We passionately believe in using natural resources responsibly and thanks to our rural heritage, we have always understood the benefits of cooking with fresh, local produce. Self-sufficient home cooking and heating The Rayburn wood burning and multi-fuel Classic Series is a range of six models that cover every option from the simplicity of the 200SFW, a range cooker only, through a choice of cooking, hot water and heating combinations. And every one can be fuelled with natural, carbon neutral wood; the least expensive fuel for cooking, domestic hot water and central heating. Modern and clean, each one shares the same legendary simplicity to regulate the oven and hotplate temperatures, (a spinwheel and a chimney damper). Contrary to most assumptions, there's little mess and peripheral ash purely because; firstly, wood burns so efficiently and secondly, the Rayburn's combustion is so complete. (There is a riddling mechanism for solid fuels, but with wood particularly, it's hardly needed). Equally, to control hot water and heating is just as straight forward. On the high-output 345W and 355SFW models, a priority damper lever enables the level of heat to be directed between the boiler and the cooker as required, thus making the most of the fuel. The temperature of the radiators can be precisely set by a simple thermostatic control. In warmer weather the 216SFW, 345W and the 355SFW can be adjusted to limit hot water and save logs without any effect on cooking performance. Even further economies can be enjoyed by optimising overnight burning. All your cooking, hot water and heating in your control.

A clean burning, wood fired Rayburn uses indirect heat technology to create a stable, controllable heat source. Heat is transfered from the fire to the heavy, heat retentive castings by radiation, the top of the oven being heated by flue gasses passing over it. A unique triangular box under the oven reflects upwards to distribute heat across the floor of the oven. Inside, a special convector duct ensures that heat is conveyed to all parts evenly.
Carbon Neutral Burning wood is carbon neutral, because it only releases the same amount of carbon dioxide to the atmosphere as it would, if it were left to decompose on the forest floor. So when you burn firewood be assured that you are not harming the environment.
In a Rayburn, there are no oven flues to become blocked that could mean weekly cleaning as with some other wood burning cookers. There's little residual soot or dust, just the combustion gasses being utilised to the full before being released cleanly via the chimney. Mounted into the top of a Rayburn is a large, cast-iron hotplate, underneath which are deep fins angled directly above the fire to collect and concentrate the heat. The heat is then graduated across the hotplate from left to right. The hotter left side being perfect for fast stir-frys and quick boiling - just slide across to simmer. And, as many

The art of wood burning To obtain the best results from your Rayburn, it's important to use properly seasoned wood as this provides the most heat with the least smoke, burning cleanly and efficiently preventing the production of tar deposits in the chimney. Once timber has been cut to length for the Rayburn’s large firebox, the logs need to be split to expose the inner surface to allow moisture to evaporate and the wood to season. Stack and leave for six months to a year, preferably under cover, for the moisture to reach the ideal level of 20% or below. 'Cut in autumn burn the next'. Wood logs, blocks or peat briquettes can also be burnt.

Wood only Rayburns For those who know that they will only ever want to burn wood we have created models with grates specifically designed to optimise the combustion potential of wood. Wood only models are designated with a “W”. The 345W Heatranger provides cooking, hot water and central heating sharing many of the features of the larger output 355SFW. However, the wood only 345W has a unique benefit, in that it currently qualifies for a reduced rate of VAT (only 5% instead of the standard rate of 17.5%) as part of a government incentive for more people to use wood only fuelled central heating boilers as means of heating their homes. The reduced rate of VAT applies to both the 345W appliance and the basic installation costs providing that they are shown on the same invoice. Ask your Rayburn retailer for full details. The 300W Cookmaster is our wood fuelled cooker only model and as it does not feature a boiler it means that it can benefit from a larger fire box instead. As a result the 300W boasts an increased fuel load of approximately 20kg of logs and which also means that the logs can be larger at 16 inches rather than 12 inches for other models. If you want to enjoy the flexibility of burning a wider range of solid fuels, such as Manufactured Smokeless Fuel (MSF) compressed heat logs or peat briquettes as well as wood, then you should select a model denoted with “SFW” which stands for Solid Fuel & Wood (200SFW, 212SFW, 216SFW and 355SFW). 6

For best results use a mixture of soft and hard woods. Dry soft woods give a quick, hot fire to bring the cooker quickly up to temperature after idling. Burn hard woods for more prolonged burning once a desired temperature has been reached or for through the night.
This controls the amount of air to the fire. The more open the higher the burn - adjust to set the fire at a stable level. For overnight banking, the spinwheel should be turned until it is almost closed so that the fire burns low and slow.
Hotwater With all four water heating Rayburns, domestic hot water is provided 24 hours, completely automatically with no attention necessary. Some models can be adjusted seasonally to limit the output as required therefore conserving fuel.
Thermostat This simple control is fitted to the 345W and the 355SFW to allow the temperature circulating through the radiators to be adjusted. It automatically adjusts the the air flow to the fire working in conjunction with the central heating thermostats to maintain a constant temperature.

This is great for your frying pan to cook lambs liver, bacon or pancakes, allowing fast and controllable heat.
It can take as little as five seconds for water to begin boiling on an induction hob, making it a much quicker option than gas or electric ceramic cooking. Reducing the pan to simmering is equally fast and the responsive nature of induction is quickly making it a firm favourite in professional kitchens.

Ideal for everyday use, including warming soup, boiling vegetables, cooking pasta or rice.
Since there are no naked flames and only the pan and its contents are heated, induction is considered to be the safest hob option available. After very long cooking spells, however, there is a possibility that the hob surface may become too hot to touch, so AGA has taken the extra precaution of including a Residual Heat Indicator, which provides an automatic visual warning that a zone should not be touched if it rises above 60° C. The addition of zones with child lock facility also prevents little fingers from coming to harm on the hob.

GAS HOB ACCESSORIES A griddle and wok ring are also supplied with the gas hob model. GRIDDLE Made from robust cast aluminium, the griddle plate sits snugly on top of the hob, when required. The flat plate is ideal for cooking eggs, while the grooved plate provides fat drainage, offering a healthier way to sear steaks, burgers, vegetables and fish. WOK RING An enamelled cast iron wok ring is supplied with the gas hob model.

Powered by electromagnetism, induction technology heats only the pan and its contents, providing up to 90% efficiency. The induction hob also features pan identification that automatically detects when cookware is removed. This makes it easy to keep a pan at minimal heat without fear of burning, and the cooking zones will automatically turn off when pans are removed - saving energy and improving safety.
A LPG conversion kit is included with the dual fuel model.
UNIFORM COOKING One of the many benefits of induction is its ability to improve your cooking results. Because the ferrous materials within the cookware heat at the same level uniformly, you don’t get any hot spots. That means you’re less likely to burn the contents or cook half the dish to a crisp while leaving the rest raw and you don’t need to stir as often to achieve even heating throughout.
EASY TO CLEAN Induction hobs are easier to clean because the cooking surface is flat and smooth. In addition, because the surface isn’t heated, any spillages won’t burn on and so are easy to wipe clean. People with cardiac pacemakers or implanted insulin pumps must make sure that their implants are not affected by the induction hob (the frequency range of the induction hob is 20-60kHz).

BROWNING ELEMENT
CONVENTIONAL OVEN
Great for browning off pasta or dishes that are topped with cheese to create a perfect finish to your dish. The browning element provides top heat only and can also be used to keep cooked food warm, without drying it out.
This traditional cooking method uses heat sourced from both the top and bottom of the oven, which results in a natural convection process that centres the heat in the top of the oven making it particularly suitable for roasting and baking on one shelf.
FAN ASSISTED OVEN Utilising the conventional oven elements alongside the fan, this produces zoned cooking with the hottest zone being featured at the top of the oven, perfect for cooking your roast dinner and apple pie for dessert.
BASE HEAT Using the lower element only, this cooking method is often used for slow-cooking casseroles and can also be used to finish your pizza to give a crispy base.

DEFROST This is an incredibly safe way to speed up the defrosting process, as it uses the fan to circulate unheated air rather than using low temperatures, so won’t accidentally cook the food like a microwave can. Perfect for defrosting delicate foods gently, such as breads, desserts and cakes.

The Rapid Response setting preheats the oven 30% faster than the standard fan oven setting. Once the desired temperature is reached, cooking continues in fan oven mode.

You can trace the story of AGA back 300 years. Almost all casting takes place at Coalbrookdale, the Shropshire cradle of the Industrial Revolution, where, in 1709 Abraham Darby first smelted iron using coke. The latest Aga is made the same way; pouring molten iron into a mould to create cast iron. Thermostatic control maintains consistent temperatures while high levels of insulation, within the outer casing and beneath the Hotplates’ Insulated Covers, ensure that every Aga uses fuel economically. Heat is transferred into the cast iron ovens and released steadily from all the inner surfaces simultaneously. This is an altogether kinder process than the fierce direct heat from the elements or flames found in most ovens. Should you choose the 2-oven Aga, then one oven shares the duties of baking and roasting. In a 3 or 4-oven model there are separate ovens for these activities. The fourth oven is a Warming Oven designed to keep food piping hot without drying it out, as well as to warm plates and serving dishes. The Simmering Oven is integral to all models and is ideal for slow cooking. On its top, every Aga has Boiling and Simmering Plates beneath the two distinctive Insulated Covers. A 4-oven Aga also comes with a large Warming Plate as standard.

Whatever the power source, an Aga cooks in the same unique, gentle way, delivering delicious results time after time. And they all suit every style of kitchen. The 2-oven 13-amp electric Aga is the latest addition to the collection, fitted with AIMS, the Aga Intelligent Management System. Also using electricity as the source of its power is the 2-oven Night Storage Aga. The 3-oven
AGA
The same size as the 2-oven Aga, the 3-oven Aga has the added versatility of a third oven for baking. Like all Agas, the 3-oven model features two Insulated Hotplates. Closed, the Insulated Covers are warm to the touch; open, and both Hotplates are instantly ready to cook. The top right-hand oven roasts, grills and bakes, and can accommodate anything as large as a 28lb/13kg turkey. At the bottom right is the Simmering Oven, where casseroles and vegetables can be left to improve while you focus on other tasks, even overnight. Bottom left is the Baking Oven. Every 3-oven Aga can also be combined with either an Integrated or Freestanding Module. Both modules with the 3-oven Aga boast the capability of two electric ovens (one with a fan) and the choice of gas or electric/ceramic hob.

The 4-oven
AGA
works in exactly the same way as the 2 and 3-oven AGA, it simply offers even more flexibility. Like all other Agas the 4-oven model has two Insulated Covers, which are warm to the touch and conceal Hotplates that are instantly ready to cook. The left-hand Hotplate boils faster than in most electric kettles thanks to the high heat, and is large enough to hold three average-sized saucepans at once. Another useful feature of the 4-oven Aga is the choice of either a Warming Plate or hob. The Warming Plate is useful to serve from, whilst the hob provides even more cooking options. The hob can be specified as either gas or as electric ceramic. In addition to the Roasting, Simmering and Baking Ovens found on the 3-oven Aga, the 4-oven possesses an additional Warming Oven. So it’s possible to deliver the most complicated meal without food getting cold or drying out. The 4-oven Aga can also be specified with either an Integrated or Freestanding Module.

The AGA CLASSIC SPECIAL EDITION is styled on the iconic AGA of the 1930s. Everything is almost as it was, from the lever control (non-operating – as a modern Aga doesn’t need it) to the matching enamel Hotplate Covers and the period Aga badge. This Special Edition model is supplied, as it was in the 1930s, only in cream. It is available in two, three or four oven versions with all of today’s refinements, including a choice of heat sources and flues, a gas or electric ceramic hob (only in place of the 4-oven Warming Plate) and Integrated and Freestanding Module enhancements.

Barrel This magnificent barrel of cast iron is the heart of your Aga.The heat storage principle is simple, tried-and-tested and designed by Nobel award winning scientist and inventor, Dr Gustaf Dalén, over 80 years ago.
Heat Conducting Plates Directing heat from the barrel to other areas of the Aga. The heat conducting plate from the barrel to below the Roasting Oven means the oven floor is wonderfully hot for authentic pizzas, moreover apple pies have a crisp browned base, even in a ceramic dish.

Any SIMILARITY
to previous models is entirely intentional. Your brand new Aga is made the same way today as it’s always been: by pouring molten iron into moulds. It gives the castings their characteristic surface (every one unique) and sets Aga apart from the usual mass-produced uniformity. While most manufacturers spray paint a cooker in seconds, it still takes us three days to apply the multiple protective coats of gleaming vitreous enamel that help ensure the working life of an Aga is measured in decades, not years. Of course, the modern Aga contains state-of-the-art technology and is subject to rigorous quality and the latest environmental standards. Every Aga component is individually inspected and colour checked before engineers carry out the final build-up in the customer’s kitchen, ensuring installation is as quick and hassle-free as possible. It is hardly surprising then, that while previous generations have fallen in love with Dr Gustaf Dalén’s Aga concept, it has never been more popular than it is now.

These world-renowned cookers are made in the historic Coalbrookdale Foundry in Shropshire where, in 1709 large-scale iron production was pioneered and the Industrial Revolution began. The plant is of such global importance that it has been designated a United Nations World Heritage Site. Control at the touch of a button At the heart of the electric AGA Total Control cooker is a touch-screen control panel which puts you in charge of how and when the cooker is used. Discreetly housed behind the top left door, the nerve centre of the AGA Total Control cooker can be accessed directly or programmed via a remote control handset. Using the control panel, the hotplates and ovens can be turned on manually when needed. It’s so flexible – you can heat only one hotplate or both. You can opt to heat only the roasting oven, the baking oven or the simmering oven – or all three.
…but the touch-screen panel does so much more Alternatively using the remote control handset, you can even programme the cast-iron ovens to come on automatically for one or two cooking cycles per day, seven days a week. You can set the AGA Total Control cooker to provide the constant ambient warmth to the kitchen for which the AGA cooker is renowned.

how it works
Automatically ready Manual (you choose) Each zone (an oven or a hotplate) can be operated individually in manual mode. Any zone selected will remain on until switched off. Slumber (ovens only) In this mode all three ovens are active, pre-set at a simmering heat. Slumber setting is ideal for slow cooking and giving a gentle heat into the kitchen, creating that unmistakable ambient AGA warmth. When the ovens are in slumber mode, they take less time to reach full heat. Auto (ovens only) Selecting the auto function brings selected ovens up to full heat from off automatically when a programme is set. The ovens can be selected to operate once or twice each day, with the start and finish time of the ‘cooking cycles’ set by the user. Auto slumber (ovens only) Choosing this setting automatically brings the ovens up to full heat from slumber mode.

The hotplates Each of the hotplates on the AGA Total Control cooker – the boiling plate and simmering plate – can be turned on or off independently as required simply by pressing the appropriate button on the control panel. Both hotplates are operated manually. There are other innovations too. The patented engineering technology behind AGA Total Control means each hotplate is independently heated by its own element. This means constant heat when the hotplate is on. This also means that using the hotplates does not affect the heat in the ovens, as each zone is independently heated. Boiling plate The boiling plate is on the left-hand side. It is the hotter of the two hotplates. From cold, the boiling plate takes approximately 11 minutes to reach its operating temperature. Simmering plate The simmering plate is on the right-hand side. It is the cooler of the two hotplates. From a cold start, the simmering plate will achieve its operating temperature in about 8 minutes.

The ovens The AGA Total Control cooker represents an important breakthrough in heat-storage engineering. Patented technology developed within our own research and development facility means that, for the first time, each oven has its own heat source. The result is increased programmability, more even heat distribution and more consistent oven temperatures. What hasn’t changed is that this next generation AGA cooker still works on the principle of radiant kind-to-food heat, meaning that – just like classic AGA heat-storage cookers – it cooks beautifully, locking in flavour and moisture. This is the first AGA cooker to be part-assembled on a production line, meaning exceptional build quality and adherence to the highest production standards. Rest assured, however, that our skilled engineers finish the assembly in your home, maintaining our commitment to the very highest levels of customer care. Powered oven venting The AGA Total Control features an oven vent fan used when you are cooking in the roasting, simmering or baking oven to take cooking odours and grease vapours directly outside the house.

how it works Simmering oven The AGA Total Control simmering oven is ideal for slow cooking, allowing flavours to develop and making even the toughest meats tender. Its large capacity allows several pans to be stacked and a number of dishes to be cooked simultaneously. From a cold start, the simmering oven takes around 45 minutes to reach its operating temperature. From the slumber setting, heat-up time is unchanged.
Baking oven A moderate oven for baking cakes and biscuits, cooking fish, lasagne or a shepherd’s pie, the AGA Total Control baking oven is truly flexible. And cooking sweet and savoury dishes together is no problem as the flavours do not mix. From a cold start, the baking oven takes around 22 minutes to reach its operating temperature. From the slumber setting, this is reduced to approximately 15 minutes.
Roasting oven The roasting oven on the AGA Total Control grills, roasts and bakes bread beautifully. But new technology means it is possible to use only the roasting oven or to use it alongside either or both of the other two ovens. From a cold start, the roasting oven takes around 35 minutes to reach its operating temperature. From the slumber setting, this is reduced to approximately 15 minutes.

Quoted heat-up times are based on each zone of AGA Total Control being operated individually. If a large combination of zones is turned on simultaneously, this may slow down the individual heat-up times. If all zones are turned on at the same time it will take approximately one hour for the whole appliance to reach full operating temperature. All timings are based on the AGA benefiting from a single-phase electricity supply with a capacity of greater than 32 amps @ 230 V. With other power supply configurations, times may change. In order to maintain warranty status, an interim service is due at 21⁄2 years to check and change consumable items, including the vent fan, and to undertake a safety check. A full service is due at the end of year five. The appliance warranty does not cover commercial use (see separate warranty book for further details). Note: the plinth of AGA Total Control should not be tiled, as it needs to be accessible for maintenance
