DORTWUNDER LAGER

DORTWUNDER LAGER Dortmunder is still famous as a brewing center, but its namesake beer is something of a rarity these days. The great beer writer Michael Jackson described the style as halfway between the austere crispness of a German pils and the lush maltiness of a Munich helles—in other words, a perfectly balanced all-malt beer.

ALCOHOL CONTENT:

5.5 % BITTERNESS: 26 IBU COLOR: Pale Gold

Starting with a base of U.S. 2-row pilsner malt, we add just enough lightly-kilned Vienna and Munich malts to add a slight caramel character. Hops are New World versions of European classics, smooth and clean, but with some real personality as well. Late-kettle additions assure a beautiful, spicy-herbal aroma that blends nicely with the malts. As with all Berghoff beers, the Dortwunder makes a great companion to food. Try it with a substantial salad, all kinds of seafood and chicken. It is especially harmonious with fried foods. Serve in a classic pilsner glass or a tall, cylindrical "strange" to show off its shimmering gold color and support the creamy white head.

WINTER ALE

WINTER ALE (NOV - MARCH) There is a long-standing tradition of brewers making special beers for winter, both as a little holiday present to their customers, and also because a bigger, stronger, darker beer simply tastes great in the dead of winter.

ALCOHOL CONTENT:

7.0 % BITTERNESS: 23 IBU COLOR: Deep Copper

This rich, smooth, copper-colored ale is brewed with six malts for a lot of aromatic complexity, with cookie, caramel, raisin and toasted marshmallow notes. New World versions of noble hop flavors bring a certain European elegance, but with a little more brash personality, topped off with the floral-and-citrus that the all-American hop—Cascade—delivers. Berghoff Winter Ale is a great match with all the holiday classics like glazed ham and rib roast, and should be a real standout with desserts from pecan and pumpkin pies to sticky toffee pudding.

STRAIGHT UP HEFEWEIZEN

HEFEWEIZEN In Bavaria, wheat beers were once the exclusive province of royalty, and it’s easy to see why. With their reliance on costly wheat, a refined aroma and a magical combination of complexity and easy drinkability, wheat beers tickle just about everyone’s fancy. They deserve wider appreciation.

ALCOHOL CONTENT:

5.2 % BITTERNESS: 17 IBU COLOR: Hazy Straw

Straight-Up Hefe-Weizen is brewed with 60 percent malted wheat and 40 percent pilsner and other malts. It is an unfiltered beer with a cloudy appearance due to yeast and proteins that add a rich creamy mouth feel. A classic Bavarian wheat beer yeast is used, adding subtle layers of banana, bubblegum and spicy clove, the signature trio for the style. The finish is creamy, dry and just a touch tangy. Straight-Up Hefe-Weizen is a great beer for lighter foods: salads, fish and delicate chicken dishes, and it's really fantastic with Asian foods such as spring rolls and pad Thai. Enjoy it in a classic and curvaceous weissbier "vase," or a tall wine glass or tulip.

SOLSTICE WIT

SOLSTICE WIT BEER WITH CALAMANSI JUICE + SPICE (APRIL-JULY) Wit, or “white” beers—so-called for their hazy appearance—are a grand old family of beers that date back a thousand years in Northern Europe. Their longevity is justified; witbiers are complex yet subtle, dry but creamy, and always delightfully drinkable.

5.2 % BITTERNESS: 20 IBU COLOR: Super-Pale Hazy Straw

Solstice is a carefully updated classic that starts with the traditional mix of super-pale 6-row malt and unmalted wheat and oats, giving the classic hazy appearance and rich creaminess on the palate. We use a specially selected coriander and an exotic Asian citrus called calamansi for a bright, tantalizing nose; then add a dash of hops for another layer of aroma. And, as with any good witbier, it is unfiltered. It's fantastic with fresh seafood, especially mussles (try steaming them in the beer), oysters and other shellfish. Great with fruit salad, and delicious with brunch-style egg dishes. Serve in the classic faceted stubby tumbler, a paper cup or whatever is at hand. Berghoff Solstice is all about fun and enjoying the moment.

SIR DUNKLE

SIR DUNKLE CRISPY DARK LAGER In the old days, most dark beers had a reputation for being heavy, even sweet. Not this one. By reinterpreting some historic German traditions, including the ancient “altbier” style of Düsseldorf and adding a decidedly 21st century American twist to it, we’ve created a dark beer with a dry, refreshing character and a ton of personality.

ALCOHOL CONTENT:

5.5 % BITTERNESS: 20 IBU COLOR: Rich Brown

We start with a mix or pilsner and pale ale malts for a complex, dry maltiness, then layer on specialty malts that add toasty, cookie and a little dark toffee character. All of this is balanced by a hop mix that adds to Sir Dunkle’s crisp complexity. Lagering rounds off any rough edges, leaving a satisfyingly dark-beer flavor with a clean drinkability. It's great with food. Try it with grilled chicken or pork chops, classic sausages like brats or thüringer, grilled eggplant or mushrooms. Great with honest barbecue, and spicy foods like Mexican and Cajun too. Serve in a classic mug or a cylindrical "strange."

REPPIN RED ALE, MALT RYE Your father’s red ale was pretty to look at but not much to drink, seriously in need of a personality transplant. But over the years, red ales have turned into the real deal, with a character as lively and big as any pale ale.

OKTOBERFEST MARZEN-STYLE LAGER Oktoberfest beer as we know it has been a part of classic Bavarian lager repertoire for over 150 years, although the celebration itself dates back to 1816. The familiar rich amber lager we now know by this name originated in Vienna and migrated to Bavaria by the 1850s. Like the classics, our version is deeply malty, with just enough hops to provide a sense of balance.

ALCOHOL CONTENT:

5.6 % BITTERNESS: 22 IBU COLOR: Orange-Amber

But our version lightens up the body a little to avoid being too sweet, making for a crisper drinking experience. We start with the classic Vienna and Munich malts, and use a few other types as well, for greater complexity as well as an easy drinkability. Slightly more hop bitterness as well as some pleasing hop aroma gives the Berghoff Oktoberfest a bit more punch and personality than the original. It's a very versatile food beer, at it's best with the classic roast chicken or pork, but equally at home with spicy dishes, pizza, pasta and richer seafood dishes. Serve it in a classic handled mug or large footed goblet.

GERMANIAC PALE ALE

GERMANIAC EXTRA PALE ALE BREWED WITH HONEY AND MOLASSES Scratch the surface of the German beer tradition and you find gems like this: a crisply bitter golden ale from Northern Germany that faded into obscurity a hundred years ago. With its subtle honey notes and small dose of molasses which gives it a lightly nutty character, this is a beer that deserves a much wider audience.

ALCOHOL CONTENT:

6.3 % BITTERNESS: 40 IBU COLOR: Deep Gold

We follow the classic recipe, with a mix of three types of malted barley, plus wheat and a dash of oats for a creamy texture, plus tiny amounts of Wisconsin cranberry honey and light molasses, both of which add subtle shading of aroma. Hopping is vigorous, and along noble lines, but amped up a bit with some North American varieties as well, just to keep it fresh-tasting and bold. It’s an ale fermentation, so there is a hint of fruitiness that plays nicely with the honey and molasses notes. Great with rich, but delicate foods like fried chicken and fish, as well as creamy sauces, paté and luxurious seafood like scallops. Great with many types of cheese, from münster to gruyere. Serve in a tall cylindrical glass or an oversized wine glass to appreciate the great aroma.

STOCK ALE OAK AGED STOCK ALE

10 % BITTERNESS: 80 IBU COLOR: Amber

Sometimes the past and the present come full circle. At one time in America, the finest and most luxurious products of many breweries were strong "stock" ales, so called because of their long aging period. They were hopped heavily and aromatized with the finest European hops. They were also rich in malt, often tipping the scales at close to ten percent, gaining enormous complexity from an extended oak aging. In many ways, such beers would have been right at home in today's craft beer market, if only they had survived. So we thought we'd find out. Using recipe details from a number of period sources, we put together a slightly modernized version, following tradition as much as possible. Berghoff Stock Ale uses the classic combination of lager, caramel and black malts along with some Belgian brewer's brown sugar to lighten the body a little to improve drinkability. It is then hopped up to a respectably high level with the original American hop, Cluster. Finally, East Kent Goldings and Hallertau Hersbrucker hops give it a unique old-school aroma. Fermentation is done with an ale yeast and in the presence of toasted oak, which adds a little soft vanilla aroma and a nice, crisp, slightly tannic finish. Happily, this little experiment turned out to be a really delicious idea. Enjoy this taste of the past—and future. This big, burly beer demands foods with an equal level of intensity. Fire-grilled steak and rack of lamb come to mind. Also would be a great accompaniment to an intense blue cheese such as Stilton. Works nicely with super rich, sweet desserts such as crème brulée or caramel cheesecake.
