Hi there! I’m Stephanie your Go-To Girl for Raw24 and I’m so pleased that you’ve taken the time to download this ebook and try my menus and recipes! You may be completely new to Raw or building up your recipe bank, but what is really great is that your curiosity has brought you to me, and I’m excited to now be able to share my menus and healthy recipes with you! The recipes in this e-book are some of my ultimate favourites! It can be a big decision to go Raw for a day and may feel quite stressful to try something new, so I have taken away as much pain as possible by collecting the most gorgeous and satisfying recipes for you! I really hope that you enjoy then all, especially the Chinese buffet for supper it’s one of my current favourites. I appreciate that not everyone will have a juicer or a blender at home so I’ve therefore created two menus – one that requires a juicer, blender and knife, and one that requires just a knife. Which menu you go for is entirely up to you. My thoughts are this: juicing and blending are easy peasy and very quick so if you have a juicer, or are thinking of investing in one, then opt for Menu 1. If you don’t have a juicer then the alternative menu allows you to try Raw before you invest in any kitchen essentials. The benefit of this menu is that it gives you more time to play with your food (if you are anything like me that’s a real bonus!) and get to grips with some exciting heat-free dishes. If this is your bag then Menu 2 is for you. Or you can mix and match. It is entirely up to you. Whichever menu you choose I hope that you enjoy your day of Raw and detoxing. I’ve included in this pack some notes on Raw and detoxing so that it may help you as you explore Raw but it’s also great doing your own research. I love to encourage others to seek knowledge for themselves. Raw24 is a great way to test the waters with a high Raw diet and I’d love for you to keep exploring after your one-day introduction. No-one expects you to go 100% Raw immediately afterwards (if you do then great!) but I do highly recommend that you introduce as much living, plant-based raw foods into your diet as possible beyond your one day detox. What is Raw? I am often asked, “What is a raw food diet?” “Is this classed as raw?” and to be honest it can be a bit confusing when you first start out. When I was first transitioning to Raw (some ‘in the club’ Raw lingo right there for you!) I was full of the same questions. Luckily for me I knew where to reach out to get all the information that I needed which allows me to now be able to share this with you. There’s plenty of information out there and here’s a few headliners to get you started. Raw foods come from nature: A raw food diet is animal product free. It therefore does not include meats or fish (even uncooked). It does not include dairy of any kind. It includes a range of superfoods and does not usually come in a box with a label on! Raw foods are unprocessed living foods that provide abundant nutrition for the body. Raw foodies hold the belief that nature provides us with complete sources of nutrition from vegetables, fruits, nuts, seeds and sprouted grains and pulses. Uncooked fruits and vegetables: Raw eating is based on the principal belief that the most healthy vibrant foods for the body are uncooked and not heated to over 38-43°C (different foods will have different heat limits. You will often see a ‘limit’ of 48°C used) to preserve the enzymes . Meat and milk? No way. Again for me this is a non-negotiable part of the deal. By all means reduce your intake of meat and dairy as you progress towards a plant-based high raw diet but, for me, clean eating is one of the principles of EXPLORE RAW and therefore meat and milk play no part. I promote a clean eating, high raw, high plant-based diet. If you are not ready to give up or significantly reduce meat or milk then you have to ask yourself ‘how much do I want this – how much do I want to make significant changes to my health?’ You have to want results enough to make changes. About juicing: Juicing (especially green leafy vegetables) is like hooking yourself up to a health drip; like injecting pure goodness into your veins because you are giving your body immediate access to the nutritional content of the foods that you have just juiced – bypassing a sometimes lengthy or sluggish digestion process. Why Raw? Eating a raw diet makes you feel fabulous! That’s why! It is energy providing, clean and thoughtful eating that heals the body. There are many reasons why a clean natural plantbased raw diet is what the body needs – and it can be helpful to focus on the following three key elements. Eating Raw preserves food enzymes: Enzymes are hugely important and are the life force of food – responsible for all metabolic activity in the body. Enzymes are needed to break down food particles quickly so that the body can process them. Cooked foods are without enzymes and pass through the body slowly encouraging fermentation and allowing toxins to remain in the body, which is not good. Toxins present in the body are ‘weight loss blockers’ and encourage hormonal imbalances – interrupting the body’s natural ability to heal itself, detox and process waste. Cooking food destroys many minerals, vitamins and amino acids. There are a few exceptions such as lycopene found in tomatoes and carrots. Let’s bust this myth right here. Yes, when tomatoes are cooked lycopene is more available in the body (around an 18% increase in bioavailability) but that same tomato loses almost half of its vitamin A, 65% of vitamin K, 35% of beta carotene and 100% of it’s alpha carotene. Eating Raw alkalizes the body: A diet that is plant-based and high in raw foods will help in alkalizing the body. This means that your body will be more ‘in balance’, and your PH levels will even out. This is important as an ‘acidic’ diet causes stress on the body which increases weight gain and decreases immunity. An acidic diet is one that is high in junk food, processed foods, meat, dairy and alcohol. Alkalizing the body helps the body to heal and to move towards the body’s natural state of constant repair. Eating Raw balances hormones: Hormones play a critical role in body balancing and weight loss. If your hormones (for both men and women) are out of sync, then guaranteed you’ll be overweight. Guaranteed also that if you’re overweight your hormones will be out of balance. It’s a tricky little circle but it’s possible to break the loop with a Raw diet. Fix the hormones and you fix the weight problem. It’s that simple. Take care of the hormones and your body is able to take care of itself.

What equipment will I need? For Menu 1 you will require a juice a blender and a knife. I don’t promote any particular brand of juicer but a good centrifugal juicer is the easiest way to get started as it allows you to bang the whole unchopped fruit in the top. Once you’re used to juicing you may want to invest in something more professional but for now a regular juicer is all you need. A centrifugal juicer is what I have and I wouldn’t be without it. As for a blender – to get you started on raw anything that will make a smoothie or crush ice will be fine. You can consider a more professional purchase later on.

Blender v Juicer They are not the same thing so watch out. A juicer removes the pulp from the fruit so you are left with two products – the pulp is usually pumped out the back of the juicer and the juice is poured into a jug. A blender produces one product – a smoothie and is known as a ‘whole fruit’ product.

Knife For Menu 1 and Menu 2 you will need a sharp knife and a chopping board. Make sure your knife is sharp and can slice well. There’s nothing more frustrating than slicing with a blunt knife.

Before you get started Before you get started you need to plan ahead otherwise it just won’t work. Decide on when you’re going to have your Raw24 menu and clear the diary. Work or family commitments may shape this but make sure that you allow time to eat and rest, as well as time for meal preparation. Some recipes require overnight preparation (soaking nuts and dates or freezing bananas). Look out for the symbol ! Choose your menu and plan your shopping trip. Prepare your kitchen by clearing out any fast foods or tempting packaged meals and snacks if you can. Try boxing them up and putting them out of reach if your past behaviour tells you that temptation might get the better of you. Without gorging on the contents of your fridge or throwing things away unnecessarily you should work towards clearing out the contents of your fridge in advance. Start to cut down on fast foods and fatty foots a few days beforehand. Eat less meat. Begin to eat more simply. Tell your family and friends what you’re doing and that you need their support. Ask them to join you! The Chinese buffet in particular is made for sharing and should leave them feeling very impressed with your kitchen skills!

Prepare mentally. Ask yourself the following questions and make a note before you get started.

Why am I doing this? What are my goals? How do I want to feel?

Notes on detoxing Detox symptoms are unlikely with a 24-hour detox however this very much depends on your current diet. Any detox symptoms that you may experience while doing the Raw24 diet will vary. The level of toxicity in your body will determine how this works out for you. Please use your own judgment in how you manage any symptom although I will advise you to steer clear of any over the counter medication to manage headaches. If you do get a headache this is potentially a very good sign that toxins are leaving the body. Take a rest and lie down for a while. Try to do some gentle exercise throughout the day. Depending on what you are used to push yourself one notch higher. You may be amazed at how much energy you have! I guarantee you that you’ll not be hungry while doing this detox. You may crave your favourite naughty foods but please rest assured that you’re not starving to death, you’ll not fade away, and no harm is likely to come to you while eating a clean healthy diet for just a day. On the contrary. You’ll be opening the door to limitless benefits. However, depending on your current eating habits, this may or may not be a tough day for you. Remember the goals you set for yourself. Remember why you’re doing this. Remember how you want to feel. This is all about mindset. It’s probably completely obvious but while doing the detox you can drink as much water as you like. If you’re feeling hungry ask yourself, am I really hungry or just thirsty? Have a glass of water and then ask yourself in twenty minutes if you still feel the same. Then ask yourself, am I hungry or just craving something? Cravings are very different from your body asking for nutrients (which we call intuitive eating). Cravings are from the mind. Again stating the obvious but just to be clear, the detox does not include coffee, regular teas, alcohol, soft drinks, dairy, meat, bread, crackers, chips, chocolate or foods of any kind that are not on the menus. If you feel that you need something extra have a piece of fruit or extra menu snax. Lemon and ginger tea Ingredients • 1 cup boiled water • 2 slices lemon • 2 slices peeled raw ginger • Hot water • Tsp. agave or raw honey to taste

Method Simply pour hot water into a mug or glass with the lemon and ginger. Allow the drink to settle before you consume it. Stir it to wake up the flavours!

Ginger Is a wonderful addition to a raw diet! It helps reduce gassiness, ease digestion, relieves nausea, reduces throat and nose congestion, stomach cramps, and also has aphrodisiac properties! It has known antibacterial properties and also clears the sinuses and improves the absorption and assimilation of essential nutrients in the body.

Zing water Ingredients • 1 litre pure or filtered water • Juice 2 lemons • Juice 2 limes • Lemon zest • 1 tsp. raw agave • 1 handful cucumber slices • 1 handful ice

Method Squeeze the fresh citrus juice into a jug with the water. Add the lemon zest and ice and stir in the agave land lastly add the cucumber slices. Drink at least a pint before breakfast and continue drinking throughout the morning.

Why before breakfast?

Before breakfast is the best fat burning zone time (so get some exercise in too! Even a few stretches and jumping up and down on the spot is great!) The Zing water will give your circulation a real boost and help to detox the liver.

Go-To Girl smoothie !" Ingredients ! • 4 red apples • 1 frozen peeled banana • I peeled lemon • 1 peeled lime • Large handful spinach • 1 cup pure filtered water

Method Juice the apples, lemon and lime in your juicer and add to the blender. Add all other ingredients and then blend.

Freezing bananas

Don’t forget to freeze your banana the night before – and also don’t forget to peel the banana before you freeze it. If you forget to freeze your banana don’t panic. Blend the banana as it is and add a handful of ice – reducing the water a little. Enjoy. This is a real boost of a smoothie!

Stuffed dates Ingredients • Organic medjool dates • Raw soaked untoasted almonds • " tsp. tahini (optional)

Method Slice the dates and take out the stone including the flower at the top. Wash the soaked almonds in pure water and place one or two in each date depending on the size of the nut. For an extra yummy sensation top with a dash of tahini (optional)

Soaking almond nuts Not only do soaked almonds taste better they are so much more full of nutrition! Soaking removed enzyme inhibitors and brings the nut back to life nutritionally and taste wise. Soak overnight or for at least 4 hours. And don’t forge to wash them before eating

Tea Ingredients • Detox tea of your choice • Hot water

Method Choose a range of herbal and detox teas throughout the day to suit your taste! Decaffeinated teas are not part of the detox. Choose herbal teas that suit your taste buds. You may also make your own teas with ginger and lemon. Whichever tea you choose allow it to rest before you also rest.

Tea with rest Enjoy throughout the day. Making time for tea will remind you that it’s time to put your feet up for a few moments, stretch and take some deep breaths.

Go-To Girl fruit juice

Ingredients • 3 large sweet oranges • 3 large carrots • 1 thumb ginger • Fresh mint to taste • Ice

Method Juice the carrots and ginger in your juicer. Hand squeeze the oranges (or use a citrus juicer) and add to the drink. Chop the mint and add to ice in a glass. Pour over juice and serve.

Oranges Not only gorgeous and good looking the orange is loaded with Vitamin C, fibre, thiamine, folate and potassium. Hey good looking; you are what you eat.

Kale salad

Ingredients (recipe serves 4) • 10oz or large bag of kale • Juice 1 lime • ! tsp. Himalayan pink salt • 1 tbsp. virgin olive oil • 1 tsp. linseed • 1 tsp. sesame seed • 1 pinch pine nuts

Method ‘Make love to the Kale! – using a large bowl massage the kale with the lime juice, salt and olive oil until the kale is soft and wilted but not too limp. Remove any final stalks or tough bits as you feel them. Mix in the linseed, sesame seeds and a big pinch of pine nuts. The portion for this dish is one cup per person. Kale ‘Did my heart love til now?’ Kale is a beautiful superfood that deserves falling in love with! It’s a powerful antioxidant that can help lower cholesterol, boost your immune system, your metabolism and is great for detoxifying your body and keeping healthy. !

Raw stir-fry

Ingredients for the stir fry • 6 baby sweetcorn • 6 sugarsnap peas • ! red bell pepper • 3 mushrooms (peeled) • ! small organic savoy cabbage • 2 or 3 heads of broccoli • 1 tbsp. sesame seeds • 1 spring onion finely chopped Ingredients for the marinade • 1 cup untoasted sesame oil • 3 tbsp. tamari • 2 tbsp. agave • I chopped garlic clove • I red chilli chopped (with seeds) • ! lemon juiced • 3 limes juiced 1 thumb ginger finely sliced Method Prepare the marinade: Finely slice the ginger and put all ingredients into a lidded cup. Shake and keep in fridge until required. Prepare the sir-fry: Finely slice all the ingredients lengthways (except the onion chop finely). Take your time while chopping and place all ingredients in a large bowl. Pour the marinade over the stir-fry (you will need all of it) and leave to settle for 30 minutes to two hours. Chilli sauce & crunchy nut topping Ingredients for the chili sauce • 3 limes juiced • ! cup untoasted sesame oil • 1 tbsp. agave • 1 red chilli (chopped) • 1 spring onion (chopped)

Shake the ingredients in a lidded beaker or cup and chill until served. Pour over the rice or serve in a separate dipping bowl.

Ingredients for the crunchy nut topping • 1 cup raw almonds • 1 tbsp. tamari • 1 tsp. dried sage • 1 tsp. dried thyme • " teaspoon dried rosemary

Raw rice Ingredients • Half medium sized cauliflower • ! cup pine nuts – finely chopped • Half lemon juiced • Pinch Himalayan salt • 1 parsnip finely chopped or grated

Method Finely chop the cauliflower (the whole thing not just the florets). Add the nuts, parsnip and pour the lemon juice over the mix. Add pinch salt and serve. If using a food processor begin with the parsnips, add the cauliflower and finally the pine nuts for the final pulse

Go-To Girl fruit salad Ingredients • Ripe banana • Dragon fruit • Mango • Chocolate sticky ball Substitute with seasonal fruits or fruits of your choice. Do include bananas and keep citrus fruits to a minimum.

Method Peel and chop your fruit and serve with a chocolate sticky ball (optional).

Chocolate sticky balls !" Ingredients • 1 cup cashew nuts soaked • 2 tbsp. raw honey or agave • 1 tsp. vanilla extract • 8 large medjool dates • 2 tbsp. raw cacao powder • 1 cup desiccated coconut

Method Soak dates and cashew nuts separately in water overnight Drain and paste the cashews with a fork. Drain the dates and squeeze them in your hands until they become paste like. Mix the two together by hand and slowly add all other ingredients. This is a lovely messy job! Using a spoon drip balls of mixture into a bowl with the coconut and roll. You do not need a food processor for this recipe but you can use it if you have one.

Go-To Girl salad Ingredients for dressing • ! cup virgin olive oil • " cup balsamic vinegar • 2 tbsp. tamari • 1 tbsp. maple syrup or agave • 1 tbsp. apple cider vinegar • " small red chilli finely sliced • 4-5 walnuts finely sliced

Ingredients for salad • 3 cups green leaves • " red onion thinly sliced • 1 cup sunblushed tomatoes (drain off any oil)

Method Prepare the dressing first: Put all ingredients into a lidded cup or screwtop jar. Shake and keep in fridge until required. Toss salad in dressing when ready to serve.

Prepare You will need a blender or an ice cream maker for this bonus recipe You will need to prepare the night before your Raw24 detox. Peel, chop and freeze the bananas. Place dried figs in a bowl and cover with enough pure water. In a separate bowl place the dried goji berries and leave both overnight. Method Drain the figs and goji berries and place in your blender. Add 1 tbsp. fig water and add the frozen bananas. Blend. Sprinkle with goji berries and cacao nibs and serve immediately. Ice-cream maker instructions will vary.

About Stephanie – in her own words I was not always raw – and far from it! In my late twenties career success became my prime focus and hand in hand with that came the absence of looking after myself. I piled on the weight. I did no exercise. I was overworked, undernourished and toxic. I had lost sight of ME. Since I have been juicing and eating a high plant-based high raw diet I have so much to be thankful for.
