Food and wine matching Wine is a natural partner to food and the flavours in wine have traditionally been used to complement the flavours in food. Many wines around the world have been developed in style to match the local cuisine. However to the consumer, it can seem a complex subject because there are potentially so many matches of wine to food you could make. Your customers will often look to you and your staff for advice on recommending what wine to go with what food. The following are typical questions you might be asked...

The old rules of “red wine with meat, white wine with fish” actually do still work, but these days there are a huge range of sauces and flavours that accompany each dish and this can make a significant difference. E.g. they might both be chicken, but chicken chasseur cooked with tomatoes, mushrooms and red wine would need a different wine than chicken in a creamy sauce.
