· 250g white sugar · 1/2 tsp salt · 250g golden syrup · 1 egg · 500g flour · 1/2 tbsp baking soda · 1/2 tbsp baking powder · 1 tsp freshly grated ginger or powdered ginger · 1 tsp powdered cinnamon

Traditional Italian Christmas sweet bread. Made with candied oranges, almonds, rum-soaked dried raisins.

Classic German festive cake with dried raisins, candied orange, almonds, marzipan, a hint of rum.

cinnamon in a large bowl. Set aside. Cream butter and sugar in an electric mixer until pale and fluffy. Add golden syrup and egg; mix well. Gradually fold in flour mixture on low speed until well mixed. Press dough into a flat disk. Wrap in cling film and refrigerate for 1 hour or until firm. 2. Preheat oven to 180°C. Roll out dough to 5mm thick on lightly floured work surface. Cut into gingerbread man shapes. Place 3 cm apart on ungreased baking sheets.

3. Bake for 10 to 12 minutes or until edges start to darken. Cool on baking sheets 1 to 2 minutes. Transfer to wire racks and cool completely before decorating with icing or melted chocolate.
