VALENCIAN CHRISTMAS AND NEW YEAR The ‘Todo a un Euro’ shops have been stocking tinsel and blow-up Santas for months. Dean Martin is blasting out of the speakers at El Corte Inglés. It’s 20 degrees outside. It must be Christmas time in Valencia, a time for peace on Earth (enjoy it while you can, it’s going to be a Trump of a New Year), goodwill to all men, ‘Christmas do’ gin & tonics, big tellies from Media Markt and remembering relatives (and local politicians) who’ve passed away and trying as much as possible to avoid the living ones. When football teams in Spain have a bad start to the season, there is speculation whether the manager will get to “eat his turrón” at the club or be sacked before New Year. Poor old Pako Ayestarán didn’t even get to read his Mercadona Christmas brochure (and that was out halfway through November) and Prandelli might be wondering whether he’ll still be here to try Valencia’s very

own contribution to Christmas. For years, two towns in the community had the Christmas sweet market sewn up. Alicante made ‘el blando’, a soft, dry, almondy sweet moulded into a bar, while from Xixona came ‘el duro’, a hard and dry almondy sweet moulded into a bar. The third option in this grand array of Christmas delights was polvorones, a powdery-dry almond sweet moulded into an oval shape. Polvorones are only eaten at one time of the year. The reason for this will become immediately obvious if you ever try one. When your entire Christmas hamper has long been finished off, that box of polvorones (and there always is one) will still remain. After centuries of dry almondy sweets, the Valencians finally realised that a bit of variety was needed. Not wishing to surrender sovereign tradition, the solution was to take what at any other time would simply be called “a bar of chocolate”, and rename it turrón just for the Christmas period. Genius! Nowadays, bars of chocolate turrón easily outnumber the traditional stuff on any supermarket shelf. They come in any number of traditional Valencia

flavours, such as kiwi fruit, Irish coffee and rum and raisin. These new innovations haven’t stopped at chocolate. This year, Valencian sweet makers have gone all Willy Wonka on us. Amongst the new innovations at the 2016 Casinos ‘Turrón and Christmas Sweets Trade Fair’ (yes, of course it exists!), are gin & tonic flavour turrones, turrones in the shape and colours of the Valencian and rainbow flags, Whatsapp emoticon turrones and, last but not least, the gloriously un-Christmassy kebab turrón, which you can cut as if it were a spit-roasted blob of donner meat. Lovely! Traditionally, every Spanish home is decorated at this time of the year with a nativity scene complete with models of Mary, Joseph, the baby and perhaps some of the other characters from the Christmas story. Belén building is one Spanish construction industry that is definitely not in desperate decline. There’s a weird attraction towards building mini-worlds and this is a fun form of ecclesiastical Lego. Belenes are getting bigger and more spectacular by the year. What started off as adding a

lump of moss-covered bark to add a bit of ‘atmosphere’ has got completely out of hand. Just look around the Christmas markets (and of course ‘Todo a un Euro’) to see what bits of your belén are a must this year. Now you can have an entire Little Town of Bethlehem on your dining room table complete with moving parts, villagers and their houses, a lake and a fully functioning Roman-era sawmill. If it’s big you want, the Cathedral takes the lead with a belén with life-size models of the holy family, while the Basílica de San Vicente Ferrer has a belén with over 300 figures, which is about the entire estimated population of Bethlehem at the time. The dutifully sedate, traditional belén, however, now has to fight for space with the bauble-strewn northern European Christmas tree, the Mexican poinsettia plant, the holly branches and the plastic Father Christmas climbing up the balcony. In some cases, traditions have merged. Thus you get mutant crib scenes of cattle and shepherds nestling among tinsel, fairy lights and snow. On the other hand, the caganer (the figure of a man having a crap which, believe

it or not, is traditional in Catalonian crib scenes) is now quite often found squatting behind the Christmas tree (at least I think that’s what it was I saw).

In Spain, presents are brought by the Three Kings on January 6. You’d think that would be enough – but not for the festively-frenzied Valencians. In the last decade or so, Father Christmas has appeared on the scene. With his white beard and red suit, he looks like the ‘traditional’ Coca-Cola version, but for some reason he bears the French name ‘Papa Noel’. Far from having to fight it out with the Kings for his status in the hearts of Spanish children, he’s been neatly incorporated into the whole tradition. Just like George Martin was the fifth Beatle, Father Christmas is a bit like the fourth King. It’s just that he comes a little bit earlier, conveyed by reindeer instead of camels.

They are usually filmed claiming fiercely “I’m happy because I am healthy”. So, this day is called “el Día de la Salud”, too. It is nonetheless warm and rich and will combine well with your neeps (swede) and tatties (potatoes).

Chances are that at Christmas you joyfully belt out the chorus of “Auld Lang Syne” at New Year’s Eve celebrations and never have had a clue about the rest of the lyrics or the origins of the song. So getting ready for the festive season, the pen behind this famous song was the great baird (poet) of Scotland, Robbie Burns. A song used in most English-speaking countries across the world to bid farewell to the old year and welcome in the new. If you read the lyrics (which I now have for the first time in my life!), it is a beautiful poem invoking the memory of long-standing friendship. The first part of the poem was based on an earlier work by James Watson and the rest of the poem completed by Robert Burns and set to an older folk melody in 1786. After Robert Burns died in 1796 his friends, who “lest their acquaintance be forgot”, began an annual Burns supper to celebrate his life.

A Burns supper is usually held on or around his birth date, 25 January, and involves bagpipes, more than a ‘wee dram’ of whisky and an address to the ‘haggis’, a meaty mix of entrails, windpipes, oatmeal and spices. To give you an idea here is part of the address: “Trenching your gushing entrails bricht, Like ony ditch; And then, O what a glorious sicht, Warm-reekin, rich” I love the idea of Burns night, but despite my half-Scottish blood, with blood and entrails, I’m sorry but “I can’nae go there”! So if you, like me, would like to celebrate the tradition at the risk of being excommunicated by the remaining Scots in my family, here is a softy southerner vegetarian version in which I have tried to recreate the texture, sweetness and stickiness without the blood and gore!

Preparation:

Dice the carrot and onion very finely and gently sauté, this time in a large saucepan. When they have softened, add the rest of the herbs. Stir well, cook a little, then add the hot water mixed with the marmite. Cook until the water has almost evaporated. Add the soya sauce, agave syrup, sweet potato, the mushrooms and their liquid and again reduce. Add the black pepper and mixed in the cooked lentils and quinoa. The quinoa I think gives it that enticing entrails look! Chop or ground the oats and add to the mix. Add the whiskey. Stir and cook for a little longer. By now the mixture should be a little bit sticky so that you can form it into round balls. If it is not sticky, add more oatmeal. Prepare mashed potato and mashed swede (neeps and tatties). When you are ready to serve, oil some aluminium foil and place the balls on the foil in a steamer to heat through. When all is prepared assemble your guests to address the haggis! Ingredients. • 200 gm split lentils, soaked and cooked (brown ones will give a more earthy and meat-coloured effect) • 100 gm quinoa, cooked (or more traditionally pearl barley) • 1 sweet potato, cooked, roasted, or boiled and skinned (you could also use roasted pumpkin) • 1 large carrot, finely diced • 1 onion, finely diced • 1 heaped teaspoon marmite • 1 tablespoon soy sauce or tamari • 1 tablespoon olive oil • 1/2 kg mushrooms • 2-3 tablespoons ground porridge oats or about 2 tablespoons oatmeal • 1 dram Whiskey (a wee bit) • 200 ml water • 2 teaspoons agave syrup • 2 teaspoons freshly crushed black pepper • 1 scant teaspoon cloves • 1 teaspoon fresh thyme • 1 scant teaspoon garam masala

We went for lunch at this new venture of brothers and partners Willy and Jaime on Friday. Valencia resident D, myself and P on a flying visit from cold and dank London. It wasn’t quite warm enough when we arrived to sit on their ample terrace, so we took a table on one of the many rooms inside… This room had four tables, one of which was already occupied by two couples who were sharing a large salad and an excellent-looking Sepia a la plancha (grilled squid). Our servers were Desire and Antony, both extremely friendly and attentive. Desire suggested that we go for the Arroz meloso de pato y setas (soupy rice with duck and wild mushrooms).

Way back in 2005, we had a small flat in the Barrio del Carmen in one of those little backstreets overlooking the remains of the original Moorish walls of the city. Soon after ensconcing ourselves in there, a new restaurant opened its doors. That restaurant was Yuso, which very quickly gained a reputation for great food – particularly their rices, of which the melosos seemed to be held in the greatest reverence. The restaurant soon became one of our firm favourites.

Let’s jump forward some 11 years and Yuso is still regularly busy and still has a great reputation… so much so that they have taken the plunge and taken on a second, much bigger branch in Plaza Carmen, just around the corner.

Now to the rice. Meloso means honey like in texture – there is also a caldoso which is soupier. This came as part of a 16.50€ menu which included three starters to share - a tapas of the ubiquitous Patatas bravas (fried potatoes with alioli and a hot sauce), Ensalada de cabra, pasas y nueces con miel (goat’s cheese salad with sultanas, walnuts and a honey-balsamic dressing) and thinly sliced Jamón serrano on pan catalan (pan catalan is toasted bread with grated tomato and olive oil - so delicious!) All were excellent, and the portions generous.

www.restauranteyuso.es Zona Carmen cauldron was bought to the table filled with a huge and delightful amount of this lovely dish – not only was it positively awash with duck and wild mushrooms but artichoke hearts as well. Anyone who reads my columns will know I adore artichokes, particularly the smaller Valencian ones, one of the bonuses of the winter season. There was really too much for the three of us to be able to finish. It was, however, a fine meloso and lived up to Yuso’s reputation for excellent rice. There were several postres (desserts) on offer and we ordered two between the three of us – a blackcurrant cheesecake and a Polvito Uruguayo (something new to me, crumbled oreos, thick cream and dulce de leche – very nice). We had a very good house Ribera del Duero, Lagunero at 10€ a bottle. The ‘A la carte’ section has a huge selection of rices, fideuás and melosos.

ANNUS HORRIBILIS 2016 has been a horrible year for Valencia fans and at the moment the signals do not look good for any signs of improvement in 2017. The club continues to haemorrhage badly, both on and off the pitch, and decisions made at the top level continue to bamboozle and astound the socios and abonados. Heading into the New Year after the failed appointment of rookie coach Gary Neville and the equally disastrous choice of Pako Ayestarán, it was obvious the club needed a wellestablished and experienced manager to take control and sort out the mess from top to bottom. The decision to put Cesare Prandelli in control was not the preference of everyone but the Italian’s pedigree cannot be questioned, having managed his national team and other quality clubs like Roma and Galatasaray of Turkey. With an Italian coach comes the notion of a solid defence, but to date this season Valencia have failed to keep a clean sheet in any La Liga game or the Copa del Rey. Many of these games were before Prandelli’s time but even now, during the handful of games he has been in

charge, the defence continues to look brittle and vulnerable to any kind of pace or creativity from the opposition. The acquisitions of Garay and Mangala may prove to be the answer with time but clearly it is a work in progress that needs much effort on the training pitches at Paterna before it becomes the finished article and matches the understanding that Otamendi and Mustafi had a couple of seasons ago. However, one thing is for sure, if the club wants to move forward it must desist of the unhealthy habit of acquiring Jorge Mendes-based players. His friendship with Peter Lim has led to a plethora of the superagent’s protégés signing for Los Chés. True, some of the signings have been successes but as soon as a player starts playing well consistently, they are touted to marquee clubs as possible transfer targets. Otamendi and André Gomes are prime examples and another, João Cancelo, is being linked with a switch to Barcelona in the January transfer window. These exceptions cloud the fact that most of the Mendes clan have underperformed for the club since their arrival at Mestalla. Rodrigo, Santi Mina, Enzo Pérez, Rúben Vezo, Nani and Garay are all on the businessman’s books and to date have done little to convince the fans they have been worth their large transfer fees. Add to that fringe player Zakaria Bakkali

and departures of Negredo and Yoel and there is a lot of wasted money there that undeniably helped Valencia fall foul of UEFA’s Fair Play Regulations. Undoubtedly, the biggest disappointment of all the Mendes experiments has been Aymen Abdennour. Signed from Monaco (where he was playing in the reserves) for a reported fee of 22 million euros, he has failed to command a first team place and his actual performances have had the feel of a ‘poor man’s Philippe Senderos’ about them when he has been picked to play. Mendes has overseen similar projects at Real Zaragoza and Deportivo La Coruña were the nucleus of the players came from his domain and both teams ended up being relegated. Off the pitch, Peter Lim and his team must work to patch up the bitter fight they have got embroiled in with the ‘Curva Nord’. The Curva Nord are by no means angels and have their critics amongst other fans but they are Valencia’s most passionate fans. Seated behind the north goal, they are the heart and the soul of Mestalla. When the Curva Nord is rocking so is the rest of the ground, making the stadium electric and evoking a fortress-like atmosphere that few opposition teams will prevail in. This season the Curva Nord have been lukewarm in their support for their team and this has been reflected in the subdued buzz in the stadium before and

during recent games. Before the Málaga game, the Curva Nord did instruct its members and fans to rally around the club and meet before the game to cheer the team into the vestuarios. Unfortunately, it did not produce the ideal result as Valencia conceded a goal in injury time once again to give Málaga a share of the spoils. Next year should also be the time to blood some of the excellent prospects who have been starring in the B squad. The Valencia Mestalla youngsters are having a great season and are currently lying third in their league behind Barcelona B and Alcoyano.

A CLUBBING CAROL

Let’s face it; Valencia may not be the European city with the most outstanding atmosphere at Christmas. Nevertheless, you won’t find many places – at least in the northern hemisphere – where you can still have a drink sitting outside and then enjoy open air ice skating in the winter sun. On top of that, the clubbing scene remains vibrant. Here are some recommendations if you want to dance to something else other than carols or Bing Crosby…

Fryda (Av. de las Cortes Valencianas, 58) right next to Norman Foster’s impressive Palau de Congressos, will be putting on a somewhat different night than the usual hits and reggaeton. Given that it’s the 30th anniversary of the emblematical Puzzle club, techno vibes will be bringing the house down on 3 December. Whether it’s a coincidence or not, Barraca (Av. San Roc, Sueca, Valencia) is celebrating its 51st anniversary only two days after. Another great chance to relive or discover those ‘80s neverending raves with DJs Dubfire and Jackmaster.

The Madrid-based garage-pop band Hinds are playing a gig at La3 (C/ Padre Porta, 2) on the 10th. There’s a chance you might have already seen them in one of the many summer festivals they played at. But this section is about clubbing, so if you don’t have Article © 2016 24/ 7 Valencia

any oversized vintage clothes available you can still enjoy the post-concert party conducted by Fred P, a.k.a. Black Jazz Consortium. Quoting the DJ himself, “Anyone who followed the development of house music in the USA in the last decade will certainly have met the art of Fred P”. Let’s take his word for it!

Nylon Club (Gran Vía Germanías, 31) is a hot spot in the trendy part of town called Ruzafa. Its central location is surrounded by bars and other clubs, which gives you the opportunity to have a few drinks or something to eat before going along to this club. With two dancefloors, one dedicated to indie pop and the other to house, electro and UK garage, it always makes for a good night out.

Overlooking the port stands the singular building Veles e Vents (Marina Real

Juan Carlos I) which is offering a night of EDM and current hits. Located in

unbeatable surroundings and offering value for money, it’s definitely an option to consider. Right next to it you can find the High Cube club, which might be the place for you if you’re more into house.

Another popular club in Ruzafa, for its diversity of musical styles and programming, is Piccadilly (C/ dels Tomassos, 12). Getting down to the Christmas theme, this club will be staging an event on Christmas Eve, the line-up is undisclosed as yet, but it doesn’t really matter who it is because not even the Grinch would be capable of spoiling the night. With 2016 coming to an end it’s time to make your New Year’s resolutions, maybe the first one of all should be checking out one of the following New Year’s Parties. The Basement is a multidisciplinary project focused on bringing a new outlook to the Valencia nightlife scene.

VALENCIA CAVA Valencia’s bubbles just right for Xmas and Three Kings! It’s Christmas time again! What better way to celebrate with Valencia’s very own cava over the festive season? Valencian Cava? Well, yes! A Brief History of Cava

Historically, cava was a sparkling wine made in Cataluña, the word meaning cave or cellar in which the first wines were stored and made. Josep Raventós is credited with being the first to make this wine around 1860 (marketing it from 1870 onwards) following his visits to the Champagne region of France. The grape varieties are Xarel-lo, Parellada, Chardonnay, Macabeo, Malvasia, (whites) and Pinot Noir, Trepat and Garnacha for reds. Of course, following the famous European court case which ruled that only wines produced in that area could be called Champagne, the Catalans adopted cava as their name for sparkling wines made by the ‘traditional method’ for wines which used to be called Spanish champagne.

Now following a court case in the Superior Tribunal of Justice in Spain, cava is defined as a sparkling wine made by the traditional method from designated regional areas of Spain. DO Cava is not therefore a single area within Spain but a type of wine made in about 10 specific areas including Valencia…..or actually Requena. How is Cava Made?

The traditional method is exactly the same as used in England, Champagne and other parts of the world. The grapes are picked, fermented and a base wine is created. Subsequently the varieties can be blended and may be aged in oak or stainless steel. They are then given a dose of yeast and sugar and bottled usually with a crown cork. A second fermentation takes place in the bottle. When the fermentation is over, the wine is left in the bottle with the decaying yeasts. This will be for a minimum of 10 months to allow it to be called cava. After about 15 months, autolysis begins and the dead yeasts start to give the wines a little more body and depth and the notes of patisserie or brioche that you always find in quality wines made by this method. The longer the wines are left in contact with the yeasts, the

greater the depth and complexity of flavour. Finally the bottles are turned upside down in a machine (these days) until the dead yeast collects in the neck against the crown cork. This part is then frozen, as the cork is removed the plug is ejected and the bottle can then be topped up with ‘licor d’expedición’, which may contain varying levels of sugar and defines whether it is Brut Nature (the driest), Brut, Semi Seco or Semi Dulce (sweetest). Cavas from Requena

Cava can only be produced from vineyards in the boundaries of Requena and its designated hamlets. It can only be produced from designated varieties and these are generally macabeo and chardonnay. A little xarel-lo and parellada is grown mostly by grafting cuttings onto root stocks of other varieties. In red varieties, garnacha and pinot noir are used to produce rosé or rosado cavas. There is no red cava. There are only a small number of producers who form the Association of Cava producers from Requena. Other bodegas may sell cava with their own labels but it must have been produced by a licensed bodega.

The bodega produces a number of cavas from their own vineyards. Look out for awardwinning wines with their terracotta labels such as the Brut Nature, Millésime blanco and rosado and the Gran Reserva. Their ‘Unico’ is technically not a cava as it is made from bobal but is made by the same method.

Good quality, easy drinking cavas from Murviedro are easy to find. Look out for Luna de Murviedro white and rosado (both Brut) and Expressión or Arts de Luna, both from chardonnay.

Cavas produced by Requena’s largest cooperative. Good value wines sold under the Marqués de Plata brand.

Specialist cava producer, with Tantum Ergo blanco (pinot noir/chardonnay) and Tantum Ergo rosado (pinot noir and regularly awarded best cava rosado in Spain).

Also primarily a cava producer, look out for their Blanc de Noir Reserva, Brut Reserva Rosado Especial, Brut Reserva Especial (blanco) and Cuvée Prestige Nature. There is also a very good rosado Brut from pinot noir.

But because most of Requena’s cavas have long ageing in bottle, they are made to accompany serious food rather than simply be served as aperitifs or with the dessert, which is popular in Spain. meat dishes. The better white cavas will even go well with beef from the brassa (or wood fire)!
