(A throw back to the 1950’s, except we’ve left the Campbells Soup behind! Tuna, peas, and egg noodles in a creamy mushroom sauce topped with… yupp - potato chips!)

Salmon Alfredo Bake

(The adult version of the Tuna Noodle Casserole! Chunks of tender salmon poached in a creamy dill alfredo sauce, with tender egg noodles. Best served with a chilled glass of white wine!)

(Lasagna noodles layered with, corn, black beans, onions and cheese with a diced tomato salsa. Hola!)

Black Bean Enchiladas

(Black beans, jalapenos, mild cheddar wrapped in flour or corn tortillas in a zingy enchilada sauce with rice)

Cauliflower Creole Casserole

(Cauliflower flowerets, diced tomatoes, and mild cheddar baked together with creole spices)

Sloppy “Janes”

(A 21st century version of the Sloppy “Joe”. Red quinoa simmered together in vegetable stock, onions, with a tomato based sauce. On a bun or blanc with chips.)

Meatless Meatloaf!

(Quinoa, black beans, celery, carrots, and onions blended together and baked in a loaf. Hummm… maybe some scalloped potatoes to make this a new wave classic!)

Feta Patties “Greek Style”

(Garbanzo beans, quinoa, onions, and feta with Greek seasonings and a side of cucumber yogurt sauce [tzatziki], make this a mediterranean medley)

Veggie Quiche

(Traditional egg mixture of cream, cheeses, and just about any type of veggie, or combination of veggies your heart desires!)

Leek and Cheese Tart

(Gruyere cheese, sauteed leeks and spices, spread out on a pizza-like dough, make this a much classier meal than “just pizza”!)

Balsamic Portobello Blue “Burgers”

(Portobello mushrooms marinated in balsamic, roasted with sun dried tomatoes, and blue cheese on a bun Who’s got the chips?!)

Side Suggestions

Many of the main dish selections include protein and a carb, generally integrated into the meal. (For example, The Hearty Beef Stew includes veggies and potatoes, or- the Casserole selections usually include either rice or noodles.) For meals where a side or additional side is desired, these are a sampling of the choices. The list of sides, or just straight-up veggie choices is endless - so if there is something you don’t see on here... just ask! I will also make suggestions when we’re planning your menu together!

Potato Potpourri Mashed Potatoes

(This favorite does not have to be last minute madness. Blending potatoes, butter, milk, sour cream, and cream cheese, with - yupp, bacon on the top make this side an easy pop in the oven addition to any meal. Add some Gruyere or Cheddar and kick up the flavor even more!)

Sweet Potato Souffle











(Either savory or sweet, sweet potatoes have never been fluffier! For a sweet side, brown sugar, butter, and cream are whipped with egg whites and topped with marshmellows. Leave the sweet stuff behind, using salt, pepper and red pepper flakes, and you have a sweet, spicy kick!)

Classic Scalloped or Cheesy Scalloped Potatoes

(Slow cooked goodness. Sliced potatoes, cream or milk [for the lighter side], salt, pepper and a dab of butter add rich flavor to any sauceless main. Add Gruyere or Emmentaler and this could be a meal on it’s own!)

Rosemary Roasted Potatoes

(Coated in a film of olive oil, rosemary, thyme, salt and pepper, and roasted to perfection these potatoes go great with most mains.)

Creamy Rosemary Parmesan Potatoes

(Similar to scalloped, these tender chunks bubble in a creamy parmesan sauce with rosemary. Fragrant and delicious!)

Home Fries or American Fries

(Thin sliced potatoes fried in butter with a pinch of salt and pepper. Classic!)

Twice Baked Potatoes

(Cheese, broccoli, peppers, mushrooms, olives, bacon, ham, etc. etc. etc. The possibilities are endless!)

Serious Sides Rice Pilaf

(My personal fav! Tiny noodles browned in butter, then simmered with rice and chicken stock. A staple with Kabobs!)

Sage Dressing

(Tender bits of bread or cornbread, sauteed onions, celery, and savory sage take this side will beyond Thanksgiving!)

Corn Pudding

(A “spoonable” version of cornbread, made with sweet corn kernels, and creamed corn does not have to wait until Thanksgiving to be served. Kick it up a notch with Jalepenos, and put your “Zamba” on!)

Southern Style Corn Bread

(Not as sweet as “Yankees” generally like it, but a must with a bowl of Chili, or crumbled in a glass of buttermilk. Yupp - Southern Style!)

Creole Cauliflower Casserole

(Cauliflower, diced tomatoes, cheese and creole seasonings baked to bubbly make a sassy side, or a great main meal for vegetarians.)

Broccoli Cheese Bake

(Who needs noodles when you can put veggies in creamy cheese sauce?!)

Parmesan Zucchini Bake

(Sliced zucchini, tangy diced tomatoes, and parmesan give this bake twist on Italian.)



Ratatouille

(If you thought this was only a kids movie, think again! Diced egg plant, zucchini, and onion simmered in tomato sauce give any meal a French twist. Ooo La La!)

Brussel Sprouts with Bacon and Balsamic (It’s true - everything tastes better with bacon!)

Homemade Red or White Sauerkraut

(Red is a “must” along side German “Rouladen”, and white brings good luck if eaten with pork on January 1st! “Rot Kraut bleibt Rot Kraut und Braut Kleid bleibt Braut Kleid” - A German tongue twister that I dare you to say three times quickly!)

Just Vegetables

Literally, any vegetable can be simply steamed and frozen to be reheated as a side. Depending on the meal choice, “plain veggies” may be the way to go. We can discuss when we selecting your meal options!

Salad Synopsis

Looking for a summer meal on the lighter side? Having a BBQ or picnic and would like to offer something other than baked beans? Or - tired of plain ‘ole mixed greens? Then you’ve landed on the right tab! Again, my friends, this is just a “synopsis” of the various cold salads that can be created... the possibilities are truly endless!

Side Salads

Classic Tomato

(Sliced tomatoes garnished with tiny onion bits in a light vinegarette.) “Caprese” (Tomatoes and mozarella with fresh basil leaves in a light vinegarette. Best served with french bread - yumm!)

Artichoke with Balsamic

(Artichokes marinated in a balsamic vinegarette. Can also be combined with mushrooms for a more “earthy” taste.)

Beet Salad

(Tender cooked beets, sliced with bits of onion and caraway in a classic vinegarette. A colorful addition for any season.)

Cucumber and Tomato (With or without onion bits, the cucumber freshens-up - anything!)

Green Bean with Bacon

(Yupp - there it is again… bacon! Tender green beans, finely chopped tomatoes, and bacon in a light white balsamic vinegarette. Great with roast chicken off the grill!)

Asparugus with Sesame

(Fresh asparugus, tomato bits, and sesame seeds in a sesame and seasoned rice vinegar dressing.)

Greek Style

(Garbanzo beans, red onion, olives, cucumber, and fresh diced tomatoes, with herbed vinegarette make a great side with lamb patties.)

Cucumber with Dill

(Cucumber, onion, (and tomato bits if you like), in a creamy yogurt lemon dill sauce. Fresh!)

“Slaw”

(Tender cabbage tossed with either a classic mayo dressing, or with fresh diced green peppers a classic vinegarette. Either way - a summer staple.)

Asian Style “Slaw”

(Shredded cabbage, onions, toasted almonds, and rahmen noodles - yes - rahmen noodles, in a peanut oil and rice vinegar dressing, give this an Asian/American twist!)

Broccoli “Slaw”

(Broccoli florets, toasted almonds, raisins or cranberries in a classic mayo based dressing. Great with… anything!)

Classic Potato Salad

(Potato, eggs, onion, celery seeds, in a classic mayo based dressing - BBQ anyone?)

“German” Style Potato Salad

(Sliced potatoes, onion, and bacon in a tart vinegarette. Often served warm, but just as good chilled!)

Salad as a Meal!

Spicy Chicken (or Beef) Salad

(Shredded chicken or sliced cold beef, tiny noodles, celery, shredded carrots, and sesame seeds in a sesame, sriracha chili sauce. A quick dinner choice, and great in the lunch box!)

Curried Chicken Salad with Almonds

(Shredded chicken, [choice of: white grapes, mandarin oranges, pineapple, or apple], toasted almonds in a creamy curry dressing, served on lettuce leaves. The lighter side of summer time!)

Buffalo Blue Chicken Salad

(Shredded chicken, celery, carrots, blue cheese, and Franks infused dressing, - with or without a bun!)

Spicy Peanut Chicken

(Shredded chicken, carrots, green onions, sesame seeds, and tiny noodles in a spicy peanut, soy, rice vinegar dressing. Take a trip to Thailand tonight!)

Pesto “Rustica”

(Mini penna pasta, pine nuts, spinach, chicken or pepperoni, and of course pesto! Make this a great dish to bring to the picnic!)

Roasted Veggie Cous Cous

(A walk on the lighter side! Roasted peppers, zucchini or yellow squash, egg plant, feta and cous cous tossed in a lemon vinegarette. OK - enough synopsis for now… my mouth is watering!)

Soup’s On!

Whether you’re trying to warm up on a cold winter’s day, or lightening things up on a hot summer’s eve, soup as a main meal is a great way to go! Served with french bread, cheese, and a nice glass of wine… invite your friends over too!

Blended Soups

Classic Tomato

(Made fresh with garlic and basil, this creamy creation will warm your heart.)

Zucchini Soup











(This blend of zucchini, onion, and stock is absolutely delicious. Great for lactose intolerant, watching your weight, and vegetarian candidates!)

Broccoli or Cheesy Broccoli Soup

(A blend of broccoli, onions, carrots, and stock make a bold statement. Make it cheesy, and the kids will eat it too!)

Butternut Squash Soup

(Squash, apples, onions, and a pinch of nutmeg, creamed with milk, allow for an awesome Autumn!)

African Sweet Potato Soup (with Peanut Butter and Black Beans) (Besides the obvious; bell pepper, curry paste, and a blend of sweet and hot spices carry you away to another continent!)

Potato Leek Soup

(These “harvest” veggies, blended in a beef or veggie stock, sprinkles with bacon bits… Oh baby, it’s cold outside!)

Split Pea with Ham

(Classic blend of split peas, onion, carrots, and celery, simmered with the ham bone, make you want to curl up by the fire.)

Lentil Soup

(Lentil’s simmered in stock, potato, and carrots, blended - with or without bacon bits on top!)

Chicken Tortilla Soup

(Ready to be blown away?! As close to “Max & Erma” style as you can get without knowing the secret recipe!)
