COOKING WITH BEER

9 ounces (270 mL) bittersweet chocolate 6 tbsp. St. Ambroise Oatmeal Stout 2 tbsp. fruit liqueur 4 eggs at room temperature before separating 1 cup 35% cream 1/2 tsp. vanilla 1/4 cup sugar 1 tsp. cream of tartar Melt chocolate in a double boiler, stirring constantly. Add Stout and liqueur. Add 1 egg yolk at a time, mixing completely after each addition. Set aside. In a separate bowl, beat the cream, vanilla and sugar together until stiff peaks form. Refrigerate. Beat egg whites and cream of tartar until still. Fold together with the cream mixture. Fold in the chocolate mixture, half at a time, until completely mixed. Serve in wine goblets with a thin mint cookie. 05548057

Pilsner Urquell BBQ Chicken 400g chicken thighs 1 bottle of Pilsner Urquell 1 cup water 3 tbsp. sugar 3 tbsp. salt 3 thin slices of lemon 1 tsp. black peppercorns 1 tsp. chilli flakes 4 cloves of garlic, roughly chopped Put the chicken in a large sealable plastic container. In a large jug, mix the beer, water, sugar and salt, stirring until it’s combined, then add the rest of the ingredients. Pour over the chicken, put the lid on the container and place in the fridge for 8-24 hours (the longer you leave it, the better it is). When ready to cook, take the chicken out of the brine and blot it dry it with a kitchen towel. Add extra seasoning – more salt and pepper (or add chilli or hot sauce, if you prefer). In a medium-sized bowl mix together the crab meat, egg, green onions, red peppers, salt, pepper, Old Bay, cayenne, beer, melted butter and 1 cup of panko. Form into 4 patties about 1 inch thick. Place remaining panko into a small bowl. One at a time, place the patties into the panko and press until well coated on all sides. In a pan over medium-high heat, add the canola oil. Cook crab cakes until golden brown on the underside. Flip carefully and cook on the other side until cooked through, about 3 minutes per side.
