Sweet Cheese Balls INGREDIENTS •

250g Alexander’s 5% natural quark



25g melted butter



½ cup sugar



Juice of ½ lemon



1½ cups cookie crumbs



1 Tbsp vanilla sugar



Chocolate sprinkles/melted chocolate

Mix all ingredients until smooth. Form balls, roll into melted chocolate or chocolate sprinkles. Freezes perfectly! Remove from the freezer 15 minutes prior serving.

Alexander’s Legendary Cheesecake INGREDIENTS •

350g Alexander’s baking cheese



100g Alexander’s 5% natural quark



2 Tbsp vanilla sugar



1 cup sugar



4 eggs



1 Hatov pie shell

Topping: •

125g Alexander’s sour cream



2 Tbsp sugar

Mix all cake ingredients together until smooth. Pour into pie crust. Bake 160°C for 50 minutes. Mix Alexander’s sour cream with the sugar. After the cheesecake has baked for 50 minutes, spread the sour cream mix on whilst cake is hot. Bake for an additional 5 min on 170°C.

For easy cutting and stiff slices, cool overnight in fridge.

Oma’s Traditional Triangle Cheesecake INGREDIENTS • •

1 pack tea biscuit ½ glass milk, mixed with ¼ glass sweet wine Filling: • 340g Alexander’s baking cheese • 60g soft butter or margarine

1 Tbsp vanilla sugar 2 tsp sugar 1 egg

Mix together all cheese filling ingredients until nice and smooth. Prepare a sheet of aluminium foil. Dip 15 biscuits in the milk mix for 3 seconds. Lay flat on the aluminium foil next to each other forming 3 rows of 5 biscuits. Spread a 1/3 of the cheese filling over the biscuits. Take another 15 biscuits and repeat the dipping method, lay them precisely on top of the cheese filling, in the same order as bottom biscuits. Spread the rest of the filling over the biscuits. Gently lift both end rows of the long sides (with the aluminium foil), to form a triangle shape. Seal aluminium foil. To keep in shape, freeze for 1 hour. Topping suggestion: You can decorate pyramid top with any glaze desired.

Easy Cheese Latkes INGREDIENTS • • •

1 pack Alexander’s baking cheese • 3-4 Tbsp Alexander’s sour cream • 3 eggs •

2 Tbsp vanilla sugar ¾ cup flour Oil for frying

Mix all the ingredients. Drop a spoonful one by one into hot oil, fry until golden brown then turn on other side until done.

Aunt Sarah’s Cheese Delkelech Filling: • 1 pack (1lb) Alexander’s baking cheese Dough: • 250g Alexander’s sour cream • 3 Tbsp vanilla sugar • 3 egg yolks • 4 ½ cups flour • 1½ cups sugar • 1lb margarine

Icing sugar for topping

Knead the dough ingredients until soft. Mix the filling ingredients together. Roll the dough and cut into 3 inch squares. Fill each square with 1 heaping teaspoon of filling. Pinch corners together. Bake until golden brown on 175°C for approximately 25 minutes. Sprinkle with icing sugar.

Heimishe Shvigger’s Kreplach INGREDIENTS Dough: • 2 cups flour • 3 eggs • 1 tsp oil • 1 Tbsp water • Pinch of salt

Filling: • 225g Alexander’s baking cheese • 2 cups flour • 1 egg • 3 Tbsp sugar • 1 Tbsp vanilla sugar • Butter for frying • Pinch of salt • Icing sugar for topping

Combine dough ingredients. Roll out the dough on floured surface until thin. Cut into 3inch squares. Mix filling ingredients together. Place 1 teaspoon cheese filling on each square and form a triangle by closing the edges together. Drop them in salted boiling water for about 15 minutes. (You’ll notice them rise when done.) Fry them afterwards in butter for 10-15 min. Top with icing sugar.

Family Size Cheesecake INGREDIENTS Dough: •

3 eggs



¼ cup sugar



250g butter or margarine



500g flour



1 tsp baking powder



2 Tbsp vanilla sugar

Filling: •

6 egg whites



½ glass sugar



625g Alexander’s baking cheese



1½ cups sugar



1 tub leben



200g Alexander’s sour cream



6 egg yolks



½ pck vanilla pudding



80g flour



1 Tbsp baking powder

Mix all dough ingredients together. Press the dough against the base of a container to flatten. In one bowl beat together egg whites and sugar until stiff, set aside. In a separate bowl mix all the other ingredients, gently fold in the egg whites then mix. Bake on 160°C for 1 hour. Leave in oven to cool to prevent cracking.

Simple Cheese Pancake INGREDIENTS • • •

1lb Alexander’s baking cheese 4 eggs ½ cup sugar



1 cup flour



3 Tbsp Alexander’s sour cream



Oil for frying

Combine all ingredients, divide to 10 and fry each pancake on both sides until golden brown. Top with your favourite toppings.

No Bake Cheesecake INGREDIENTS •

Packet of tea biscuits

Filling: • 680g Alexander’s baking cheese • 2 egg yolks

2 Tbsp sugar 1 Tbsp vanilla sugar 1 pck vanilla instant pudding Milk

Mix the vanilla instant pudding with specified amount of milk, (don’t let it harden), mix together with all cheese ingredients until smooth. Spread biscuits to cover the base of a pan. Spread the filling over the biscuits, cover pan and refrigerate overnight 10 hours to harden. Decorate top with jelly or fruit.

My Favourite Lemon Cheesecake INGREDIENTS Dough: 180g flour 85g butter or margarine ½ cup sugar 1 egg yolk 1 Tbsp vanilla sugar 1 Tbsp baking powder ¼ cup warm water Pinch of salt Jam for spreading Filling: 3 egg whites 1kg baking cheese 250g sugar 1Tbsp vanilla sugar 4 heaped Tbsp of corn flour diluted in 1 cup of milk 2 egg yolks Lemon juice to taste (for real zest add lemon rind of half lemon)

Mix dough ingredients together. Press the dough against the base of container to flatten. Spread jam on the dough surface to lock the moisture from entering. Cheese filling: Beat the 3 egg whites until stiff. In a separate bowl mix all the other ingredients, gently add the egg whites and mix. Bake on 200°C for 1 hour.

Sweet Cheese filling for blintzes INGREDIENTS • • • • •

400g Alexander’s baking cheese 250g Alexander’s 5% natural quark 11/2 tbsp vanilla 1/2 cup sugar 2 egg yolks

Combine all ingredients and mix until smooth. Fill your favourite blintzes and enjoy. Very handy to use for decorating cakes, waffles or pancakes. you can use less 5% quark to make it thicker.

Fancy Cheese Tarts INGREDIENTS •

2 pcks Hatov 3 inch tart shells

Filling: • 250g Alexander’s baking cheese • 125g Alexanders 5% natural quark • 2 eggs

8 Tbsp sugar 1 Tbsp vanilla sugar

Topping: • 1 tub Alexander’s sour cream • 1Tbsp vanilla sugar • ¼ cup sugar • 2 bars Schmerling’s Harmony black-and-white chocolate

Combine all filling ingredients until smooth. Fill tarts and bake for 25 min. Cool down before adding the topping.

Combine topping ingredients except chocolate. Spread on top of tarts. Top with grated chocolate.
