Pizza Well Done Growing up on Long Island, Anthony Bruno’s passion for great food started at a very young age. He was raised in a traditional Italian family with a strong culinary culture. Bruno moved to Fort Lauderdale in 1982 to open Anthony’s Runway 84, a restaurant that has evolved into one of South Florida’s iconic destinations. Despite this success, Bruno was frustrated with South Florida pizza. He couldn’t find the traditional New York-style pies he enjoyed in his youth. So, in 2002, Bruno introduced South Floridians to the old world art of coal fired cooking with Anthony’s Coal Fired Pizza in Fort Lauderdale. The unique concept included authentic pizza cooked in an 800degree coal oven, high-quality ingredients, Italian Soul Food specialties, rapid service in an energetic, contemporary setting, and a strong value for customers. He avoided customary industry tactics such as couponing, delivery, kids’ menus and pizza by the slice to create a brand that appealed to upscale adults that enjoy excellent food and a high-energy ambiance. The phenomenal success of the first location inspired Bruno to expand Anthony’s Coal Fired Pizza. He assembled a strong management and partnership team that included his long-time friend, NFL Hall of Fame legend Dan Marino. Since its debut, Anthony’s Coal Fired Pizza has expanded rapidly across Florida and the Northeast and now includes over 50 locations. Anthony’s growth is primarily attributed to its passionate fans who, through word-of-mouth, have garnered the brand an almost cultlike following. 2

Culinary Experience

Anthony’s uses high-quality ingredients and authentic 800-degree anthracite coal-burning ovens to create its signature “well done” taste. Known to be the cleanest of coals, anthracite burns smoke free under extremely high heat, creating unique, better tasting pizzas in just four minutes. At Anthony’s, there are NO freezers, fryers or microwaves. Anthony’s simple, consistent menu includes traditional and specialty pizzas, coal oven roasted chicken wings, classic Italian salad, and several Italian Soul Food items, including large homemade meatballs from a recipe passed down by Anthony’s grandmother and Eggplant Marino (Dan’s favorite!). The restaurants also feature a variety of local and popular craft beers, along with a wine list that is hand-selected for exceptional pairings and value. Menu items are attractively priced with an average check totaling under $17 per person. A lifelong restaurateur, Anthony Bruno understands the need for quality. As additional restaurants open, he and his team closely monitor each product and ingredient to ensure consistency.

Restaurant Atmosphere

Known for its high energy atmosphere, Anthony’s Coal Fired Pizza is a casual, family-friendly brand with a staff that delivers premium service with a personal touch. Anthony’s restaurants are typically 85-95 seats within approximately 3,000 square-foot. Restaurant décor and design reflect Anthony Bruno’s New York upbringing and his love of sports and music. Framed photos of celebrities, including Marilyn Monroe, Frank Sinatra, Derek Jeter, Sophia Loren and The Beatles, line the walls. And guests not only enjoy great Italian specialties, they’ll hear a diverse selection of hits from yesterday and today. On game days, Anthony’s is a great place to catch live sports on several HDTVs positioned around the restaurant. Each Anthony’s restaurant also features patio dining, with several offering an indoor/outdoor bar. 6
