We’re not too sure about Santa Stella, two and a half, and Scarlett, 18 months, Wood are not real impressed with Santa when they visited him earlier this month. The girls are the children of Chris and AshLee Wood.

Holiday Greetings Sass volunteers in Honduras as she pays it forward to help those in need of eye surgery

Volunteering to improve the vision of youth Kari Sass, of Postville, was among the volunteers who traveled to Honduras to perform eye muscle surgery on area young people. With the holiday season becoming more and more commercialized, especially with technology and social media, we sometimes need to take a step back in time to remember those less fortunate. Yes, perhaps those who want nothing more than to be able to see more clearly. Kari Sass of Postville did exactly that this fall as she joined a team of other medical professionals and traveled to La Providencia in Honduras where she was a member of a surgical team for at-risk children and young adults needing eye surgery. A newlywed, Kari had the blessing of her husband Mike, when she and over 15 others embarked on the trip October 31. A nurse anesthetist and an operating room manager, Kari is a registered nurse at Central Community Hospital in Elkader. Prior to moving back to Northeast Iowa, she worked at Wolfe Eye Clinic in Des Moines. She said, “I was approached by a group of medical people who were traveling on a medical mission through Sharing Resources Worldwide. Because I have a degree in Spanish, along with my nursing degree, I was encouraged to get involved with the mission. It just seemed like a good fit.” Asked exactly what kind of procedures they were doing, she said, “We were working with kids who needed muscle surgery on their eyes. Many of them had a muscle

deficiency that would not allow their eyes to focus properly.” She further explained, “This is a condition that is prevalent worldwide as well as in the United States. Unfortunately, because many of the people in Honduras are so poor they

are unable to have the corrective surgery without help from outside sources.” Others members of the team, along with Kari, were Charlene Sauer, ARNP, Dr. Kweku Grant, Ashley Szirriania, RN, Tiffany

Michael, ORT, Dick Beinborn, CRNA, John Alamaida,RN, Rose Silveira CRNA, Jessica Hoffmaster, CRNA, Katie Kieler, RN, Dr Rob Bechtel, Wendy Read, RN and .Pat Kriebich, RN. Mary Dowling, RN and the co-founder of Sharing Resources Worldwide was also present. Upon arrival, the team screened over 90 children and young adults and it was decided that 41 were good candidates who would benefit from the surgery. In the end they performed 20 surgeries in a week’s time. The patients, who came from as far away as Guatemala, ranged in age from between six months and 22 years of age. The surgeries were performed in the operating room at the La Providencia and were all out-patient procedures. She said, “We performed surgeries Monday through Friday and all the families were so grateful. There was no cost for the procedures. I helped get the operating room ready for the procedures and with clean-up. Because of my background, I was able to speak to the patients and their parents in Spanish.” She continued, “It was a great feeling to know we were making a difference in kids’ lives. As a team, the surgeons, nurse anesthetists, nurses and surgery tech were able to repair crooked eyes for these children which will, in the long run, help them lead a normal life and, for many, change their live forever.”

“One 19 year-old-girl was able to have straight eyes and focus clearly for the first time in her life. It was wonderful to see her reaction,” Sass commented. Asked if she was hesitant to be gone after having just gotten married a few months earlier, Kari commented, “I knew that Mike was proud of me for wanting to help. He left me a really sweet note in one of my shoes which I found after we got there. I also appreciated the money others gave me toward the trip when they heard I was going. Our goal was to give these young people the same level of care that we would give in the United States. It was also nice getting to meet medical professionals from different parts of the country and come together to

2-3/4 cups all-purpose flour 1/2 tsp. salt 1 cup sugar 1/2 tsp. baking soda 1 cup shortening 1 slightly beaten egg 2 Tbsp. milk 1 tsp. almond extract 24 blanched almonds, halves

In mixing bowl, stir together flour, salt, sugar, baking soda. Cut in shortening till mixture resembles corn meal. Combine egg, milk and almond extract; add to flour mixture, mix well. Shape dough into 1 inch balls and place 2 inches a part on a ungreased cookie sheet. Place an almond half atop each cookie and press to flatten slightly. Bake in 325 degrees F. oven for 15-20 minutes or till done. Cool on a wire rack. Holiday Greetings Wissmann family to present two Christmas shows at the Fine Arts and Civic Center December 27 Following completion of their fifth season in Branson, Mo., the Wissmann family will bring their Christmas Show right from the Doug Gabriel Theater to the Fine Arts and Civic Center in Postville. They will present their show two times on Sunday, December 27, 2015. The first show begins at 2:00 p.m. and the second one begins at 6:00 p.m. The Branson Tourism Center described the Wissmann’s two hour performance as “a celebration of love, faith, and fun as nine Wissmann siblings along with Mom and Dad share impeccable vocal harmonies, and fancy bluegrass pickin’ for this holiest of holidays. They expertly play an amazing variety of instruments that includes banjo, keyboard, cello, flute, mandolin, fiddle, dobro, hammered dulcimer, concertina, bass, and harmonica.” The Wissmann Family now consists of Loren and Gloria Wissmann and nine of their 13 children. Four of their children are now married and no longer travel full time with the family. Four grandchildren have also been added to their clan. The Wissmann Family has delighted audiences with their music across 40 states, Canada and Mexico. Although Loren and Gloria make their home near Milford, Nebraska, they often return to the Castalia area where Gloria was born and raised and where her parents, Gerald and Marlys Hager still live, as do many other relatives and

friends. The Fine Arts Center is located at 314 West Post Street as part of the Postville Community School campus and there will be a free-will offering following the performances. Sponsoring the event will be the Community Presbyterian Church, St. Paul Lutheran Church, St. Bridget Catholic Church, all of Postville and Zion Lutheran Church, of Castalia. Her skills are matched on the violin as she showcases a range from bluegrass fiddling to classical strains.

With her banjo pickin’ and smooth vocals, she adds undeniable flavor to each performance. Alaythia: Instruments: fiddle, keyboard Friendly. Thoughtful. Enthusiastic. She may be young, but Alaythia is already a versatile musician, performing both vocals and instrumentals with flair. Nathanael: Instruments: concertina, percussion, harmonica, guitar Creative. 16 ounces sour cream, regular or light homemade ranch dressing mix, or hidden valley ranch dip mix 2 slices bacon, cooked and finely chopped, plus more for garnish 1 cup shredded cheddar cheese 1 scallion, sliced

Mix the sour cream, ranch dip mix, bacon bits and cheese together in a medium bowl. Cover and refrigerate 24 hours. Top with scallions and extra bacon. Serve with chips. Recipe from foodfanatic.com

FreedomClub donates to Postville Food Pantry and Clayton County Food Shelf The FreedomClub of Postville, Elkader and Monona held their annual Christmas dinner at St. Paul Lutheran Church fellowship hall December 3. Each member who attended donated either nonperishable food items or monetary donations. Several hundred pounds of nonperishables were collected and later divided between the Postville Food Pantry and the Clayton County Food Shelf. FreedomClub members who volunteer at the Postville Food Pantry are Barbara Herzmann, Ronald Fox, Norma Sander, Mary Erickson, Betty Brownson, Kathleen Lange. Audrey Wedo, Carolyn Livingood, Ida Heins, Dona Peck and Carol Lange are also volunteers at the Postville facility.

Gingerbread Cheesecake Bites • • • • •

1 Tbsp. International Delight Gingerbread Latte Creamer 8 oz. cream cheese, softened 2 Tbsp. powdered or granulated sugar 1 cup cool whip 1/2 cup gingersnap crumbs

Line a 13”x 9” baking sheet with a parchment paper. Set aside. Place the cream cheese in a bowl with the sugar and creamer and whip with hand mixer. Add in the cool whip and stir in with a spoon or spatula, until just combined. Spread it out evenly in the 13x9 pan. It will be thin. Place in freezer for 1-2 hours. Place gingersnap crumbs into a small bowl. Scoop the cheesecake mixture with a small cookie scoop or a tablespoon and roll in cookie crumbs. Refrigerate for couple of hours in freezer until they get frozen. When ready to serve, let sit out for 5 minutes at room temperature to desired firmness. Serve and enjoy! Refrigerate leftover bites in a ziploc bag or an air tight container. Gluten Free: Use a gluten free ginger snap for the crumbs

Sunday School Program at St Paul Postville many years ago Many years ago, too many to count, three young mothers, Sunday School teachers at St. Paul Lutheran Church met to plan the Christmas program and make and mend the costumes. A golden opportunity as we each had a young daughter. Yes, they became angels for this special time. Pat Miene’s daughter, Julie gave her mom this framed photo and it became a part of the Miene family holiday decorating for Christmas every year. Her mother Pat commented, “And she continues to be an earthly angel to me.”

CHRISTMAS RECOLLECTION I was born on Christmas Eve. For me it was always a special birthday. In my younger years, my biggest gift was always something new to wear for the Children’s Christmas Eve Program. It was an awesome sight to see the large Christmas tree, ceiling to floor, all lit up and be a part of

the service at church. After church we would go to my grandparent’s home, where we would have an angel food birthday cake and celebrate all the December birthday. In 1998 my grandson, Cole was born on the same day as me so we share that Christmas Eve birthday. That surely made my birthday extra-special again. Now as I get old, it becomes just another day but still is special as we celebrate with the Christ child.

With a birthday on Christmas Eve, Carol (Meyer) Deering’s parents didn’t have any trouble choosing a name for their baby girl. And at the suggestion of her grandmother, she became a favorite family ‘Carol.’ the night she was born. Who doesn’t love a Christmas ‘Carol?’ Although Carol’s parents weren’t expecting their bundle of joy until after the new year, they got their gift a bit early. The story goes something like this: Following the evening meal, Carol’s parents, Bernice and Milo, were getting ready to go to church when a woman from Elgin called

to say that her furnace was out and her house was getting pretty cold. As a conscientious plumber, Milo agreed to come to her rescue. Since it was obvious the couple was not going to get to church, he asked Bernice if she would like to ride along While waiting for her husband in the truck, it became obvious she was not going to be waiting much longer for her baby to appear. After her water broke, and she began to feel some pain, Bernice went to the house and said, perhaps, she needed to get to the hospital. As the heat was restored at the Elgin home, the Meyers headed off to the hospital, and Carol made her appearance at the Old Postville Hospital about an hour later.

What a Christmas gift for the family! Asked if she ever felt slighted because her birthday was on Christmas eve, Carol said, “Not really. Being an only child, my family made sure I was given special attention on my birthday. I had many birthday parties on the last day of school before Christmas vacation. I remember having angel food cakes with seven minute frosting. When I got older, I had slumber parties around my birthday time.”

Along with Pat and her daughter, Julie, the other angels were Julie Lenth, daughter of Laura Lenth and Mary Foels, daughter of Ruby Foels.

She added, “My aunt, who also my godmother, always made sure I had a wonderful day and celebration.” After thinking for a minute, she commented, “I guess if there was one thing that bothered me it was when once in a while my birthday gifts would be wrapped in Christmas wrapping paper. As a kid, I guess I wanted there to be a distinction between my birthday and Christmas gifts. Now it is all about the family. I am always happy to have the kids and grandkids together to celebrate my birthday and of course, Christmas.”

Merry Christmas & Happy New Year

Line a 9x13 pan with foil, grease foil. In a large saucepan, combine sugar, 1/2 cup butter, milk, marshmallows and salt. Bring to a boil, cook and stir 5 minutes. Remove from heat. Stir in chips and vanilla until smooth, spread into prepared pan. Let stand until set, about 20 minutes. In a large microwave safe bowl, melt chocolate chips and remaining butter, stir until smooth. Stir in peanut butter and peanuts. Spread over cherry layer. Let Stand until set, using foil, lift fudge out of pan. This candy is so pretty it looks like Christmas. Fran Schager, Postville
