“A wise man once said, ‘The skill in attending a party is knowing when it’s time to leave.’ We built something extraordinary together. We did this thing. And now we’re going to walk away from it.”

The above words of Michael Stipe when R.E.M. announced their disbandment in 2011 kept replaying in my mind as I was working on this issue. Yes, by the time you read this, I’ll be no longer with hellobali. This is the last time I will write my personal opinions dubbed as “the editorial team’s” here on this page; no more anecdotes concluded by non-sequiturs from yours truly. The last four years and eight months have been the most exciting part of my life. Working on the magazine has introduced me to places I thought I’d never discover, things I thought I’d never experience, and most importantly, people I thought I’d never get the pleasure of knowing. Oh, the people. I remember meeting the inspirational Melati and Isabel Wijsen – who at the time were 14 and 12 – with their Bye Bye Plastic Bags (BBPB) movement. I remember meeting Balinese traditional dancer Ida Bagus Oka Wirjana, who was 84 years old at the time but still so eager to dance and teach. And I will always remember the time I interviewed my teen idol, Fatboy Slim. Out of the illustrious names, however, there are people who will always remain dear to my heart: the ones that have helped me running hellobali so that the magazine can continue to bring you the greatest gems in Bali. Some of them have carried on with their own journeys, and the rest will continue to improve further and brighten your days with the pages (and web pages alike!). This is a farewell for me, but hellobali will be here – better and stronger than ever in 2017, with more growth and cool things to look forward to. You and I, we built something extraordinary together. We did this thing. And now I’m going to walk away from it. fter being in the media business for 21 years, 2016 became a year of learning for everyone at hellobali. And we are not special in any way at all in this. All over the world, both journalism and the landscape of the media are changing. The digital age, through its very nature, both its accessibility and, at the same time, its inaccessibility, has changed how news (and information) is produced, delivered and consumed. New media, as they are called – social media is one example – put an end to the post-modern era where carefully edited news, with all its varying degree of biases, thrived. Citizen journalism put a dent to a once solid-gold concept of traditional editing in newsrooms all over the world; Wikileaks provided an alternative to

the investigative journalism form; live streaming is now the new website blog. Everyone with a social media account is now a news outlet. This person is both the reader of the news, the editor and the publisher. He or she decides if a news piece is factual or not, and

he or she decides which channels to use to spread this news. The digital age has handed everyone a personal megaphone with which they can amplify their voice to the whole world. At the same time, technology has also given us the freedom to choose the kind

of news we want to receive. There are many good sides to this part of progress, but there is also a very bad side where everyone is at a danger of only engulfing themselves with news and opinions that confirm to their own biases. Sceptics – such as I although I am slowly changing – call this age The Age of Anti-Intellectualism, the era of armchair participatism, where movements, no matter how important or meaningless, easily earn tractions and become digitally viral, although most don’t translate into any serious engagements in real life. In short, 2016 was like a hot summer day for all of us at hellobali, a hot summer day that lasted for much longer than it should be. It was great and amazing when it was warm and temperate, but difficult and somewhat unbearable when it became too hot. And like many others in the media industry

have learned, resistance to change is the fastest and shortest road to perdition. All of us at hellobali is now welcoming all of the advances and quirkiness of the digital age with open arms. For example, in addition to our writers and editors, we have welcomed data scientists to our team. Data is now on par with news as our currency. The term “modular” comes close but not quite. Rarely has a news media outlet put the needs of their readers first so far, but we all believe that this is the best way forward. After, in the second quarter of 2017, we will launch our new mobile application which will offer a different way of experiencing Bali altogether. The new app will boast next generation technology that offers its users immersive involvement while holidaying in Bali. Some people love to travel, some enjoy watching movies, but one would need a stronger word to describe Anak Agung Ayu Daninda’s affection towards the world of philately.

er gestures are courteous and poised, and her speeches are articulated and cultured – something you would expect from a member of a noble clan on the island. But I only needed to ask her one thing about stamps before her eyes immediately glared with excitement. Daninda tells me how philately has become some sort of tradition in her family, and that’s how she was introduced to it. “It started from my opa (grandfather), passed down to my mother, and then to me,” she explains while setting up her collection. A stack of stamp albums of many shapes and sizes – the special editions on envelopes and booklet packaging, those that are made from various materials, and those that engage other senses (such as the chocolate-scented stamp series from France). Her collection is more than just quantity. There’s a bunch of amazing rare special releases – such as the one celebrating Prince Charles and Princess Diana’s marriage from back in 1981, or another in tribute to Mahatma Gandhi printed on a khadi fabric, then a vintage Balinese dancer from 1949, and countless mint collectibles. This love for stamp collecting, however, wasn’t always there. Daninda rediscovered that passion during her studies for a master degree in cultural media. “I was stuck. I was on the brink of being expelled for not

figuring out what my thesis was going to be about. Then it brought me back to my stamps,” she recalls. “All of my friends were making analysis on more common media like films or songs. I decided that mine would be about stamps. I had to fight for it with my professor, though.” It started to get more interesting when she opened one of her albums and showed me a series of stamps featuring traditional dishes from Macau and Portugal. “My thesis was criticising our (Indonesian) gastronomy stamp series because I think they look more appalling than appetising – obviously outclassed by those from Portugal and Macau.” That was nearly three years ago, and now Daninda is one of the most important figures in the philately community in Bali. She’s part of the official Indonesian Philatelist Association in Bali (PFI Bali), and she has just started getting involved with the more independent Indonesian Creative Philately Community (KOFKI) where she helps introducing the beauty of stamps to newer generations. Obviously, this is challenging since the activity of conventional correspondence has been taken over by e-mails and text messages – making it hard for younger crowd to relate. “That’s why we’re travelling on road shows, trying to give different approach through alternative mediums. I, for one, try to create

with objects outside philately, and mix them,” she explains while showing me a night lamp covered entirely in old stamps, which looks amazing when turned on. Then there’s the Baliphex just November last year. The annual philately exhibition brought in Daninda, artist Alit Amabra who designed the commemorative special edition stamp, and Sugi Lanus who is an ancient letter researcher. The event saw large enthusiasm, bringing in new fans thus showing that stamps are not a thing of the past. Some stories about Daninda’s extraordinary love for stamps are quite interesting. Once she went on a vacation in Europe with her family and found an old man in Amsterdam who was selling a large sack of old documents. “There were more than stamps and envelopes in there. I’ve got a mount of papers, postcards, letters, notes, photographs and more.” When it was time to come home, she exceeded her baggage limit for the flight. “I threw away my clothes there at the airport.” Daninda claims that most of her favourite stamps in her collection were found in that sack. “I studied philosophy so I admire great thinkers. It was in that sack of bag I brought from Europe that I found this,”

she says while showing a stamp of a German political theorist Hannah Arendt; right in the middle of other famous minds such Nietzsche and Theodor Adorno. “She’s one of my favourite philosophers and to find it in a bag full of papers from Europe just means a lot to me.” Daninda tells another stunning story. “I was in Yogyakarta during the Merapi eruption in 2010, and the first thing I saved before fleeing the city was my stamps. I couldn’t care less about my papers or certificates.” Her eyes beam before continuing, “This might sound sentimental, but I believe that my stamps have saved me several times – my thesis was just one of them.” After all the above, Daninda is still doing all she can in regenerating this tradition. One of which is by making a digital archive of Balinese stamps that will later be accessible through a mobile app. The digitalising team consists of herself, Marlowe Bandem, Wayan Juniarta, Ridwan Rudianto and Anggara Mahendra. They aim to archive all postal stamps that have been released in Indonesia, starting from Bali. After taking one last picture, admiring one last page, and closing one last album, I asked Daninda what she envisions from all this. “Essentially, I want stamps to be responded creatively, across space and time, across generations, in various fields of study – reflectively, actively, and projectively.”

The article is written by Jakartans who have been living and breathing Bali for quite a while now, with data gathered from authoritative various sources (if it’s on the internet it must be true, right?). Most importantly, it’s not a bible, so don’t lose sleep over it.

natural wonders Okay, so at the mention of Bali, most people would immediately have images of white sand beach, and blue azure ocean on their minds. While upon hearing Jakarta, skyscrapers and massive malls are what usually come in mind. We’re also pretty sure that the capital city is the “concrete jungle where dreams are made of” (or killed; it goes both ways) that Alicia Keys has been singing about. But Bali... Bali is not just about the beautiful beaches. The island has some lush rice paddies, mesmerising waterfalls, hidden caves, stunning rock formations, and more. Sure, Jakarta has some manmade parks; but is it enough? the verdict: Sorry, Jakarta, Bali definitely wins this round

traffic and public transportation Due to Bali’s ever-increasing popularity and people’s tendency to drive (instead of walking) in general, Bali’s traffic is getting more and more packed these days. Some streets have gained a reputation for being jammed during rush hours – we’re looking at you, Kerobokan. Of course, in Bali, one would frequently be taken off guard by traditional ceremonies that usually lead to the necessity to take a detour. Having said that, the average time spent by Jakartans to commute from home to work starts from 45 minutes to two hours. That’s a big chunk of one’s life to be spent on the road! In Jakarta, traffic jams are part of life, almost 24/7! At least here in Bali, when your car gets stopped by a traditional ceremony, you’ll get a pretty sight (and experience) to behold.

But to be fair using the logic that the number of vehicles keeps on increasing, plus the fact that the population keeps on growing – both from births, and outsiders moving into the island – who says that Bali won’t have an even worse traffic in the future? Not to mention we, the islanders, are definitely not prepared with any inner-island transportation system, especially in the most crowded area such as Kuta, Seminyak, and now Canggu. In this subject, Jakarta is more prepared. Countless modes of transportation – from buses, shuttles, trains – have helped millions of Jakartans in their daily travels. Even though with all the overloading facilities, they still can’t travel safer or faster. the verdict: In comparison, Bali’s traffic is a walk in the park, but as a capital city, Jakarta does its job in providing better means of transportation – though it’s still essentially a cluttered mess

trends and pop culture In terms of development and technology, Bali is definitely a runner up compared to Jakarta and even other cities in Java. Of course this makes Jakarta still the capital of everything: information, trends, and pop culture alike. Yet, considering the popularity and high demand for convenience, Bali is considerably growing faster than most provinces and islands – in spite of the fact that, traditionally, Bali is also one of those who still uphold their ancient Hindu culture. But personally, we think Bali creates its own trends. Many of the popular things booming in Jakarta don’t translate well when applied in Bali – shopping malls, famous restaurant chains, branded designer outlets, and many others. Bali on the other hand – helped by its impeccable terrains and myriad shoreline beauties – defines the country’s standards for five-star resorts’ architecture and management. We may miss out some urban trending topics, but we have our sunset cocktails to stop caring about all that.

It’s perplexing that Jakartans love to make more efforts for things that are skin deep – flashy on the outside, but not as much substance on the inside. This includes getting in line for hours to get into a new trendy place at the heart of the business district only to be served a mediocre dish. But image and social status come first right? Bali’s food scene seems to run on a more honest, but ruthless, popularity standards – on many genres of eateries. We have international dishes from the furthest part of the planet, to hawkers selling their curbside treats on the quietest corners of the island. If it’s good, it’s good. There are places that have been running for decades but still have loyal customers coming at least once a week, while there are fine-dining establishments that struggle since day one simply because they don’t make them fine enough. the verdict: Honesty goes a long way, and we’re pretty proud about this one

The clique is usually tighter than The Plastics in “Mean Girls”, and they usually have mastered the “you can’t sit with us” side-eye. Of course, one can tell the Jakartan group apart right away, because the accent immediately gives them away (think Indonesian counterpart of Californian valley girl accent). And they are loud, so even if you’re not their acquaintance, you feel like you’ve known them your whole life from the things you’ve overheard (or the things they’ve overshared?).

When it comes to wardrobe, Jakartans have a lot of pressure – as big city people, they have to look sharp and fashionable all the time. In Jakarta, people go to the malls looking like they would attend New York Fashion Week. So don’t be surprised if you see people looking so extra going to the beach here – yep, they’re Jakartans. Expect long sundresses that aren’t actually practical for a tropical outing, large sunglasses that remind us of Paris Hilton circa early 2000s, and of course, over-the-top sun hats. In addition, the make up game and their hair are always on point – all polished and sprayed to last.

picture or didn’t happen Prestige is paramount for the capital citizens, and these days the way to show that you have things or that you have been to places is via glorified pictures posted on social media. These pictures of course have to be carefully curated, that even the candid ones are meticulously planned. The important thing is that people back home have to know that you’ve been to the latest hip beach club, so a true Jakartan would bring a token photographer sidekick, or a selfie stick.

Although usually they’re dressed like what Barbie would look like going to the beach, female Jakartans don’t really swim or surf – probably because they’re afraid the pencilled-in brows or eyelash extension would fall out. They’re not there for tanning, either – because god forbid that Snow White fair skin gets darker (that explains the oversized hats and shades, and oh, sometimes umbrellas).

the sunset cocktails The epitome of Bali trips everywhere: basking on the sunset’s glow (when it’s not cloudy) in a fancy cut bikini, and with a glass of cocktail in hand (again, other accessories such as sunglasses and hats are optional but usually favoured), while everybody in the pack takes turns in that golden hour to take that one perfect Instagram shot. The classics have always set the standard on this sunset-pictures business, that’s why KU DE TA (kudeta.com) is still filled to the brim every dusk. The hipster mecca Potato Head Beach Club (ptthead.com) defines the term beach club with their Miami-style pool and layaround lawn – making it actually impossible to find a place to sit around 5.30pm. While Rock Bar (Instagram @rockbarbali) offers a whole different game with their snazzy cliffside-meetsthe-ocean construction. It’s all about picturesque designs that make these beach clubs stand out and popular – and Instagrammable. The more modest La Plancha (Instagram @laplanchabali) makes its name with those colourful bean bags and umbrellas, as opposed to Woobar’s (woobarbali.com) cosmic pop-art facade. On the other hand, Finns Beach Club at their new location tries a contrasting approach by only combining brown bamboo and blue pool with maximum results.

When it comes to Canggu, the area of Batu Bolong Street has gained popularity and development earlier than Pantai Berawa Street; which is kind of strange, because Pantai Berawa is practically the gateway to Canggu from Seminyak. Pantai Berawa used to comprise quite streets, with just a few quaint villas here and there amidst the rice paddies. These days, it’s more like a blink-and-miss situation there; hole-in-the-wall kind of places are lining by the streets – some last for quite a while, and the rest are replaced by new joints every week. So one fine weekend, I decided to go on a joyride around the neighbourhood and catch up with what had stood through time, and the newcomers. DELICACIES AND DRINKS Pantai Berawa welcomed the express version of famed dim sum joint Happy Chappy

The dainty place looks so cute with a mural of tropical plants all over its walls, and the fact that its nextdoor neighbour is a block of rice paddies doesn’t hurt too. Santa Berawa highlights the bao burger selection – classic fried chicken, barbeque pulled pork, and mahi mahi; but the waffles and desserts are great too. The food is created from old Carribean family recipes, the place looks like a New York’s refined speakeasy, the drinks are definitely potent, and the music nights are exceptional. Wednesdays and Fridays are dedicated to hiphop and R&B, Saturdays are for deep house, and every other Tuesday sees the reggae night. The newer counterpart, Rezzmataz (T: +62 813 3966 1693, Instagram @rezzmatazz_bali), caters to those who seek a great reggae dance hall. The place also serves delicious food, and of course good drink and music nights that see musicians performing live – including Brother Joe & The Peaceful Warriors, Kingmasmus, and DLYTRB. Keep an eye on Rezzmatazz’s Bintang Happy Hour from 7.30pm to 8.30pm where you can buy one Bintang beer, and get another one for free. ere in Bali, the home of many culinary wizards with their many stellar gastronomic projects, I still get intrigued when I hear one of those brilliant chefs or restaurateurs opening up a new dining joint. Even more so if the particular person is one that I admire, like Mandif Warokka for instance. Each of his ongoing ventures has managed to score brownie points in my book. With Frestro, however, it’s multiple times more exciting, because Mandif is merely one of the bigger dream team. So here’s the rollcall: the experienced executive chef Jovan Koraag (previously Jamie’s Italian Bali), the innovative mixologist Ayip Dzuhri (crowned as Indonesia World Class Bartender 2015 by Diageo), and sommelier Nicolas Lento (previously managing a successful run at Urchin Grill & Raw Bar). Mandif might have created the inventive menu with a strict “no chemicals, no additives” policy – that I will get into later on, but the well-accomplished group is the ones that make sure the system runs smoothly from every angle. Now let’s get properly introduced to the venue itself. The facade of Frestro, which happens to be the bar area, is definitely prominent with the cylindrical floor-toceiling glass windows, and lighting that combines intimate illumination and striking light centrepiece at the bar. Don’t let your jaw drop just yet at the sight of the flamboyant bar, because the real treasure is right behind it: Frestro’s own barrelled

Good mise en place means 50 per cent of your cooking is done. Read your full recipe first, understand it, and then you start cooking. Maintain your consistency and watch the details. Dull knives are more dangerous than sharp knives. Sharpen them! Chef is like an accountant. Get everything tidy and organised! Never fry your garlic in high heat fat to sauté. Start with simmering it then add the rest of ingredients. Always check your market list and do a prep-list before you call it off. Don’t spend too much time in plating unless you’re serving a cold dish. The cleanest part in a restaurant should be the kitchen. That’s where your foods come from. Get it cleaned!

The ultimate pièce de resistance, though, is the open kitchen where guests can enjoy chef Jovan and his team do his magic. fresh and clean The magic is the farm-to-fork philosophy that stemmed from the aforementioned embargo of chemicals and additives. The ingredients should be fresh – mostly from their own garden in Bedugul, the preparation should be meticulous, and the taste should be clean and distinguished. Chef Jovan explains that the team makes everything from scratch; the antipasto bread – in which they replace the industrial yeast with the homemade levain culture, the tasteful potato chips, they even smoke the poultry and meats themselves. Do try the coffee wood-smoked quail and ask chef Jovan about the exquisite process of making it; you will find a new level of appreciation to the food you eat. Frestro Jl. yellow fin tuna with melba toast, cured yolk, truffle oil, cauliflower cream, and avruga caviar ingredients cauliflower aioli 20g cauliflowers, boil and simmer with cream till rather soft 5ml Worcestershire 1 egg yolk 4ml good quality truffle oil 10ml olive oil tuna 100g yellow fin tuna 5g onion chives a pinch of good quality salt a pinch of good quality black pepper corn 1 egg yolk, salt-cured for 24 hours 1pc thinly sliced focaccia bread, dehydrate in the oven or Excalibur Camo Dehydrator to make it crispy truffle oil to brush 1tsp avruga caviar method Mix in Thermomix the cauliflower, Worcestershire, egg yolk, truffle oil and blitz till fine. Pour the olive oil in the mix slowly. The texture should be fine and light paste. Pound the tuna till flat, rolling pin would do the finishing. Make a round cut on the tuna using ring cutter with 14-centimetre diameter, and do the same with the crispy thin focaccia.

tongue twister Frestro serves dishes with international tastes that – while the finesse is in the simplicity itself – hold an easy twist that makes all the difference. The aged Angus beef tartar, for example, has more oomph in terms of taste and texture than any of its counterparts that I’ve ever tasted. The oba leaves and watercress add freshness, but the wow factor is on the miniscule diced pear in the mixture that gives a hint of sweetness and a subtle crunch. The smoked tongue capellini ups the ante a notch in the pasta game. The classic pasta with green tomato, garlic, chilli, parsley, anchovies, lemon, and EVO oil is enhanced with the smoked tongue on top. For me personally, the sultry main is the squid ink carnaroli risotto, served with squid, leeks, and the scene stealer, cured chicken liver croquette. This dish is somewhat creamy and lush, but still tastes freshly pungent and light.

name, rich and fragrant with a seductive hint of nutmeg mace (first discovered in Bengkulu). The Kalamansi Daiquiri highlights the traditional kalamansi citrus syrup, also from Bengkulu. The beautifully named Astrajingga is the award-winning cocktail that is inspired by a Sundanese traditional drink, bajigur. This one is definitely something else: a mix of aged rum and coconut cream served warm. After talking to chef Jovan and Ayip, and going on the Frestro journey myself, I have realised that the open kitchen was created with a purpose: to break down the wall between the creators and the diners, so that the latter know the stories of each ingredient and each particular process – because after all, those are half of the experience. • Runi Indrani

Boasting authentic American barbeque, this restaurant applies the “low and slow” cooking method that involves long hours of cooking (up to 20 hours!) using a low-temperature smoker. Of course the patience and efforts result in the juiciest meats you can find in the vicinity.

Having said that, do prepare your fiercest appetite before going here, because Betty Lou has an array of southern delicacies that makes it impossible to choose only one. I would start with the crispy pig ears (Rp.55,000) with garlic tomato sauce, and the sweet potato fries (Rp.50,000) to really get the palate going. The Southern fried chicken (Rp.75,000) is simply hearty and delicious, and the creamy crawfish spaghetti (Rp.120,000) is practically a lush heaven on a plate. Of course, we shouldn’t lose our focus on what really matters: the meats. Come with a pack of wolves, and order the full slab (that’s 1,100 grams) of St. Louis pork ribs (Rp.395,000) that have been rubbed, smoked, and glazed with the house’s signature barbeque sauce. And save some room for – no, I’m not even going to say dessert yet; save some room for the Texas-style wagyu beef brisket (Rp.170,000) that has been slow-smoked over 18 hours. Savour the succulence, I’m telling you! drinks Living up to the southern hospitality reputation, Betty Lou is serving drinks for everyone – from tropical fruit juices, and milkshakes, to beers and whole young coconut. Betty’s specialities include peach lemonade, strawberry lemonade (Rp.35,000 each), and Betty’s Mix – half-ice-tea-halflemonade mix (Rp.30,000). Betty also carries a punch in her signature cocktails. place Panama is the place where I – as I walk in – immediately feel the urge to change into my high-waisted cherry-print bikini, and don the polkadot cat-eye sunglasses. The place takes visitors back in time to the namesake city circa 1950s. The facade is vintage Californianstyle beach bar, with an inconspicuous entrance right beside it that leads to a backyard of a retro summerhouse – it seems. Red-and-white-striped sun loungers are lining by the semi-kidney-shaped pool, patio furniture is available on the manicured green grass, and the rattan seating inside are adorned with bird of paradise plant cushions. The typography that welcomes me on the entrance gate says it all, “Selamat Datang, Libur Musim Panas” – welcome, summer holiday!

food Sticking to the underlying tropical paradise theme, Panama aims to serve tropical comfort food, highlighting the freshness of the ingredients, plus the zest and the punch in the flavours. I let the friendly host choose a couple of recommended dishes for me, and the first in line is Panama’s Net Catch (Rp.100,000) that would satisfy any seafood lover – including yours truly. Comprising garlic butter sautéed shrimps, roasted baby potatoes, chunks of fish, bedugul-grown corn, and fried onion rings, the basket really fits in the palm of my hand as I kicked back on the sun lounger by the pool. The second dish, however, wins my heart instantly. The Tropical Pulled Pork (Rp.80,000) is a sandwich filled with tropical delights of the succulent slow-cooked pork marinated in Panama’s special tangy sauce and fresh beetroot-pineapple coleslaw that just takes the dish to another level. Other intriguing

choices on the menu include the Plenty O’ Fish Taco (Rp.75,000), Creamy Coconut Salmon (Rp.140,000), Panama’s Hawaiian Burger (Rp.85,000), and so many more. drinks Panama has the usual suspects of beverages any diner would expect; smoothies, milkshakes, tea and coffee, fresh juices, beers, soft drinks, mocktails, the usual liquors, and the classic cocktails. Of course, one shouldn’t leave Panama without trying the house’s specials. Panama’s signature cocktails (priced at Rp.85,000 each) show off evocative monikers, like the Cruisin’ For A Bruisin’ – a concoction of vodka, rum, tequila, and cranberry juice; Passion Pit Lovers – passion fruit, vodka, pineapple juice; or Hey, Nona! – a refreshing mix of vodka, watermelon and mint. in a nutshell Panama is more than just a new restaurant; it’s where you go to bask in the nostalgic sense of summer days – the ones you see illustrated on the antique store-kind of postcards. I started cooking when I was about 18 years old, particularly when I was still working in a restaurant around Nihon Bashi. I made miso soup, but unfortunately I really didn’t know what I should put in the soup, so my head chef at that time was mad at me. My regular comfort meals include a lot of things, but for now let’s just say Japanese home cooking made by my wife. The most essential item in my kitchen is anything that’s made in Japan, because I know it has a very good quality. The worst kitchen disaster I’ve ever had was this one time at Rayjin when I need to put myself as a technician for some troubles in the kitchen. Just 30 minutes before we opened, our teppanyaki griddle suddenly didn’t work, so I tried to fix it by myself. That case was one of the worst because being a technician is really not my thing. The best dish I’ve ever tasted so far is anything raw; fresh oyster, sirako, or fish liver in Tsukiji Market with the sauces. For me the best way to enjoy good quality food is by eating it raw.

My favourite chef is Mandif Warokka – he’s on my list. He’s able to make creatively modern cuisine with a touch of local ingredients and traditional recipes. My signature dish is chicken nanban. This is one of the most famous dishes in Japan that I have authentically brought to Rayjin. It’s not actually a traditional dish from Japan, considering it’s influenced by the sour sweet tartar sauce usually found in Chinese food. This is one of our best selling dishes at Rayjin. My biggest fear as a chef is the moment when I lose my appreciation to any food, and when I only care about the food presentation. I am a chef; I realised that food is not just about the presentation, but also the taste, quality, texture, and many more. pOrK BELLY SYOGAYAKI ingredients sauce 30g soy sauce 30g mirin 30g sake 5g sugar 10g ginger 10g garlic 15g honey pork belly 80g pork belly, sliced 30g onion, sliced 40g syogayaki sauce 1g leeks 2g chives 1g ichimi 1g white sesame method For the sauce, grate ginger and garlic, mix it with honey, soy sauce, sake, mirin, and sugar. Cut the meat into thick slices, and the onion into ½-centimetre cuts. Soak the onion in water in order to make it less spicy. Slice the leek thickly for the garnish. Stir white sesame in a wok until the colour changes to golden brown, then marinate the pork belly with the syogayaki sauce. Heat a frying pan at medium high heat, and add oil, then add sliced pork to pan-fry. Add a bit of salt and pepper. If it’s cooked enough, add sliced onion and stir it for seconds then add the syogayaki sauce. Last is plating. Prepare the chives, leeks, and white sesame to make the plate prettier. As an addition, add some sliced cabbage to make it look fresh.

Having said that, this past year the island has seen quite a number of new and trending bars incorporating the speakeasy theme. The said bars usually revive the ambience of the roaring ’20s through the music or the elusive art deco vibe; but none goes as far as The BARber. The newly opened joint – like the name – is a bar concealed behind a real and functioning ’30s-themed men’s barbershop facade. The signature design of PANTAINANAS has taken Bali by storm with its apparel and functional art objects. The brains behind the brand, Debbie, left her hometown of Jakarta when she was 17 years old, and lived abroad until two years ago. She came back to Indonesia, and has stayed in Bali ever since. Now she talks to hellobali about her creative process.

I get my inspiration from the things I love and despise. I daydream a lot too, sometimes it just pops out naturally. I’d quickly take some notes, and most likely it would be a concrete project later on. I also like to start from a very simple or mundane thing or idea, you’d never know where it would lead you. My style is something plain and comfortable with mute and basic colours – sometimes duotone, and mostly monotone. I don’t use many

colours, but when I do, I usually wear a lot at the same time. I’m a detail-oriented person and it can be seen from the way I dress. So far, I’ve been drawing in black and white for my products or designs, and I think people identify my brand with it. These days I feel I’d like to add a bit more colours though, be it the materials or the design. My signature pieces include my Makanan T-Shirt, and PANTAINANAS DIY Sticker Case. These particular products brought my brand to where it is now.

Never refuse to do something new or something you’ve never done before. You would never know where it would lead you to.

great artists. These days, I can’t help but feeling ecstatic when I got nice feedback from the people who purchased my products. These things give me a deeper meaning on what I do and myself as a person. When facing a designer’s block I just keep doing or producing something nonstop; be it doodles, writings or taking snaps without having any kind of concrete destination in my mind. Strangely enough, this is very helpful.

You can easily catch a glimpse of the reception area from Pantai Berawa Street – all the chicness of white palette and vintage patterned tiles. After I got my reservation sorted out, I was led into the treatment area, which is on the second storey of next-door Pomelo Cafe. This part is even more darling: a waiting area with white and beige

neighbourhood Most villa complexes in Bali face the same problem: either it’s too close to the main roads that the traffic is unbearable, or it’s too secluded that travelling anywhere would take forever. The Santai doesn’t seem to have any of those problems. Their Umalas location is right in the middle between Seminyak area’s bustling Petitenget, and the packed Jalan Raya Semer – which means just the perfect traffic, distance and noise level. accommodation There are two types of villas at The Santai, the two-bedroom and the three-bedroom. I stayed at the two-bedroom; technically two villas sharing a gate, and one very picturesque swimming pool – which is illuminated with colourful pool lighting during the night. magine a serene seaside surrounding – say, a barcum-restaurant built on the cliffs of Jimbaran – with the sounds of crashing waves and the golden sun slowly sets. Is there any manmade sound that could top this divine situation? Maybe not. But one that’s making it an even better setting? I audibly witnessed that while watching Dunia Ketiga at one of Bali’s hippest beach clubs. Perched on a stage built like a towering citadel emerging from the sea, the spotlight

hit the acoustic trio perfectly – making them the brightest and loudest thing that night. That focal point blew my mind completely. The amazingly charming subtle sounds from Dodi Juli Sagara’s clean and sedative guitar, combined with Cepi Kusmiadi’s crawling but rhythmic percussion, are completed with Kacir Maithakai’s incendiary wailing. I just knew I had to get the story behind this remarkable band. It all started as a friendly jam session nearly eight years ago.

Kacir already used the name as his stage persona, but regularly changed collaborators when he was performing. The common thread among the three men is that though they came from different hometowns, they all wandered and moved to Bali to start their respective new lives through music. Mutual musicality brought Kacir and Cepi together. Recalling those early days, they remember that they initially didn’t have any intention of forming a band. They were more like friends

that loved to hang out and joke around – who happened to like music. They both enjoy jazz – the classics for Kacir and the more deeply intensifying for Cepi, and somehow found satisfaction through playing acoustic sets. Dodi joined them a year later and concluded the trinity. Now they still play regularly once a week in the place that debuted them, the Laughing Buddha Bar in Ubud, among other stages all over the island. If you’ve watched them perform before, you know that these guys are known for playing flawless (if not better) acoustic rendition of popular songs. Alternative classics like “High And Dry” by Radiohead and “Sweet Disposition” by The Temper Trap come out more mesmerising and intimate than their original version, while there seems to be another added dimension to their version of Cole Porter’s legendary “Night And Day”. What most people

don’t know, though, is that – as spontaneously as how they were formed – they hardly ever practice for these cover songs. They mostly improvise on the spot, usually with one of them opening with a hook, and the rest take bait and follow. The polished skills, seamless synergy, and countless hours of banding up between the three make them sound so effortless and, well, intricately arranged. That doesn’t mean they don’t create their own materials, though. They like to slip in a couple of their original songs into their sets. Even on their regular weekly stage in Ubud, they claim to play more of their own creations than covers – something that I one day need to check out myself. They say that other than their regular Laughing Buddha Bar set, they tend to be picky. They need to put the audience above anything else – place, sound, even paycheck. Playing

on an excellent large stage with hundreds of people watching means nothing if most of them are busy with their phones more than enjoying the music. That’s why the three members have more than enough time to work on other projects outside of the band. Cepi, the born and raised musician teaches drums and percussions, Dodi has several other gigs that cater to his broad interest in pop, while Kacir also plays solo sets as well as writing songs for other artists. Lastly, I just had to ask what Dunia Ketiga (third world) means. As the one who started it all, Kacir explains it bluntly, “I admire the idea of modesty and ‘being poor’ but still creative in development. It’s like being a third world country. So it was stuck on me, then it became the band’s name. As simple as that.” A somewhat plain history to an illustrious talented group. And it got me stuck on them.
