A closer look at como advancedTM como advancedTM pans are comprised of eight layers including three layers of the latest technologies in non-stick coating. A layer of alloy helps to distribute heat evenly throughout the pan, while the hard-anodised finish gives the pan durability; this is followed by a stain-resistant coating. Use & Care Before cooking Wash your new pan in hot, soapy water. Rinse and dry. Some pans may have white manufacturing and packing smudges. If this happens, wash and wipe your pan clean with a soft teatowel to remove the smudge marks, as these are superficial marks only. Cooking heat settings Use a lower heat setting than you normally would, as como advanced™ cookware conducts heat very efficiently. Use the correct heat setting for the cooking method you are using: medium heat for frying, sautéing or stir frying; low heat for simmering or warming. DO NOT use high heat at any time. When cooking with gas, do not allow the flame to extend beyond the base of the pan. Pre-heating Always heat the pan to the desired temperature before adding the food. This will ensure the food cooks as you expect from the moment it hits the pan. Due to the heavy gauge alloy base, the pan heats quickly and evenly. You should not overheat the pan to hasten the heating process. Overheating the pan will cause the non-stick coating to deteriorate and turn brown. Overheating voids the warranty. Oven cooking como advancedTM is oven-safe to 250°C/480°F. Unique lid The pan’s heavy cast lid is truly unique. The heavy gauge retains considerable heat, allowing your pan to function as a stove-top oven. The inside of the lid has a non-stick coating to keep it looking like new. A twist of the lid (on certain models) allows the pouring spout to act as a steam vent. Utensils While the 3-coat non-stick surface of como advancedTM is resistant to scratching, only silicone or wooden utensils without sharp edges or points should be used to avoid damage to the coating. Oils You may use as much or as little oil or butter in your non-stick pan as you’d like. That’s the beauty of non-stick. Many dishes may be cooked with minimal fats for a healthier meal; however, you can add oil or butter for a crisp texture, golden colour and more flavour. TIP: Aerosol sprays should not be used directly on the pan as they leave a gummy residue that is very difficult to remove. For a lighter coating, you can spray the food before adding to the pan, wipe a small amount of oil all over the surface of the pan or use pure oil in a pumpaction spray. Safety As stainless steel handles become hot over time due to high heat, long cooking times, and oven cooking, please take care. Use protective wear when handling hot pans from the stovetop or oven. Never use a wet or damp cloth to lift hot pans. The Chefs Toolbox – Version 1 (January 2012)

Product Guide ~ 2012

Cleaning To extend the effectiveness of the non-stick surface, ensure the pan is cleaned thoroughly after every use. Any build-up of oil or food particles will impede the ability of the non-stick surface to release properly. It is recommended that you; wash the pan while it is still hot; and wash the pan with a microfibre cloth. Where needed, use a non-abrasive cloth on the non-stick surface. Should food particles stick to your como advanced cookware, fill it with warm water and bicarbonate of soda and leave it to soak for 30 minutes. Any food residue should then wash away. Dishwasher use como advancedTM has been treated to withstand occasional dishwasher use. However, we recommend hand cleaning to extend the life of your investment. You should be aware that the dishwasher-safe treatment will withstand 200 cycles in the dishwasher. After this number of cycles, the harsh alkaline agents in dishwasher detergents may begin to damage the hardanodised surface. Storage Do not place pans inside each other; this could scratch the non-stick surface edges. Place the storage bag or a cloth between pans before storage. Warranty como advancedTM pans carry a 10-year guarantee*. The Chefs Toolbox will repair or replace any item of cookware that is found to be defective in material or workmanship when put to normal household use and cared for according to instructions. This warranty is VOIDED by misuse due to: improper cleaning, use of metal utensils, overheating, dishwasher use beyond 200 cycles, accidents (including being dropped), alteration, fire, theft, or use in commercial establishments. The como advancedTM glass lid has a 10 year guarantee*. The Chefs Toolbox will repair or replace any item that is found to be defective in material or workmanship when put to normal household use and cared for according to instructions. The glass lid is heat resistant up to 180°C. It may be placed in the dishwasher for cleaning. This warranty is VOIDED by misuse due to: improper cleaning; use of items at temperatures above recommended range; accidents (including being dropped); alteration; fire; theft; or use in commercial establishments. *Customers must have the original receipt to prove their date of purchase. FAQ What is different about como advancedTM? como advancedTM can be used on induction cooktops; has an exterior coating to reduce staining and keep the cookware looking like new; can be placed in the dishwasher (for a limited number of cycles) and has a thicker base, sides and lids than most other pans. What does hard-anodising do? Hard-anodised surfaces resist abrasion and corrosion, and are extremely durable. Anodised materials have an extremely long life span. An anodised finish is chemically stable, does not decompose, and is non-toxic. A hard-anodised pan is the most durable pan available today. Can metal utensils be used in the pans? We do NOT recommend that customers use metal utensils. The use of metal utensils with your como advancedTM pan will void the warranty. However, occasional use (i.e. once or twice

The Chefs Toolbox – Version 1 (January 2012)

6

Product Guide ~ 2012 throughout the lifetime of the pan) should not damage the hard-wearing anodised triple-layer coating. We recommend the use of silicone, nylon and wooden utensils at all times. Can como advancedTM be used on induction cooktops? Yes! como advancedTM is one of the few high-end cookware ranges available in Australia and New Zealand with this feature. (Excluding Chefs’ Grill and Griddle Pan.) What is the purpose of the stainless steel base? Apart from giving the pan a modern and stylish look, the stainless steel base allows the pan to work on induction cooktops. Note: the addition of stainless steel to the thicker como advancedTM base means that it may take slightly longer than expected for the pan to heat to the desired cooking temperature. The stainless steel base has developed rust spots. Can they be removed? The grade of stainless steel required for the base of the pans to be magnetic (and thus work on induction cooktops) means that it may be subject to developing water or surface rust spots. These can be easily removed by rubbing with a light scourer. Can the glass lids go in the oven and dishwasher? Yes, the glass lid is oven-safe to 180°C/356°F. It is also dishwasher-safe. What is the Neptune non-stick material made of? Our non-stick coating is made from synthetic polymers, reinforced with ceramic particles. Doesn’t non-stick peel off? Older technology did, but the 3-coat technology of como advancedTM is significantly more reinforced than previous technologies. Applying the coatings over a hard-anodised surface results in a bond that is 3 times stronger than if applied over pure aluminium or stainless steel. Should your non-stick coating peel, it is a valid warranty claim. Does anything stick to the pan? como advancedTM uses the latest in non-stick technology which allows for cooking with very little oil. Over time, however, certain high-protein foods (such as eggs) can catch, so we suggest adding a tablespoon of oil. This is much less than required in stainless steel pans and is no different from other high-quality non-stick pans available. Isn’t the surface just like Teflon? No. Teflon is a brand owned by DuPont, the second-largest manufacturer of non-stick surfaces in the world. We have developed como advanced’s “Neptune” coating in conjunction with our supplier to incorporate the latest technologies in both durability and release. It is a 3-coat system, giving it greater ability to withstand both temperature variations and metal utensils. The quality of the non-stick finish is dependant not only on the finish itself, but also what it is coated onto. In the case of como advancedTM, the pan is much thicker than most, giving very even heat distribution. As well as improving the cooking, it reduces variance in the heat on the coating and reducing the chance of splitting. The internal surface is hardanodised. The bonding of non-stick to hard-anodised surfaces is 3 times stronger than the bonding to pure aluminium (hence Bessemer’s 5-year guarantee vs. como advancedTM’s 10year guarantee). Where is the cookware made? Como advancedTM is manufactured to our design in China. Our supplier is the largest cookware supplier in China, with sales to final customers of approximately $1 billion. Their processes are internationally certified for both quality and environmental standards.

Product Guide ~ 2012 Warranty The Chefs’ Grill and Griddle Pan are subject to the standard como advancedTM product warranty. FAQ Why can’t the Chefs’ Grill and Griddle Pan be used on induction stovetops? The Chefs’ Grill and Griddle Pan are not suitable for induction cooking because they do not have a stainless steel magnetic base due to the rippled design of the pan. Can the Chefs’ Grill and Griddle Pan be used on the BBQ, in the oven or under a grill? The Chefs’ Grill and Griddle Pan can be placed on the BBQ, in a conventional oven and under a conventional griller where the temperature does not exceed 250°C/482°F. Use & Care Before cooking Silicone Bakeware should be washed in warm, soapy water before first use. Oils Silicone Bakeware does not need to be greased, sprayed or floured for most everyday cooking requirements. There are times when cooking spray or flouring may be required to ensure a perfect result:  the first few times you use your Silicone Bakeware, so that you can familiarise yourself with the product and how to turn out or “pop up” cakes and muffins  when making soufflés or any other egg dish (protein sticks to everything)  when making moist cakes like banana cakes and carrot cakes  when you need to remove a cake from the Silicone Bakeware while it is still warm (this is what commercial bakeries do)  when making cakes that use very fine flour or are very “airy” and thus easily broken (e.g. sponge cakes and packaged cake/muffin mixes)  Anytime you want to ensure a perfect form for a larger/more complex Silicone Bakeware shape (e.g. making a Kugelhopf cake for a special occasion). Oven cooking Silicone Bakeware is oven-safe to 230°C/446°F. It can be used in the microwave and in conventional gas or electric ovens. Freezer Silicone Bakeware is freezer-safe to -40°C/-40°F. Releasing food from Silicone Bakeware To achieve the best baking result with Silicone Bakeware, allow your baking to cool completely before turning it out. As the pan is flexible, the food needs to have stabilised before removal. Pull each side away from the food product. Bend down the sides, or invert and push on the base of the pan. Do NOT use a knife to remove or cut portions in the Silicone Bakeware pan, as this will damage the silicone. The more you use your Silicone Bakeware, the better the non-stick properties become as the material becomes “seasoned”. Cleaning After everyday use, your Silicone Bakeware can be washed in warm, soapy water or placed in the top shelf of the dishwasher. Storage When clean, squash into any spare space in your cupboard or tie with elastic bands.

FAQ Is silicone safe? Yes. Since the 1960s silicone has replaced rubber in baby bottle teats, as it is inert/stable. The silicone in our products is made in Japan. It has been approved for food use in the US, Europe, Japan and Australia. Widespread use in Europe and the US provides clear anecdotal evidence of its safety. In addition, tests performed in accordance with US Food & Drug Administration guidelines show that emission levels in Silicone Bakeware are negligible. In the most common scenario they measure less than 0.1% of the required standard. There is no reason, anecdotal nor scientific, for safety concerns. The reason Silicone Bakeware is non-stick is because it is completely inert. Does it ever stick? Occasionally, very moist foods may stick slightly. This is a function of physics as wet solids suction onto surfaces. This can be overcome by dusting a little flour or cocoa into the mould before pouring in the batter. Alternatively, place the cooled dish in the freezer for a few minutes. As the silicone takes on the ambient temperature very quickly, it causes mild iciness on the surface of the food, allowing for effortless removal. High protein foods, such as egg, can also stick slightly. Commercial kitchens do spray Silicone Bakeware with canola oil to ensure easy removal and perfect form. Even when hot, the food slips straight out. The other benefits of perfect form and easy cleaning are even more apparent if you grease lightly. Does spraying Silicone Bakeware damage the silicone? No. Both cooking spray and flouring enhance the non-stick qualities of Silicone Bakeware. Cooking spray results in the product having a more crusty edge. Does it stain? Burnt baked on foods, or the use of certain ingredients such as chocolate, dried fruits and eggs, can slightly discolour the silicone. This does not affect its performance. It has developed a slightly greasy finish from the food that doesn’t seem to wash off. This does occur. It is simply the Silicone Bakeware being “seasoned” and is not unhealthy. It can be removed by placing in the dishwasher or boiling in a pot of plain water for 10 minutes. It will come out looking like new. Note, however, that you will be removing the natural seasoning, which improves its performance.

Use & Care Utensils: Use only silicone or wooden tools with no sharp edges or points on the non-stick surface. Oils: You may use as much or as little oil or butter in your non-stick Cookie Tray as you’d like. That’s the beauty of non-stick! Many dishes may be cooked with minimal fats for a healthier meal, however, you can add oil or butter for a crisp texture, golden colour and more flavour. TIP: Aerosol sprays should not be used directly on the tray as they leave a gummy residue that is very difficult to remove. For a lighter coating, you can spray the food before adding to the pan, wipe a small amount of oil all over the surface of the tray or use pure oil in a pump action spray. Cleaning: Wash in warm soapy water before use and may be placed in the top shelf of the dishwasher. To extend the effectiveness of your non-stick surface, ensure the pan is cleaned thoroughly after each use. Any build up of oil or food particles will impede the ability of the non-stick surface to release properly. It is recommended that you; wash the tray while it is still hot using a microfiber cloth. Where needed, use a non-abrasive (non-stick approved scourer) cloth on the non-stick surface. Should food particles stick to your Cookie Tray, fill it with warm water and bicarbonate of soda and leave it to soak for 30 minutes. Any food residue should then wash away. Please note that the Cookie Tray can warp slightly when heated and will return to original shape when cooled. Warranty: 30 Days

Product Guide ~ 2012 Cleaning Wash the Ultimate Aussie BBQ Saviour in warm, soapy water or place on top shelf in the dishwasher. The plastic storage cylinder should be hand-washed in warm, soapy water. Do not place in the dishwasher. Warranty The Ultimate Aussie BBQ Saviour is guaranteed for 12 months against manufacturing defects. This does not include creasing, or burning from direct flame. FAQ What is the Ultimate Aussie BBQ Saviour made from? The Ultimate Aussie BBQ Saviour is made of fibreglass-reinforced fabric. Does food crisp when cooked on it? Yes. The material allows heat to transmit directly through to the food. Why is the sheet two-toned? The Ultimate Aussie BBQ Saviour has two different coloured sides, black and silver, for more hygienic cooking. When using the Ultimate Aussie BBQ Saviour, one side can be used for meat and the other side for seafood, vegetables or anything else you are cooking on the BBQ, to help minimise cross-contamination. Can it go over the flames? No. It must go on the plate of the BBQ. Does creasing of the Ultimate Aussie BBQ Saviour impair performance? The non-stick characteristic is not impaired. However, if it becomes heavily creased, the heat won’t be transmitted as efficiently. Simply iron the clean Ultimate Aussie BBQ Saviour on a low heat to remove creases. Where is it made? The Ultimate Aussie BBQ Saviour is designed by The Chefs Toolbox in Australia and manufactured in China.

Forged knives

Benefits

  

Hand-polished and honed Sharp, stiff blade Ergonomic handle Polished, wax-coated handles Perfectly balanced All individual knives come with a protective sheath

       

Knife stays sharp for longer Knives will hold their edge for maximum performance and durability More hygienic as there are no gaps in which bacteria or food particles can collect Super-sharp edge will hold for longer Elegant looks Makes cutting easier & safer Firm & comfortable grip Non-slip for safety Resists scratching Easy on the wrist Protect your blade and your fingers

The Collection Cook’s Knife (20cm blade) The blade is wide at the heel and tapers to a point. The heavier weight and razor-sharp edge make for effortless chopping of meat, vegetables and large items such as watermelon. The Cook’s Knife is also good for carving. Fusion Knife (18cm blade) The ultimate food preparation knife. With a thin and very sharp blade, it’s a cross between a traditional Asian cleaver and a Western cook’s knife. Use for cutting starchy vegetables such as potatoes and pumpkin, as well as chopping onions and herbs. Fusion Wave (13cm blade) Smaller than the Fusion, this is a very versatile knife. The dimples on the blade reduce friction to make slicing easier, and help stop food from sticking to the blade. Good for chopping cucumber, chives and small shallots or fruit such as apples, oranges and mangoes. Bread Knife (22cm blade) Super-sharp serrations and a longer blade than other bread knives to slice through any type and thickness of bread, or cut a cake in half to fill. Not recommended for cutting meat, fruit or vegetables. Utility Knife (15cm blade) A slicing and trimming knife for those who prefer a serrated blade. Ideal for tomatoes or cutting French bread into thin slices for croutes. This type of knife does not require sharpening. Not recommended for use with pumpkin and other large firmer items.

Knife Sharpener Featuring a 3-step sharpening process for sharpening and maintaining your knife blades. Step 1 re-edges a blunt knife. Step 2 gives a rough hone. Step 3 gives a fine hone.

Use & Care Use The appropriate knife should be selected for the recommended use. ie. A paring knife is recommended for cutting cheese or fruit not for cutting pumpkin. When cutting, do NOT use a sawing motion except when using a serrated knife. Always push the knife away from you and down to the board. Let the sharpness and the stiffness of the blade do the work for you. Knives used on glass cutting boards or ceramic/marble bench tops will become blunt quicker. A wooden or polyethylene cutting board is recommended. Do not allow your knife blade to come into contact with bones (such as in a roast) or other hard materials like a stone in an avocado, as this may damage the blade. The Chefs Toolbox – Version 1 (January 2012)

22

Product Guide ~ 2012 Care & storage Do NOT place in the dishwasher. Due to the composition of the metal, all top quality knives suffer from the aggressive cleaning agents in a dishwasher. Make sure you dry your knives thoroughly after washing to prevent surface spots. Sharp knives should never be stored loose in a drawer. Always store your knives in a knife block, on a magnetic rack or in the protective sheath in a drawer. To clean the Knife Block simply wipe with a clean damp cloth. Dry with a soft cotton cloth. Do NOT place any part of Knife Block in the dishwasher or immerse in water. Maintenance & sharpening To maintain your knives in top condition, simply wash and dry well after each use. For maximum performance and safety, sharpen your knives when needed. Do NOT sharpen serrated knives. Warranty Knives have a lifetime replacement guarantee (i.e. 25 years)* for defective workmanship. This does not cover damages occurred as a result of poor maintenance, normal wear and tear (this includes dropping) or misuse. Knives must not be used to open jars or cans at any time as this may chip the fine blades. They must not be put in the dishwasher as the corrosive detergent can pit the metal. The guarantee does not cover surface marks that occur if the knife is not washed and dried after use. The marks can simply be brushed off with a nylon scourer. NOTE: Care must be taken when placing the knives into the knife block especially on the red Knife Block to prevent chipping of the paint (this refers to versions of the Knife Block, previous to the Stainless Steel top panel). The warranty does not cover scratches and marks on the Knife Block which have occurred after purchase. The Knife Block is covered by a 30-day replacement guarantee for defective workmanship. This does not cover scratches and marks which have occurred after purchase, or a knife block which does not sit level upon receipt as this can be easily adjusted by loosening and retightening the bolts. *Customers must have their original receipt to prove date of purchase.

FAQ What makes our knives different? The Chefs Toolbox Knives are forged (i.e. made from a single piece of stainless steel), which makes them stronger and more durable. They are hand-polished and honed, giving a super-sharp edge that will hold for longer. They have polished, wax-coated handles, which won’t stain or scratch. The thinner, slightly more brittle blades also allow for a longer lasting sharpness and are much lighter than other brands of knives. The range is a modern take on traditional German knives, which are generally regarded as the best in the world. They are very similar to the highest-quality knives available in Australia, but we are able to offer them at substantially lower prices than traditional outlets.

The Chefs Toolbox – Version 1 (January 2012)

23

Product Guide ~ 2012 What are the knives made from? All knives are made from high-carbon stainless steel. The number X50CrMoV15, which you’ll see printed on each knife, indicates the best quality steel. This is a world-renowned European standard. This type of steel is a combination of a number of elements including carbon steel for resilience and ease of sharpening, and chromium to prevent corrosion. It is easier to care for than traditional steel, and holds its edge much better than “soft” stainless steel. The blades on our knives are thinner and a little more brittle than other knives, and care must be taken not to drop them as they may chip or crack.

Products returned with inadequate packaging resulting in damage If you or one of your customers is asked by The Chefs Toolbox to return a product for testing/assessment, we will provide clear instructions on packaging items well, to avoid damage in transit. It is your or your customers responsibility to package items well with items such as bubble wrap, air bags, cushioning materials and a sturdy box, not just wrapping or placing in postal satchels. Special care must be taken with delicate items such as the Portable Induction Cooktop and the Electronic Scales. If an item is damaged in transit, The Chefs Toolbox will not replace or refund the item.
