We produce high quality lactic acid through natural beet sugar fermentation. In food applications this organic acid is mainly used as an acidifier. We complement our range of lactic acid derivatives with vinegars, spice extracts and natural flavours. Galactic also offers a new generation of powders in pure form or in blends with their key property being shelf life extension or controlled acidification release. 2. CULTURES Galactic offers expertise in fermentation methodology and proposes different bacteria strains to enable our customers trigger fermentation (starter cultures), add flavour, stabilise colour and protect against pathogens. For example, some of our protective cultures are very effective against Listeria monocytogenes. Product range: Galastar™ 3. PEPTIDES Also stemming from our knowledge in fermentation, we offer some special metabolites called bacteriocins. These small proteins are able to destroy different types of microorganisms known to spoil many processed meat products. Our Galacin™ range is active against both Gram-positive and negative bacteria, moulds, yeasts, etc. Product range: Galacin™ 4.

FERMENTATES AND FLAVOURS

Fermentates are direct products of the fermentation process. They refer to a range of natural cultured sugars able to enhance the sensory properties of the final meat and poultry products, as well as other parameters such as food safety, nutrition and texture. We also produce flavours to replace salt and thus reduce sodium levels in end-products without compromising on food safety. Product range: Galimax Flavor™ 5. VINEGARS Natural vinegars are used alone or in synergy with lactates to provide shelf life extension. Buffered vinegars are very efficient bacteriostatic ingredients. They have no detrimental effect on the pH nor taste of meat products. They are used at a low concentration enabling low cost in use. Product range: Galimax Flavor™ V 6.

HERB EXTRACTS

Galactic produces spice extracts among its solutions together with combinations including natural flavours. This allows customers to benefit from the full spectrum of shelf life protection: freshness and preservation. III. APPLICATIONS IN CARCASS, OFFAL AND CASINGS BEEF, POULTRY, CASINGS CARCASS SPRAYING During slaughtering, fresh beef carcasses are extremely vulnerable to bacterial surface contamination, such as aerobic (total germs) and anaerobic facultative bacteria (E. coli, Salmonella, Listeria...). Galacid™ solutions reduce bacteria by 5-logs (elimination of 99,999% of the flora) through carcass decontamination and allow carcasses to gain up to 2% weight when frozen. Adding Galacin Nisin™ to the solution achieves even stronger results. Nisin is generally offered in powder form.

POULTRY OFFAL DECONTAMINATION Galacid™ is used in the decontamination process of poultry offal. It is applied in spray form or in a bath, and is able to significantly decrease total germ count and protect against pathogenic bacteria. Standard offal mostly includes chicken legs and skins. CASING DECONTAMINATION AND PROTECTION Casings require proper handling to ensure safety and freshness in meat and poultry products. Galactic offers solutions to protect natural and artificial casings against aerobic bacteria and against moulds & yeasts. Galimax Acidal™ is a liquid blend, based on 4 organic acids, which is able to decontaminate natural casings before the sausage embossment process begins. Galacin Natamycin™ is a powder against moulds and yeasts that is active during the manufacturing and storage of sausages. Galactic also offers a stable liquid suspension of natamycin that is very easy to handle and to dilute with clear water to the desired concentration. IV. APPLICATIONS IN RAW MEAT 1.

FRESH MINCED MEAT (PREPARATIONS) BURGERS, TARTARS, FRESH SAUSAGES, MEAT LOAVES SHELF LIFE EXTENSION Fresh minced beef and pork meat preparations have short shelf live. For grounded meat, shelf life evokes three parameters for consideration: aerobic flora development or aerobic plate count (APC), colour retention and rancidity avoidance. Galactic offers a range of solutions that enables producers to act on shelf life extension as a whole. Red & Fresh™ is our classic shelf life extender for fresh meat. It is very efficient and very easy to use. It acts in combination with ascorbic acid (vitamin C) to provide an ideal colour for the meat. ProMeat One™ is our most advanced concept that combines organic acids with carefully selected herb extracts. This solution is very effective as an anti-oxidant on top of the APC control.

ANTIMICROBIAL & FOOD SAFETY Raw minced meat preparations are products with a high risk of spoilage contamination due to pathogenic bacteria such as Salmonella typhimurium, E. coli 0157:H7, Listeria and many other foodborne pathogens called Anaerobic Facultative Bacteria (AFB). Our solutions increase the food safety of end products. Traditional liquid lactates are well known for their effectiveness in microbial inhibition. However to ensure optimal food safety, a wider range of natural solutions exists today. This array of tools can be used separately to act with specific focus, or in combination, to ensure the best hurdle protection. LOW COST IN USE Galactic offers solutions to reduce the cost in use (CIU) by enabling to reduce the dosage of preservative in meat formulation, thus less volume consumption. More effective solutions also reduce costs in terms of avoiding food recalls or too many food spoilages. With our Galactic Food Doctor™ system, we can advise our customers on the optimal solution for their needs. Galaflow™ offers cost-optimal solutions for customers, in liquid or in powder form. An advanced blend especially designed for low cost in use is our ProMeat One™. Another new development is Galactic’s Galaflow™ range: straight sodium or potassium lactate solutions with higher efficiency, allowing up to 20% reduction of dosage with the same preservation effect. FRESH CUTS MARINATED, INJECTED, TUMBLED MEATS Solutions for fresh cuts are in a way similar to those for fresh minced meats. Nonetheless, some particular challenges in the fresh cuts sector should be highlighted, such as: HEALTH IMPROVEMENT Cardiovascular diseases and hypertension are becoming major health problems worldwide, sodium reduction is becoming a crucial challenge for meat processors to address, in particular in the fresh cuts sector. Organic salts that are based on potassium, rather than sodium, offer a clear health benefit to end-consumers. Galactic produces these salts in a pure form as well as in advanced blends. They enable producers to reduce sodium and nitrite content without compromising on food safety.

ProMeat Plus LS™, where LS stands for “low sodium”, is our most recommended solution for reducing sodium levels in fresh cuts. Producers can reduce sodium content by up to 40% and use this as a strong claim for consumer health.

TARGETED FOOD SAFETY Protective cultures are well suited to fresh cuts preservation they target specific pathogens such as Listeria. These cultures offer the double advantage of being very narrowly focused against a particular pathogen whilst offering a clean label at the same time. Fresh cuts can be subject to contamination and these targeted solutions are highly appreciated by producers for solving specific challenges regarding food safety. CLEAN LABELLING Galactic offers solutions based on natural vinegars and cultured sugars to meet the growing demand for clean label solutions while ensuring optimal food safety. The Galimax Flavor™ V and the ProMeat Aceto™ ranges are vinegar-based products in powder and liquid form that are particularly well suited for fresh cuts. V. APPLICATIONS IN COOKED PROCESSED MEAT FRANKFURTERS, MORTADELLAS, LIVER PÂTÉS, SOUR SAUSAGES, HAMS, BACON SHELF LIFE EXTENSION The main challenge for fine emulsified, injected and cured meat products is to ensure a proper shelf life. Galactic offers an array of solutions based on organic acid blends, spice extracts and bacteriocins. ProMeat Plus™ is the most recommended product to use in these applications because it combines a strong shelf life improvement without impacting organoleptic parameters. This makes it a very easy to use solution and very flexible, so it can be used in different applications. ProMeat Essential™ is the ideal solution when producers need an antioxidant action to ensure the right colour or flavour profile during shelf life. Its natural composition, based on herb extracts, appeals to customers because of its clean label. Cutter in Galactic’s application lab

For customers needing solutions in powder forms, Galactic offers different products in its Galaflow™ (pure Sodium Lactate Powder), its Galimax™ (blends and mixes) and Flavor™ ranges (clean label options). SAFETY Meat producers face high safety expectations. These days, special attention is required in the combat against pathogens such as Listeria, Salmonella or E. coli. Galactic offers specific solutions to target these pathogens. Galimax ACE Powder™, based on blends of organic salts, is a very effective powder for the safety of cooked meat. This product combines superior performance with a lower dosage and efficiently safeguards against common meat pathogens. Galacin Nisin™ is an advanced biotech solution for addressing Grampositive pathogens. It is permitted in a growing number of countries. Today, blends of Galimax ACE Powder™ and Galacin Nisin™ are becoming the most sophisticated solution for ultimate food safety in fine-emulsified cured products. TEXTURE ENHANCEMENT Creating the right texture is of particular importance in frankfurter type products. This is due to water losses during cooking and crunchiness. We have developed a special powder that delivers the correct texture together with shelf life extension: ProMeat Texture™. Note that this solution also enables a reduction of polyphosphates and fat in recipes, thus a better product for end-users. HEALTH IMPROVEMENT ProMeat Plus LS™ is particularly efficient in frankfurter type meats. Its low sodium content combined with its high food safety action enables producers to reduce sodium by up to 40% without impacting taste. VI. APPLICATIONS IN FERMENTED & DRY MEAT SALAMIS, DRY SAUSAGES, DRY HAMS

NATURAL FERMENTATION In addition to proposing traditional starter cultures (Galastar™ range), Galactic has developed a unique lactic acid based powder to replicate fermentation naturally: ProMeat Adagio™. “Adagio” allows customers to control the acidity release in the product over a period of time. ProMeat Adagio™ can complement or replace traditional starter cultures for the acidification function.This opens new horizons for salami and fermented sausage recipes, allowing an optimisation of cost, standardisation, and flavour profiles. ProMeat Adagio™ can naturally and effectively replace coated acids, GDL or other SAPPs and SALPs that are used in non-traditional processes. SHELF LIFE EXTENSION Fermentation is one of the oldest ways to preserve meat. Starter cultures are thus used to give fermented products a much longer shelf life. A careful selection of these cultures is key to achieving the right organoleptic properties throughout the life of the product.

Galacin Natamycin™ is a powder of natural protein used for washing casings, before embossment and during the ripening process. It is active against moulds and yeasts. This solution is also particularly well adapted to all dry meat surfaces. Galimax Acidal™ is also used for casings and decontamination, while Galimax Flavor™ K is a clean label solution to extend the shelf life of casings. TARGETED FOOD SAFETY Galastar LBCU™ and Galastar 027™ are specially selected cultures for killing Listeria monocytogenes. We nickname them the “Listeria-kill” range. While LBCU is a pure culture focused on Listeria, blend 027 also combines acidification and flavouring cultures to give an easy-to-use all-in-one solution for salami producers particularly concerned with Listeria. For targeted cultures against other specific pathogens, please contact us to discuss our different solutions we have. LOW COST IN USE ProMeat Adagio™ is a cost effective solution for acidity controlled processes. The process time compared to starter cultures is much shorter, and the lower dosage (cost-in-use) offers a real advantage over chemical acidifiers such as coated citric acids (GDL).

VII. APPLICATIONS IN POULTRY PRODUCTS CHICKEN, TURKEY, MECHANICALLY DEBONED MEATS

SHELF LIFE EXTENSION Fresh minced poultry preparations are products with a short shelf life. Galactic offers a large range of solutions allowing producers to control the growth of the Aerobic Plate Count, to maintain a good colour and to assure a nice fat stability. The Galaflow™ and Galimax™ ranges are solutions to protect against the whole spectrum of bacteria in poultry products. FOOD SAFETY Raw minced meat preparations are products with a high risk of spoilage contamination by pathogenic bacteria such as Salmonella tiphymurium, E. coli 0157:H7, Listeria and many other foodborne pathogens. Our solutions increase the food safety of the products. Maximum food safety without impacting on the tender taste of poultry products is best obtained with ProMeat Plus™. An innovative food safety solution that is very effective against Gram-positive pathogens is Galacin Nisin™. More information can be found in our Galacin brochure (available on request). HEALTH IMPROVEMENT As cardiovascular disease and hypertension are becoming major health problems worldwide, sodium reduction is becoming a crucial challenge for meat and poultry processors to address. The customer’s choice in this instance is ProMeat Plus LS™. LOW COST IN USE Galactic offers solutions to reduce the cost in use (CIU) by offering more efficient solutions. This enables a meat formulation dosage reduction leading to less volume consumption. ProMeat One™ offers a liquid solution to optimise the cost in use of preservatives in poultry. Today, meat producers are looking for label-friendly ingredients to help meet consumers label demands whilst still producing safe, flavourful products with long shelf life. In response to this need, Galactic has developed a brand-new range of solutions, Galimax Flavor™, clean label applications highly effective against pathogenic bacteria and optimal shelf life extension.

NATURAL FLAVOUR

Effect of Galimax Flavor™ on minced meat Meat flavour

Natural, healthy and tasteful are the main prerequisites in the meat industry today. In response to this need, Galactic has developed an extended range of solutions. The Galimax Flavor™ K-65, K-75, KV-50 and VK-50 are products well suited for poultry products, offering a strong shelf life protection together with mild flavour, welldesigned for marinated or injected meats.

2. VINEGAR Galimax Flavor™V-50 is a liquid solution, labelled as “vinegar”. Based on a natural ingredient, easy to handle and highly effective against pathogenic bacteria, this new solution does not require the use of E numbers (European Directive 2000/13/EC and European standard EN 13188:2000). Galimax Flavor™V-100 is a vinegar-based product in powder form, very effective against aerobic bacteria and certain pathogens such as Listeria monocytogenes as well as moulds and yeast. Galimax Flavor™V-100 does not alter the organoleptic properties of the product, ensuring at the same time optimal food safety and taste improvement.

SPICE EXTRACTS To answer the need of food safety and clean labelling, in marinated meat, with as few E-numbers as possible, Galactic has developed Galimax Spice Extract™ which is a natural solution obtained by fermentation of sugar and spices. It contains lactates, organic acids, peptides, amino acids and other natural flavouring substances, all coming from the fermentation process. These naturally-occurring components help enhancing the salty and meaty taste in a natural and healthy way.

TOTAL FRESHNESS FOR MINCED MEAT

Preparations of fresh minced meat, like hamburgers, meat balls and meat loaves are very sensitive to bacterial growth and manufacturers therefore need to effectively protect them against pathogenic bacteria but also avoid the oxidation of lipids and myoglobin, which causes rancidity and a change in colour of the meat. Galactic developed Galimax Spice Extract™ Plus a clean label preservative to effectively protect fresh minced meat products against oxidation and ensure a longer shelf life, hence guaranteeing total freshness over the whole lifetime of the product.

PREDICTIVE MODELLING TOOLS

As today’s food industry faces the challenges of meeting ever higher quality and safety standards, Galactic has developed a reliable predictive modelling tool that accurately predicts Listeria monocytogenes growth in several food applications under specific conditions. With the aim to help meat, dairy and seafood producers predict the shelf life of their products without having to go through costly and lengthy safety studies, Galactic created two models: The most probable (percentile 50) model The safe (percentile 95) model The super safe (percentile 99,5) model As reliability of the models depends on the environment, Galactic has taken account of a variety of factors that are very important in food such as moisture, salt, temperature, pH, water activity and the use of antimicrobials. Thanks to the predictive modelling tool we’re able to offer our customers the right solutions and prevent potential future risks. This is the most efficient way for food producers to save R&D resources and speed up their time to market. 2. METAGENOMICS Galactic, together with Quality Partner, introduces an innovative technology that identifies the DNA of all microorganisms in food product on one single analysis. It is called Metagenomics. Initially destined for the medical market, this revolutionary technique is now applied to the study of food. It enables the identification of those microorganisms responsible for the alteration of a product and thus provides an opportunity for professionals in the food industry to find the exact solution immediately. With its experience in food preservation, Galactic offers a full range of products to combat the growth of bacteria, preserve food and extend shelf life. Lactic acid, lactates and other derivatives have proven effective in many food applications such as meat, bakery, dairy and fruit & vegetables.
