Makes roughly 5 cups Preheat a fan-forced oven to 160° degrees Celsius/325° degrees Fahrenheit.

CRUNCHY GRANOLA Instructions

Line a baking paper with baking paper and set aside. Put the all of the ingredients in a large bowl and mix until combined. Spread the granola mixture on the baking paper and place in the oven. Bake for 10 minutes stirring twice until the mixture is lightly toasted. Remove from the oven and let the mixture cool completely in the fridge. When the granola has cooled and the coconut oil has hardened, break the granola into clusters and store the granola in an air tight container. Serve when ready with almond milk, light coconut milk, or as is.

½ cup coconut oil ½ cup dark chocolate, chopped ½ cup almond butter ¼ cup raw honey 1 cup desiccated coconut 1 cup almond meal ½ cup walnuts, chopped ½ cup sunflower seeds ½ cup dark chocolate chips

Line a 9 x 9 inch square baking pan with baking paper and set aside. Put the coconut oil, chopped dark chocolate, almond butter and honey in a microwaveable bowl. Melt the chocolate mixture in the microwave at medium high power for 2 minutes, stirring every 20 seconds, until the chocolate has melted. Put the desiccated coconut, almond meal, walnuts and sunflower seeds in a large bowl and mix well. Add the melted chocolate into the bowl and mix until combined. Put the mixture into the baking paper and spread it evenly in the pan, press down firmly. Spread the chocolate chips all-over the surface of the granola and pat them down lightly to make them stick on the surface. Cover the pan with cling film and refrigerate for at least 2 hours or until the granola has completely set. Cut the granola into 9 square bars and store, chilled, in an airtight container.

Blondie Fudge Granola

½ cup cocoa butter ½ cup almond butter ½ cup coconut oil ¼ cup raw honey 1 cup sliced almonds 1 cup pistachios ½ cup macadamia nuts ½ cup pumpkin seeds 1 cup desiccated coconut ¼ cup dried goji berries

Line a 9 x 9 inch square baking pan with baking paper and set aside. Put the cocoa butter, almond butter, coconut oil and honey in a microwaveable bowl. Melt the mixture in the microwave at medium high power for 2 minutes, stirring every 20 seconds, until the mixture has melted. Put the rest of the ingredients in a large bowl and mix well. Add the melted cocoa butter mixture into the bowl and mix until combined. Put the mixture into the baking paper and spread it evenly in the pan, press down firmly. Cover the pan with cling film and refrigerate for at least 2 hours or until the granola has completely set. Cut the granola into 9 square bars and store, chilled, in an airtight container.

Makes roughly 1 liter

Almond Milk

1 cup almonds (soaked overnight or for a minimum of 6 hours) 3-4 cups of water Place the almonds in a blender along with the water and blend the almonds for 1 minute. Strain the milk through a nut milk bag or a couple of layers of cheese cloth. Serve with your morning granola or keep the almond milk in an air-tight container/jug for up to 4-5 days in the refrigerator.

Almond milk and coconut milk are common favorites for serving paleo granola, but don't go past other nut milks, such as walnut or hazelnut. Be creative, try coconut kefir! The texture will be similar to yoghurt and will not only add variety to your breakfasts, but will add huge health benefits as well.

Coconut Kefir Yoghurt

300ml young green coconut pulp (pureed) or coconut water 400ml organic coconut cream ¼ cup kefir grains The more kefir grains you have in the coconut the quicker the fermentation will take place. A warmer sitting temperature will also see the fermentation process speed up. Place the coconut water and live kefir grains in a jar and seal tightly, then leave the jar in room temperature for up to 48 hours. Check the kefir after 24hrs, then again 12hrs later to monitor the fermentation. The longer the fermentation the more sour it will become. Ensure the coconut kefir doesn’t ferment too long. Fermenting for 4+ days can start to invite bugs and germs. When the kefir has fermented to your liking, pour the coconut water kefir through a sieve to catch the kefir grains (reserve the grains for your next batch of kefir). Store your kefir in the refrigerator.
