Recipes for People with Head and Neck Cancer Head and neck cancer treatments can cause dry mouth, swallowing problems and loss of taste. These problems can make it hard to eat and get enough calories. Here are some recipes with foods that are easy to swallow and high in nutrition.

Soups Slow Cooker Vegetable Barley Soup 1½ pounds beef stew meat ½ cup frozen chopped onion ½ cup uncooked medium barley 3½ cups beef broth 1 cup water 1 teaspoon dried thyme leaves 1 teaspoon dried marjoram leaves ½ teaspoon salt ¼ teaspoon pepper 2 cups frozen mixed vegetables, thawed 1. Cut beef into bite sized pieces. In a 3 to 4 quart slow cooker, mix all ingredients. 2. Cover and cook on low for 8 to 10 hours. Makes 6 servings. Cheesy Broccoli Potato Soup 2 cups chicken broth ½ cup frozen chopped onion 10-ounce package frozen broccoli 1 1/3 cups instant mashed potatoes (dry) 2 cups cooked shredded chicken 2 cups shredded Swiss cheese 2 cups whole milk ½ teaspoon salt 1. Combine the broth, onion and frozen broccoli and bring to a boil in a 3-quart saucepan. 2. Reduce heat. Cover and simmer for 5 minutes, stir occasionally. 3. Stir in potatoes until well blended. Stir in remaining ingredients. 4. Heat on low for about 5 minutes, stirring occasionally, until cheese is hot and melted. Makes 6 servings. Pasta Fagioli Soup 2 teaspoons oil 1 pound lean ground beef 1 small diced onion ½ cup carrots, slivered 1 cup diced celery 3 cans diced tomatoes with Italian Seasonings 1 can kidney beans 1 can great northern beans 4 to 5 cups beef stock Recipes for People with Head and Neck Cancer

2 teaspoons oregano 1 teaspoon pepper 1 teaspoon hot sauce ½ jar prepared spaghetti sauce 6 ounces dry shell pasta 1. Sauté beef, onion, carrots, celery and tomatoes in a large stock pot for about 10 minutes. 2. Drain and rinse beans. Add to pot. 3. Add beef stock, oregano, pepper, parsley, hot sauce, spaghetti sauce and noodles. 4. Simmer until vegetables are tender, about 45 minutes. Makes 6 servings. Preheat oven to 350 degrees. 2. Combine all ingredients in a large mixing bowl. 3. Divide mixture into two, 9 x 13-inch baking dishes coated with nonstick cooking spray. 4.
