History & Strategy History St. Lucia Distillers Limited emerged from the tradition of on-site, ‘rustic’ rum that was a common feature of the West Indian sugar plantation. Sugar’s by-product, molasses was fermented and distilled into rum, the demand for which has been a constant through the fluctuations of West Indian plantation economies. By the late 1950s, two distilleries remained in St. Lucia, one at Dennery, the site of the Barnard family plantation, and the other Geest-owned at Roseau, the location of the current distillery. St. Lucia Distillers Limited was formed in 1972 when the two distilleries amalgamated producing a now discontinued blend of rum whose name reflected the merger, Denros Bounty Rum. The Barnard family bought the Geest shares in 1992 and in 1997 sold 25% of the shares to Trinidad based Angostura Ltd. In 2005 the Barnard family, planters and rum distillers for over a century sold their remaining shares to CLICO Holdings Barbados Limited, with third generation rum-maker Laurie Barnard staying on as Managing Director. Since 1972, St. Lucia Distillers has grown from producing a single label massmarket rum to a portfolio of premium rums and liqueurs. Today, we have a range of over 25 rum and rum-related products which have performed exceptionally in international competitions and are distributed in over 20 countries in the Caribbean and internationally.

Rum & St. Lucia The Spirit of St. Lucia Rum is the spirit of the Caribbean. It is the connection of a people to its history - a link between hands in the soil from which sugar is grown, to hands in the air as we express ourselves at Carnival. St. Lucia Distillers captures and bottles that spirit. The history of rum is married to the organised production of sugar. The demand for sugar on the European market left a by-product in molasses - the raw material in rum production. During the seventeenth and eighteenth centuries the triangular trade in slaves and sugar brought together all the right ingredients for the mass production of rum, an event which would have lasting repercussions on the culture of the region and the economy of the world. The strong liquor appealed mostly to the slave population and to sailors and buccaneers, but gradually gained a wider, more appreciative audience as time and better distilling methods made it more palatable. In the late seventeenth century rum rations, moderated by measures of water and later lime to prevent scurvy, were introduced by the Royal Navy as part of a sailor’s daily allotment. The naval connection gave the distilled drink an international platform. It wasn’t long before the process of rum distillation became more profitable than sugar production on its own. When sugar was introduced to St. Lucia in the late 1700’s it revolutionized local society, the reverberations of which are still felt today. The labour intensive crop generated a demand that was satisfied by the trade in African slaves, and later by Indian indentured labour, introducing what is now the primary demographic of the island’s population and rum’s first mass consumers. The island of St. Lucia featured many small plantation distilleries, remnants of which can still be found around the countryside. By the 1950s however, there were only two operational distilleries left on the island and these merged in 1972 to create St. Lucia Distillers. As sugar production ended in 1962, the raw material, molasses, was shipped from Guyana into the bay at Roseau where the viscous, aromatic syrup is pumped to storage tanks at the distillery. At St. Lucia Distillers, we are turning the clock back and have planted five acres of cane, while investing in a cane crushing facility to extract the cane juice. We will be fermenting and maturing this “rum agricole” in the coming years and we plan to expand our acreage of cane. From a dubious start and a vibrant history, rum in its diverse varieties and blends has earned a favoured place on the palates of those who frequent the roadside rum shop in St. Lucia to the fashionable cocktail bars of London, New York and Paris.

Rum & St. Lucia Our Culture, Our Rum! St. Lucia’s local culture and traditions are revealed through a number of festivals. Carnival stands out as the major cultural event of the year and includes competitions and performances by masquerade (Mas) bands, calypso and soca singers, steel bands and beauty contestants. Following the launching of Carnival in June, mas camps, pan-yards and calypso tents are formed with a series of performances by local calypso and soca artists. During the height of Carnival local rums are consumed in a celebratory mood adding to the environment of enjoyment. The month of October is recognized as Creole Heritage Month and includes the celebration of International Creole Day or Jounen Kweyol. Each year, the events are hosted by a number of selected communities throughout the island and include religious services, parades, a royal court, feasting and much dancing culminating in the flower festivals of La Rose and Les Marguerite. Our rums play a significant role in these celebrations by loosening the mood of the party and helping St. Lucians enjoy their rich cultural heritage.

The Rhythm of Rum tour takes visitors on a journey that illuminates the connection between the production of rum and the historical and cultural heritage of the island. The tour begins with a short video in a reconstructed ship’s hold which explains rum production; its connection to the island and the distillery’s family beginnings. Visitors then proceed to the distillery where it becomes clear that the making of rum has its own distinct rhythm and flavour. From the molasses vats holding the dark viscous aromatic raw material to the pot and column stills visitors are encouraged to engage all the senses and understand the unique phenomenon that is rum making. Beautiful copper stills dominate the main floor where visitors can observe the progressive distillation process with an opportunity to see and smell the spirit at its various stages. The rhythm of rum tour continues with a Carnival extravaganza. Colourful costumes and the melodic sounds of steel pan envelope visitors in the Carnival interpretation centre. The tour ends with a rum tasting where you can sample our impressive range and find the rum or rums which best fit the individual palate. The Art of Rum Making Rum Making at St. Lucia Distillers RAW MATERIALS Molasses, made from the juice extracted from sugarcane, is imported from a number of sugar producing nations throughout Latin America and the Caribbean. Our largest supply comes from Guyana. We currently have five acres under sugar cane. We have planted four selected varieties of cane which is sourced from the West Indies Breeding Station in Barbados. We intend to expand our acreage of cane to ten acres in the coming years. The molasses is mixed with water collected from local streams and is supplemented by the collection of rainwater. All the water we use for finished product is filtered and undergoes reverse osmosis. The resulting wash is monitored closely by our distillers who ensure Brix levels result in efficient fermentation. FERMENTATION We use a number of yeasts for the bulk of our molasses fermentation. Our sugar cane fermentation is however, completely natural. Our yeasts are propagated in stainless steel tanks and then used to inoculate the wash. These yeasts have been carefully selected for their flavour profile and their efficiency in converting sugar into alcohol. Fermentation takes place at temperatures of up to thirty four degrees celsius for 24-30 hours. We control the length and temperature of fermentation to give a balance of congeners which give our rums their unique flavour. Sugar cane fermentations can take up to four days as we prefer a natural process. DISTILLATION The resulting wash is heated and distilled in either a pot still or column (continuous) still. St. Lucia Distillers has four different stills. This gives us the ability of making different rums with varying flavour profiles which then give the blender the rums to make unique and quality driven products. Traditional small batch distillations differentiate us from larger distilleries and allow us to produce rums with different and distinctive characters. The Art of Rum Making MATURATION We currently have a large and growing stock of barrels undergoing maturation. St. Lucia Distillers sources its’ white American oak barrels from the Kentucky Bourbon industry and has barrels from Jack Daniels, Buffalo Trace and Jim Beam. In addition to Bourbon barrels we use port barrels for final polishing for products such as TØZ and are experimenting with Hermitage and Chilean wine barrels. We are conducting further experiments with Sherry, Madeira and Sauternes barrels. Tropical ageing speeds up the maturation process. Our spirit ages two and half times faster than equivalent spirits in Europe. Although this has its’ advantages it can often be the case that rums over 10 years of age can be extremely woody as tropical maturation takes on too much tannin. We carefully check all barrels for the evolution of the spirit and rely on the talents of our blending team to marry old rums with younger rums to get balance and greater complexity. BLENDING The art of blending is central to our philosophy. We do not put age statements on our rums because we believe passionately that complexity and balance can only be maximized by blending old, complex but often “woody” rums with fresher but characterful rums. With the exception of caramel for colouring purposes we do not add sugar or other additives to our rums, and therefore conform to both Caribbean and European Community rum standards. The exact character of each rum or liqueur is determined by a team of master blenders who maintain the consistency of taste in our existing blends. They continue to develop new products which can find a niche in local and export markets.

Premium Rums Chairman’s Reserve Chairman’s Reserve was first blended in 1999 and was overseen by the then Chairman, Laurie Barnard who conceived a quality rum which was blended using continuous and pot still rums coming on stream after ageing. Local demand has been phenomenal and the brand has expanded internationally, where the versatility of the rum makes for great cocktails. Chairman’s Reserve recently won Gold - Best in Class at the International Wine & Spirits Competition and Double Gold at the San Francisco World Spirits Competition. Brand Positioning: Mid Market to Premium Blend: A blend of continuous and pot stills. Maturation: In American oak casks - Jim Beam, Jack Daniels and Buffalo Trace - separately by still, then blended and reintroduced to oak for a further six months to marry. Age: A blend averaging 5 years. Alcoholic Strength: 40% abv Sizes: 192x50ml; 24x250ml; 6x700ml; 6x750ml; 6x1000ml Tasting Note: Rich dark golden amber colour. The pot still richness comes through on the nose with sweet honeyed fruit and spicy vanilla from the oak. The palate is balanced, with a mellow but complex mix of ripe raisin fruit, tobacco and spice. The rum has a long enjoyable finish. In St. Lucia, Chairman’s Reserve is enjoyed with coconut water but can be drunk neat or with a chaser of your choice.

Come to St. Lucia . . . Welcome to our Distillery St. Lucia Distillers welcomes all distributors and their customers to our distillery. We are happy to take you on a tour of our facility and show you the rum making process. Our new administrative building includes tasting facilities and we conduct tutored tastings for interested groups. Our tastings are designed to showcase our brands as well as giving an insight into the different distillates we use in our blends. We also explore the effects of yeast, the taste differences between separate stills and the effect of wood and tropical heat in the ageing process. During the last few years we have entertained groups from all over the world and invite all interested lovers of our rums to come and get a flavour of St. Lucian hospitality.

The Authentic Caribbean Rum Marque St. Lucia Distillers is proud to support the West Indies Rum and Spirits Producers’ Association Inc. and their Authentic Caribbean Rum Marque. The Marque is intended to heighten awareness of the excellence of rum from ACP Caribbean countries and give the consumer a visual symbol of provenance and quality. Only eligible brands will be allowed to use the Marque on their labeling or advertising materials. St. Lucia Distillers was one of the first distilleries to qualify for the use of the Marque and all of our main export brands contain the Marque symbol on their labels. A large communications campaign has been launched in Italy, Spain and the United Kingdom and WIRSPA continue to support the Marque with tastings, educational programmes, press briefings and a website.
