Veggies Beyond Salads this Summer Time to bust out those barbecues and light ‘em up before fireworks for an awesome 4th of July weekend. Summer’s in full swing, and we know we’re excited for the season here at Mann. We’d like to be right alongside you relaxing poolside or at the beach, basking in all the summer sun and making the most of the gorgeous weather. Be it vacation or a simple weekend get-together for family and friends, we know now’s the time for parties. Bonfires at the beach, picnics at the park, or grilling out by the pool – if it’s outdoors and there’s food, you can count on us being there and celebrating. No one should have to stress about preparing for these events, or worry about losing their bikini bod’ because of all the unhealthy eating choices looming out there. To make the festivities more fresh and fun, we wanted to share some new recipes we developed just for you to enjoy—using one of our Family Favorites, Mann’s Broccoli Cole Slaw. That’s right, all the following recipes start with Mann’s pre-packaged, ready-toeat/use premium fresh vegetables that aim to incorporate only the best-tasting ingredients into every meal. Keep it clean, delicious, and nutritious and feel free to get creative with them by swapping out our Broccoli Cole Slaw with any of our shredded blends. Mann’s Rainbow Salad and our brand new Mann’s PowerBlend Superfood Slaw (released just last month!) work just the same in any of these dishes. Rainbow Salad Mini Frittatas Ingredients

Directions

1 bag (12 oz/340 g) Mann’s Rainbow Salad

Preheat oven to 375°F (190°C). Place potatoes in small saucepan, adding enough cold water to cover; add generous pinch of salt. Bring to boil; cook for 5 to 7 minutes or until potatoes are fork-tender; drain well.

1 yellow-flesh potato, peeled and diced (about 1 cup) 2 tbsp canola oil 1 tsp salt 1/2 tsp freshly ground pepper 8 eggs 1/2 cup milk 1 tbsp Dijon mustard 2 cloves garlic, minced 1/4 cup grated Parmesan cheese 3/4 cup shredded Cheddar cheese 2 tbsp chopped fresh chives

Skinny Tip! Substitute whole eggs with egg whites or egg beaters to save on cholesterol and fat.

In large, nonstick skillet, heat oil over medium-high heat; cook potatoes, Mann’s Rainbow Salad and half of the salt and pepper. Cook, stirring occasionally, for 5 to 7 minutes or until vegetables are tender-crisp; let cool slightly. Divide vegetables evenly among greased 12-cup muffin tin. Whisk together eggs, milk, mustard, garlic, Parmesan, and remaining salt and pepper; pour over vegetables. Sprinkle Cheddar over top; bake for 13 or 14 minutes or until egg is set and cheese is melted. Run thin knife around edge of each cup; let cool for 10 minutes before serving or serve at room temperature. Garnish with chives. Tip: Frittatas can be wrapped tightly and frozen for up to 1 month to have on hand for a quick, protein- packed snack or on-the-go breakfast. Servings 12

Falafels with Broccoli Cole Slaw Ingredients

Directions

1 bag (12 oz/340 g) Mann’s Broccoli Cole Slaw

Toss together cole slaw, vinaigrette and red onion; set aside. Meanwhile, prepare falafels according to package directions.

1/2 cup prepared Greek-style vinaigrette 1/4 cup thinly sliced red onion 16 frozen falafels 1/2 cup hummus 2 pocket-style pitas, halved and split open

Spread hummus on the inside of each pita half; stuff with Mann’s Broccoli Cole Slaw and warm falafels. Drizzle with tahini sauce. Serve immediately with remaining cole slaw on the side.

1/2 cup tahini sauce

Tip: Use a spicy hummus to add a bit of heat to this sandwich if desired.

The Versatile Vegetable

So you love pasta, but not the carbs or calories? Swap the noodles for some Broccoli Cole Slaw:

Don’t like Falafels? Substitute grilled chicken or beef, or even avocado and tomatoes.

• Saute in olive oil and garlic and top with marinara for a twist on the Italian classic • Saute in ponzu & peanut sauce and add scrambled egg and chicken for a Asian inspired Pad Thai style dish

Classic Cole Slaw Dressing Ingredients

Directions

3/4 cup Mayonaise, regular or reduced fat

Place all dressing ingredients in a bowl. Using a whisk, pour in vinegar until desired consistency is reached (about 1/4/cup). Pour over Mann’s Broccoli Cole Slaw or Rainbow Salad mix and toss. Can be made up to 2 hours prior to serving.

1/4 cup White wine or rice vinegar 1 tsp Sugar Salt & pepper to taste

Twist on the Classics! No time to make your own dressing? Use prepared dressings to save time with these twists to the old classic: • Use poppy seed dressing, canned & drained pineapple chunks & sunflower seeds (cover image) • Add red onions, dried cranberries and bacon bits with the classic cole slaw dressing • Add strawberries, green onions and goat cheese crumbles with a light champagne vinaigrette

Chicken & Vermicelli Rainbow Salad Ingredients 1 bag (12 oz/340 g) Mann’s Rainbow Salad 8 oz dried rice vermicelli 3 cups shredded cooked chicken 1/2 cup chopped green onions 1/2 cup coarsely chopped fresh cilantro or Thai basil 1/2 cup chopped almonds, toasted 2 tsp sesame seeds, toasted Dressing 1/3 cup canola oil 1/4 cup lime juice 1/4 cup rice vinegar 2 tbsp soy sauce 1 tbsp sriracha sauce 1 tbsp honey 2 tsp sesame oil 2 tsp minced fresh gingerroot

Directions Dressing: Whisk together canola oil, lime juice, vinegar, soy sauce, sriracha, honey, sesame oil and ginger; set aside. (Dressing can be covered tightly and refrigerated for up to 5 days.) In large bowl, pour boiling water over noodles until fully submerged; cover with plastic wrap and let stand for 5 minutes. Drain and rinse under cold water until water runs clear; drain well and let stand for 10 minutes. Toss together noodles, Mann’s Rainbow Salad, chicken, green onions, cilantro and dressing until evenly combined (toss gently to avoid breaking noodles). Serve immediately or refrigerate for up to 4 hours. Sprinkle with almonds and sesame seeds before serving. Tip: A rotisserie chicken or leftover chicken is the perfect shortcut to prepare this salad in just a few minutes. Tip: Add an extra 1 tbsp of sriracha sauce, if desired. Servings 4

Crispy Broccoli Tuna Salad Wrap Ingredients

Directions

1 bag (12 oz/340 g) Broccoli Cole Slaw

Stir together mayonnaise, onion, lemon juice, lemon zest, salt and pepper until well combined. In separate bowl, toss Broccoli Cole Slaw with tuna and sunflower seeds. Drizzle mayonnaise mixture over top; toss until evenly coated.

2/3 cup reduced-fat olive oil mayonnaise 1/4 cup finely chopped red onion 1 tbsp lemon juice 1 tsp finely grated lemon zest 1/2 tsp salt 1/4 tsp freshly ground pepper

Divide salad evenly among 4 tortillas. Roll and secure by folding in end pieces. Cut each wrap in half; serve immediately. Add tomatoes or onions as additional garnish.

1/4 cup sunflower seeds

Tip: Salad mixture can be covered tightly and refrigerated for up to 2 days. Great prepared ahead and wrapped in tin foil for picnics or trips to the beach.

4 whole wheat tortillas or wraps

2 cans (140 g each) flake light tuna, drained

Don’t Limit Yourself! Broccoli Cole Slaw is also great for sandwiches, egg rolls, burritos, tacos, and much more! Anywhere you find cabbage or shredded lettuce, top with Broccoli Cole Slaw!
