No-Cook Turtle Ice Cream

BBQ Beef & Mashed Potato Pie Ingredients

INGREDIENTS

2 pound(s) White potatoes, peeled and cut into 2-in. pieces

1 (14-ounce) can sweetened condensed milk 1 (5-ounce) can evaporated milk 2 tablespoons sugar 2 teaspoons vanilla 2 cups whole milk 1/4 cup caramel sauce 1/2 cup semisweet chocolate morsels 1 teaspoon shortening 3/4 toasted chopped pecans

Kosher salt and pepper 4 tablespoon(s) olive oil 1 large onion, chopped 1 1/2pound(s) lean ground beef 4 plum tomatoes, seeded and diced 1/2 cup(s) ketchup 2 tablespoon(s) cider vinegar 1 tablespoon(s) Dijon mustard 1 tablespoon(s) molasses 1 tablespoon(s) Worcestershire sauce

Directions 1. Place the potatoes in a pot. Add cold water to cover; bring to a boil. Add 1 tsp salt; simmer until just tender, 15 to 18 minutes. Reserve ¼ cup of the cooking liquid; drain the potatoes and return to the pot. Mash with 3 Tbsp oil, ¼ tsp each salt & pepper and 2 Tbsp of the reserved cooking liquid, (add more liquid if necessary).

2. While the potatoes are cooking, heat the remaining Tbsp oil in a large skillet over medium heat. Add the onion and ¼ tsp each salt and pepper and cook, covered, stirring occasionally, until tender, 8 to 10 minutes. 3. Heat broiler. Add the beef to the onion and cook, breaking it up with a spoon, until no longer pink, 5 to 6 minutes. Spoon off and discard any grease. Add the tomatoes and cook, stirring occasionally, for 4 minutes. In a bowl, whisk together the ketchup, vinegar, mustard, molasses and Worcestershire; add to the beef and cook, stirring, for 1 minute. 4. Transfer the beef mixture to a 2-qt broiler -proof baking dish and top with the mashed potatoes. Broil until beginning to brown, 2 to 4 minutes. Note: PREP 25 mins, COOK 1 hr, READY IN 30 mins

DIRECTIONS Whisk first 5 ingredients in a 2-quart pitcher or large bowl until blended. Cover and chill 30 minutes. Pour milk mixture into freezer container of a 1-quart electric ice-cream maker, and freeze according to manufacturer's instructions. (Instructions and times will vary.) Stir caramel sauce into prepared ice cream. Remove container with ice cream from ice-cream maker, and place in freezer 15 minutes. Microwave semisweet chocolate morsels and shortening in a microwave-safe glass bowl at HIGH 1 minute. Stir until smooth. Place toasted chopped pecans on a parchment paper-lined baking sheet. Drizzle pecans with melted chocolate. Freeze 5 minutes. Break into bite-size pieces. Stir chocolate & pecan pieces into ice cream. Transfer to an airtight container; freeze until firm, 1-1 1/2
