- SCOTTISH LOWLANDS Often referred to as the Lowland ladies, the Lowland whiskies have traditionally been gentler in both colour and body compared to their more robust highland counter parts. Glenkinchie and Auchentoshan are the sole surviving Lowland distilleries with Auchentoshan being the only distillery that still triple distills their whisky; something the lowland whiskies once were famous for. (For those who are interested in lowland whiskies we do recommend seeking out Rosebank. This beautiful whisky was widely regarded as one of the finest in Scotland, but was closed by Diageo in 1993. We do our best to keep some Rosebank on the bar although availability is limited) With little or no peat used in the drying of the malt, the whiskies distilled here are generally fresh and light, fragrant and floral with cereal flavours. We often recommend these are great pre-dinner malts.

AUCHENTOSHAN THREE WOOD

GLENKINCHIE 12YO

This unique Auchentoshan Lowland Single Malt Whisky has been matured in three different cask types. Moving from American Bourbon to Spanish Oloroso Sherry - and finally Pedro Ximenez Sherry casks - Three Wood is a rich, complex whisky with incredible toffee and sherry oak flavours.

Located about 23km out of Edinburgh, Glenkinchie is a great distillery to visit as its old malting floors have been turned into a malt whisky museum. In many ways the quintessential Lowland Malt The Glenkinchie 12 Year Old was named Best Lowland Single Malt at the 2013 world Whiskies Awards.

NOSE Blackcurrant, brown sugar, orange, plum and raisin.

NOSE Aromatic, vanilla, cut flowers and beneath, a clean, toasty note. Increasingly sweet and creamy, with fresh citrus, lemon cheesecake.

PALATE Fruit and syrup. Hazelnut with hints of cinnamon and lemon. A butterscotch sweetness adds to the overall complexity.

PALATE A light and smooth whisky. A sweet, soft start becoming flowery. Crisp mid-palate then butter icing, lemon cheesecake and freesias.

FINISH Fresh and fruity, with long lasting oaky sweetness.

- CAMPBELLTOWN Although Campbelltown is widely recognized as its own whisky region, and indeed it used to be Scotland’s premier distilling town, with as many as 37 distilleries in the 19th century, and earned the nickname “The Whisky Capital of the World”; Campbelltown whiskies have been hard to come by in recent years with only two surviving distilleries: Spring Bank & Glen Scotia We have included it in our whisky log as we are big fans of Campbelltown whiskies and we hope you’ll dig them too.

The oldest independently owned distillery in Scotland, Springbank was founded in 1828 and is one of the only distilleries in Scotland that carry out the full production on the one site.

Also produced at the Springbank Distillery, this great little dram actually has an Aussie connection. Importer and whisky collector Shane Kalloglian apparently had a hand in brokering a deal where Australian wine casks were used to age this whisky. It’s hard to come by and so we have done our best to secure as many bottles as we can for your enjoyment.

RED AUSTRALIAN CABERNET SAUVIGNON CASK

The Springbank whisky range is produced using lightly peated barley and distilled two and a half times.

NOSE Sweet in the beginning; raspberry jam and hints of rose petal. As the nose develops it reveals a light peatiness, with cherries, red grapefruit and blood oranges.

NOSE Lightly spiced, orchard fruits, vanilla and hints of peat. PALATE Rich and oily with only light smoke, malt, oak, nutmeg, cinnamon and vanilla.

PALATE Initially oaky and leathery with a little bit of tobacco and salt, and a good whack of peat. The Cabernet Sauvignon influence appears later with some blackberries and cinnamon.

FINISH Sweet with a lingering salty tingle.

NOTES

FINISH Long and peaty. Definitely coastal in style, there is a touch of mellow fruitiness here too. YOUR RATING

- HIGHLANDS Both the Lowlands and the Highlands were regions created as a result of English taxation and the various rules that were applied to them. The Highland Line Act was established in 1784 effectively banning whisky production above this line. Whilst this did not deter the locals it did mean that production was smaller and the whiskies as a result became more robust. Traditionally Highland whiskies are more full bodied, richer and sweeter than their Lowland counterparts. The Highlands can be further broken down into west, east, north and central and may also include both the islands and Speyside & Campbelltown. For the purpose of this log we have however decided to feature the Islands as their own region as well as Speyside. .

ANCNOC 16YO

DALMORE 18YO

Created at the Knockdhu distillery in Aberdeenshire (up on the North east corner of Scotland), the distillery started bottling their whiskies under the anCnoc label, to help avoid confusion with the perhaps slightly more well known Knockando distillery.

The Dalmore distillery is located at sea level on the Northern shores of the highlands and has become known for their heavy and rich character. As well as of course the iconic silver coloured Stag that is the brand’s emblem.

This malt has spent the entirety of its sixteen years maturing in bourbon barrels and is quite light and refreshing with lots of citrus.

Matured initially for 14 years in American white oak ex-bourbon casks, the whisky is then transferred to 30 year old Matusalem oloroso sherry wood for a further four years. Bottled at 43% alcohol by volume.

NOSE An intense aroma that awakens your senses with bursts of citrus, before slowly melting into a soft and sweet, fragrant vanilla.

NOSE Vanilla, dark chocolate, orange & cinnamon.

PALATE Light and zesty with a hint of spice, warming up to what can only be described as ‘stick to your teeth’ toffee.

PALATE Dark chocolate, candied citrus fruit, rich coffee, nuitmeg & cloves.

FINISH A long and lingering finish leaving you ready for the next sip. NOTES

DALWHINNIE DISTILLER’S EDITION

EDRADOUR 12YO PORT FINISH

One of the highest distilleries in Scotland, the clean, heather-honey flavours of Dalwhinnie single malt whisky reflect its Highland mountain environment. We are big fans of how the second maturation in Oloroso sherry casks created fragrant Oloroso Sherry overlays, but does not mask, the heather honey distillery notes.

Hidden in the heart of Perthshire, Edradour remains Scotland’s smallest distillery and arguably the most unique. Edradour operates with the smallest traditional stills in Scotland, using worm tubs to cool the spirit and the last ‘Morton’s refrigerator’ in operation to cool the wort. Only twelve casks of whisky are produced a week, making Edradour a rare pleasure for a fortunate few.

NOSE Fresh sherry embraces the maltier, more honeyed aspects of Dalwhinnie. Peaty and surprisingly, still heathery. Spicy yet grapy.

NOSE Sweet in the beginning; with notes of sticky toffee, vanilla fudge, raisin and toasted almonds.

PALATE A light to medium bodied whisky with a big, spicy buzz followed by an impressive build up of very clear, well defined malt. After a quick burst of sweetness, a rich, grape effect moves in towards the middle.

PALATE Rich, creamy, mouth coating fruit cake flavours with salted caramel undertones, dried cherries and cooked apples. FINISH Long and dry, with a hint of smoke. The port finish adds complexity without dominating, all of this sits on a bed of minty, resinous oak.

FINISH Lots of oak. Very dry with vanilla dominating. NOTES

GLENDRONACH 15YO REVIVAL

OBAN 14YO Often described as a coastal malt Oban is the frontier between the West highlands and the Islands; the meeting place between land and sea. The misty maritime character of its location, with a background of heather and peat is perfectly echoed in the malt whisky produced at Oban.

Apparently the second distillery to apply for a license to distil whisky under the excise act of 1823, it has changed hands a few times and even endured a closure as recent as the 1990’s – however under owners Ben Riach Distillery Company is currently producing some amazing whiskies.

NOSE Rich sweetness and fruits – oranges, lemons and pears, with sea-salt and peaty smokiness.

The distillery is famous for producing highly sherried whiskies that are rich in character and palate, and this 15yo is no different.

PALATE Full bodied and rich with mouth filling late autumn fruits, dried figs and honey sweet spices, followed by a smoky malty dryness.

NOSE Incredible concentration of aromas. Big and bold. Dark chocolate, treacle toffee and candied fruit – oranges, raisings and plums. PALATE Full bodied and very rich. Stewed fruits, bitter chocolate and all spice. Cinnamon in particular. A spicy edge with a chewy texture.

FINISH Long, smooth-sweet finish with oakwood, dryness and a grain of salt.

FINISH Long, sweet and rewarding chocolaty finish. NOTES

OLD PULTENEY 21YO

ROYAL LOCHNAGAR DISTILLER’S EDITION

The Old Pulteney distillery in Wick is one of the most northerly distilleries on the Scottish mainland, and are known for their fabulous maritime malts. Their 21yo was voted World whisky of the year by the prestigious “Jim Murray’s Whisky Bible”.

Since we first opened Eau De Vie we have always made sure to have a solid selection of Royal Lochnagar, despite the brand not being available in Australia. Thankfully this has now changed and it’s become easier to get our hands on this great drop.

NOSE Rich with traces of apples and pears. Slightly fragrant with spicy overtones.

Apparently a favourite of Queen Victoria and Price Albert and conveniently located close by Balmoral Castle, Royal Lochnagar is a fresh and complex whisky.

PALATE Full bodied and creamy with toffee, vanilla, baked red apple and a hint of smokiness.

NOSE Immediate strawberry jam, then a rich malty heart and Dundee cake

FINISH Long, dry and with nice lingering smoke.

PALATE Medium bodied and oily with a silky cereal smoothness. FINISH Soft and biscuity, as with old-fashioned fig rolls. Lovely late warmth.

- SPEYSIDE Over half of Scotland’s malt whisky distilleries can be found within this one region. Speyside – the lush, fertile valley of the River Spey is undoubtedly the heart of single malt whisky distilling in Scotland. It’s classic flavours of honey, vanilla and fresh fruits (apples, pears) combine to create whiskies that are both sophisticated and elegant. With age, and especially when matured in sherry casks, they evolve to deliver dried fruit and sweet spice flavours

THE BALVENIE 12YO DOUBLEWOOD

CRAGGANMORE DISTILLER’S EDITION

The Balvenie DoubleWood is a 12 year old single malt which gains its distinctive character from being matured in two wood types. Over the period of maturation it is transferred from a traditional oak whisky cask to a first fill European oak sherry cask. Each stage lends different qualities to the resulting single malt ~ the traditional casks soften and add character, whilst the sherry wood brings depth and fullness of flavour.

Known for its uniquely shaped “hammer head” stills, Cragganmore is said to be one of the most complex of the Speyside whiskies and is recognized as one of the areas greats. This Distiller’s Edition has been finished in port wine casks as part of its double maturation process creating a sweet and deeply fruity oak-smoked malt. NOSE Sweet and malty. Fruitier and juicer than the standard bottling with a hint of smoke.

NOSE Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.

PALATE Medium bodied, firm and sweet with smoky undertones and fruitiness. Malt, oak and smoke and the base. Intriguingly layered.

PALATE Smooth and mellow with beautifully combined flavours ~ nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.

FINISH Medium to long with fine, oaky expressions from bananas to vanilla and cocoa. Ends up much drier than it started

GLENFIDDICH 18 YO A great whisky from the world’s number one selling Single Malt brand this 18yo has been matured in both Spanish Oloroso wood and American creating a rich, intriguingly fruity and robust oak expression.

Home to the largest stills in Speyside Glenfarclas is known for its weighty and substantial whisky, and remains one of few distilleries to maintain direct firing for their stills. The 105 is a superb cask Strength whisky and had been rated “Best bang for your Buck” whisky by the Malt Maniacs.

NOSE A remarkably rich aroma with ripe orchard fruit, baked apple and robust oak.

NOSE Complex, oaky, apples and pears, and a tempting dark toffee sweetness.

PALATE Richly delivers luxurious dried fruit, candy peel and dates. Overlaid with elegant oak notes.

PALATE Dry and assertive, develops quickly to reveal a rich spiciness, combined with a hint of oak and sherried fruit.

FINISH Warming, rewarding and distinguished.

FINISH Amazingly smooth for the strength; wonderfully warming and with a lingering smokiness, yet very rounded. NOTES

The final four months of the Glendiffich 21 Year Old’s yo maturation is spent casks that once contained premium Caribbean rum. The Gran Reserva barrels selected by the Glenfiddich Malt Master, adds to the whiskies distinctive and complex flavor.

One of our favourite Speyside malts, and the winner of multiple golds at the International Wine and Spirits competition the Glenlivet 18 always delivers. The first distillery in the area to take out a license in 1824 the Glenlivet has been described as The single malt that started it all”.

NOSE Intense and vanilla sweet. Floral, hints of banana, figs, rich toffee, new leather and oak.

NOSE Very aromatic with demerara sugar, cut flowers, cooked pear and anise with hints of smoke.

PALATE Initially soft, then brisk, vibrant and drying. Peppery with a touch of smoke, oak, lime, ginger and spices.

PALATE Medium to rich body with sandalwood, dried stone fruits and orange peel.

FINISH Very long, warming, dry and spicy.

GLENROTHES 1995

LONGMORN 16YO

Glenrothes stands out from most other whisky distilleries in that they define and determine their bottlings not by age, but by vintages. The house style is a warming, mouth coating creamy spirit with the classic Speyside pear drop character. Although the distillery began its vintage program in 1993, the 1995 Vintage bears the distinction of being the very first vintage specifically laid in cask with the intention of, when mature, bottling as The Glenrothes.

A relatively quiet distillery the Longmorn has managed to develop a cult following over the years and is said to be particularly popular in Japan. The house style is that of a thick, malty and fruity whisky that developes to show some wonderful complexity at advanced age.

NOSE Floral, citrus and butterscotch notes with a hint of spicy white pepper and cedar wood syrup.

PALATE A rich and compact whisky with notes of lemon zest and leafy greenness. Dry and full oak flavor with good level of tannins.

PALATE Rich, sweet, soft fruit flavor, leading to a rich spiciness.

FINISH Long and dry with a zesty quality.

NOSE Fresh and green with notes of apple peal, hints of citrus and herbal notes.

FINISH Sugared citrus peel, soft fruits and medium dry with abundant spices. NOTES

Despite this being nearly impossible to source these days we decided that the Morthlach 16 had to be made available as a ‘must try’ to our Malt Masters members. We’ve therefore stocked up as best as we can on this beautiful malt whisky which was released under the Flora & Fauna banner. Some serious sherry sweetness from perhaps Scotland’s most criminally underexposed distillery.

Often described as Scotland’s most attractive distillery with its cobblestone courtyard, soaring pagodas and a water wheel Strathisla typifies the romantic idea of a Scottish distillery - it is also quite famously ‘The Home and Heart of Chivas Regal”. NOSE Rich and fruity, with a complex array of hay-like aromas balanced with a dry oakiness.

NOSE Fresh and floral with some developing smoke.

PALATE Full, fruity and hay-like with a mellow nutty sweetness.

PALATE Gentle smoke mixes with heather and toffee sweetness. Juicy and chewy sultanas, orange peels and a hint of amontillado.

FINISH Rich and mellow.

FINISH Long, sweet and well smoked oaken warmth. NOTES

JURA SUPERSTITION

LEDAIG 10YO

Being next door neighbour to Islay one might expect big smoky whiskies similar to that of its famous neighbours, yet instead Jura produces a variety of whiskies both peated and unpeated.

This beauty is distilled at the Tobermory distillery on the Hebridian Island of Mull and takes its name from the original name of the distillery which was founded in 1798 under the Ledaig name.

One of the most distinctive whisky bottles around with each expression comes with its own unique symbol on the front. The one on the front of Superstition is the Ankh Cross – an ancient Egyptian symbol of good fortune.

The distillery is today mostly known for its Tobermory brand, however the Ledaig label is reserved for its smokier whiskies and is a great addition to the repertoire for any Islay fan. This is a floral yet robust and smoky dram – peat heads, this is for you.

NOSE Some light peat on the nose, sweet heather cocoa and rich fruits.

NOSE Sweet briny smokiness, mildly antiseptic, creosote, wax polish, mint chocolate, floral seaside aromas.

PALATE A Medium bodied and silky whisky with peach, honey and light smoke.

PALATE Sweet yet medicinal flavours release sparks that lead to an explosion of spicy pepper. Smoke subtly boasts savoury salt maltiness.

FINISH Light and dry with some lingering smokewarmth. NOTES

Scotland’s second most northern distillery, Scapa hails from the largest of Orkney’s 70 islands known as The Mainland. Originally bottled as a 12 year old, then as a 14 year old before finally finding its niche as a 16yo single malt Scapa is a less peaty drop than most of the Island whiskies and is known for its rich honeyed taste.

A favourite of owner Sven Almenning to the degree that his dog (a Sharpei malamute cross) is named after the Whisky: Talisker or Tally for short The only whisky to be made on the rugged Isle of Skye, Talisker has become famous for its ability to balance its deep smoky characteristics with the rich and fruity characters of its whisky.

NOSE Rich and thick with honeycomb and toffee, dried orange peels and marmalade.

Awarded the title Best Whisky in the World at the 2007 World Whiskies Awards.

PALATE Full bodied and silky with beautiful heather notes and honey oak married with winter spices; cinnamon and cloves.

NOSE Rich and fruity victoria plums, dried orange peel with some butterscotch or rum toffee and a thread of smoke behind.

FINISH Long and dry with faint hints of smoke.

PALATE Full bodied, rich and smooth with some sweetness in front before becoming more assertive with a good whiff of smoke. The overall effect is warming.

TOBERMORY 15 YO Established in 1798 under the Ledaig name which today has become synonymous with the distilleries smokier whiskies, the Tobermory 15yo is a limited edition Single Malt whisky of great complexity and refinement. After fourteen years in bourbon casks the Tobermory is transferred to hand selected Gonzales Byass Olorosso Sherry Butts where it spends its final year of maturation creating a rich and multi award winning dram. NOSE A lovely sherried nose with notes of figs, orange marmalade, hints of leather and a touch of smoke. PALATE Rich sherry fruit cake, milk chocolate, creamy toffee, light oak and a hint of white pepper.

- ISLAY Islay (pronounced ‘eye-luh’) whiskies are among Scotland’s most powerful, thunderous drams. Often with plenty of peat and smoke, brine and medicinal flavours, of all the whisky regions of Scotland Islay has attained a truly iconic status. There are some nine distilleries on the Isle. There is a defined power to the whisky, peat being the obvious attribute, certainly the best associated. Smoke is both a flavour of its own, but is intrinsically linked with peat. The peat flavour is imparted during the barley malting process, the smoke used to dry out the barley is produced by burning peat.

ARDBEG CORRYVRECKAN

Known for their beautiful peaty whiskies Corryvreckan started its life as a committee only bottling before being sized up to take over from Airigh Nam Beist in the core range. Corryvreckan takes its name from the famous whirlpool that lies to the north of Islay, where only the bravest souls dare to venture. Swirling aromas and torrents of deep, peaty, peppery taste lurk beneath the surface of this beautifully balanced dram. Like the whirlpool itself, Corryvreckan is not for the faint-hearted!

The heart of the excellent Bowmore Range the 12 year old is one of the most well balanced Islay whiskies on the market exhibiting some beautiful coastal notes with a gentle peat and a floral element that makes this a great entry bottling for Bowmore. The late, great whisky writer Michael Jackson proclaimed it “remarkably long and complex”. The good people from Bowmore like to think of it as vanilla ice cream at a beach bonfire. NOSE Subtle lemon and honey, balanced beautifully by the trademark islay peaty smokiness.

NOSE Heady, intense and powerful. Creosote, linseed oil, waxy dark chocolate, warm blackcurrants and moscovado sugar with plump cherries and pine needles. Plenty of smoke.

PALATE Sweet and delicious and lovely rounded heather honey and gentle peat smoke.

PALATE Deep, peppery & chewy with crispy seaweed, tarry espresso coffee and rich melted dark fruits and bitter almonds. Peat. FINISH Long, deep and powerful coffee, hot pepper and smoke lingering. NOTES

BRUICHLADDICH – THE LADDIE

CAOL ILA 12YO This is another bottling we have religiously been purchasing overseas as it until just recently became available here. An amazing whisky whose names is gaelic for “Sound of Islay”. One of the lighter Islay whiskies its pale in colour with peaty, floral and peppery notes and is used heavily in the Johnnie Walker for some smoky backbone.

Although Bruichladdich’s rich heritage stretches back till 1881 the distillery’s approach to whisky making is all about innovation and progress. The distillery makes three different styles of whiskies: The Bruicladdich label is – contrary to the accepted Islay style – unpeated, whilst its Port Charlotte whiskies are heavily peated and their Octomore is referred to as super heavily peated.

NOSE Fresh, fruity and appetizing nose with only a faint trace of smoke.

NOSE Hints of mint, freshly cut flowers and cherry blossom with zephyrs of spindrift and sea pinks. Fresh, crisp and light.

PALATE A firm, light to medium body with a sweet and floral front palate followed by fragrant smokiness and a hint of sea saltiness.

PALATE Refreshing and refined with sweet oak and a combination of ripe green fruit brown sugar and sweet malt.

FINISH Lingering sweet smokiness with a slightly sour finish.

LAGAVULIN DISTILLER’S EDITION

LAPHROAIG 18YO Along with Ardbeg and Lagavulin, Laphroaig rounds off the holy trinity of Islay Malts and the 18 year old Laphroaig is definitely one of our faviourites. The 18yo has replaced the 15yo in the laphroaig line-up and comes in at a hefty 48%abv. Whoa!

One of Islay’s most iconic malts, Lagavulin will celebrate its 200th anniversary in 2016. Whilst the famous 16yo Lagavulin may arguably be the most intense, smoky and rich whisky of all, the Distiller’s Edition is slightly more mellow yet remains rich, deep and delicious. Expect lots of vanilla, roasted coffee and touches of cocoa thanks to its second maturation in Pedro XWiminez Sherry casks.

NOSE Soft toffee sweetness balances with delicate phenols and fruit with seaweed, new mown hay and peat at the finish.

NOSE Intense peat and vanilla. A raising sweetness checks the smoke. Iodine edged peat and crisp roasty malt.

PALATE Deep and intense with warm smoke, oaky nuttiness and a lasting sweetness with rich toffee, heather, chocolate and peat.

PALATE A rich, full bodied, sweet and rich whisky. A clear grassy malt, then the peat attacks, smoke filling the mouth. A very salty tang at one point, the middle offers coffee and vanilla with a glimmer of fruit. FINISH Incredibly long, even for Islay. Fruit, peat and long-lasting oak. NOTES

Most Irish whiskey is thrice distilled as opposed to the more common double distillation in Scotland, and very few use peat in the malting process. CONNEMARA SINGLE PEATED MALT IRISH WHISKEY

This bad boy is almost Scotch like in its peaty intensity – you could be forgiven for thinking you’re enjoying a dram from the Scottish isles when sipping this – and thus it is very different to what most of us associate with Irish Whiskies. Distilled at at Kilbeggan distillery - the oldest licensed distillery in Ireland - Connemara offers another oddity when it comes to Irish whiskies in that it is double distilled rather than triple distilled which is not the norm in Ireland. NOSE A hit of smoke up front before releasing floral notes and heather freshness.

- JAPAN It’s taken some time, but Japanese whisky has definitely hit its stride and has become quite a fashionable drinks category. Although Japanese whisky production apparently dates back as far as 1870 commercial production did not occur until 1923 when the Yamazaki distillery opened. Japanese whisky is made “in the Scottish style”, and as such are quite similar to what you can expect from Highland malts.

YAMAZAKI 12YO

Nikka is Japan’s second biggest whisky producer and owns two distilleries, Miyagiko and Yoichi producing a range of whiskies including blends, grains and single malts. Yoichi was Nikka’s first distillery and is located in the eponymous town on the western coast of Hokkaido. Their whiskies have been said to have similarities with that of Campbelltown favorites Springbank and Longrow.

Suntory’s flagship malt whisky and Japan’s first commercial whisky distillery started production in 1923 in its namesake suburb of Kyoto; an area so famous for its water that legendary tea master Sen no Rikyu built his tearoom there. Often compared to Speyside whiskies the Yamazaki 12yo is a fruity and elegant sipping whisky. NOSE Floral and tropical with orange zest and cinnamon.

NOSE Gentle and sweet with light fruits such as lychees & grapes with some nuttyness.

PALATE Medium bodied and honeyed with vanilla, winter spice, lovely citrus, cinnamon and cloves and some cedarwood dryness.

PALATE Vanilla sweetness, winter spice, nutty notes and a slow implosion of peat. FINISH Long, bittersweet & malty.

Whilst there are good whiskies being made on the mainland, Tasmania is considered the whisky heartland of Australia and is home to Lark distillery who is credited with launching the Australian Whisky Industry as well as Sullivan’s Cove whose French Cask was voted world’s Best Single Malt Whisky at the 2014 World Whisky Awards.

BAKERY HILL PEATED CASK STRENGTH

SULLIVAN’S COVE FRENCH CASK

Established by David Baker, a former biochemist, in 1999 Bakery Hill uses single casks only and bottles mostly at cask strength. The whiskies are aged in 50 and 100 liter barrels to ensure greater wood contact. Praised by whisky connoisseurs the world over, Bakery Hill is proof that Australia can make a great dram.

Established in 1994 at Sullivan’s Cove in Hobart, Sulllivan’s Cove is today perhaps Australia’s most famous whisky having won the prestigious award for World’s Best Single Malt Whisky with its French Oak Cask at the 2014 World Whisky Awards. The first time this award has been awarded to a distillery outside of Scotland or Japan. We should note that the whisky which won the award was from a single cask and that this specific whisky is not available any more.

NOSE Intense peat without being “over the top”. This expression is rich with crisp salt with over tones of dark cherry natural rich earthiness.

NOSE Full rich dark chocolate with cinnamon, orange peel, hazelnut and licorice mint.

PALATE A cascading experience of flavour explosions, toffee, honeycomb, rich malt, gently warming with a suggestion of peat saltiness.

PALATE Rich and sweet front palate with flavours of chocolate, pepper, toffee and fruit cake.
