar. 5. Rocíe un molde de hornear de 9”x12” con el aceite en rociador. Llene las tortillas ablandadas al vapor con el pollo, las cebollas y el queso. Enrolle y ponga con la juntura hacia abajo en el molde de hornear. Prepare todas las tortillas, rellene y enrolle. 6. Cubra con la salsa de tomatillo. Espolvoree con el queso. Caliente en el horno por 20 minutos en un horno de 350°. 7. Sirva con condimento de crema ácida descremada, si desea.
