Pam Eggum, our Northern alternate, is working hard putting together a great DOS for everyone in St. Charles. We are going back to the classroom and have some wonderful demos and hands on class. June DOS Recap: I would like to extend a thank you to Ann for hosting the June DOS at Celebrations 150 in Utica. Rebecca Stuart showed us a neat idea as a cake topper on how to use a Ceramic Teddy Bear cookie mold. Mary Gavenda showed us a few ways to carve fruit for our baby theme day and I did a quick demo for quick baby shower cakes. In the afternoon we all pitched in and decorated Gingerbread cookies for the Gingerbread showcase at convention. See the finished cake on page 6. Thanks to Kathleen Cheri, along with Mary Gavenda and Donna Wagner for baking the cookies.

Catherine Franczak had the privilege to be one of the judges for the Chicago After School Matters program at The Palmer House. The high school students did an amazing job working in teams building a themed display featuring a tiered cake - led by Chef Gloria Hafer, an amazing, dedicated inspiration. Minutes from the June 26, 2016 DOS  Linda Kelsey introduced a First Timer Gina Soto.       

Everyone there introduced themselves and where they are from. No Old Business. Tanesha Watkins and Catherine Franczyk received an extension on their Illinois Scholarship from last year to June 26, 2017. A donation will be made to the St Jude Hospital in the name of our deceased member Debbie RossGreene. Early Bird winner was Mary Scepurek. Illinois 2016 Scholarship winners were Mary Gavenda and Pam Eggum, they have one year to use the scholarship. For the past year we gave out free raffle tickets when you came to the DOS, did a demo, or brought a display. You could place your ticket in the box for a 1 yr ICES membership or a ICES Convention registration. The winners were Dot Pitcher for the membership and Tanesha Watkins for the Convention registration. Congratulations! We had our elections. Rebecca McGreal was in charge of the Nominations. Illinois ICES Board for the August 2016 to July 2018 are the following: Representative: Linda Kelsey Alternate Central Illinois: Barb Evans Alternate North Chicago: Tanesha Watkins Alternate South Chicago: Donna Wagner Alternate Northern Illinois: Pam Eggum Treasurer: Mary Gavenda Secretary/E-Chair: Sue Matusiak A motion was made that Illinois ICES reimburse Linda Kelsey for the Celebration 150 hall rental in the amount of $100. Linda bartered 2 graduation cakes in exchange for the room rental at Calebration 150. Recommended by Mary Gavenda, seconded by Catherine Franczyk, motion carried June 26, 2016. A motion was made that for future DOS starting with Fall 2016, if someone pays for DOS and doesn’t attend, the individual needs to contact the IL ICES Treasurer or the IL ICES State Representative to request a refund or partial refund ASAP or by the actual DOS. If a registered attendee cancels before any count deadline confirmation to the venue, then the full amount paid will be refunded. If costs were incurred for said individual, such as lunch charge and there wasn’t any walk-in attendee(not previously registed) to cover the non-attending member/guest place, then the amount of incurred expenses will be subtracted from amount paid, refunding the remaining amount. Recommended by Mary Gavenda, seconded by Glenda Kreimeier, motion carried June 26, 2016. ICES Membership renewal is $45 if you want to receive only the digital ICES Newsletter. Save the date for the October DOS will be emailed. Program to promote ICES in Illinois will be looked into by Mary Gavenda, for the cost of a card to give away. ICES Convention is Aug 4-7 in Mobile, Alabama, presently there are 540 registered, 47 vendors, 74 booths sold. On the Friday morning breakfast/membership meeting they will be giving away vendor bucks, which you can use at the vendor booths this year. The Illinois group of Kathleen Cherie, Mary Gavenda and Donna Wagner, put together a 3 tier cake and baked gingerbread cookies. At the meeting everyone helped decorate the cookies, Kathleen made a

Illinois ICES gingerbread state capital of Illinois as a topper. The 3 tiered cake will go to the ICES Convention and entered in the Gingerbread Displays. Gingerbread Display I would like to thank Sue Matusiak and Ann Grenevitch for taking and setting up and finishing up the decorating of the Illinois ICES Gingerbread display. Thank you to Kathleen Cheri for finishing up the extra cookies that did not get decorated at the last DOS. Thanks to everyone who came to the last DOS that put their special touch on the cookies to make our Illinois ICES Gingerbread display a real team effort and very special display. Thank you, it turned out fantastic! Linda

Thanks from Tanesha: When I first found ICES; I was so excited! The first meeting made it even better and I won prizes!! I decided to join and it just got better. I won the raffle for the CONVENTION! And on a day I was bummed about not being able to make the DOS. My first convention was awesome! Seeing everyone there with the same goals and interests was amazing. Seeing all the breathtaking cakes and all of the classes. I'm sold. I love ICES.

Convention News – Linda Kelsey Representative

I had the pleasure of attending convention in Mobile, Alabama. I made it in time for the Reps breakfast, which there was really nothing new to report. The Friday morning General Assembly Breakfast was very long. It didn’t seem that any motions were passed. Good news, Mary Scepurek won $250 cash from the Hank and Betty Jo Steinman 2nd chance drawing. Also, Tracy Brown from Illinois won a century club prize for bringing a cake display to convention.

White Mousse Recipe Submitted by Mary Gavenda White Mousse Recipe Ingredients: 2- 8 oz. cream cheese (softened) 1 cup granulated sugar 2 tsp vanilla 2 pkgs (envelopes) Knox unflavored gelatin 2 tsp Lemon Juice 1 pt (16 oz) Whipping Cream 1 cup milk (whole or 2 %) * optional- Crushed Pineapple or Cherry Pie Filling or Blueberry Pie filling 1. Dissolve gelatin in 1/2 cup cold water in a one or two cup microwave safe cup. (sprinkle on top of water and let it solidify) Cook until dissolved and mixture is clear. (I do it in the microwave very carefully. Make sure it's in a larger bowl/dish so it has room to bubble up and not spill out in microwave. You can also cook it over a double boiler until dissolved). Set aside to cool. I've even put it in a low bath of cool water to help speed up the process if needed. You don't want it hot when you add it to the mixture. 2. Whip Whipping cream and set aside. 3. In another large bowl, Beat cream cheese and sugar together until light and fluffy. Add vanilla. Add cool gelatin to mixture, scraping sides to blend all. Add Milk and blend all and then the lemon juice. Scrape sides and bottom of bowl, making sure to incorporate all. 4. Fold in whipped cream. Pour in bowl. *At this time, I also added 1 can (15 oz.) of crushed pineapple that was drained. Or instead of pineapple, you can serve it with a can of cherry pie filling on top or fold that in too! Folded in, the pie filling will add color too! Enjoy!

From the heart… Carolyn Lawrence from Missouri passed away on September 13, 2016. She was very active in her Missouri ICES Cake Decorators group, which she established in 1983. She was Representative for the Missouri group twice, as well as Secretary for the group twice. She also was a Co-Show Director for the ICES (International Cake Exploration Societe’) Convention in Kansas City in 1995 and 1999. She could also be seen at the banquet ticket exchange, which she chaired for many years with Cora Smith. She spent over 50 years loving what she did and perfecting her cakes for which people still remember the taste and look of today.

ICES has lost another Hall of Fame Recipient but will not be forgotten. Norman Wilton passed away on Aug. 18, 2016, at the age of 94. He was the last living family member of the Wilton Family that supported their dad, Dewey McKinley Wilton, in creating Wilton School which started in their apartment kitchen back in 1929 and eventually expanding into a professional school and cake decorating supplies which later turned into the larger Wilton Enterprises, Inc. Norman shared his talent and inspired so many with the Art of Cake Decorating. Norman decided to put all the techniques(American Style of decorating) into a book form and take a chance at selling it. The first book published was the Pictorial Encyclopedia Modern Cake Decorating. Once the book sold, more publications followed including the Yearbooks and Wilton Way 1, 2, and 3 and so much more. You might even have one of those books in your collection of cake decorating books! He took his teaching across the United States and to many international countries. He was the International figure for the Wilton Family, while Wesley, Mary Jane and Martha taught the classes at the Wilton School in Chicago. Even though the Wilton family members haven't been involved with the Wilton Company for many years, they are still thought fondly and remembered as the one of the main reasons that Cake Decorating took off and became so popular with bakeries and the homemakers so many years ago. YOu might even pick up an old decorating tip that could still be used today!
