Our World of Wine

Champagne Jacquart

We have, we must admit, been having rather a lot of fun choosing wines for St Michael’s Hotel and Spa.

Start your meal with a sip of the ‘brand born in the vineyard not the board room’!

Discovering wine could be seen as a journey, but we prefer to see it more as a ramble; enjoyable fun, not too arduous and less structured with the emphasis on guidance. We understand taste is a very personal thing and that nobody can tell which wine you will like. There are thousands of wines to experience. Even the most qualiied ‘wine experts’ never stop learning or tasting new wines - effectively we’re all on the same ramble, just at different points, and your opinion is just as valid and worthy. From Arneis to Zinfandel, you may not like them all, just try to work out why you like the ones you do. Ultimately we want you to have fun with our chosen wines. Always take the opportunity to taste a wine that is new to you. This is your own wine ramble but you don’t need a map - just a glass, your taste buds and a sense of fun and adventure. The key is to experience and taste as much wine as possible…now there’s a challenge.

Rioja Reserva is a consistently great wine that is muscular yet elegantly balanced. Perfect for those succulent meat dishes from our grill, the silky tannins combine brilliantly with the proteins in the steaks and the spiciness gained from a year spent in oak makes it a surprisingly great partner for our Harissa spiced chicken. Celebrate like a true Spaniard and toss wine on each other as if you are at the Haro Wine Festival in a sea of wet, pink shirts! Frank Owen Gehry, one of the world’s most renowned architects and author of works of art like the Guggenheim Museum in Bilbao, and The Hotel Marqués de Riscal - A Luxury Collection Hotel merges deep-rooted wine-growing tradition with 21st century avant-garde design. A number of his buildings, including his private residence, have become world-renowned tourist attractions. The luxurious hotel he designed, Hotel Marqués de Riscal, is in the heart of the Rioja Alavesa region in Spain.

Har o Win e Fe stiv al “BOLD & BUXOM” The Limousin Reserva is a fuller style of Verdejo which is capable of pairing with a number of our dishes. The oak ageing gives subtle vanilla nutty notes which marry beautifully both with our Maple glazed pork chop and our Caesar salad.

Nestled in the renowned Vinos de los Herederos del Marqués de Riscal’s vineyard in the medieval village of Elciego, the hotel has spectacular curves, a titanium roof and asymmetrical walls. It has 43 luxury rooms and suites, each unique and different in their shapes and views, “thrown” in two wings which are connected by a spectacular suspended footbridge at “The City of Wine.”

for Wine Geeks There’s a disarming simplicity about the M·A·N Vintners concept: it started in 2001, with the idea of making wines that the founders wanted to buy themselves. And since there were three of them – José Conde and brothers Tyrrel and Philip Myburgh – and each of the three had a wife – the name was easy too. Marie + Anette + Nicky = M·A·N.

FREE-RUN STEEN CHENIN BLANC

Mari e + Anet te + Nick y

South Africa’s signature white grape Chenin Blanc (or Steen as it is more commonly known there) thrives really well in the warm coastal climate of South Africa’s Paarl wine region. By using freerun juice that does not rely not on harsh pressing and crushing techniques to extract the grape juice. This ensures a higher quality of lavour compounds and a fuller-bodied texture in the inished wine. Warmth from the sun concentrates the lovely ripe tropical fruit lavours, whilst the refreshing vibrant and zesty acidity that is the keynote of Chenin provides a backbone to the wine. A versatile food wine, it is able to work well with seafood (especially shellish), chicken and salads. It would be a perfect wine to drink whilst sharing our seafood platter. The crisp acidity even lends itself to an indulgent plate of ish and chips as it helps bring forward the true lavours of the food.

OU KALANT CABERNET SAUVIGNON Cabernet Sauvignon is the most widely planted red variety in world; a versatile grape capable of producing differing styles. Best known for its part in the classic Bordeaux blend where it takes role of the serious elder brother to the more frivolous fruit-driven Merlot, giving structure and elegance to the blend. Ou Kalant (which means ‘Old Rascal’ in Afrikaans) has the ripe rich fruit of the New World, whilst retaining some of the structured Old World style. This combination of styles gives us a wine that matches well with several dishes on our menu particularly our homemade grilled cheese burgers, and the rib-eye steak. The New World fruity style makes this an approachable tipple that can also be enjoyed by itself!

“Wine is about place, and ours are from the south coast of Cornwall.” With vineyards in the Roseland and Whitsand Bay the Knightor winery in St Austell Bay, make premium quality still and sparkling limited production wines from grapes grown in English vineyards and vines at Portscatho and Seaton on the south Cornish coast. A relatively hands-off approach to winemaking is taken; although inspiration is taken from both Old and New World, there is no desire to mimic. With English wine the difference is generally the lightness and elegance of style – this is its hallmark.

“'Lip stinger'!? P I C P O U L D E P I N E T | One of France’s few varietally named wines (where the grape name appears on the label). The Picpoul grape is an ancient variety from the Languedoc region on the Mediterranean coast. Unsurprisingly, being near the coast, it has become a classic seafood wine. The lemon lavours combine really well with grilled and baked ish and the racy acidity will cope brilliantly with any fried seafood. It should not be overlooked as a delightful apéritif too, as goes it well with a sunny afternoon and a great view. Picpoul allegedly means “lip stinger” derived from the high acidity of its must - fortunately this attribute turns to a lemony zingy acidity once made into wine. Modern winemaking techniques have enabled the winemaker to capture a real freshness for us to enjoy. Deinitely one to tick off your list of wines to try!

POUILLY-FUISSÉ, DOMAINE SAUMAIZE-MICHELIN 2013 Burgundy, France | abv 13% The palate is rounded and generous with grapefruit, lemon rind notes and nutty characters. | bottle £52.95

A RNE I S | As Italy has over 2000 native grape varieties it is easy to see how a variety can disappear, which is what nearly happened to Arneis grape in the 1970s. Grown alongside more prestigious red Nebbiolo grapes, often as their highly scented grapes drew the unwanted attention of birds away from the red grapes. Due to the increase in interest for Italian whites it was saved from extinction. Arneis can also be a little dificult to cultivate, being low-yielding and susceptible to mildew, hence its name which translates from Piedmont dialect as “little Rascal”. Arneis has also traditionally been added to the more tannic reds of north west Italy to soften them. Arneis wines are full in body with nice mouthfeel and have pear and apricot notes, often with a subtle nuttiness on the inish. An altogether interesting variety and one to try if you haven’t already. Food Allergies and Intolerances: Before you order your drinks, please speak to our staff if you want to know about our ingredients.

‘Stump Jump’wines The name ‘Stump Jump’ pays homage to a signiicant South Australian invention – the Stump Jump plough. As well as clearing the land around McLaren Vale, it was adopted worldwide in the late 19th century because of its ability to ride over stumps and gnarled roots, saving valuable time and energy.

C HÂT E AU N E U F - D U - PA P E | The appellation of Châteauneuf-du-Pape was the prototype for the now common AOC regions used in one form or another worldwide. Located in the Southern Rhône, the name roughly translates to “the Pope’s new castle” as Pope Clement V relocated there in 1308. Laws were drawn up in the early 1900s stipulating all the permitted grapes’ alcohol levels and important low yield that increase grape quality, originally ten grape varieties permitted. That was increased to 13 (1936) then in 2009 up to 18, but really only one producer uses all 18 and that is the highly-priced Château Beaucastel. Most wines here rely mainly on a GSM blend (Grenache, Syrah and Mourvédre). A law that passed in 1954 banned the taking off and landing of lying UFOs!!! A law that has yet to be repealed, or enforced. It is also known for its pudding stones, or galets roulés. These large lat disc-like stones absorb the ierce daytime sun and slowly release the warmth keeping the vines warm during the colder nights. Some stunning wines are produced here - full, complex, spicy and fruit-driven - almost a New World style. If you like big Aussie blends then deinitely try the wines of Châteauneuf.

C A RI G NA N | Carignan (also known as Mazuelo, Bovale Grande, Cariñena, Samsó, and Carignane) is a red Spanish/French wine grape variety that is widely planted throughout the western Mediterranean and around the globe. An unusually decisive grape amongst winemakers, Carignan once was known as the “scourge of South West France” due to the fact that Carignan is not an easy grape to grow; susceptible to mildew and rot, high in tannins and acid. Yet until the end of the 20th century it was, in France, more widely planted than Merlot. Today winemakers have a much better understanding of the grape and great care and attention is lavished on the vines. The grapes are hand-harvested and it makes a full bodied fruit-driven style of wine, that is a very easy to drink.

PRETTY GORGEOUS ROSÉ, IGP PAYS D’OC Languedoc, France | abv 12%

Delightful and dainty with intense lychee, strawberry notes and hints of violet. 175ml £4.60 | bottle £17.95

Chile was once known for cheap bulk unbalanced wine of poor quality. Largely due to a high domestic demand for very cheap wines, there was no need for producers to have to focus on a more discerning export market in the US and Britain. However with the advent of modern winemaking techniques such as stainless steel and refrigeration, coupled with a focus on the export market, Chilean wine has seen a resurgence. Much overseas investment has arrived as established winemakers from Europe look longingly at the potential of some great soils, fantastic climates and most of all altitude, that will always increase quality and give a degree of elegance to wine. Wine is grown from north to south. The north is very hot, and to avoid making jam from the grapes, the cooler temperatures are sought at higher altitude and with a mountain range such as the Andes on your doorstep, you don’t have to look far. Chile boasts some of the highest vineyards in the world. All the well-known international varieties are grown here. Continued focus on the export market will only mean quality will continue to increase...
